CRANBERRY CAKE!

Ingredients: •3 large eggs room temp •2 C sugar •3/4 C unsalted butter softened 1 tsp vanilla extract •1 tsp almond extract •2 C all-purpose flour 12 oz fresh cranberries •Powdered sugar for garnish

Directions: •Preheat oven to 350 degrees. •Prep an 9x13 pan with non-stick baking spray. •Beat the eggs and sugar together with an electric mixer until slightly thickened and light in color. This mixture should form peaks when you lift the beaters out of the bowl. •Add the butter, almond and vanilla extract to the egg mixture and continue to mix. Mix for two minutes. •Slowly add in the flour but just until combined. •Add the fresh cranberries. Stir the cranberries to mix throughout. •Bake at 350 degrees for 40-50 minutes. •Allow the cake to cool completely before cutting into slices. •Garnish with powder sugar.

Christmas Gift Guide Continued

CHRISTMAS LASAGNA!

Ingredients: Shortbread Cookie Layer:

•3/4 cup unsalted butter-softened •1⁄2 cup powdered sugar •1 1/2 cups all-purpose flour •1 tablespoon cocoa powder •1⁄4 teaspoon salt •Red food coloring

Peppermint Cheesecake Layer: •1 cup powdered sugar •8 oz. cream cheese-softened •1 1⁄2 cup Cool Whip-thawed •1 teaspoon peppermint extract

Pudding Layer: •2x3.9 oz. box white chocolate instant pudding •3 cups milk •Green food coloring

For Topping: •1 1⁄2 cups cool whip

For Garnish: •2 cups mini marshmallows •Red and green sprinkles •M & M candies

Instructions: •Preheat the oven to 350 F. Lightly butter 9 x 13 inch baking dish, set aside. •In a small bowl stir together flour, salt and cocoa powder. •In large bowl beat butter and sugar until smooth. Add red food coloring and mix well (I used 1 tablespoon food coloring to get intense red color). Turn you mixer on low speed and gradually add flour mixture. Mix until combine. •Press the mixture into bottom of baking dish and bake for 18-20 minutes. •Remove from the oven and cool completely. •To make cream cheese layer beat softened cream cheese and powdered sugar until smooth. Add 1 1⁄2 cup Cool Whip and peppermint extract and mix to combine. Spread over cooled shortbread layer. Place in the freezer to firm while preparing pudding. •To make the green pudding layer whisk together 2x3.9 oz. boxes white chocolate instant pudding mix with 3 cups milk. Add green food coloring (add a few drops at a time, to desired color) and whisk until smooth. Spread over cream cheese layer. Set in the freezer for 5 minutes. •Spread 1 1⁄2 cup Cool whip over pudding layer and top with mini marshmallows and sprinkles. Place in the fridge for 3-4 hours until set.

INGREDIENTS:

AMARETTO CAKE!

•1 Cup dried figs or prunes, chopped •1 1/2 cups sultanas •1 1/2 cups raisins •3/4 cup glace cherries, rinsed, dried and halved •1/3 cup crystallized ginger, chopped (optional) •1/2 cup Amaretto, plus 1 tablespoon extra for soaking the cake •1 1/3 Cups butter •1 1/2 Cups soft light brown sugar •Finely grated Zest and juice of 1 large Orange •Finely grated Zest of 1 lemon •2 tablespoons treacle •1 1/2 Teaspoons cinnamon •1 Teaspoon mixed spice •1/4 Teaspoon freshly grated nutmeg •5 medium eggs, beaten •2 Cups plain flour •1/4 teaspoon fine salt •1/2 teaspoon baking powder •3/4 Cup ground almonds

