As an 18-year-old, Mei Ashton has accomplished a lot in her life. She has met infamous celebrities, travelled the world, and successfully launched her own crochet business

All the while, dealing with four rare, invisible diseases

Towards the end of her sophomore year of high school in 2022, Ashton said she began to experience stomach issues Having trouble digesting and feeling sick after eating, Ashton said she knew something was wrong, while others tried to pass it off as another teenage girl with gut problems

After over a year of doctor’s visits and lots of trial and error, Ashton said she was diagnosed with gastroparesis, Nutcracker Syndrome (NSC), Super Mesenteric Artery Syndrome (SMAS), and most recently, Autoimmune Progestrone Dermatitis (APD).

“I [would] feel really bad for anyone who had the same stuff as me, because it's not easy to manage, but I'm glad it's me I'm not sure if that makes sense, but I'm glad that I have it rather than someone else,” Ashton said

Since her diagnosis, Ashton has transitioned from Olympia High School to Florida Virtual School while managing a 90 percent liquid diet She said she has done her best to utilize medical mixes, protein powders, and broths to maintain a healthy weight and avoid a feeding tube

“She manages her diet entirely on her own, which is baffling to me because if roles were reversed, I would have asked for a feeding tube and called it a day,”

Jeannie Lee, Ashton’s mom, said in an email “She’s taking the difficult path People don’t see her jump around, stretch, or get on her walking mat after every meal to help digest No complaining, no victim mentality for her”

After learning how to crochet during the pandemic, Ashton said she fostered her love for the craft during the early stages of her diagnosis She taught herself how to create clothes and plushies and design patterns

She later started her crochet business, AMEIzing Art USA, where she began teaching classes at local coffee shops, selling patterns in her online shop, and posting about it on her growing social media accounts

“My body doesn't feel good, and I need something to do to take my mind off of it and put me at ease, so [crochet] became a therapy for me,” Ashton said Her crafty passion turned into a funding avenue for her worldwide graduation trip Instead of walking the stage to conclude her academic career, Ashton decided to visit 12 countries-- one for every year of school

With the help of friends and family, Ashton visited Japan, Taiwan, South Korea, Hungary, the Czech Republic, Austria, Iceland, Norway, England, France, Malaysia, and Singapore-- where Ashton said she hopes to move to in the future

During her travels, she said she was able to become more independent in terms of managing food she could eat on her limited diet while abroad

“I enjoyed myself on that trip, and I think that taught me a lot about managing my food, because I always had to be on the lookout for places I could go to get food,”

Ashton said “ Being able to do it myself, I feel like that's come far from where I was ”

Ashton has shared her crochet and travel journey on her social media accounts, while also bringing attention to her invisible illnesses She has built up a community of 33K on Instagram and 65 8K on TikTok

“I don’t know how her little posts get the reach they get,” Lee said “But she’s authentic, real, and honest, which I think it appeals to people She’s wholesome, fun, light. She makes a conscious effort not to post anything negative because she believes there is enough negativity online ”

She continues to share crochet tutorials, products she created, and some of her favorite moments, like meeting celebrities such as actor Daniel Radcliffe at his Broadway show “Merrily We Roll Along” or singer Laufey at one of her concerts.

“I would say that [posting on social media] didn't quite help my business as much, but it helped my soul, like knowing that people are happy that I'm giving crochet tutorials and showing inspiration, because comments were nice,” Ashton said

As more Americans plan to travel this summer despite lingering inflation many are looking for ways to enjoy their time off without breaking the bank According to a recent WalletHub study, nearly 82% of Americans are expected to take a trip this season, but tighter budgets may push some to seek fun closer to home

Fortunately, for residents and visitors in Central Florida, Orlando ranks among the best cities in the country for an affordable, activity-packed staycation

WalletHub’s annual report compared 182 of the most populated cities in the U S across three key categories: Recreation, Food & Entertainment, and Rest & Relaxation Each city was evaluated using 41 relevant metrics, such as the number of parks per capita, average meal costs, and the availability of wellness centers. Orlando earned the No 2 spot overall, just behind Cincinnati, Ohio

With a total score of 64 63, Orlando stood out for its top-ranked Food & Entertainment offerings and placed highly in other categories as well The city’s abundance of affordable restaurants, highly rated eateries, and diverse culinary options helped drive its strong performance Additionally, a wide selection of dessert shops especially ice cream parlors makes it a perfect spot to cool off during the hot Florida summer

Orlando also scored well in recreational offerings, with a high concentration of amusement parks, water parks, arcades, and other family-friendly attractions Its vibrant nightlife and calendar of summer festivals ensure there’s something to do for every age group and interest.

More Than Just Theme Parks

While Orlando is globally recognized for major theme parks like Walt Disney World and Universal Orlando, the city also offers a range of lesser-known, budgetconscious attractions Local parks, lakes, art galleries, and museums provide enriching experiences without the steep price tag

WalletHub's rankings were developed by assessing a wide range of metrics across 182 cities, including both the 150 most populous U S cities and at least two of the largest cities in each state Each metric was graded on a 100-point scale, with scores weighted and averaged to determine a city’s overall rank.

