KNEADED GOFIO INGREDIENTS: -500 g of “gofio” (grinded wheat) -100 g of sugar -1 l of water -20g of nuts -two bananas -salt PROCEDURE: -Mix “gofio”, salt, sugar and water. -Knead the water, “gofio”, salt and sugar. -Add nuts and ripe bananas. -Knead again. -Sprinkle grinded wheat over it.

RANCHO CANARIO INGREDIENTS:         

Boil the meat, the chickpeas and the corncobs. Slice the onions and potatoes. Mix the garlic, salt, persley and olive oil. Add the noodles and the ingredients to the rancho.

OLD CLOTHES Ingredients: ½ chicken

Olive oil, salt, pepper

½ kg beef

and Carrots

2 onions

1 kg potatoes

1 pepper ½ red pepper

Procedure: 1) 2) 3) 4)

Chop the peppers and the onions. Fry the peppers and onions Add the beef and chickpeas and cook for 10 minutes. Fry the potatoes, 5 minutes later add the fried potatoes in the pot and cook about 2-5 minutes. 5) ¡¡¡And enjoy old clothes!!!

CHICKPEAS Ingredients: - onion - tomato - garlic - chickpeas - wine - pepper - chorizo - bacon

Procedure: 1- Cook the chickpeas. 2- Fry the onion, tomato, garlic, wine, pepper, chorizo and bacon. 3- Strain to make the sauce. 4- Put the sauce on the chickpeas and cook for a while.

BALL OF GRINDED WHEAT INGREDIENTS: -Sugar. -Nuts. -Water. -Grinded wheat.

PROCEDURE: 1st Heat the water. 2nd In a bowl, put the grinded wheat and sugar. 3rd Chop the nuts. 4th Add to the grinded wheat. 5th Mix all with the hands. 6th Pour water gradually and knead. 7th When the dought is ready, make a ball. 8th Sprinkle the ball with powder.

Procedure: - Buy some bread and chorizo - Chop the chorizo and spead on bread - Grill the bread with chorizo two minutes - Slice the bread - Put the bread in a dish - And enjoy!!

MAIN DISHES


RIBS WITH POTATOES AND CORNCOBS Ingredients:      

2 kg of salted ribs. 4 or 5 corncobs. 2 kg of potatoes. Green “mojo”. Olive oil. Vinegar.

Procedure: 1. Fill a cauldron with water 2. Add the ribs (without salt) and cook them. 3. Chop the corncobs. 4. Then put the potatoes in the cauldron and boil for 30 minutes. 5. Remove the water. 6. Put everything in a plate. 7. Add the “mojo”, the olive and the vinegar (as you like).

FISH • Ingredents: - Fish - 3 onions - 4 tomatoes - 1 garlic - 1 pepper - 3 black peppers - Almonds (100g) - Raisins (100g) - Olives

• Procedure: - Leave the fish to soak for 48h. - Fry the fish. - Make the sauté and add the fish. - Chop the garlic with the black peppers and put the fish. - Pour the white wine and add the almonds, raisins and olives. - Cook for 15/20 minutes.

GOAT MEAT WITH SAUCE

Ingredients: 1 Kg goat meat, 1 big onion, 2 ripe tomatoes, 3 garlic cloves, a lemon, a slice of bread, ½ glass white wine, ½ glass red wine, cumin, paprika, oregano, pepper, laurel, vinegar, olive oil, water, black pepper and salt.

Preparation: Boil the meat with water and lemon juice and a half of the onion. Wash the meat in the sink. Spray it with lemon juice. Fry the meat with olive oil. Make a sauté. Put all the spices with the almonds and the slice of bread into a mortar. Mix them with the vinagar and oil. Mix it with wine and boil it for about an hour.

COD IN SAUCE Ingredients : 3 onions 3 tomatoes 1 red pepper 1 green pepper 1/4 kg of almonds 1/4 kg of raisins Olives

CHOCOLATE SPONGE CAKE

Ingredients: - three eggs - some yoghurt - three glasses of flour - two glasses of sugar - one glass of oil - some baking powder - some chocolate Procedure: 1-. Mix the sugar with the eggs very well. 2-. Add the yoghurt, the flour, the baking powder and the melted chocolate 3-. Mix all the ingredients very well 4-. Then, spread a mould with some oil or butter and pour the mix into it 5-. Finally, put the mix into the oven and bake it for 50 minutes at a temperature of 180ยบ .

