Beetroot and trufFLe soup with pickled beetroot and goats cheese salad Trying to come up with a dish that was easy to do at home, but still packs a lot of flavour and looks really cool, wasn’t the easiest thing to do. However, I think this lovely Beetroot soup, when put together with some love and quality ingredients, ticks both of those boxes. I travelled to Selfridge’s in London to get my mushrooms and other bits and pieces because I strongly feel that using the best ingredients bring out the best in food. But you don’t have to, most supermarkets these days stock really lovely products. Here, I have pickled some beetroots and a couple Girolle’s for extra flavour, but you can just use one type of mushrooms out of the ones you managed to get a hold of.

450ml White Wine Vinegar, 250g Water, 220g Caster sugar, 3 Bay leaves, 4 star anise, 6 cloves, 1kg Red Beetroot, 1.2kg Tomato passata, 800g Mushrooms, preferably wild, 20g Rosemary, 20g Thyme, 15g Anchovies, 15g Goats cheese, 2 Tablespoons truffle oil, Olive oil , 1 Loaf of sourdough bread Cooking Time: 55 mins Preparation time: 10 mins.

Preheat your oven to 200’C. Begin by making your pickle liquor, put the water, sugar, bay leaves, cloves, star anise and 400ml white wine vinegar into a saucepan and bring to the boil. Allow to boil for 5 minutes until it has reduced by a third and become slightly thicker then take it off the heat. Allow to cool. Using a mandolin or sharp knife, slice one large beetroot and place slices into the pickle liquor, in a different container, place a small handful of mushrooms into the pickle liquor, to cover. Leave for at least 3 hours to pickle. The longer the better.

Clean your beetroots very thoroughly and place on a baking tray with a few sprigs of rosemary, thyme, olive oil, salt and pepper. Bake in the oven for 40-45 minutes, until soft. You can keep the beetroot leaves for a nice salad.

In a large saucepan, put the passata, the remaining sugar, anchovies, rosemary and a splash white wine vinegar and allow to simmer until reduced by half and become deeper flavoured.

Take this opportunity to clean your mushrooms and prepare everything you need for the soup’s garnish. Using a paintbrush and ice-cold water, remove all of the dirt off of the mushrooms until clean and vibrant in colour.

Once the beetroots are cooked, remove the skin by using some tissue or a cloth, scrape down the sides until only beetroot flesh remains.

Chop until smaller pieces and blitz with 2 tablespoons of olive oil in a food processor until a dark red puree is formed. You can do this in smaller batches if your processor isn’t large enough.

Remove any rosemary stalks from the passata and combine with beetroot puree in the food processor whilst blitzing. Blitz for 5 minutes or until smooth. Finish by pushing the soup through a fine sieve until only an even smoother soup is achieved. Put 2 table spoons of Truffle oil into the soup, season. Put aside.

In a large frying pan, melt a small knob of butter and very quckly saute your chopped mushrooms (try to chop mushrooms into similar size pieces otherwise some will cook more or less than others.) Throw in the tarragon, leaving some to garnish with, stir and take off the heat.

Onto your piece of bread, toasted lightly, place delicately the pickled beetroot slices, pickled mushrooms, and mushrooms, scatter the goat’s cheese over the top and finish with watercress. Place delicately over the top of the soup. Enjoy.

OCTOBER CHEF’S CORNER Recipe from DAN ROONEY At 18 years old, very few people have an idea of what they want to do with the rest of their lives but Dan Rooney is not your average teenager.

Cooking, a passion that started as just a hobby, became Dan’s ‘dream come true’ when he started working for TV chef and restaurateur Luke Thomas aged just 16. The young chef’s career was off to a very good start, and in a few months he was leading the kitchen team at Luke’s Dining room at Sanctum on the Green set in Royal Berkshire.

Within a short space of time he was approached by The Individual Restaurant Group, working for the established Marlow Bar & Grill in Buckinghamshire, yet again within just a few weeks he found himself running the kitchen pass during busy services and being offered the Junior Sous Chef position.

Now still just 18, Dan is working full time at Jamie Oliver’s celebrated London venue Barbecoa serving top-quality food to up to 650 people a day. Dan had gone to Barbecoa for work experience where after 2 days of showing what he can do, was offered a job by the Chef Director saying that he could ‘’Make a piece of toast look beautiful.’’ But he is far from content and keeps busy with exciting side projects.

Q. How did you get into cooking?

A. I’ve always loved being around food, the smells, the many different flavours, the way it can bring people together, I remember cooking with my uncle and my dad when I was much younger at their house and then I’d go home and recreate what I had enjoyed with them and share it with my mum and my older brother. However I had never thought of being a chef as a boy, it was a more of a hobby, a guilty pleasure, until after approaching my dad whilst i was doing my A- Levels about studying professional cookery at a catering college where he told me that the best way to learn was to just get involved, so thats what i did. I was given the opportunity to be trained

by Luke Thomas at LukesDiningRoom and I don’t believe I would be where I am today without that experience and knowledge that he passed down to me.

The Princes Centre’s Jinglers choir recently gave a very enjoyable concert at St Mary’s Church and this raised £250. If you haven’t had the pleasure of attending one of their concerts, you have missed a treat.

Their enjoyment of singing is very infectious.

We have recently received a number of generous donations, including a very large one from an anonymous donor, and sizable ones from St Mary’s Church, Dennyside Bowling Association and Risborough Cares Charity, which is now closed. Longwick Ladies Bridge Club, Banjovi Revival and the Black Dog Bands, and our other stalwart supporters, along with the collection boxes from the Bird in Hand Public House and Longwick Village Shop have all helped to boost the funds. The trustees continue to be amazed at people’s generosity and are very grateful.

