Staycation for History Lovers

t’s hard to travel in any direction in Metro Richmond without running head-long into history. Hence, it would be impossible to put together the consummate weekend getaway for history lovers. Your personal interests would dictate how and where you’d spend such a weekend. But if you asked me how I’d spend my history-filled weekend, here’s what I’d tell you. The first thing I would do is make reservations for the Jefferson Hotel (101 W. Franklin St.; JeffersonHotel.com). “Authentically opulent. Eternally relevant.” I stole that cool description from the Jefferson’s website. Take time to enjoy that opulence, perhaps even sharing drink during Happy Hour in Lemaire, the hotel’s posh restaurant. May I recommend dinner at The Franklin Inn(800 Cleveland St.) on the corner of Cleveland and Franklin. This cozy neighborhood restaurant first opened back in 1930. In 2010, new owners decided to restore the inn to very much what it had been in its heyday. The fare is simple, yet delicious. You can peruse their menu at TheFranklinRVA.com. You may want to spend Saturday morning visiting what may be the city’s number one historical attraction, the State Capitol Building (1000 Bank St.). The Capitol was conceived by Thomas Jefferson and Charles-Louis Clérisseau in France and completed in 1788. Self-guided and guided tours are offered. Go to VirginiaCapitol.gov for details. After leaving the Capitol, turn right and head for the hills. Church Hill, Libby Hill, Union Hill and Fulton Hill are where Richmond was born Walking tours of this historic area are offered by the Valentine, the city’s history museum. Visit TheValentine.org to learn more. Stop in at St. John’s Church. It was here, on March 23, 1775 at the Second Virginia Convention, that George Washington, Thomas Jefferson and other important figures in the American Revolution, listened as Patrick Henry delivered his famous “Liberty or Death” speech. Your next stop is back in Chesterfield. Travel 18 miles and over 400 years back in time to Henricus Historical Park. In September, 1611, just four months after landing at Jamestown, Sir Thomas Dale moved upriver and established the colony’s second settlement , Henricus. Sitting high on a bluff overlooking the Powhatan (James) River, Henricus was much more ideally situated than was Jamestown, and Dale confidently expected that it would replace Jamestown. However, an Indian uprising 11 years later put an end to Henricus. It was never resettled. The recreated 1611 “Citie of Henricus,” serves as an outdoor living history museum with 12 recreated colonial structures. Before heading back to town, take time to enjoy a meal at The Half Way House (10301 Jefferson Davis Hwy.), which was built in 1760. I doubt you’ll fine a more historic restaurant anywhere in the state. As you return to the Jefferson, you may not be thinking about your next meal. But tomorrow I think you should top off your staycation with one of the city’s most spectacular weekly dining events. Feast on the Jefferson’s fabulous brunch. This is one occasion when even the foodiest of foodies smiles at the term “all you can eat.” By the time brunch is done and you’ve checked out of your room, you may want to head home and take a nap, but should you still have a little more explorer left in you, we have a list of recommended attractions below. One thing is certain. By the time you arrive home, you’ll know your family has enjoyed a staycation of historic proportions.

If you haven’t heard of beer can chicken - you’re missing out. This recipe is for busybodies to mimic the delicious taste of this famous recipe with a slow cooker. The ingredients are simple and easy to find in your pantry, but the taste is complex and finger licking good. You can let this beer can chicken simmer all day long, or you can pop it in the slow cooker for a few hours before work or a summer barbeque. No matter what, this dish is sure to be a hit.
INGREDIENTS
12 oz. penne rigate (or, your preferred pasta) 2 cups zucchini 1 cup red peppers 1 cup yellow peppers 1 cup cherry tomatoes (halved or quartered depending on size; a can of drained diced tomatoes can be substituted) 4 oz. extra virgin olive oil 1 clove garlic Salt to taste Black pepper as needed Rosemary 1 tbs. butter 1/2 cup heavy cream (half & half can be substituted for a slightly lighter dish) 1/4 cup freshly grated Pecorino Romano cheese
DIRECTIONS
1.) Wash and dry the peppers, tomatoes and zucchini. Preheat oven to 450 °. 2.) Cut zucchini to bite-sized pieces and season with olive oil, salt and pepper to taste, pour onto one side of a baking sheet; place the peppers on the other side. Place into hot oven. After 15 minutes, turn the peppers and stir the zucchini and continue to cook until the peppers are well browned all around and the zucchini are also cooked to a golden brown color. Remove vegetable from the oven and put the peppers in a plastic container with a tight lid (or tightly sealed paper bag) and let them rest for about 15 minutes. Place baked zucchini in a bowl. 3.) Once cooled, peel and chop the peppers to roughly the same size as the zucchini, place into the bowl with the zucchini and set aside. 4.) Place a large pot of salted water on stove and bring to a boil, then add pasta, cook until al dente. Reserve a 1/2 ladle of pasta water and drain the rest. 5.) In a large frying pan, add the oil and garlic and saute till the garlic is a gold color. Then add the rosemary, peppers, tomatoes, zucchini, butter and cream and cook at a simmer until well blended and the cream has thickened a little. Add the cooked pasta and stir until well blended, using the reserved pasta water to adjust the thickness of the sauce. Adjust seasoning, if necessary. 6.) Serve the pasta with a sprinkle of Pecorino Romano cheese, and a few cracks of fresh ground pepper.
