BEE-ING RESPONSIBLE S U S TA I N A B L E S A W G R A S S Joe Natoli proudly walks down rows of herbs and vegetables to a plant bearing tiny red tomatoes only slightly bigger than a large green pea, and plucks a stem bearing around a dozen of the fruit. “These are like candy they’re so sweet,” the Sawgrass Marriott Executive Chef says emphatically, as he offers them up for sampling. He’s right. They explode with a delicate flavor kissed by the sun. “And they grow like weeds,” he adds, gesturing to the disheveled looking clump of vines. The tomatoes are part of his garden, Chef

When Marriott International took over the franchise at Sawgrass in 2014, Natoli, a 20-year Marriott veteran at the time, knew he wanted to do something special. “This is an iconic resort, “ as Natoli describes it. “I knew that I wanted to make my mark here — to elevate the dining experience at the resort at every level. To do that, I was going

We call him ‘the quail whisperer,’” Natoli laughs. “It’s all part of our goal of being as self-sustaining as possible. Of course, the larger scale events like banquets and conventions we can’t do that with, but for the restaurants, we pull our herbs and lettuces from the garden. So, all of our selections are farm-to-table seasonal. We don’t serve what won’t grow here in a given season. We’re always experimenting and making notes on what works and what doesn’t. What we can’t grow here, we get from local sources, like grains from Congaree and Penn Farms, and other greens and

H I STO RY O N THE MOVE T H E P L AY E R S CHAMPIONSHIP

The rich history of THE PLAYERS CHAMPIONSHIP at TPC Sawgrass in Ponte Vedra Beach just keeps getting richer. That history — which began in 1977 with THE PLAYERS inaugural event at the Sawgrass Country Club — changed dramatically when Dean Beman, Commissioner of the PGA TOUR at the time, decided that the event needed to be contested on a course that would not favor any particular player, or style of play, and also needed to provide a greater spectator viewing experience. Beman focused his efforts on finding a site for this innovative new design and, in 1980, finally settled on a 415-acre site just across the street from Sawgrass Country Club. The heavily-wooded, wetland area was purchased for the whopping sum of $1 from local developers. Beman would spend the next couple of years mastering his plan, selecting Pete Dye as the course architect to bring it to life. People still talk about how the inhospitable patch of land was completely transformed by bulldozers, backhoes, and heavy equipment of all kinds. Earth was dug out, moved, and piled high so that special, grass-covered hills, some up to 30 feet in height, could be made to enhance spectator viewing for THE PLAYERS guests. Fans responded by coming out in droves to the new venue. Since the switch to the TPC Sawgrass in 1982, Beman’s brainchild and Dye’s creation is among the biggest golf stages in the world for one week out of the year. beside the 18th green after winning the first PLAYERS championship at the Stadium Course. With no pun intended, it was a “watershed” moment for the PGA TOUR, especially when he pulled Beman and Dye

into the water with him. Two days prior to Pate’s victory, he told Dye of his plans, saying, “I’m going to make you famous,” Pate recalls. “I wasn’t trying to beat the field. I was trying to beat Pete Dye, and I think I got him.” THE PLAYERS, which features what is arguably the strongest field in golf each year, has not disappointed since. The participants look forward to this event every year, and there is never a lack of excitement produced by the intense competition over the event’s 72 holes. Earlier this year, 2015 Masters champion Jordan Spieth asserted, “There is no added thing that any other tournament brings that this tournament (THE PLAYERS) doesn’t have. Therefore, guys like Rickie [Fowler], who catches some slack for not having won a major yet, essentially has won what’s harder to win than a major — THE PLAYERS.” Much of the drama plays out on the signature parthree 17th hole with its iconic island green — one

the world. Coming down the stretch, the relatively short, par-three (137 yards from the Professional tee box — generally a pitching wedge for most touring pros) has sealed the fate of many at THE PLAYERS. Just ask Sergio Garcia. In 2013, the Spaniard was tied for the lead with Tiger Woods, coming into 17 on Sunday when he put his tee shot in the water. His third from the drop area suffered the same fate. He would card a quadruple bogey for his efforts and ultimately end up tied for eighth, while Tiger held on the win his second PLAYERS title. Players have Pete Dye’s wife, Alice, to thank for this challenging test of golfing accuracy. Following a site visit, she suggested creating an island green when she saw that an excavation for a pond became a much bigger project than had been anticipated. The end result was a beautiful golf hole and a potential influencer between victory and defeat for those in the hunt. Not one to let the grass grow under their feet, the TOUR, which owns and operates