Trustees have met with their architect to discuss the next project, which includes major restructuring of the roof above the Lower Hall.

More details will follow once plans have been drawn.

It will now take us a while to accumulate enough funding to get this project underway but we have submitted some applications for grant funding in the hope that we may secure some financial help, although there is much competition for grants and we are not situated in a ‘deprived area’. If there is anyone reading this who has experience in grant applications and would be able to offer some advice it would be very warmly welcomed.

The game against the Evo Stik Southern Division One side was played in front of Risborough’s largest ever crowd but despite the support Rangers came away second best. The first half was pretty even but Aylesbury took the lead in the 22nd minute when a shot close in found its way into the net. As the second half started, Aylesbury’s fitness and quality proved too much and Aylesbury scored a second goal in the 52nd minute after a superb passing move which resulted in an exquisite finish.

Aylesbury wrapped the game up twenty minutes from time when they were awarded a penalty which was duly converted to help put the visitors through to the next round. The match received huge Media attention not just locally but also Nationally including Managers interviews on Talk Sport Radio, article in the Sun newpaper, and a nice piece for the club on Meridan Sport (ITV ) from home town girl and presenter Sarah Gomme. Full coverage of the game was filmed by Bucks TV and you can purchase DVDs of this historic day for a cost of £6.99 on line from this company. Risborough have enjoyed their first experience in the FA Cup, and Stephen Burnett the club press officer would like to thank everyone that came down in their droves (approx 400) to their home ground “Windsors” to support the local team. Ingredients Required: 4 cups marshmallows 6 cups Rice Krispie cereal 3 tablespoons butter Green food colouring Edible candy eyes Gauze Bandage (Decoration only! DO NOT EAT!) Skull cookie cutter Step 1 In large saucepan melt the butter over low heat.

Step 2 Add marshmallows and stir until completely melted.

Step 3 Remove from heat.

Step 4 Add a few all-natural green food colouring drops into the mixture and stir until evenly coloured.

Step 5 Add cereal and stir until well combined.

Step 6 Using baking paper, evenly press mixture into a greased baking tray.

Step 7 Allow to cool for 10 minutes.

Step 8 Cut out skull shapes with the cutter.

Step 9 Decorate bite with gauze around each bite and place the eyes on.

Step 10 Once everything has set ENJOY!!!

We find that squash is a great sport for getting kids active more regularly because it can be played every day at a time that suits. It suits kids that like computer games and maths as well as those who like to throw, kick or generally run around.

Racquets Fitness Centre is now offering squash lessons nearly every day of the week.

Depending on age and skill level there will be a few sessions a week where the kids of Thame can learn this great sport. On every other day the kids can come down to the club and play on their own or with their friends. Come down and have a chat with Simon or Sue about the opportunities for your child.

Every day of the week at off peak times the kids who have reached the age of 11 can also use

the CV (cardio vascular) gym. After school until 5pm and on the weekends from 12noon for the rest of the day the kids are welcome in the gym.

We also have a variety of other activities for the kids here at Racquets including dance for every age from 2 ½ through to older teens, karate and for the over 16s there are all the fitness classes including yoga and pilates, circuits and fitball.

LOCAL SCOOTER CLUB RAISES £1,000 FOR DISABILITY FOOTBALL TEAM The Double Diamond Scooter Club, based in Princes Risborough, presented a cheque for £1,000 to Risborough Rangers Junior FC Pan-disability team at the recently-held Kop Hill Climb.

“At our annual Weekend Charity event we wanted to raise money for a local good cause and the recently formed RRJFC Disability Team of boys and girls was unanimously chosen by our members, “ said Chairman, Frank Smith.

The Scooter Club was formed in 2011 around a group of like-minded people with a passionate interest in vintage Lambretta and Vespa scooters. Their annual mini-festival, held in Towersey, is focused on raising money for good causes and provides a great atmosphere with on-site camping, music, food etc.

The sum raised is a measure of the generosity of the scooter-world.

“This team of boys and girls aged 7-11 captured the imagination of our members and we are looking forward to our continued support throughout the year, in seeing the opportunity to play football being made available to as many children as possible who have hitherto not been involved in football because of a physical or learning disability,” said Vice- Chairman, Darren Saunders.

On hand to accept the very generous cheque was Team Patron, Mike Bushell, the BBC Sports presenter

together with team members and their families, team coaches and RRJFC Chairman, Andrew Quigley.

“We are very grateful to the Double Diamond Scooter Club for this magnificent sum that will benefit the Pandisability team and its future development. With their agreement, we are initially purchasing rain jackets for the team which will be particularly beneficial in the winter , “ said Team Coach & Manager, Andy Forkgen.

‘Pan-disability’ in footballing terms refers to individuals with different disabilities all participating together. Unfortunately it does not include those who are blind or in a wheelchair. It is those players who are not able, in the most part, to actively engage in ablebodied football.

The majority of participants may, for example, have learning difficulties, are on the autistic spectrum, may have some hearing or sight impairment, may have Downs or Tourette syndrome, dwarfism (restricted growth condition), may be an amputee with or without a prosthesis, as well as other impairments that impact on their sporting performance.

The RRJFC Pan-disability team for boys and girls aged 7-11 trains every Saturday morning from 9.15 - 10.30 am at the Indoor Sports Hall, The Community Centre, Stratton Road, Princes Risborough, Bucks. HP27 9AX. COME ALONG FOR A FREE ‘TASTER’ SESSION.
