Fish & Chimps! Sustainably focused fish and chip restaurant opens at Edinburgh Zoo

A

brand-new restaurant has opened at Edinburgh Zoo, celebrating the wildlife conservation charity’s first animal species, the gannet. Offering a range of traditional Scottish fish and chip dishes, from Cullen skink to vegan haggis, Restaurant Associates’ new venture as part of their partnership with the Royal Zoological Society of Scotland (RZSS) has already proved a hit with visitors. Named after the first animal to be held at the zoo, The Gannet offers the country’s only ‘fully Scottish’ chip - grown within 50 miles of the zoo, chipped in Dunfermline and cooked fresh at Edinburgh Zoo. Ben Supple, director of engagement and business development at RZSS, said,

TV presenter and former TOWIE star Mark Wright has been spotted at Papa’s Fish and Chips newest location. The TV presenter and former TOWIE star was pictured with Papa’s staff. Mark Wright was pictured with staff at the chain’s new Skegness eatery this week. Posting the photo to Papa’s Facebook and Instagram accounts they said: “Look who visited us the other day at our new location in Skegness!’ much to the delight of many fans. Commenting on the Instagram post x_ ms_6_x wrote: “@wrighty is in Skegness!! What !! Why !!Yes I’m here all week” On Facebook, Jo Louise commented: “Mark Wright in Skegness??? Wow” And Karen M Wareing said: “He’s hot chips him!” Mark, who is married to former Coronation Street actress Michelle Keegan, recently opened up about both his and his dad’s cancer scares as he admitted he suffers from “health anxiety”.

Frymax is Committed to and Supports Sustainability. SUSTAINABILITY For several years Frymax has been made only from fully segregated certified sustainable palm fruit oil. This means that both palm oil and palm kernel oil are produced by palm oil plantations which have been independently audited and certified. The certification is provided by the official body, RSPO which has developed a set of environmental and social criteria member companies must comply with. Fundamental to this, is that no primary forests which contain significant concentrations of biodiversity, fragile ecosystems, or areas which are vital in meeting basic or cultural needs, can be cleared. The Class of ’54 Fish and Chips have long been recognised as Britain’s National dish, no more so than in the 1950’s. In the Class of ’54 there were over 30,000 Fish and Chip shops serving the Country’s only take away food. The primary fare was cod or haddock and chips, fried initially in animal fats, principally dripping and lard. The average price for a medium portion of cod and chips was one shilling (5p in today’s currency) and Friday night was the most popular night for the take away treat. In 1954 the market changed dramatically with the launch of Frymax vegetable oil. Ugly Ducting! Is your duct cleaning company actually cleaning? By Dr Peter Grafton

A

lifestyle change resulted in the purchase of a 96-year-old chip shop in the heart of Derbyshire’s Peak District (The Toll Bar Chippy). Knowing little about cooking and even less about maintenance of associated equipment I found myself searching the internet for duct cleaning specialists. All the companies I requested to quote displayed the NAADUK (National Association of Air Duct UK) kite mark to reassure me I was using an industry specialist. I went with the cheapest quote as the NAADUK mark gave me all the assurance I thought I needed. The job was booked in, and the work completed, I was surprised that the work took only around 1 hour, but, knowing nothing and trusting specialists I took the company at face value and accepted my ducts were clean. The time taken to clean led me to question the price of over £450 for an hour’s work. The company owner agreed and dropped his price for the following year. Three years passed and I handed over our hard-earned money, including VAT. Year 4 saw a new face of cleaning; within 10 minutes I was told the job could not be completed as there were no fitted cleaning ducts. The clean was re-scheduled to include the fitting of ducts. On the cleaners return he noted that even accessible sections of duct had never been cleaned. The cleaner mentioned the state of the ducts was the worse he had ever seen.

