Welcome to Links House

Carnoustie Golf Links

Carnoustie Golf Links is most famous for its Championship Golf Course, however, it’s not all about Golf here; Links House has plenty to offer too. Some people may that the Links estate and Links House are for golfers and Season Ticket Holders alone, but this could not be further from the truth!

Links House is home to The Rookery Restaurant & Bar; our wonderfully relaxed eatery which is open to everyone and family friendly, where you can enjoy great service from our friendly front of house team and fantastic panoramic views of the Links estate and out to the North Sea.

Within Links House, you’ll also find the award-winning Professional Shop and the state-of-the-art Indoor Performance Centre which is not only a great warm up facility, but has lots of fun games for everyone to enjoy.

What else will I find in Links House?

Please come by, say hello and explore the building, you can tour the building by yourself or speak to our friendly Guest Relations team who can let you know more about our other facilities and services, including:

• The award-winning Professional Shop

• Free-to-hire putters & balls (for use on our free-to-play Public Putting Green and The Nestie Course)

• History and heritage of Carnoustie Golf Links

• Relaxed seating areas on the ground and first floors

• Amazing views out to the Links estate and the North Sea

Where will I find Links House?

If you’re a regular to the Links, then it’s likely you will already know how to find Links House. However, if you’ve yet to visit us then you may be unsure where exactly how to find us. Links House is directly behind the Carnoustie Golf Hotel & Spa, and is the sandstone building you can see in the top photograph on this page. If in doubt, give us a call and we’d be more than happy to direct you!

There is ample parking available for all who visit the Links. The Rookery car park is located just behind Links House and is ideal for those who are less mobile, whilst the black slab car park is larger and only approx. 100 yard walk to Links House. There is also a third car park located behind the hotel parking. All three car parks include disabled parking bays.

Primary School Team Championships

We were proud to host the annual Carnoustie and Monifieth Primary School Team Championships in early June. It’s always a fantastic event with all the competitors keenly representing their school. This year, over 10 holes on The Carnoustie Burnside Course, Barnhill and Seaview shared the trophy after both scoring 38 in the 3-person scramble format. Carlogie were just one shot behind on 39, with Woodlands a further shot back with 40. Burnside and Liff shared 5th with 44.

The Craws’ Nest Tassie 2024: Results

The semi-final matches of The Craws Nest Tassie and Maulesbank Trophy got underway in glorious sunshine on The Championship Course.

Jonathon Keith of Inverness Golf club won his match (2&1) over Daniel Johnson to set up a final against Carnoustie season ticket holder Alex Cargill of Arbroath Golf Club after he triumphed (3&1) in his semi final against Robert Sluming.

The Maulesbank trophy final players were confirmed as Stuart Birrell of Kemnay Golf Club who defeated Kevin Thain (3&2) whilst Ashley Brown of Cosby Golf Club triumphed with an 8&7 victory over Jonas Wenell.

Attention then turned to the finals with local support following The Craws Nest Tassie in hope of an Alex Cargill victory. Unfortunately it wasn’t to be, as Jonathon Keith came back from a 2 hole deficit at the turn to claim The Craws Nest Tassie 2024 title with a 3&2 victory.

The Maulesbank Trophy was won by Ashley Brown as he defeated Stuart Birrell 6&4 with former winner of the event Gary Hubble caddying for Ashley.

Both champions of 2024 were very thankful to the greenkeeping staff at Carnoustie Golf Links for their efforts to get the courses in excellent condition considering the poor weather we have experienced over the winter months.

Another fantastic week at Carnoustie Golf Links for the playing of the Craws Nest Tassie and Maulesbank Trophy.

Secondary School Team Championships

The Carnoustie High School team won the Angus Secondary School Team Championship, successfully defending their title after winning for the first-time last year. They pipped Arbroath High School to the title, winning by 12 points over The Carnoustie Burnside Course.

The winning Carnoustie team were Rory Ferguson (30 points), Brodie Fraser (27 points), Sebastian Clark (27 points) and Finlay Elrick (32 points).

In the handicap team event, Webster’s High School were the winners with a team total of 112 points.

In the individual event on The Burnside Course, Jamie Reid (Arbroath High School) won the scratch prize, scoring 34 stableford points, while in the handicap event, Robbie White (Monifieth High School), was victorious with 41 points playing off a competition handicap of 17.