ALMOND CHEESE Ingredients: -1/2 kg of almonds -Sugar - Cheese -9 eggs (one white and 9 yolks) -Cinnamon stick -Green lemon Procedure: -Boil the almonds -Peel the almonds -Grind the almonds with 400 g. of sugar -Separate one white and 9 yolks. -Boil the water with 200g. of sugar, cinnamon stick and lemon zest. -Put the almonds in a pot. -Beat the white until stiff and add the 9 yolks. -When the water boils pour the water in the almonds. -When it´s mixed, add the eggs on the almonds and the water. -Stir for a while at low fire. -Put in a mould.

QUESILLO Ingredients: -

Four eggs. 200ml of condensed milk. Some liquid caramel. 2 tea spoons of cinnamon powder.

Procedure: -

Separate the whites from the yolks. Beat the eggs. Add the condensed milk. Beat the mixture. Add the lemon zest. Add the cinnamon too. Put the caramel in a mould and put the mixture in a mould. Finally bake for 20 minutes.

FRANGOLLO CANARIO Ingredients:          

200gr. of flour. 1L. of full - milk. 1 cinnamon stick. 5 spoons of sugar. Liqueur (Optional). 60gr. of raisins. 30gr. of butter. 2 egg yolks. Lemon zest. Honey (optional).

Procedure:  Put the raisins with honey in water.  Peel the raisins, bake and grate.  Put the milk, a cinnamon stick and lemon zest in a pot until it begins to boil.  Add the flour and stir it.  Add sugar, butter and when it boils again, cook slowly until it forms a thick cream.  Remove from heat and add the egg yolks, stir energetically.  Add the raisins and the grinded almonds.  Stir well and put it in individual bowls, add some honey if you like, You can eat it both cold and hot.

GOFIO CAKE Ingredients: - 3 eggs. - 2 glasses of gofio. - some lemon yogurt. - 2 glasses of sugar. - 1 glass of olive oil. - Pinch of cinnamon. - Lemon juice. - Lemon zest. Procedure: 1. Beat the eggs, yogurth, sugar and olive oil. 2. Mix gofio and yeast and add to the mixture. 3. Add lemon juice and zest, cinnamon and almond. 4. Mix and bake.

LEMON CAKE Ingredients: - 3 eggs - 1 yoghurt - 3 glasses of flour - 2 glasses of sugar - 1 glass of oil - some baking powder - lemon zest Procedure: - Mix the sugar with the eggs very well. - Add the yoghurt, the flour the baking powder and the lemon zest. - Mix all the ingredients very well. - Spread a mould with some oil or butter and pour the mix into it. - Finally, put the mix into the oven and bake it for 50 minutes at temperature of 180º. It´s a delicius lemon cake Enjoy it!!!!!!!

CHOCOLATE PUDDING INGREDIENTS: Two cans of cream Condensed milk Biscuits Milk Coconut PROCEDURE: Beat the cream with ½ can of condensed milk. Melt the chocolate. Wet the biscuits one in chocolate and one in milk. Put the ceram and the biscuits in layers. Sprinkle the coconut.

DRINKS


LIQUOR Ingredients: -Cane alcohol. -Sugar. -Fig tree leave. -One fig. -Water. Procedure: 1. Put fig tree leave, one fig and cane alcohol in a bowl. 2. Leave for a week. 3. After a week, make some caramel. 4. Put everything in the bowl. 5. Strain.

COCKTAIL “GLORIA CANARIAS” INGREDIENTS: - Triple Sec - Banana liquour - Orange syrup - Sugar - Jelly syrup - Blue food colouring PROCEDURE: 1) 3 ice cubes and 4 ounces of triple sec. 2) 3 cl of banana liqueur. 3) 3 cl of orange syrup. 4) Put 3 dishes, some sugar and some orange syrup and add food blue colouring to orange syrup and decorate the edge of the cup. 5) Shake for 10 seconds and serve.
