The Four Corners is a region of the United States consisting of southwest Colorado, northwest New Mexico, northeast Arizona and southeast Utah. Summer is not the time for super rich, warm desserts. It’s the time for ice cream and all variations of desserts that can be served cold.
Preheat oven to 350 degrees and prepare an 8x8, 9x9, or round 9” pan.
Now is the time for all of those poke cakes, jell-o cakes, and trifles.
For a larger cake, such as a 9x13, double the ingredients.
Personally, these are my favorite kinds of sweet treats. I also have a soft spot for the dessert combos such as warm apple crisp and cold ice cream, but there’s something about cold dessert, especially when it’s already warm outside. It’s refreshing, and it doesn’t feel like you just ate double the amount you just had. Does anyone else feel like that when eating something like a cookie in the heat? It just isn’t worth it. Recently, we had some friends over, and with the weather surpassing the 80-degree mark, there was no question about whether to serve something warm or cold. This recipe requires minimal oven usage, and also a minimal amount of time. It could also be considered a buy-one, get-one recipe, or, ‘BOGO,’ as this calls for a prepared homemade chocolate cake as well. The chocolate cake recipe that will be included tastes fantastic cold, warm, or in between. It can be topped with other things such as chocolate frosting, powdered sugar, or completely solo. The chocolate cake recipe below was passed along to us by a reader, and this is the best chocolate cake recipe ever! How can I say this? Because I don’t even like chocolate cake, but this is delicious. As always, thanks for reading, and happy summer from hbk!
In a medium mixing bowl, whisk together the dry ingredients. Cookies & Cream Poke Cake INGREDIENTS 1 prepared 9x9 chocolate cake 2 C. whipping cream 1 ½ C. powdered sugar 1 tsp. vanilla extract 1 C. cold milk 1 box vanilla pudding mix 1 C. crushed Oreo cookies Prepare the cake according to directions below. Immediately after pulling from the oven, poke holes using a fork or straw, all over the cake. In stand mixer, mix whipping cream, powdered sugar and vanilla until peaks begin to form. This will take about 3-5 minutes on medium speed. Do not over mix! Also using a stand mixer, combine the one cup of cold milk and pudding mix. Best on medium speed for 2 minutes, then let sit for 5 minutes. Fold the pudding mix into the whipped cream until well combined. Spread on top of the cake, pushing down, so the holes are filled in.
Combine the egg and vanilla in a small bowl, whisking quickly with a fork. In a medium saucepan, bring the water and butter to a boil. When the water mixture reaches a steady boil, remove from heat and dump into the dry ingredients immediately. Mix for about 10 seconds, then add the egg and vanilla. Mix for about 30 seconds on low to medium speed, cleaning the sides of the bowl with a spatula. No need to over beat. One of the best things that I discovered about this recipe is that you can absolutely make this by hand. While a stand mixer or hand mixer would make this quickly, they are not necessary. This means quick and easy cleanup! This batter will be runny. Pour into prepared cake pan. Bake for 32 minutes. Yes, exactly 32 minutes here and we passed the toothpick test!

[Jamestown, NY] – Nine Fletcher Elementary School third and fourth graders were recently honored with awards through Chautauqua Institution’s Young Playwrights Project. Jessi Hunter, Brynn Ribbing and Giovannie Jackson’s plays won the project and were performed by the Chautauqua Theater Company. Camren Randolph, Gina Delgado, Isabella Smith, Luke Hansen, Veronica Short and Ava Lanphere’s plays were honorable mentions and received a medal and ribbon. Chautauqua Institution partners with Florida Studio Theatre to present an interactive, three-part playwriting project for area third and fourth grade students from Chautauqua Lake, Panama, Jamestown, Ripley and Westfield Elementary Schools. “It was truly inspiring to see hundreds of young playwrights pour off of buses and into Chautauqua Institution on Monday,” said Deborah Sunya Moore, Vice
President of Performing and Visual Arts at Chautauqua Institution. “These young playwrights delighted in seeing the ten winning plays as presented by the Chautauqua Theater Company. A boy’s unemployed mother got a job and was able to buy her son a basketball hoop, smelly gym shoes came to life, war enemies found understanding and a small foal overcame her fears and grew her heart to be brimming with confidence. It was a wonderful day!” “We are so proud of our students,” said Fletcher Elementary School Principal Maria DeJoy. “We are also so thankful to Chautauqua Institution for this opportunity for our students to learn from a professional theater group about how to write a play and to visit Chautauqua Institution. We are always looking for interesting ways to help our students learn writing skills and this project is so exciting for them in so many ways.” In the first stage of the project, teaching artists visit every third and fourth grade classroom at each school to guide students through the process of writing a play. During the second stage, students and teachers take a winter field trip to Chautauqua Institution where community and staff volunteers read each student’s play aloud. Awards are given during a closing reception to celebrate each student’s efforts and creativity and recognize winning plays. The third phase of the program sees the winning plays published online by Chautauqua Institution as well as performed at Chautauqua Institution at the end of June. “It was so interesting to go to Chautauqua and see my play performed,” said Fletcher Elementary School fourth grader, Jessi Hunter who wrote the play Mr. Shark and Lucy. “I didn’t know what they were going to do with my words and they made the mom meaner that I thought it would be! It was very exaggerated but really cool to see. We also got to visit the art gallery, have lunch and eat ice cream. It was fun.” The public was able to see the plays at Smith Wilkes Hall, Chautauqua Institution. The production was part of the FREE Family Entertainment Series.