The Carnoustie Buddon Course also played host to an individual handicap event for players not involved in the team tournament. In this event, Ramsay Gerrard (Forfar Academy) won with an incredible 48 stableford points playing off a competition handicap of 27.

The event saw 50 school children and staff members attend from across Angus.

What’s been happening at Carnoustie Golf Links?

Carnoustie’s First BioBlitz: 2024

We were delighted to host Carnoustie’s first BioBlitz on 27th and 28th June, bringing together golfers and non-golfers to explore the biodiversity of the Links estate.

Carnoustie was selected by The R&A Foundation as the first venue to host their Golf BioBlitz. That being the case, we, at Carnoustie’s decided that we’d aim to unite the local community in discovering the wildlife over the estate. This event allowed amateur naturalists to mingle with experts and uncover the diverse species inhabiting our grounds.

Our program began at 7pm on 27th June and concluded at 7pm the next day, featuring activities for all ages and expertise levels.

Carnoustie’s Professional Shop shines again at Scottish Golf Tourism Awards 2024

We were honoured to be awarded Best Pro Shop at the Scottish Golf Tourism Awards back in April 2024. What’s more; this was the third year in a row that Carnoustie’s Professional Shop has been successful in the category, which made the win all the more special to us!

We were also thrilled to receive additional recognition when Links House was highly commended in the Best Clubhouse category!

A total of 231 species of animals, plants, and fungi were recorded. These findings were submitted to iNaturalist/NESBREC and relevant county recorders to support national conservation efforts.

BioBlitz events included:

• Evening bird and bat walks

• An early morning bird walk

• Moth traps inspection

• Hedgehog tunnels inspection

• Butterfly and insect walk

• Ecologist-led walk to discover flora, fauna & fungi

Thanks to the success of this BioBlitz, we hope to host another at Carnoustie Golf Links in 2025.

The BioBlitz was sponsored by The R&A Foundation in memory of Helen Goodman, a nature lover and sustainability advocate in golf.

Method

Step 1: Preheat the oven to 180 degrees celcius. Mash 2.5 of the bananas with a fork and mix with all the ingredients.

Step 2: Grease the loaf tin or line with baking paper and pour in the batter. Cut the last half of the banana lengthways and place on top of the dough (add a few sprinkles of nuts on top too, if you like).

Step 3: Bake in the oven for 30-35 minutes at 180 degrees.

Step 4: Remove from the oven, leave to cool... then, enjoy!

The Rookery Restaurant and Bar

For the Sweet Pastry: Cream butter and sugar together. Slowly add the egg, flour, semolina and salt. Bring together into a pastry, wrap in cling film and chill in the fridge.

For the Yuzu Custard: Zest the 5 yuzu’s (or lemons) then extract 200ml of the juice (You may need to add water to make up the 200ml).

Heat the yuzu juice with the zest, bring to the boil, take off the heat and set aside to cool. Whisk together the eggs and sugar then add the yuzu juice and cream.

Pass the mix through a fine chinois or fine mesh strainer to remove the zest and reserve the liquid in a jug.

Lining the tart ring: Grease the tart ring with soft butter, remove the pastry from the fridge and gently kneed to soften.

Lightly flour your worktop and the pastry. Using a rolling pin, roll out the pasty turning the dough 45 degrees at a time, continue to roll out to approx. 3-4mm in thickness all around.

Roll the pastry back onto the rolling pin, then place over the tart ring and gently unroll to cover the ring.

Unfold and push down the pastry into the bottom of the ring covering the base and sides. The pastry should be level at the bottom and have straight sides (90 degrees from bottom to top). Continue until you have fully lined the ring evenly all round. Trim off any excess pastry, prick the bottom of the pastry with a fork then chill the pastry in the fridge/freezer.

Recipe: Yuzu Meringue Tart (Serves 4)

Enjoy this deliciously light yuzu meringue tart, the perfect finale to any meal this summer!

