BENEFITS OF SWIMMING
Summer brings warm weather, school breaks, and the perfect opportunity to dive into the pool. Swimming isn’t just a fun way to cool off and connect with others—it’s also a powerful tool for improving your overall health and well-being.
A Full-Body Workout
Swimming engages your entire body, providing a low-stress, high-reward workout. It raises your heart rate without straining your joints, tones muscles, builds strength, and boosts endurance. It’s especially good for cardiovascular health helping to strengthen the heart and lungs, lower blood pressure, and manage blood sugar levels.
Gentle Yet Effective
One of swimming’s greatest benefits is that it’s low-impact, making it accessible for a wide range of people, including those with arthritis, injuries, disabilities, or chronic pain. It can support recovery, reduce joint stiffness, and ease discomfort. Swimming is also beneficial for people with asthma, as it may help expand lung capacity and improve breath control.
More Than Just Exercise
Beyond fitness, swimming offers mental and emotional benefits too. It’s an efficient calorie-burner one hour of swimming can burn between 400–800 calories, compared to 314 from walking or 183 from yoga. Plus, it can improve sleep, elevate your mood, and reduce stress.
So this summer, grab your towel and goggles and head to the pool—it might just be the most fun (and effective) way to stay well.

The Remedy Kitchen at Camp Southern Ground has served up many fan favorites over the years—but these three recipes top the list. We’re excited to share them with you, so you can bring a little camp magic into your own kitchen!

Directions
Million Dollar Bacon
Ingredients
1/2 cup light brown sugar, packed
1 teaspoon fresh cracked black pepper
1/2 teaspoon cayenne pepper, or you can substitute chipotle powder
1 pound thick-cut bacon
1/4 cup maple syrup
1.Preheat the oven to 375°F. Line a baking sheet with parchment paper or heavy-duty aluminum foil. I used heavy-duty foil and parchment paper. Generously spray a cooling rack with nonstick cooking spray.
2.Add the brown sugar, fresh cracked black pepper, and cayenne pepper to a small mixing bowl (three to four cups) and stir to combine completely.
3.Lay the strips of bacon in a single layer on top of the prepared cooling rack.
4.Spoon the brown sugar mixture over one side of the bacon.
5.Bake for 15 minutes, then rotate the baking sheet and cook for an additional 10-15 minutes or until the bacon is browned to your liking.
6.Remove the bacon from the oven. Immediately drizzle the maple syrup over the bacon. Allow the bacon to rest on the rack for ten minutes before transferring to a serving plate and serving. I do not recommend placing the bacon on paper towels, as it will stick to the towels.

1 lb (16oz) salmon skin off, cut into 4 equal size square pieces
4 Tbsp canola oil, divided
8 slices Million Dollar Bacon
1 medium heirloom tomato, sliced into 1/4 inch thick rounds
Flaky sea salt
Romaine lettuce leaves, 1-2 per sandwich
4 brioche buns or any other type of roll, such as ciabatta or focaccia
TARRAGON AIOLI
1 large egg
4 tsp fresh lemon juice
1 garlic clove finely chopped 1/2 cup canola oil
1/2 cup extra virgin olive oil
1/2 tsp Kosher salt
1/4 tsp freshly ground black pepper
2 Combine 1 egg, a chopped garlic clove, 4 tsp fresh lemon juice, and 1/2 cup canola oil in the cup of a personal blender Process until smooth and thick, about 2 minutes Transfer the mixture to a large mixing bowl, then very slowly stream in 1/2 cup extra virgin olive oil while continuously whisking. Add salt and pepper.
3.Place the tomato slices in a single layer on a paper towel. Season lightly with flaky sea salt, then allow to drain.
4.In a small bowl, combine 1 tsp dried oregano, 1 tsp paprika, 1 tsp Kosher salt, tsp dried thyme, tsp garlic powder, tsp onion powder, tsp crushed red pepper flakes, and tsp black pepper. Stir well to combine
5 Pat the salmon dry with a paper towel, then drizzle with 1 Tbsp oil Sprinkle the blackening spice evenly onto both sides of the fish Set aside
6 Heat a large skillet over medium-high heat, then add remaining 3 Tbsp neutral oil When very hot, add seasoned salmon fillets, then cook for 4 minutes undisturbed Use a fish spatula to flip the fish If it does not release easily, it’s not ready to flip. Cook for an additional 3-4 minutes, or until an internal temperature of 120F is reached.
7.Assemble the salmon sandwich. If you like, toast the bread. If not, begin assembling. Place heaping spoonfuls of the tarragon aioli on each side of the bread. Place 1-2 romaine lettuce leaves on the sauce, followed by a seasoned tomato slice, 1 piece of crispy bacon (break it in half to fit the bread), and a pan seared salmon fillet Gently press the top bun on top Serve immediately!