At the launch on July 26, Terreberry will be there to discuss what he calls “his ongoing adventure in writing.” There will be books available for purchase which Bob will be glad to sign. The event will take place from 6:30 until 8:00 with a brief discussion beginning at 6:45. Light refreshments will be served. MIDWAY STATE PARK
Midway State Park, located in Maple Springs, New York, was established in 1898 by the Jamestown & Lake Erie Railway as a picnic ground. Today, it is recognized as the fifteenth-oldest continually operating amusement park in the United States, and the fifth-oldest remaining trolley park. At its origin, Midway Park offered a baseball field, dance pavilion and dining hall, and a sandy beach for bathing. Today, the park uses the original picnic shelters with several more modern additions. The concession building was built in 1915 and still houses the refreshment stands, as well as the Carousel Museum and roller rink. In 1951, the park was purchased by Martin "Red" Walsh, and was later operated by the next generation of the Walsh family, Michael and Janis Walsh, affectionately known as Mr. and Mrs. Midway to the staff and "park regulars." After the 2006 season the park was transferred into the New York State Parks system. Several notable people have visited the park since its opening, including Franklin D. Roosevelt Jr., Lucille Ball, and Jack Paar, former host of NBC’s The Tonight Show. In 1960, the Glenn Miller Orchestra conducted by Ray McKinley played at the park. It was added to the National Register of Historic Places in 2009, as a national historic district. Its 44 acres encompasses 12 contributing buildings, one contributing site, and one contributing object. They include the Lakeside Pavilion (1915), arcade (1930), carousel (1948) and shelter (1924), park office (c. 1950), ice house (c. 1900), owner's residence (late 19th-century), Pavilion 1 (c. 1900), Pavilions 4 and 5 (c. 1920s), and a number of kiddie rides, many of which were built by the Allan Herschell Company.

Here are some facts you may not know about these cheerful blooms of spring. • The daffodil is also known as Jonquil, Narcissus, Paperwhite and the ‘Poet’s Hower’. • Narcissus is a classical Greek name in honor of a beautiful youth who became so entranced with his own reflection that he pined away and the gods turned him into this flower. • Squirrels will not eat daffodil bulbs, the bulbs and leaves contain poisonous crystals which only certain insects can eat with impunity, so don’t plant where dogs like to dig. • Daffodils contain a toxic sap which is harmful to other flowers. When arranging in a vase don’t mix with other flowers unless the daffodils have been soaking in water for 24 hours. Do not recut the stems as it will re-release the toxin. • The daffodil is the flower for March. • The Romans, believed the sap from these flowers had special healing powers. • In the Victorian days, Daffodils represented chivalry. Today is represents hope. • The daffodil is the national flower of Wales. • In Wales, it’s said if you spot the first daffodil of the season, your next 12 months will be filled with wealth. • Chinese legend has it that if a daffodil bulb is forced to bloom during the New Year, it will bring good luck to your home. • The Daffodil is the 10th wedding anniversary flower • A gift of daffodils is said to ensure happiness. • Always remember to present daffodils in a bunch – the same legends that associate this cheerful flower with good fortune warn us that when given as a single bloom, a daffodil can foretell misfortune.