INSTRUCTIONS: •Preheat the oven to 160C/140Fan/300F/Gas Mark 2. •Grease a loose bottomed 9 inch round cake tin (10cm deep) and line the base and sides with non stick baking paper. Cut out a circle of baking paper, using the base of your tin as a template. To line the sides, cut a strip of baking paper a little longer than the circumference of the tin and about 3 inches higher. Fold it 1 inch along its length, then using scissors make little snips up to the fold line, making a fringe along the length. It should now fit snugly inside the cake tin. Finally, fit your circle over the top, covering the fringe. •Place the dried fruits in a large saucepan with the Amaretto, butter, sugar, Orange zest and juice, lemon zest, treacle, cinnamon, mixed spice and nutmeg. Gently bring to a simmer, stirring, for 10 minutes. Remove from the heat and let the mixture sit for at least 1 hour. I've often done this in advance and left it overnight. •When you're ready to bake the cake, pour the soaked fruit mixture into a large mixing bowl. Add the eggs one at a time, then stir in the flour, baking powder and ground almonds. Stir until everything is well combined. •Pour into the lined tin and bake for 2-2 1/2 hours or until the cake springs back when lightly pressed and a skewer inserted into the middle of the cake comes out clean. •Leave to cool completely in the tin.When the cake is completely cold, poke a few holes in the cake, drizzle with a little Amaretto, then wrap in a double layer of baking paper and foil and store in an airtight container.

RULES: Each week in the Christmas Gift Guide there will be a Contest (total of 5 weeks). Fill out the contest entry form each week and then drop it off at the Thrifty Nickel office or mail to: Christmas Trivia, C/O Thrifty Nickel, 629 East 21st St. Owensboro, KY 42303. You can turn them in each week or at the end of the 5th week. Must enter all 5 weeks to be eligible. The winners will be chosen by the most correct answers of each week. Deadline for all entries will be Monday, January 8th at 5 p.m. Winners will be announced in the January 11th issue of the Thrifty Nickel. Must be 18 years of age or older to be eligible. Employees and relatives of employees of Thrifty Nickel are not eligible. Only one entry per household per week will be accepted.

CHRISTMAS CHEESECAKE!

Ingredients: •1 16.5-ounce tube store-bought sugar cookie dough •4 8-ounce packages cream cheese, at room temperature •2 cups granulated sugar •1 cup sour cream •2 tablespoons vanilla extract •4 large eggs, at room temperature •Red and green sprinkles, for decorating •One 1-pound box confectioners' sugar (about 4 cups) •2 tablespoons meringue powder •Red and green gel food coloring

INSTRUCTIONS: •Position an oven rack in the middle of the oven and preheat to 350 degrees F. •Press the cookie dough into the bottom of a 9-inch springform pan. •Bake until the cookie is set and golden brown, 12 to 15 minutes. Let cool completely, about 30 minutes. Wrap the bottom and sides of the pan with a large piece of foil and put it in a large roasting pan. Reduce the oven temperature to 325 degrees F. •Beat the cream cheese and granulated sugar together on medium speed for 1 minute. Add the sour cream and vanilla and beat until just combined. Mix in the eggs by hand, one at a time, until just combined. (Take care not to overmix or the cheesecake will puff up and crack). Pour the batter into the springform pan. Add enough hot water to the roasting pan to come about halfway up the side of the springform pan. •Bake until the outside of the cake is set but the center is still slightly loose, about 1 hour and 20 minutes. Turn the oven off and leave the cheesecake in the oven for another hour. Remove the cheesecake from the roasting pan to a cooling rack. Run a knife around the edge and cool to room temperature. Cover and refrigerate at least 8 hours. •Run a knife around the edge of the pan once more and unlock to unmold the cheesecake. Transfer to a serving platter or cake stand and smooth the edges with a knife. Pat the sprinkles into the sides of the cheesecake making sure not to cover the crust or get any on top. •Whisk together the confectioners' sugar and meringue powder in a large bowl. Add 5 tablespoons water and beat with an electric mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. •Transfer about 1/2 cup of the royal icing to a pastry bag fitted with a small round tip. Thin the remaining icing with 1 teaspoon of water at a time until it is the consistency of syrup (you know you have reached the right consistency if you drizzle a bit of the icing and it sinks back into the icing within 8 to 10 seconds). Transfer 1 cup of the thinned icing in another pastry bag fitted with a small round tip. Divide the remaining batter between two small bowl and color one red and one green with the red and green gel food coloring. •Use the thick white icing to pipe a large scalloped circle around the cake leaving a 3/4-inch border. Use the thinned white icing to fill the center of the scalloped circle. Use an offset spatula to spread the icing out so that it is smooth. Decorate with the colored icing while the white icing is still set. Chill the cake until the icing is set, at least 1 hour.