Phone calls to the company owner led to shouting competitions and the company owner blaming me for not paying full price and not fitting cleaning ducts, this made me think. After contacting NAADUK direct, along with trading standards and my local environmental Health officer I was assured I was not to blame at all. The ducts were eventually cleaned by a professional to a high standard, complete with new cleaning hatches. Despite all this the original company had the face to invoice me again for this year’s visit. I then called them and told them this; he had put me, my wife and children at serious risk to our life. He had risked the beautiful grade 2 listed chip shop we owned and would upset all the wonderful customers we serve each week. I also told him he they should learn from this experience and never put lives at risk again. I will pass all my evidence to the people who can hopefully shut them down and hopefully this will lead to one less company playing life and death games within the sector we all work so very hard in. Thanks to Pete and NAADUK, his help has been nothing short of exceptional. I ask you all to check out that the company you use for duct cleaning is on their register. The Fjord Maverick! Hans calls time on NSC

A

round 30% of the UK’s cod, much of which is supplied to the UK’s fish and chip industry, comes from Norway. The Scandinavian country is one of the major suppliers of sustainable cod to the UK and has been trading frozen-atsea produce with us for many years. In September 2017 Hans Frode Kielland Asmyhr was appointed the country representative for the Norwegian Seafood Council (NSC) in the UK. It was important for the Norwegian Seafood Council to follow the Brexit process and what consequences it may have for Norwegian seafood exports to the UK and the EU. Hans Frode has considerable knowledge of the UK and EU questions in general, and combined with his strong communication skills, he would further help position the NSC on behalf of the Norwegian seafood industry. Hans has a background in PR and politics, an important contribution to look to increase both market share and preference of Norwegian seafood in the UK. He was also MP for the Progress Party in Norway, including as a member of the standing committee for business and industry. He holds a degree in law from the University of Oslo. Now it is time to say farewell to Hans

and say thanks to him for his tireless work. It is five years that has flown by (despite the pandemic) and seen Hans throw himself into our industry and help excel the positives of our great trade. Most people in the position Hans held would look to agencies to both create & initiate strategy. Whilst to some extent this is true the level at which he got involved to make sure they were a success is to be commended. He attended most industry open days, events and also ate at many fish & chip shops across the UK. Last year we attended Miller’s at Haxby together for National Fish & Chip Day promoting Norwegian FAS cod & haddock & a new breed of chipping potatoes, Babylon. Also a keen farmer Hans loved his visits to the Fens for the Isle of Ely Produce Open Day and knew the importance of great chipping potatoes to be served alongside his nation’s catch. He also gave us here at Chippy Chat brilliant support over the years. Whether it be a front-page scoop, or a place at our Chippy Chat Ball, Hans would always be there. Perhaps my fondest memory with him will always be my second trip to Norway in October 2019. Hans and the team at Norway invited both myself and NFFF President Andrew Crook to go along with the top ten fish & chip shops for the 2020 awards.

On the second day Granit had silently cruised into the moorings adjacent to the hotel. Named Granit after the solid Norwegian rock, it is closely related to the forces of nature. As of today, it is still one of the largest vessels of its kind in Norway (over 80 metres). It is owned by Halstensen who were founded in 1897. Granit owner Inge Halstensen was waiting to greet us on deck! Within a couple of hours of leaving Alesund we were cruising through the Fjords. No signs of the rough seas of 2016 (previous top ten trip), mother nature was behaving herself and putting on an imposing show for us. Think of Norway’s fjords as main roads with side streets and narrow back alleys – a bit like the canals of Venice gone XXL. All too soon our trip was at an end. In a couple of days, we had learnt so much. The care, attention, investment, environment, and the passion are what makes Seafood from Norway so good, and why they are proud to deliver their fish to the UK fish and chip market. Thanks to Hans, and the owners and crew of Granit for a great trip, fantastic hospitality and sharing your knowledge and country with us. Since he has been here Hans has also built upon his love for the late great Sir Winston Churchill. He is an active member of the International Churchill Society. Like his hero he is great with words and doesn’t suffer fools gladly! So long Hans and thanks for the memories!