Ingredients:

Sweet Pastry

100g unsalted butter

75g icing sugar

1 small egg

1 teaspoon salt

185g soft flour

20g semolina

Yuzu Custard

5 yuzu’s zested and juiced (or 5 lemons)

150g caster sugar

4 small eggs

120ml double cream

Italian Meringue

100ml egg white

200g caster sugar

75ml water

Utensils

8/10cm tart ring

Whisk

Piping bag

Baking beans

Spatula

Parchment paper

Cling film

Rolling pin

Fine mesh strainer

Pastry brush

Cooking thermometer

Blind bake: After the pastry has chilled, line with a double layer of greaseproof or parchment paper. Fill with baking beans and bake in a preheated over at 150°C for 7/8 minutes. Remove the beans and continue to cook until golden.

Filling the tart: Take your empty cooked tart case out the oven. Skim off any foam that has accumulated on top of the yuzu filling. Slowly pour the yuzu filling into the tart case. Place in the oven and cook at 120°C until set (approx. 15 minutes) when cooked it should have a slight wobble in the centre. Set aside to cool.

Meringue: Ensure that all utensils are clean, dry and free from grease. Place the sugar and water into a saucepan, slowly bring to the boil, turn up the heat and gently dissolve the sugar. Using a clean pastry brush dipped in water, carefully remove any crystals that may form on the sides of the pot while the sugar cooks as this may spoil the sugar.

Place the egg whites into a mixing bowl, when the boiled sugar reaches above 110 °C, start to whisk the egg whites. When the sugar reaches 118 °C add the boiling sugar to the whisked egg whites and continue to whisk until they cool (do not whisk too briskly). The meringue is now ready to pipe.

Finishing: Using a piping bag, pipe the cooled meringue decoratively over the surface of the tart as shown in the picture. Now place under a hot grill to evenly colour the meringue. Neatly serve whole on individual plates, adding a garnish of your choice.

Jason Cargill: Sous Chef, Soaring Success

Jason’s culinary career began as a trainee chef at WeeCook, a small restaurant in Barry, near Carnoustie. Coming straight into the industry after leaving secondary school to pursue his goal of becoming a professional chef, Jason learnt quickly that the chef lifestyle can be very gruelling and difficult at times, but Jason remained enthusiastic and determined.

Jason joined The Rookery in 2021 and has been an integral part of the team for the last three years. From his previous employment, Jason had to adapt quickly to a completely different working environment from a small family-owned business to working within a kitchen brigade of 10. He excelled very quickly in his starting role as Commis Chef, and within six months was promoted to Chef De Partie and a further six months later promoted into the role he holds today of Sous Chef.

Jason recently talked to students at Carnoustie High School about the Modern Apprenticeship scheme at The Rookery and the opportunities that he has experienced as a result of completing the scheme. Jason continues to work with local school students to inspire them to work in the hospitality industry. He has also continued to educate himself since the completion of his Modern Apprenticeship at The Rookery by completing his SCQF Patisserie Training.

Jason has competed in a number of prestigious competitions, including, Junior Chef of the Year 2023 and The Craft Guild of Chefs Competition, testing him on his flavour combinations, technical and classical skills, time management and artistry. Despite the fact he did not qualify for the next phases of the competitions, he learned a variety of skills that cannot be taught in a workplace.

Scan the QR code to visit The Rookery website or visit: www.therookerycarnoustie.com

Throughout Jason’s time at The Rookery, he has learned many different cooking styles which has allowed him to develop a comprehensive understanding of different working styles in a professional kitchen. Jason’s experience as a chef so far has not only developed his skills, but also developed him as a person. He is a team player who believes that no matter how high he climbs the ranks, it is his duty to help others and foster a cohesive and collaborative environment. Book your next visit to

Greens’ News and Sustainability

How we prepared for the Senior Open A note from Links Superintendent: Kevin Stott

Prior to the Senior Open, the greenkeepers, workshop, maintenance and stonemasonry teams continue to work to their usual high standards to ensure the courses are presented in the world-leading condition people have come to expect. The workshop team then become busy preparing all the mowing equipment for the tournament. Sandy and his team play a major part in giving the greens staff the support required to prepare the Course to its best condition.

Timings of applications to all surfaces become a big focus, this Spring saw the best growing conditions for quite a number of years which provided a real acceleration of growth on all playing surfaces including the rough. There is no greater fertiliser than consistent rain and sunshine, which we have been graced with over the last weeks and months. This pushed the height of the rough up, but it was still thin enough to make golf a fair challenge.

