The Dining Room showcases chef Niall Keating’s modern British cuisine with French, Japanese and Korean influences. THE VINYARD, BERKSHIRE

Chef Tom Scade was appointed executive chef at The Vineyard after relocating from The Ritz in 2019. At the hotel’s main 80-seat restaurant, modern European dishes (top left) combine classical techniques with seasonal British produce. The dual level restaurant leads on from the hotel’s art-filled bar. The hotel’s main focus is wine, and oenophiles will enjoy the expertly picked pairings from head sommelier, Romain Bourger, who won Taittinger UK Sommelier of the Year in 2019.