Well Bred! Potato varieties with potential

hen we develop a new variety at Meijer Potato, it’s vital to see the vision of what it can deliver to the market and the essential added value it can create. Here in the midst of record-breaking temperatures in the UK and across the rest of Europe, it becomes more important than ever that varieties can handle extreme conditions to ensure a quality crop at the end of the season. It was a pleasure to show Austen Dack, and Andrew Crook from the NFFF, what we are doing to meet the challenge that a changing climate gives us. Our breeding station in the Netherlands is continually evolving, with the latest technology available used to breed the best varieties for you. Meijer’s director of R&D, Guus Heselmans, has over 40 years’ experience of plant breeding - and his industry knowledge was clear to Austen and Andrew as he took them through the process of breeding a successful variety. We saw the cross-pollination of plants, which eventually leads to seeds from the plant berries being planted to grow unique individual plants. Hundreds of thousands of plants are grown annually, and then tested to analyse their DNA. Using the latest science we throw out 95% of the plants at this stage – only those with good potential survive. These candidates are planted in the trial field the next year, and we toured this year’s field to

see the new plants. The earliest ones were already being prepared for harvest, at which point they are assessed – and once more 95% are rejected with the ‘winners’ retained for further testing the next year. In total a 7-8 year process will eventually select maybe only one commercial variety from those hundreds of thousands. We also looked at our varieties that are already established, alongside some of the newest introductions. It is key that these add value over and above the existing ones, and all feedback from end users in chip shops is vital to what we do. New introductions to the trade like Lady Anna and Lady Terra have been receiving good reviews, and hopefully our next generation varieties Lady Jane and Lady Forte will bring you an even better result in the years ahead. For growers and producers, we have introduced a new tool to assist in variety selection to best suit their climate, and product specification. The Robustness Index was presented, and we were given a demonstration at the Meijer Growing the Future conference the following day where industry leaders gathered to hear about current and future developments that we are working on. I

n the fish and chip trade, most of us recognise the benefits of frying in fresh clean oil/fat. In these days of cost increases it has become even more important. We can have the finest quality potatoes, the best fish available, the most up to date shop with the very latest frying equipment and excellent well-trained staff. However, if your frying medium isn’t managed, kept clean and fresh you are wasting all that effort. Every satisfied, repeat customer that comes across your counter depends to a large extent on the quality of the fried product which in turn relies heavily on the oil quality in your pans. With social media reviews instant, you don’t want a bad review due to unclean oil. From the moment you start to use your oil it starts to break down for a number of different reasons i.e., oxidisation, high temperature, moisture etc. However, the biggest single cause of oil breakdown is the formation of carbon particles during the frying process. The carbon starts out in life as batter scraps, chip scraps and breadcrumbs etc. Initially these are removed by skimming with a fine mesh sieve, however, as you carry on frying, the particles you don’t remove carry on breaking down and getting smaller. Initially they fall to the bottom of the pan as carbon dust which is now too small to be picked up with the skimmer. It needs to be removed at this stage otherwise it carries on getting

smaller until it is suspended in the oil, tainting the taste of the food sold. The oil then gradually breaks down, it oxidises to the extent that it starts to foam. Many shop owners don’t cascade-manage their oil. Those that filter and cascade-manage generally don’t dump oil ever again. The savings are often substantial. This is where our filter machine becomes invaluable. There are a few different machines on the market, each one doing a similar job. However, by far, the most popular is our Merlin Master Fry. Wagon Pam and I are very proud Canadians who would rather live nowhere else in the world. But we are also very proud of our Irish decent. We have put our Irish Coatsof-Arms on the sides of our truck to reflect this pride.

