Asanavidexploreroffood,I’vehada goodtasteoftheworld;fromescargot totruffles,durianfruittoEarwood fungus.I’veeatenatplacesinfested withfruitfliesandI’veeatenatplaces thathavewonwelloverthreeMichelin stars.I’mafoodiethroughandthrough, andI’mopentoanynewdish(minus friedbugs,butyougetmypoint). But,despitetheseexperiences,themost memorablemealsI’vehadareones cookedbyfriendsandfamily.Inmy heart,theyholdacertainmemory, whichisirreplaceablewitheventhe finestofdining.So,whenmy classmatesandIinjournalismwere gatheredaroundatable,lookingproudly (andhungrily)atthefoodwe’dmade,I knewitwasamemoryI’dnever forget.Besides,whenareyougoingto beamiddleschooleragain,eatingand laughingwithyourfriendsinclass?I gottohaveatasteofnotonly differentfoods,butdifferentcultures, anddifferentstories.Froma grandmother’samarettocaketoa Croatiancharcuterieboardessential,I loveditall.So,toconclude,I’m enormouslyproudofmyfellow journalists,andI’msohappyIcould sharetheexperienceofmakinga hcookbookandenjoyingfoodwiththem.I opethismemorystayswiththemfor aneternity,asitwillforme.

CHICKEN TIKKA MASALA
MyFavoritefoodisChickenTikka Masala.ThefirsttimeIhadit,was whenmymombroughtmetoan Indianrestaurant.Ihadneverhad Indianfoodbeforethattime,soIwas nervous.Andthiswasn’tjustus goingtoeatfoodbecausetherewas nowhereelsetoeat.Weatethere becauseitwasaspecialday.Mydad hadjustcomehomefromtheoilrig, andweweresohappythathewas home.WhenIsatdown,Iwasso nervous,somymomorderedforme. SheorderedtheChickenTikka Masala.Whenitgottothetable,I lookedatitforasecond.Itwas orangeandhadchickenchunks scatteredonit,butithadsmelledof freshseasoningsandithadagreat smoothlooktoit.WhenItookmy firstbite,Iknewitwasmynew favoritefood.Ittastedsweetand creamy,andthechickenhelped balancetheflavor.Thericehelped giveitsometextureandthewater helpedgivebalanceinthe temperature.Ifinishedthewhole plate,andthenaskedforanother.I stillloveittothisday.

DIRECTIONS
Inalargebowl,whisktogethertheyogurt,lemon juice,cumin,paprika,coriander,cayenne,salt,and blackpepper.Addthechickenpiecesandtosstocoat. Coverandrefrigerateforatleast1hour,or overnight.
Preheatthebroilertohigh.Lineabakingsheetwith aluminumfoilandplacethechickenpiecesinasingle layeronthesheet.Broilfor10to12minutes,turning once,untilbrownedandcookedthrough.
Inalargeskilletovermediumheat,heattheoil.Add theonionandcookuntilsoftened,about5minutes. Addthegarlic,ginger,tomatopaste,andgaram masalaandcookfor1minutemore.Addthecrushed tomatoesandbringtoasimmer.
Reducetheheattolowandstirintheheavycream. Addthecookedchickenpiecesandsimmerfor10to15 minutesuntilthesaucehasthickenedandthe chickenisfullycooked.Stirinthecilantroandserve hotwithrice.