For staycationers looking to save money without sacrificing fun, Orlando provides a compelling mix of activities, affordability, and variety solidifying its position as one of the top staycation destinations in the country

PopStroke (Waterford Lakes, Orlando): Co-owned by Tiger Woods, this modern putting facility features two uniquely designed 18-hole courses that mimic traditional golf, with synthetic fairways, bunkers, and rough patches To take mini-golf to the next level, PopStroke offers a full-service restaurant and bar where you can order food and drinks (including ice cream and milkshakes for the kids!) directly to wherever you are on the property via their mobile app.

Central Florida Dreamplex (Clermont & Orlando): The Central Florida Dreamplex is an option for families seeking inclusive activities Their primary focus is on providing fun for individuals with physical, intellectual, and/or developmental disabilities However, they often host community events and programs open to all, including adaptive sports clinics, family lake days, and ski days Their facilities in both Clermont and Orlando create supportive environments to make sure anyone who participates has the best time Make sure to check their calendar for any upcoming events, like their Family Lake Day on August 16.

Dezerland Park (Orlando): This massive indoor entertainment complex offers a wide range of activities, from arcades and go-karts to a car museum to a trampoline park and laser tag While it’s not free, it offers a variety of price points and options, allowing you to choose activities based on your budget Dezerland truly has it all

The Great Outdoors

Florida Springs: Florida has over 1,000 springs, many of which are right here in Central Florida We would recommend heading over to Wekiwa Springs State Park in Apopka ($6 per vehicle) or Kelly Rock Springs Park ($5 per vehicle) for crystal-clear waters ideal for swimming, tubing, and kayaking These natural oases are perfect for cooling off and observing local wildlife. De Leon Springs State Park ($6 per vehicle) also offers swimming, history, and an opportunity to make your own pancakes at the Old Spanish Sugar Mill

Nature Preserves and Gardens:

Bok Tower Gardens (Lake Wales): This National Historic Landmark offers a tranquil and beautiful escape into the wilderness For adults, you will find stunning gardens, the majestic Singing Tower with free daily concerts from 1 p m to 3 p m For the kids, the Hammock Hollow Children’s Garden is a three-acre interactive play area designed for exploration, with water features, a sand play area, climbing structures, a music area, a “fairy house trail,” and creative art stations If you’re interested in feeding the koi fish in the moat around the tower, bring quarters to pay for food This is a landmark like no other with plenty of shade and endless elements to look at

Harry P Leu Gardens: Wander through 50 acres of beautifully curated botanical gardens in Orlando Featuring a historical museum, an origami garden, and a garden solely for camellias, offering both peaceful and educational experiences for all ages. West Orange Trail: More than just a paved 22-mile path, this multi-use greenway truly offers a full day of diverse family activities. This world-class trail stretches through multiple charming towns and natural landscapes, providing ample opportunities for biking, walking, jogging, skateboarding and even rollerblading You may find yourself passing through downtown Winter Garden with local restaurants and shops, Plant Street Market, and a Splash Pad for the littles Whether you’re looking for a leisure stroll or a full-day of biking, this trail provides a wonderful way to experience Central Florida's natural charm and beauty

Lake Apopka Wildlife Drive: This free, 11-mile, one-way drive is a birdwatcher’s paradise Passengers will have the opportunity to spot alligators, various species of birds, snakes, and some of Florida’s most popular plants from the comfort of their car It is open Friday, Saturday, Sunday, and on federal holidays

Tibet-Butler Preserve: Located in Orlando, this free nature preserve boasts miles of hiking trails and an education center, perfect for learning about Florida’s diverse ecosystems

Mead Botanical Garden: In Winter Park, this free garden features hiking trails, boardwalks, a butterfly garden, and plenty of picturesque spots for your family

Endless Beaches: Central Florida offers a variety of beaches all with their individual appeal Cocoa Beach is known for its surfing and close proximity to the Kennedy Space Center New Smyrna Beach is always a favorite, offering both drive-on and no-drive beach sections along with plenty of food and shopping options Additionally, Daytona Beach is a relaxing and beautiful spot only five miles from the Daytona National Speedway. Currently under a soft opening, this ice cream shop specializes in flavors from the Philippines. Try halo-halo or an ice cream tray ranging from flavors of ube to soy sauce butterscotch to pineapple cake!

Wafu

Specializing in Taiyaki waffles and soft serve, this spot has the best snack options! With rotating soft-serve flavors ranging from ube to rose to honey, you’ll want to come back every week to try the next flavor! The event is part of the community’s broader summer lifestyle events aimed at encouraging physical, social, and mental engagement among adults 55 and older Research consistently shows that staying active and connected supports overall well-being, particularly later in life
