GLENN ELDRIDGE, SOUS CHEF AT THE SHIP INN SHARES HIS SECRET RECIPE FOR HIS POPULAR CHOCOLATE CRUMB CAKE
CRUMB CAKE
150g Salted Butter
150g Caster Sugar
2 Medium Eggs
1 Egg Yolk
175g Gluten Free Self Raising Flour
300g Belgian Dark Chocolate (70%)
STRAWBERRY MOUSSE
130g Mascarpone
300g Double Cream
70g Egg White
30g Caster Sugar
2Gelatin Leaves
6 Fresh Strawberries
BELGIAN CHOCOLATE CRACKLING
300g Belgian dark chocolate (70%)
30g Belgian white chocolate
STEP 1 - MAKE THE CRUMB CAKE
1. Preheat the oven to 165 degrees. Melt the chocolate in a bain marie. In a mixing bowl, cream the butter and the sugar.
2. Slowly add the eggs and mix until smooth. Sift in the flour and mix thoroughly, ensuring there are no lumps.
3. Once the chocolate has completely melted, remove from the bain marie and fold into the cake batter.
4. Line a baking tray and pour in the batter, shaking the tray to ensure the mix is evenly distributed.
5. Bake for 35-40 minutes and once cooked, allow to cool before turning out.
1. Whisk the egg whites in a blender until soft and fluffy and gradually add the sugar. Blend the strawberry’s until smooth.
2. Soften the mascarpone in a separate bowl, whip the cream until soft peaks, be sure not to over whip.
3. Add the gelatin to 50 ml of warm water until completely dissolved and add to the strawberry puree.
4. Now combine the cream and mascarpone together and add the strawberry mix in. Carefully fold in the meringue mix to the mixture and set in the fridge until needed.
1. Just like before, melt the chocolate in separate bowls over a bain marie.
2. Line a tray with cling film and drizzle the melted white chocolate into the tray.
3. Pour over the melted dark chocolate and shake the tray until it’s completely covered. Place in the freezer until hardened.
Once cold, turn out the chocolate crumb cake onto a chopping board, trim the edges and cut into 8 equal size pieces. Spoon the strawberry mousse into a piping bag and pipe on top of the cake, ensure you are covering the entire top. On a separate board, turn out the now hardened chocolate and cut into similar size pieces to your cake and lay on top. Serve with fresh strawberries.
On Saturday 13th May over 80 dogs and their owners, took part in the The Globe Inn’s charity dog walk. Thanks to your wag-tastic support, it was a huge success and raised a total of £588.70, which will go towards making a pawsitive impact to Norfolk Greyhound Rescue.
In May, some of our team completed the challenge of climbing three peaks, covering a distance of twenty-five miles in under twelve hours. It was exhausting and mentally challenging, but well worth the blisters to continue our important fundraising efforts for Giving Tree in aid of Break, who make a huge difference to children and young people living in or leaving care in East Anglia.
The Giving Tree has now raised over £100,000 for local charities and community initiatives!
1. 2023 is Chestnut’s 10th Anniversary can you name which property was the first pub?