The July 26, 2018 performance of the 2018 Entertainment in the Park Summer Concert Series will feature the traditional country sound of the band ‘Rustic Ramblers’. Taking place at Lakeside Park located on the shores of scenic Chautauqua Lake in the Village of Mayville NY, the concert will be held from 6:30 – 8:30 p.m. The Rustic Ramblers truly appreciate the traditional country music that America has always loved. Members of the band are Howard Buck, from Fredonia NY, on lead guitar and lead vocals; Jimmy (Frito) Lanphere, also from Fredonia, on bass guitar and vocals; Dave Bailey, from Hartfield NY, on drums and vocals; and Gene Hilts, from West Valley NY, on peddle steel guitar. The group has over 200 years combined experience in performing traditional country music. Rainbow the Clown (Jerry Stimson) will also be on hand to entertain the children with face painting and balloon sculptures. The Entertainment in the Park concert series is provided at no charge to
the public through the generous sponsorship and support by the Town of Chautauqua and Village of Mayville. In case of rain, the performance will take place at the Carlson Community Center also located at Lakeside Park, Mayville. Remember to bring your own seating to the outside performances. A 50/50 drawing will be held at all of the musical concerts this summer, with the winner announced just before the end of each performance. The Maple Springs Fire Dept. will be offering BBQ dinners for sale at the concerts for the benefit of their fire department. The Mayville Fire Dept. will also offer popcorn and water on a donation basis during the concerts benefiting their fire department. Jefferson 5th Graders Donate $725 to Mental Health Association

[Jamestown, NY] – Jefferson Middle School fifth graders in Gina Hess’ class raised $725 for the Mental Health Association (MHA) at The Gateway Center in honor of Mental Health Awareness Month in May. Students sold green slime and squishies after school hours. In addition, students held a Walk-a-Thon at Strider Field to raise money. Students also created posters promoting Mental Health Awareness and provided wellness tips during the morning announcements. “We are appreciative of the hard work and dedication it took to put this together,” said Ken Yergens from the Mental Health Association at The Gateway Center. “We are also appreciative of the efforts to educate our young people as to the consequences of addiction and mental health related problems. This clears up some of the myths and cultivates a greater level of understanding.” The students understand the importance of giving back to their community. “It’s nice that our little classroom community can help a community organization, such as MHA,” said Mrs. Hess. “Students better understand the differences and struggles of others. I am extremely proud to be part of a culture that strives to be compassionate and understanding.” “It is important to help people with invisible illnesses,” said Jefferson fifth grader Cayden Thorn. “It is important for us to do it because we need to give people a way that they can help themselves get through tough times. This helped me become a better person.”

Another Successful Year for the LECOM Health Challenge While bringing outstanding golf to an exceptional course is a worthy goal, the real goal of the Chautauqua Regional Economic Development Corporation is to help drive economic growth through an outstanding event. In that way, the PGA-sanctioned 2018 LECOM Health Challenge can only be dubbed a true success. Thousands of people, many of whom have never or seldom visited Chautauqua County before, came to watch the Web.com Tour event at Peek’n Peak. Hundreds of thousands of others watched live coverage on the Golf Channel, putting our great county in the living rooms of golf fans worldwide. The efforts of so many people, from organizers to sponsors to the more than 300 volunteers, are instrumental in helping to shine a spotlight on our region. We congratulate all of them! We were fortunate to share the Explore Chautauqua County tent with the Chautauqua County Visitors Bureau and the Jamestown Renaissance Corporation, where we were able to talk with hundreds of people to provide them with a glimpse of the additional amazing attractions, recreational opportunities, and other points of interest right here in our own backyard. It’s amazing how many people from nearby communities have sampled only small portions of what Chautauqua County has to offer. Thanks to these efforts, we expect them to branch out into all of our villages, cities, and towns. We are certain the winner of this year’s tournament, Nelson Ledesma of Argentina, will always remember Chautauqua County as the location of his first ever win on the Web.com tour! The tournament’s Small Business Award went to Stuart Tool & Die of Falconer and was accepted by P. J. Degnan during closing ceremonies. Doug Mahany of Putnam Record Insurance accepted a Veteran’s award in memory of his late father, Rowland, a US Navy Veteran. The LECOM Health Challenge is an important event to our region bringing people and dollars into our economy and promoting Chautauqua County on the national and international stage. LAKEWOOD, N.Y. – The Chautauqua Lake Dragon Boat Race scheduled for