Personalized Care in a Small-Community Atmosphere “Will you take care of my mother?” That, says Kathie Hathcock, administrator at Hanover Manor, is the number one question asked by families who recognize that their aging parent has special needs that cannot be cared for at home and who seek a facility to provide such care. Hathcock, a nurse for over 40 years, has been at Hanover Manor, an assisted living community located at 809 Thompson Street in Ashland, since it opened its doors in 1992. “When I look you in your eye and tell you that your mom or dad will be taken care of, you don’t have to worry. town. And that’s exactly what makes it the first choice among many area residents. It’s the small-community feel that creates such a close bond that the residents form with one another as well as with a caring, professional staff. Hathcock gives much of the credit to that staff. “Some have been with us since day one,” she says. Most have been here for over ten years. Each member of our staff loves what they do and it shows.” If you are looking for a community where your parent will not only be cared for but will feel welcomed, here are some things you might want to know about Hanover Manor. The facility offers services based on the needs of each resident. In fact, prior to admission, Hathcock will not only take the prospective resident and his or her family on a tour of the community, but will also do a thorough assessment to determine the needs of the individual. “We don’t take a new resident simply because we have a bed to fill,” Hathcock says. “We ensure that we can fully give that resident the care he or she needs and deserves.” The ongoing wellness of each resident is paramount. There are nurses on duty 24/7 and the staff is fully trained to administer all required medications. Medical doctors visit regularly including a podiatrist. Of course other needs are also cared for. Hanover Manor offers around-the-clock care, which includes all meals as well as housekeeping services and full maintenance services. As for activities, Hathcock says there is something going on from about nine in the morning ‘til dinner time each day including weekends. “Bingo is the biggest attraction,” she says, adding that there are several Bible studies as most area churches are very involved. Hanover Manor also offers a dementia facility in its adjacent Alpha House. Hathcock offers some timely advice for any who are beginning to see indications signaling the onset of dementia in a parent. “The sooner you can get them into a routine, the better. The longer one waits, the more agitation the parent is likely to feel.” She explains that as the dementia progresses, the individual becomes more apprehensive when you put them into a new environment where they’re seeing all new faces. At Hanover Manor’s Alpha House, she says, the staff is trained to help maximize the comfort level of the residents. Regardless of the degree of care that your parent requires, chances are that Hanover Manor can provide such care in a friendly, nurturing, small-town atmosphere. One of the biggest assets that Hanover Manor has to offer is its administrator, herself. Hathcock says, “I’m very hands-on. I’m going to be involved in the day-to-day care of your mother or father. IN YOUR HEART, YOU KNOW IT’S MOM: Who around here is old enough to remember Barry Goldwater’s campaign slogan from his 1964 presidential bid? “In your heart, you know he’s right.” Well, I got to thinking about that as I enjoyed some delicious appetizers the other day over at Ya Ya’s Cookbook in Downtown Short Pump shopping center. Mom’s Siam Authentic Thai, located on Cary St. near downtown Richmond, has long been one of my very favorite restaurants. But did you know that Ya Ya’s Cookbook is really a West End version of Mom’s Siam? While the emphasis may be more on Thai street food, the cuisine, the tastes and flavors truly reflect the genius of the woman who, with her two sons, has built somewhat of a local restaurant empire. Ya Ya’s has a cool West End vibe, but basically, you could call it Mom’s Siam West. They have a great bar, too, with excellent and creative cocktails.

THE RIGHT SIDE OF THE TRACKS: I ran into one of my favorite Taste Buds the other night out at The Iron Horse Restaurant in Ashland (100 S. Railroad Ave.). Rusty Stone isn’t just a taste bud, but he’s an amazing chef. We took some out-of-town friends there for dinner. Not only had they never been to the Iron Horse, they had never been in Ashland. They were blown away by both. The picturesque, stately old homes alongside the tracks were especially appealing. As for the Iron Horse, both the quality of the food as well as the Southern hospitality demonstrated by the staff made for a perfect evening. Did you know that the building that houses the restaurant was once the D. B. Cox department store, which, I have been told, was the anchor of downtown Ashland from 1867 to 1955. A visit to the Iron Horse really makes for a quaint, historic and tasty little getaway.

KREGGERS TO GO: I had a chance to sit down and speak with Craig Eberle the other day. Craig and his wife Vanessa own and operate Kreggers Tap and Table at 9523 Kings Charter Dr. south of Ashland. I’ve always enjoyed the food, there, as well as their really cool, spacious outdoor patio dining space. But the menu has recently been updated just a bit and it truly is looking better than ever. As a burger sort of guy, I’ve always opted for their huge half-pound Classic Burger. I have never tried their smoked wings, but that’s next on my list. They have a sandwich on the menu that also sounds exciting. It’s called Swamp Thing and includes Applewood smoked ham, fried gator, “nanner” peppers, pepper jack cheese and remoulade aioli, all served up on a hoagie. But here’s the big news, especially if your daily affairs take you into Carytown or the Fan. Kreggers is on the move. The Eberles have just opened a new spot called Kreggers at Hand at 2614 W. Cary, just east of the Boulevard and Carytown. Lexi Johnson, who handles the marketing for both Kreggers, describes the new place as being very much like the existing restaurant “but with a Bohemian vibe.” The brick interiors at the Cary Street location create a warm, nostalgic feel. Craig hinted at the possibility of still more expansion in the future but, for now, he says, he and his wife are concentrating on the two existing restaurants. INGREDIENTS 1 cup all-purpose flour 1 cup old-fashioned oats 1 cup dark brown sugar ½ cup chopped almonds 1 stick (1/2 cup) unsalted butter, softened and cut into pieces 1 stick (1/2 cup) unsalted butter 1 vanilla bean, split lengthwise 6 medium-sized Granny Smith apples, peeled, cored, and very thinly sliced 1/3 cup dark brown sugar 1 tsp. cinnamon 1 tbsp. bourbon

PREPARATION

Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan. To make the topping: Combine the flour, oats, brown sugar and almonds in a large bowl until well-combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. (Alternatively, you can cut in the butter with a pastry cutter, or place all of the topping ingredients in a food processor and pulse until just blended. My favorite method is to use my hands, as I believe you get the best crumbly topping that way.)

Once finished, place topping in the fridge and begin making the apple filling. To make the filling: Place butter and seeds from the vanilla bean in a medium saucepan, and turn heat on medium. After a couple of minutes the butter will begin to crackle and foam—make sure you whisk consistently during this process! Another minute or two, and you will notice the butter turning a slight brown (caramel) color on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to give off a nutty aroma. Immediately transfer the butter to a bowl to prevent it from burning. Set aside to cool for a few minutes. While the butter is cooling, place apples, 1/3 cup brown sugar, cinnamon and bourbon in a large bowl and toss to combine. Add the brown butter to this apple mixture and toss again to combine. Take a heaping ½ cup of the topping mixture and toss with the apple mixture. Place the apple mixture in prepared pan and sprinkle evenly with topping. It may seem like a lot of topping, but the apples will cook down and the topping will provide an excellent crunchy exterior.

Bake the crisp on a baking sheet (just in case the filling bubbles over!) for 55-60 minutes, or until topping is golden brown and filling is bubbling. Remove from oven and cool 10 minutes on wire rack. Serve warm with vanilla bean ice cream. Try using different nuts instead of almonds, and try it with a drizzle of caramel on top!
