Bring a pan of water to the boil for later, the deeper the better. Season.

Place 1Tbsp of oil in a pan with the bacon, cut into lardons, place the bacon in when the pan is cold, the gradual heat will help release the natural fats and make the bacon super crispy.

Throw 6 sage leaves in as well this will flavour the fat and go crispy. Once the bacon and sage is crispy, remove with a slotted spoon, leaving the fat sizzling away.

Shallow fry the chopped whole scallions, a thumb size piece of ginger (cut into equal size matchsticks) and 2 cloves of garlic until browned, add the mirin and sweat out the alcohol, followed by the soy sauce and the veg stock. After your broth has reduced a little bit, and 8 of the scallops, diced. Not searing the scallops allow all of the juices to come running into your broth.

Toss in a large handful of coriander. The noodles take just two minutes to cook so time this with cooking your egg and searing two scallops to garnish.

Place each egg in a ramekin and drop them into the pan of simmering water, to poach, the eggs might take up to 3 minutes, but you can tell when the yolk is still runny but the whites are firm.

Spinning the water like a whirlpool sometimes helps. Put the noodles into the broth at this point. Also put the crispy bacon back in. Get another pan hot and melt a knob of butter into it, season one side of the scallops and place down into the pan.

Leave until you can see the bottom has caramelised, then flip and repeat that process, toss and nappe scallops in the melted butter then remove once cooked. Now the eggs are cooked, the noodles are ready and the scallops are cooked.

Place some spinach in each bowl, pour the ramen in, drop the eggs in the middle, place the mushrooms on top, a sliced scallop on each, and scatter the crispy sage. Garnish with fresh crab meat and coriander cress. Prick the egg so the yolk runs out. Grab your chopsticks and a wooden spoon and dig right in.

Scallop and Bacon Ramen with Crispy Sage, Enoki and an oooozy Egg After starting work at SushiSamba with Claudio Cardoso, my eyes have been opened to the delicate flavours that make up powerful Japanese dishes packed with goodness. The good thing about Ramen is that you can go with any flavours, meat or fish you like, this one in particular is inspired by a Scallop and Bacon butty that I had at Billingsgate Fish Market. I really do urge you to try this one, for me this is comfort food, it’s easy to do and you can do over and over again and never get tired. I recommend using a Wok but you can use a deep frying pan.

Budget

It’s common sense that your budget will impact the amount of work you can do on your kitchen, but don’t be put off by having a small budget. A change of doors, a lick of paint and some new handles can make all the difference to an unhappy kitchen.

Light

Light can be a big issue in a kitchen, and overhead lights often won’t cut it, especially during the long gloom of a UK winter.

Wall cupboards can also reduce light on work surfaces and create a more closed in feel. Under-cabinet lighting can help your wall cupboards create light down on worktops, giving you greater incentive to get cooking.

Power

The increasing amount of gadgets available for use in the kitchen has meant that some older properties don’t have enough power points to support everything in use. If you need more power, try adding a double plug for every work surface. If you’re stuck with what you have, your kitchen design should revolve around making the best use of those power points and ensuring you have plenty of workspace available to play with.

Colours

The colour you choose for the floor, walls and cupboards can be seriously impacted by the use of the room. Is your kitchen the main thoroughfare from the backdoor, used by muddy pets and children alike? White may not be your best option, especially when the dog shakes after a rainy day. We are e: hello@mp-printers.co.uk very grateful for the help received from many volunteers in December including a number from the Nationwide Building Society and Lucy, the Community champion from Tescos. The new heating system which was recently completed ensured a pleasantly warm temperature for all.

Recently the trustees were delighted to hear from Heart of Bucks [formerly known as Buckinghamshire Community Foundation] with the news that they have approved a grant of £5,000.00 towards the costs of this project. The trustees and other volunteers who work tirelessly towards the goal of providing a building which is fit for purpose for the clients are extremely grateful for this wonderful show of support.

A recent viewing of the new boiler and the associated equipment was quite an eye-opener. The project has been undertaken with thought for the long-term future in that it allows easy replacement of the boiler when it’s life is over at much less expenditure.

There has been a problem with part of the roof due to the recent winds but this has been rectified. The renovation of the patio area is in progress at the moment. We are all hoping that the aging bus will behave itself and that we may be fortunate to receive a grant from Wycombe District Council to replace it. We will know more in February.

The staff will be holding another popular Quiz and Bingo evening on Friday April 8th, doors opening at 7pm. The cost is £10 and includes a meal.

Please support this fundraising activity by putting the date in your diary and ringing Kim to book a table for you and your friends [up to 8] to come along and take part.

The Tesco collection, held in December, raised a magnificent sum of nearly £700.00 which, with gift aid, will be 25% higher. Some customers were entertained by the Jinglers and others by Aunt Sally’s Delight, a small band who donated their time to encourage people to dip into their pockets.

Many thanks to the volunteers who gave their time and to everyone who contributed towards the success of the day.

Over the Christmas period, generous donations have been received from Monks Risborough Parochial Charity, Princes Risborough Charity, the Owlswick Carol Service at St Dunstan’s, Longwick Evening Women’s Institute, TSB Bank, Black Dog Band and Banjovi Revival, another in memory of a client, and others, some as one-offs, some through My Donate, and others from our stalwart supporters who continue to donate via standing orders. The trustees continually comment on the wonderful support received from the local community and are very grateful for everyone’s generosity. These donations will be put aside towards our next project which is the reroofing of the Learning and Development area and internal restructuring. The restructuring is required to accommodate an internal wheelchair lift, which is limited to a particular area so as to enable wheelchair users to access both halls.

It will also provide more space for the clients with various disabilities.