The strong Spring growth meant that maintaining green speed was challenging: there had to be a lot of thinning out of the surfaces with verti cuts to retain control on lateral growth. This is the norm for June & July but the favourable conditions for growth meant an earlier groom on the greens and surrounds than usual.

We always prefer a stronger growth pattern, as it gives the greenkeeping team more opportunity to control the surfaces than relying on weather conditions becoming favourable, which at Carnoustie can be towards the end of May.

As ever we were at the mercy of the weather - all three courses were green, but we knew that this could change quickly. Our aim was to produce a firm running course for the Senior Open which would provide a great challenge for the players and another exciting Championship on our Links.

Turfgrass innovation: Barnoustie

Over the last few years, we have been working alongside global leaders in turfgrass innovation - Barenbrug - to aid development of a new cultivator of grass. The reason behind this exploration into a new variety of grass was to allow us to more effectively utilise the growing conditions specifically here at Carnoustie and to improve grass management efficiencies.

We were thrilled to have officially released ‘Barnoustie’, a superior quality grass seed variety providing premium turf condition. This project working alongside Barenbrug has been a testament to a joint commitment to innovation and excellence in course management.

Cleaning for Sustainability

We’re delighted to now be using natural, vegan and ecoconscious cleaning products across the business. As part of our sustainability commitments and net-zero ambitions, we’ve partnered with local manufacturer, Natural Sparkle who use natural ingredients to produce top quality cleaning products.

These cleaning products are hand-made and entirely plant based. They only contain certified essential oils with natural antibacterial properties and are free from synthetic perfumes, palm oil, chlorine, parabens, sulphates and phosphates.

To find out more about the products that we use at Carnoustie Golf Links, visit the Natural Sparkle website: https://naturalsparklescotland.myshopify.com or scan the QR code in the picture using your smartphone!

Sustainability Partnership

We have recently partnered with North East based net zero consultancy ClearVUE.Business to guide us in our emissions reduction strategy. ClearVUE.Business has been chosen to implement its energy management solution, ClearVUE.Zero, across the Carnoustie Golf Links estate and operations. The advanced hardware and software technology helps businesses identify energy waste using advanced IoT-based smart energy meter hardware solutions. This is then presented in realtime, allowing us to view our energy consumption and carbon emissions.

ClearVUE.Business’ sustainability consultants work closely with us to create a tailored strategy to slash our carbon emissions. This innovative approach will enable us to meticulously monitor and manage our environmental impact with a bespoke net-zero strategy, leveraging emissions data to optimise operational efficiency, reduce energy costs, and enhance our sustainability profile by identifying and improving key operational areas and equipment performance.

Our commitment to sustainability has been recognised through various awards, solidifying our position as a leader in environmental conservation in the golfing world. We have also previously won several awards for our green efforts, including the STRI Environmental Golf Course of the Year (2018) and the IAGTO Climate Action Award (2021). In addition to our sustainability accolades, we’re also actively participating in significant environmental projects such as the Seagreen offshore windfarm development, which aligns with Scotland’s net-zero ambitions. We also collaborate with The R&A’s Sustainable Championship Agronomy Team on a project to display the biodiversity value of golf courses and are GEO Certified. The initiative between Carnoustie Golf Links and ClearVUE.Business is now the next step in our efforts for a sustainable future within the golfing community and beyond.

Craig Boath, Head of Sustainability said: “The question was not ‘if’ we step out as sustainability leaders, but ‘how’ we embrace the challenge, with the most authentic and efficient approach. ClearVUE.Business will empower us to truly understand our carbon footprint and develop strategies to help achieve our net zero target in line with our broader operational goals and commitments”.

Leah Barrett, Director at ClearVUE.Business, expressed her enthusiasm: “We are excited to kickstart our work with Carnoustie Golf Links, an organisation committed to spearheading a sustainability drive in the golf industry. This signals hope for a trajectory of continued transformation. Leadership from respected institutions like Carnoustie Golf Links paves the way for others in the space to follow suit.”

“ “
Environmental stewardship is part of our heritage and therefore the question was not ‘if’ we step out as sustainability leaders, but ‘how’ we embrace the challenge, with the most authentic and efficient approach.