hole, which was made into a drivable par-four, along with a return to Bermuda grass greens. Additionally, hazards were created on No. six and seven, the practice facility was treated to a much-needed upgrade, incuding several improvements to facilities for tournament guests. In 2017, PGA TOUR Commissioner Jay Monahan announced that the tournament date of THE PLAYERS will move from early May, when it has been played since 2007, back to March, its original playing month. The 2019 event is now slated for March 12th - 17th. “The PLAYERS Championship has grown in stature since we moved it to May in 2007 and, regardless of the date, is clearly one of the premier events in all of golf, with the best players in the world, a premier venue in THE PLAYERS Stadium Course at TPC Sawgrass, an unmatched fan experience and a significant charitable component that

benefits the Jacksonville-area community,” Monahan said. “Moving to March in 2019 will enhance an already strong Florida portion of our calendar and play a significant role in an overall improved schedule.” Jared Rice, THE PLAYERS Executive Director, sees THE PLAYERS soaring to even greater heights with the new date. “Its position on the new PGA TOUR schedule sets the stage for an incredible season,” Rice said. “As the flagship event for the PGA TOUR, THE PLAYERS takes pride in being part of a FedExCup season designed to deliver compelling golf to fans around the world from start to finish.”

ST. AUGUSTINE - THE NATION’S OLDEST CITY As the saying goes, “24 miles of beaches and the rest is history.” Just a few miles south of Ponte Vedra, the “Nation’s Oldest City”, St. Augustine, exudes a playful charm created by a contradiction of old and new world Influences. Mixed together they create a refreshing mixture of antiquated romance, youthful vibrance, and Southern sweetness. Evidence of the magic and mystery of St. Augustine is revealed in more than 60 historic sites and attractions. Many of these points of interest are tucked along canopied roads of moss-draped oaks. Streets are lined by signature coquina cottages topped with red clay roofs. Two National Monuments reflect the prevalent Spanish and Minorcan heritage: The impenetrable Castillo de San Marcos (1695), the nation’s oldest masonry fortress, and Fort Matanzas (1742), which can be reached only by boat. Since 1903, visitors have discovered St. Augustine’s past at the Fountain of Youth Archaeological Park. Thought to be Ponce de Leon’s eternal spring, it is Florida’s oldest attraction. The Mission of Nombre de Dios (1565) is the location that started Christianity in the United States. Local Captains, Bill Hoge and Darryl Lloyd, advise that weekends are usually more crowded and during the week the larger boats typically have lesser crowds. Prices will vary depending upon the duration of the trip—half day or full day—but the fun you’ll have and the memories you’ll bring home on any given day will be worth every penny. The fresh fish fillets are a nice added bonus. Trolling is another type of “Deep Sea” fishing we enjoy here off our Historic First Coast. Like bottom fishing, trolling targets a variety of different species in different conditions, near shore and offshore, but unlike bottom fishing, the trolling angler targets open ocean, migratory, “pelagic” species of fish, by pulling lures and baits (to mimic swimming bait) behind the boat. According to Captain Hadjis, his most popular target-fish when trolling include mahi-mahi (also known as dolphin or dorado), wahoo, sailfish and tuna. You can even hook into a big marlin off our coast, particularly in late spring. Pelagics pass through the area seasonally and are targeted accordingly. Again, the experience and knowledge of a local captain or guide is instrumental in learning the basics. Prices on trolling trips vary like bottom fishing trips, but when split

among several members of a group, the price per person decreases accordingly and in most cases the fun increases with multiple members of the fishing party hauling in catches at the same time. One of the most common reasons visitors cite in choosing not to experience off-shore fishing is seasickness, and that is a valid one. Some folks have a problem with it; others don’t.
