HOT COCOA COOKIES! Ingredients:

For the cookies: 1/2 C unsalted butter 1 1/2 C nestle semi-sweet chocolate 1 1/2 C flour 1/4 C hershey cocoa powder 1 1/2 tsp baking powder 1/4 tsp salt 1 1/4 C brown sugar 3 large eggs 1 1/2 tsp vanilla extract 12 large marshmallows cut in half

Ingredients:

For the chocolate icing: 2 C powdered sugar 4 tbsp unsalted butter melted 1/4 C hershey cocoa powder 1/4 C hot water 1/2 tsp vanilla extract Christmas sprinkles

Instructions For the cookies: In a double boiler, melt the butter and chocolate, stirring frequently. Once melted, set aside to cool. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.. In a standing mixer, beat the sugar, eggs and vanilla on low speed until combined. Add the cooled chocolate and mix until combined. Gradually add in the flour ingredients and mix until combineD. Scoop the dough (Will be brownie like texture) into a bowl and cover with foil and place into the fridge for 4 hours. Preheat oven to 325 degrees and line a cookie sheet with parchment paper. Using a small ice cream scoop, scoop some batter into your hands and roll into a ball. Place cookies about 2 inches apart. Bake the cookies for about 10 minutes. While cookies are baking, cut the marshmallows in half. Once cookies are baked, place a marshmallow into the center of the cookies and lightly press down. Place cookies back into the oven for another 2-3 minutes. Place a wire rack over another cookie sheet to allow the icing to drip off. Once cookies are done baking let cool for a few minutes before transferring to a wire rack while you make the icing. For the icing: Combine all ingredients into a large mixing bowl and mix until combined. If the icing is still to thick, add about 3 tbsp of hot water to it to thin it out. Using a spoon, spoon some icing onto the marshmallow on the cookie. Repeat step number 3 onto a few more cookies. Sprinkle a little bit of sprinkles onto the cookies. Repeat the last two steps onto the remaining cookies. Remember to only put icing onto a few cookies at a time because the icing will dry fast. Once all the cookies have icing and sprinkles ENJOY! SQUASH & ZUCCHINI CASSEROLE! INGREDIENTS: 3 zucchini 2 yellow summer squash 5 large eggs, beaten 1 cup half-and-half 3 tablespoons all-purpose flour 1/3 cup chopped scallions 1/2 cup shredded Italian-blend cheese 1/2 cup freshly grated Parmesan cheese 2 teaspoons Greek seasoning, such as Cavender's 2 tablespoons unsalted butter, melted, plus 1 tablespoon for buttering the baking dish 24 buttery crackers, such as Ritz, crushed

PREPARATION: Preheat the oven to 350˚F. Butter a 2-quart (8-by-111⁄2-inch) baking dish. Slice the zucchini and squash into 1⁄2-inch-thick slices and place in a large sauté pan or Dutch oven with water to cover; bring to a simmer over medium heat and cook for 10 minutes. Drain in a colander. Arrange the slices in a single layer on a clean towel and top with another clean towel, pressing lightly to absorb excess moisture. In a large bowl, whisk together the eggs, half-and-half, and flour. Stir in the scallions, 1⁄4 cup of the Italian-blend cheese, 1⁄4 cup of the Parmesan cheese, and the Greek seasoning. Add the squash slices and gently fold them into the wet ingredients. Spread the mixture in the prepared baking dish. Top with the remaining cheeses. Stir the melted butter into the crushed crackers and sprinkle the crumbs evenly over the surface of the casserole. Bake for 25 to 30 minutes, until set. Serve hot.

RULES: Each week in the Christmas Gift Guide there will be a Contest (total of 5 weeks). Fill out the contest entry form each week and then drop it off at the Thrifty Nickel office or mail to: Christmas Trivia, C/O Thrifty Nickel, 629 East 21st St. Owensboro, KY 42303. You can turn them in each week or at the end of the 5th week. Must enter all 5 weeks to be eligible. The winners will be chosen by the most correct answers of each week. Deadline for all entries will be Monday, January 8th at 5 p.m. Winners will be announced in the January 11th issue of the Thrifty Nickel. Must be 18 years of age or older to be eligible. Employees and relatives of employees of Thrifty Nickel are not eligible. Only one entry per household per week will be accepted.

WHITE CHRISTMAS CAKE! Ingredients: 4 large eggs, separated 1/2 cup water 4 ounces chopped white candy coating or white baking chips 1 cup butter, softened 2 cups sugar 1 tablespoon vanilla extract 2-1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 cup buttermilk 1 cup sweetened shredded coconut 1 cup chopped pecans frosting: 1 package (8 ounces) cream cheese, softened 1/2 cup butter, softened 3-3/4 cups confectioners' sugar 1 tablespoon 2% milk 1 teaspoon vanilla extract optional decorations: Melted white candy coating or white baking chips Red Sixlets candies and sprinkles

Directions: Place egg whites in a large bowl; let stand at room temperature 30 minutes. In a small saucepan, bring water to a boil. Remove from heat; stir in candy coating until blended. Cool 20 minutes. Preheat oven to 350°. Line bottoms of 3 greased 8-in. square or 9-in. round baking pans with parchment; grease paper. Cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg yolks and vanilla. Beat in candy coating mixture. In another bowl, whisk together flour, baking powder and baking soda; add to creamed mixture alternately with buttermilk, beating after each addition. Fold in coconut and pecans. With clean beaters, beat egg whites on medium speed until stiff peaks form; fold into batter. Transfer batter to prepared pans. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely. For frosting, beat cream cheese and butter until smooth. Beat in confectioners' sugar, milk and vanilla. Spread between layers and over top and sides of cake. If desired, pipe leaf designs with candy coating onto a waxed paper-lined baking sheet; refrigerate until set. Decorate cake with Sixlets, sprinkles and leaves. Refrigerate leftovers.
