We offer “Elevated Picnic” style buffet catering for your party or event From quality sandwiches and salads to unique and memorable specialty items, everything is scratch made with Headwaters quality and style.
• Vegan and vegetarian options are available.
• Service options include fully packaged pickup or delivery, buffet setup, and post-service clearing. Pricing does not include service and delivery fees. Paper products for service available at a minimal additional cost.

BREAKFAST
Standard breakfast buffets include a combination of one, two or three breakfast items, and fresh cut fruit. Item choices are listed below pricing packages.
Additional/a la carte items such as muffins, mini muffins, nut breads, blueberry or fruit loaf are priced a la carte.

Breakfast Items
• Lox and Bagels: A mixed variety of bagels, cream cheese, toppings including cold salt-cured salmon, thin sliced red onions, tomatoes, cucumbers, along with capers.
• Spinach Feta Wraps: Spinach, egg whites, chopped red bell peppers, and feta cheese.
• Breakfast Burritos:
Our famous Pullman burritos come in several varieties. Burritos are cut in half and foil wrapped.
o House-made pulled pork, crispy potatoes, egg, shredded cheddar, and Headwaters mild Pullman sauce.
o Bacon, crispy potatoes, egg, shredded cheddar, and Headwaters mild Pullman sauce.
o Vegan, made with black beans, soyrizo, crispy potatoes, and cabbage.
• Breakfast Sandos:
A variety of breakfast sandwiches are available, assemble yours from the following:
o Choice of Breads including bagel, croissant or English muffin
o Choice of one meat (optional) including bacon, turkey bacon, sausage, or griddled sliced ham
o Egg or egg whites (optional)
o Choice of one cheese including cheddar, American, Swiss, provolone, or pepperjack
• Overnight Oats and Chia Bowls:
o Fruit: Whole grain oats, chia seeds, oat milk, honey, unsweetened coconut & assorted fruit topped with granola or nuts.
o Protein: Whole grain oats, chia seeds, oat milk, honey, unsweetened coconut, with peanut butter, cacao nibs, walnuts, & banana slices.
• Fritattas
o Bacon & potato with Gruyere cheese
o Spinach, red peppers, feta and carmelized shallots

Standard buffets include a combination of one, two or three lunch items, one green salad, and one hearty salad bowl choice. Item and salad choices are listed below pricing packages.

Sandos and Wraps
Choose up to 3 varieties on your choice of bread (inquire for recommendations). Small modifications can be accommodated, per-person customization of sandwich orders is not available for catering orders.
*Items marked with asterisk come with “The Works” by default: shrettuce, pickles, tomatoes, red onions and pepperoncini, mustard and mayo or dijonnaise (inquire for other dressing options – we have a bunch)
• Italian: ham, salami and provolone, Italian dressing*

• Turkey and provolone: with arugula and thin sliced red onion, avocado option
• Pastrami and Swiss: (best on rye, sauerkraut optional)
• Vegetarian: with fresh mozzarella, marinated peppers, baby greens and artichoke hearts
• Thai Chicken Wrap: Peanuts, grilled chicken, red peppers, carrots, and cabbage in a Thai-style peanut sauce
• Chicken Salad Croissant: Shredded rotisserie chicken, cranberries, pecans, chopped celery, sweet onions on a flaky croissant.
• Mini sandwich boards: Pinwheel lavash wraps, sliders, tea sandwiches, and mini-deli subs.
• Cold Barbecued Chicken: Greek, Teriyaki or Country Barbecue sauce.
• Greek Medley: Platter style combination with pita bread, served with tabouli salad, falafel, feta cheese, Greek olives, hummus, white garlic sauce, and veggie garnishes.
• Spanish Tortilla: layered potato, egg and onion pie with Manchego cheese and diced ham.
• Soup, Stew, or Chili (2 week notice needed, 50 person limit, delivery required): Scratch-made goodness! House favorites include our famous dill pickle soup, loaded baked potato soup, pozole verde, red or white bean chicken chili, and several others. Ask!
Lunch Salads
Buffet lunch orders come standard with one of our green salads, and choice of one hearty salad bowl.
Green Salads:
• Garden: Mixed greens with seasonal veggies, garbanzo beans, feta cheese and sunflower seeds (ingredients vary seasonally).
• Greek: Chopped romaine lettuce with feta, cucumbers, cherry tomatoes, red onion and pepperoncini, Served with Greek vinaigrette by default.
• Balsamic Lentil Kale: Delicious combination of kale (yes, we massage it), cooked lentils and red onion with house balsamic vinaigrette.
• Caesar: Traditional chopped romaine with house-made croutons and Caesar dressing.
Hearty Salad Bowls:
• Asian: Grilled chicken breast, mixed greens, crispy noodles, sliced almonds, sesame soy dressing.
• Potato Salad: Grandma’s recipe – old school delicious.
• Italian Pasta Salad: black olives, salami, mozzarella, peppers, Italian dressing
• Pesto Pasta Salad: Fresh mozzarella and tomatoes with Pesto vinaigrette.
• Hawaiian Style Macaroni Salad: Just like on the islands, but with a few extras like bay shrimp and a bit of pineapple. Served with chili sauce on the side.
OTHER STUFF
• Charcuterie Boards: $75-$150 depending on size and items. Custom variety boards loaded with cured meats, cheeses, house made pickled veggies, crackers, nuts, olives, fruits, and other goodies. Cheese/vegetable or just veggie options available - inquire
• Box Lunches: $15-$20 each depending on choices. Perfect for parties on the go, day-hikes, etc. Your choice of half or full deli sandwiches/wraps with chips, fruit, and a cookie.
• Bridal Boards and Groomsmen’s Grub: Pricing varies. Pre-ceremony wedding party meals aren’t really sit-down affairs! Our wedding party boards are designed to accommodate the festive anticipation and multiple activities of pre-ceremony preparations, with attractive, nourishing, but easy to grab and carry choices. Options here can vary widely – please contact us to discuss.
Sweets
• Fancy Patisserie Cupcakes: $5 each. With custom decoration $7 each (2 weeks notice)
• Krispy Treats: $2 each Fun, colorful, and delicious riffs on the standard Rice Krispy Choose from Crunchberries, Fruit Loops, Apple Jacks, Smores, etc. (kids love these, too).
• Boutique Cheesecake Muffins: $6 each. Various flavors and sizes available – inquire.
• Giant Cookies: $5 each. Large soft chocolate chip, peanut butter, snickerdoodle, or oatmeal cookies