oth my parents’ families left Ireland (McQuaid’s from Monaghan and Whelan’s from Wexford), in the mid 1830’s, 20 years before the Irish Potato Famine. They both came directly to PEI, with my father’s family settling in the Kelly’s Cross/Emyvale area, and my mother’s family first in Tracadie/Fort Augustus and then Vernon River. They were all farmers and to this day there are still a few on the Whelan side of the family that farm around Vernon River. Pam’s family history is a bit less clear. One can suspect that that her ancestor left Wexford, Ireland, in the time of the Potato Famine, or just afterwards, as the first record is a census from Lancashire, England in 1861, where her traceable ancestor, his brother and their Irish wifes appear. They declare on that census that they all came from Wexford. The family lived in the same area of England until Pam’s father got a job in Burlington, Ontario in 1974, and he brought her with him. She was 8 years old. The rest of her family joined them shortly after. Why ‘Paddywagon’? PaddyWagon is a very Irish sounding name, which we can take as a symbol of our Irish heritage. It wasn’t always that way. The term ‘Paddy Wagon’ came from a derisive term for the Police Department

Wagon (PD Wagon) in the mid 1800’s when Irish Immigration to North America exploded due to the Potato Famine. We decided to use PaddyWagon for the name on the truck to show appreciation and admiration to not only our Irish Ancestors, but to all Irish, who fought and clawed their way from dying in the fields all over Ireland, and being destitute in the Diaspora, to being a vital part of every country on earth. ABOUT OUR FOOD What is different about Paddy’s Haddock? As a Food Truck, there is no easy solution to a large piece of fish in a take-out container. You can sit on a park bench, at a hockey arena, or even in a classroom with the food on your lap, knife and fork in hand. Part of the job of eating fish on your lap is not tipping over the container and losing it all or get it on your fork only to lose it part way to your mouth. We are trying to re-imagine our fish a bit differently. We hope you can focus on enjoying the taste rather than fighting the fish. It isn’t a revolution, but we hope it makes eating Paddy’s Haddock more convenient. Meals! from a chicken breast) and then handbatter it just before frying. • We use a light batter created in England and used around Britain and Ireland which is available here in Canada. • You get the same golden-brown appearance and great taste, but this also allows you to easily eat your fish as you walk, attend classes or watch a game or other event. • Of course, you can still use a knife and fork if you prefer. Fresh, never frozen Haddock all year ‘round, really? • Yes. We buy all of our Haddock from MR Seafoods in Charlottetown. They have connections with Maritime Fishers who fish off Nova Scotia/New Brunswick all year ‘round for Haddock, among other things. Fish is landed, and shipped, daily from various plants in Nova Scotia and New Brunswick. Only PEI Russet ‘Chef’ Potatoes for our Fries. We buy all our potatoes from McKenna Bros. in Cardigan/Vernon River. They supply us with only their best Russet potatoes, referred to as ‘Chef’ or ‘#1’ potatoes. We cut them fresh daily and prepare them carefully to bring out the best possible taste. Can there be anything better? Our Meats are Fresh, Never Frozen, just like our Haddock We purchase all our Hamburger, Peameal, Chicken and regular (strip) bacon from Mike’s Island Meats (formerly Queen Street Meat Market) fresh, never frozen. We believe the fresh, good quality meats, properly spiced, will enhance the taste of our meats. PaddyWagon Fish ‘n’ Chips food truck is located at 502 Brackley Point/BJs truck centre. 37

Chip Isle of Ely Produce have been promoting a new Chip Ambassador role to promote the great British Chip in association with Agrico. The aim will be to carry on the good work promoting chipping potatoes at their hugely successful open days, and through the ‘Field to Frier’ gong at the National Fish & Chip Awards By Austen Dack

T

he Chip Ambassadors have become part of an UK wide group of shop owners and fryers who will promote best practice for potato buying, storing, and of course frying. The chain will also include key growers too like PJ Lee & Sons, and A. L. Lee Farming Company, as IOE looks to nurture the relationships they have grown across the whole supply chain during the last twenty years. Agrico have partnered with Isle of Ely Produce to bring new varieties into the trade initially via our Chip Ambassadors. The first one Babylon has been sampled at some of these ambassadors to back up the results of the early trial successes. We have travelled to many great shops in the last few months trialling Babylon. The overwhelming result of all of this testing is Babylon as a variety is looking like a star of the future.