August 11 is officially full with 32 teams slated to compete for this year’s championship. The event has been running since 2016 and has grown in popularity each year. The dragon race committee would like to remind the community that vendor spaces and sponsorships are still available for one of the area’s fastest growing events. “Originating in Southern China over 2,000 years ago today, dragon boat racing is the fastest growing team water sport,” said Heather Nolan, dragon boat committee member. “the event is the only one of its kind in the area, especially on Chautauqua Lake,” said Nolan. Distinguished by their ornate figureheads, dragon boats are rowed competitively throughout the world. A dragon boat seats 10 or 20 paddlers with a steersperson standing in the stern to guide the boat and a drummer in the bow to motivate the team and to keep the paddlers in synch. Crews participating in the Chautauqua Lake race do not require prior experience and a steersperson is provided along with training before the scheduled race day. Participants simply need the desire to enjoy a friendly, team building athletic competition. Other features of the Chautauqua Lake Dragon Boat Race include a rubber ducky fundraising race, craft vendor fair, food, prize raffles, and new for 2018 is the best dressed and most interactive drummer. “Though the race itself is full, we are seeking vendors to participate. If you are interested in participating, please visit our website, fill out the application, and submit it with your payment to address listed,” said Nolan. (Jamestown, NY) - The first annual Canoe & Kayak Poker Run presented by the Northwest Arena and Evergreen Outfitters is coming to Jamestown on Saturday, July 28 from 9am-3pm. The event is sponsored by Smith Boys of Chautauqua, Media One Group, Landmark Chevrolet, and the Jamestown Cycle Shop. The Canoe & Kayak Poker Run will feature a day full of paddling, snacks, prizes, and more. The adventure begins at McCrae Point, with sign-ins available between 9-11am. Participants will collect cards as they make their way up to Celeron’s Lucille Ball Memorial Park and back to McCrae Point for a 12pm party and the 3pm prize giveaway. JAMESTOWN, N.Y. --- The Robert H. Jackson Center, a non-profit dedicated to promoting liberty under law through the examination of the life and work of Supreme Court Justice Robert H. Jackson and its relevance to current events and issues, is making preparations for a program and exhibit honoring the life of the late Jamestown native Charles E. Goodell, a former U.S Senator from New York and Congressman representing New York’s 38th and 43rd congressional districts. Jackson Center President and CEO Susan Moran Murphy made the announcement. An inaugural event will take place at the Jackson Center, located at 305 E. 4th Street, on Sunday, August 12. It will begin with a tribute program at 4:00pm, followed by a public reception and viewing of the exhibit, entitled “A Model for Courage: The Life of Charles E. Goodell.” “The Jackson Center is excited about this opportunity to debut the first extensive exhibit honoring the life of Charles Goodell,” said Murphy. “We are extremely grateful to the Goodell family for their assistance in this project and look forward to sharing it with our Jamestown community. The exhibit will, undoubtedly, continue to inspire all who visit the Jackson Center from across the region and around the world.” September 10th marks the 50th anniversary of Goodell’s appointment to the U.S. Senate to the fill the unexpired term of Robert F. Kennedy who was assassinated in June 1968. Prior to his appointment, Goodell had served as a U.S. Congressman representing the Jamestown area since 1959. Goodell made headlines as the first U.S. Senator to propose legislation calling for the withdrawal of troops from the Vietnam War, ostracizing him from many of his fellow Republican Party members. President Richard Nixon refused to endorse him, instead subtly supporting Conservative Party candidate James L. Buckley, who defeated Goodell and Democratic challenger, Richard Ottinger in a three-way race in 1970. He returned to public life in 1974 as chairman of President Gerald R. Ford’s Clemency Board. Upon his passing in 1987, then Sen. Daniel Patrick Moynihan remarked, “I have not known a finer member of Congress.” Goodell’s legacy lives on today through his five sons, including Jackson Center board member Timothy Goodell and NFL commissioner Roger Goodell. “On behalf of our family, we are so thankful to the Jackson Center for honoring our father, Charles Goodell,” said Timothy Goodell, who serves as senior vice president, general counsel and secretary of Hess Corporation. “Our father had great respect for Justice Jackson and it has been our pleasure to assist in connecting their shared hometown legacies.” “Our dad dedicated his life to public service and to the people he represented,” said Roger Goodell, who has served as Commissioner of the NFL since 2006. “At a very young age, my four brothers and I learned the importance of integrity, character, and standing up for what is right, no matter the cost. His legacy continues to inspire us all to this day and we are looking forward to the event on August 12.” Admission is free for the program and reception.
