Chester Chef Earns Sweet Taste of Success in Norway By Ann Wishart Executive Chef Scott Ryan arrived in Norway a few weeks ago with five trunks of equipment, an assistant, and eight months of planning and practice to compete in the Global Chef’s Challenge. After preparing 60 plates of four artistic courses for 12 judges, Ryan was declared second runner-up in the international World Association of Chefs Societies competition. The Chester Township resident said he is ecstatic about his placing, which was the strongest showing ever for an American chef. “It was pretty intense. I was pretty excited to be second runner up,” he said last week. “I wouldn’t have changed a thing.” Coming in second to Christopher Davidsen was nothing to be ashamed of. “This guy was phenomenal — he was really that good,” Ryan said. A chef from Hong Kong was third runner-up, he said, and, although no award was announced, he said the Swiss chef was probably number four. Each chef and assistant were

Chester Township voters will see four money issues in the Nov. 4 general election, after trustees decided Thursday to place one additional levy and three renewal issues on the ballot. Trustees Mike Petruziello and Bud Kinney voted to declare a necessity for renewal of a five-year, 1-mill road levy; renewal of a five-year, 1.77-mill police levy; renewal of a fiveyear, 1.8-mill fire levy; and a new, additional five-year, 2-mill road levy. Trustee Ken Radtke was on vacation and did not attend the meeting. Each mill yields $347,100 per year and costs the owner of a $100,000 property $35 per year, Kinney said. on road department finances, which he said were “very bleak.” “Let’s think about what we want to invest in our roads as a community,” Kinney said. The township maintains 76.78 miles of roads, including asphalt patching, ditch cleaning, chip sealing, crack sealing, gravel road grading, dust control, shoulder repair, tree and brush trimming, culvert maintenance, signage, mowing, snow plowing and guardrail maintenance.

Chester Chef from page 1 jelled when he won the 2012 National Chef of the Year title at the American Culinary Federation competition in Las Vegas. This boosted him to the Global Chef’s Semi-final Challenge in 20 13, which he also won. That victory qualified him to represent all of the Americas at the July 3 event in Stavanger, Norway. Held every two years, the WACS World Culinary Congress event also featured chefs from Australia, Hong Kong, Italy, Norway, South Africa and Switzerland. None of the final championship judges were from any of those countries, Ryan said. Eight months ago, qualifiers were given a list of the four sponsored ingredients, one for each course: halibut, Wagyu beef, wasabi and tea. Halibut, a light fish, was scheduled for the first course. Wagyu beef — known worldwide for its marbling characteristics and naturally enhanced flavor, tenderness and juiciness — was required in the second course. Wasabi, a condiment that is prepared from the ground, thick pungent greenish root of an Asian herb, was to be included in the third dish and tea was an ingredient in the last dish. He tapped friends, colleagues and people he had trained with to help him develop dishes with the right textures, colors and flavors. “It was kinda artful,” he said, adding the experience was worth all the stress and prep, just because of the opportunity to expand his knowledge. “That’s the neat thing about our business — we never stop learning,” Ryan said. “You can never learn enough.” His efforts weren’t ignored by his employer, The Country Club in Pepper Pike. General Manager Robert Josey said Ryan’s expertise and international visibility reflect well on the club. “Chef Scott puts a tremendous amount of hard work and passion into everything he does and we are extremely proud of his accomplishments,” he said. “The Country Club is celebrating its 125th anniversary this year, and his achievement was a very special addition to our slate of activities.”

West Geauga varsity coach Lou Cirino and West Geauga football players recently hosted a camp for the community. Over 75 youth in grades first through sixth participated. Along with learning football fundamentals, the campers got to meet and interact with varsity football players. All were treated to pizza on the final day of camp.

Ava Thomas recently qualified at the USA Track and Field Regional Junior Olympics held in Charleston, W. Va., to run in four events at the National Junior Olympics in Houston later this summer. She qualified with second place in the 400-meter dash, third place in the 200-meter dash, fourth place in the 100-meter dash and fourth place in the hurdles. ESPN will provide coverage of the event. Ava is a graduate of Saint Anselm School and is a freshman at Gilmour Academy.

Township residents pay about 60 cents of every property tax dollar to the school district, and just under 20 cents each to the county and the township. A small portion goes to the library system and recreation. The township normally resurfaces about three miles of roads each year at a cost of about $20 0,0 0 0 per mile, but trustees, facing a $300,000 general fund deficit, decided not to pave any roads this year. Kinney said without additional funding, the road budget faces a $450,000 deficit in 2015 if the township returns to its usual resurfacing program. The deficit would drop to about $150,000 in 2015 with an additional 1mill levy, would have a small surplus with an additional 2-mill levy, and a $500,000 surplus in 2015 if voters passed a 3-mill levy. The additional money would allow the township to continue its yearly resurfacing program and would keep the department in good financial shape through 2019, the trustees said. “We need to decide whether we’ll go for 2 mills or 3 mills,” Kinney said. “While there is a good business case for 3 mills, I wonder if we can do this.” He said the township can no longer afford to subsidize the road department’s needs with general fund money that is needed to run the rest of the township. “So we’ll break even at 2 mills, but can do no paving unless it’s 3 mills,” Petruziello said. Fiscal Officer Craig Richter pointed out cutting costs is a possible option.

Cottrell Drive resident Mike Paoletto asked what would happen if an additional levy didn’t pass. “20 15 will be extremely tough,” Kinney replied. “There will absolutely be a reduction of service, with no paving and a significant reduction in road repair. There will be more triage on roads that are in the worst condition, and there will be more roads that will be in a fairly aggressively damaged state of repair.” Kinney said he was leaning toward asking for 2 mills, adding with cost management, trustees may be able to get by until 20 16, when they would have to revisit the issue. When he asked Petruziello whether he would support asking for 3 mills, Petruziello answered, “Yeah, if that’s what we need. We don’t want to go two years from now and say we need another mill.” Kinney said he believed 2 mills, with cost management, would be the best approach. “Two mills is fine, as long as we work together to get the costs down,” Petruziello said. In other business, trustees approved a request from the Chester Township Park Board for $12,783 for a variety of expenses, including landscaping, work on a volleyball court, electrical work and employee payroll. “I’m completely in favor of moving forward with these,” Kinney said. Trustees also voted to continue a public hearing until Aug. 7 on a proposed zoning amendment regulating outdoor wood-fired hydronic heaters. Kinney said he would prefer discussing the proposal when all the trustees were present.

New Director of Fairmount Dance Named Submitted Fairmount Center for the Arts is thrilled to announce the hiring of Katie Taylor as director of Fairmount Dance Theater at Fairmount Center for the Arts effective May 23. Katie received her Bachelor of Fine Arts Degree in dance from The Juilliard School in 2010.
