Becauseoftheincrediblesupportwereceived, ProjectRemedywasagreatsuccess.Itwas beautifultoseeourentireCSGfamilycome together,fromourCEOdown,tohelpmeetaneed inourcommunity.

TherewasonethingourRemedyKitchenmissed, interactingwiththepeople,andseeingfaceson campus.

Fall is headed our way , which means so is the scarves , boots , and vests of fall fashion , pumpkin spice ( which I am aware that everyone isn ' t a fan of , I ' m on the fence myself , but we do have to acknowledge that it is a fall staple ) , and a unique set of produce items that can be used to create some delicious and nutritious meals . Here ' s just a few fruits and vegetables that will be in season this fall , their health benefits and few options for how to cook them !

Cabbage

Benefits:

An excellent source of Vitamin C Vitamin K, and fiber, Cabbage can help keep your digestive system happy and healthy

How to eat it:

Cabbage is delicious prepared many different types of ways; it could be sliced raw and used in coleslaw, it could be braised and served on the side of an entree, or it can even be fermented

Full of folate and polyphenol antioxidants, pears can protect against oxidative damage and has anti-inflammatory properties

How to eat them:

Pears are wonderful paired with gorgonzola Together they make a wonderful topping on salad as well as pizza Pears also make a delicious ingredient in desserts, such as cinnamon baked pears or pear crisp

A good source of manganese potassium, and Vitamin C, which is critical for immune health and can improve heart health

How to eat it:

in it's raw form, fennel has a strong taste that is similar to anise which is commonly associated with black liquorice When prepared (grilled, roasted, sauteed, etc) fennel can be a delightful addition to dishes

1 stick (½ cup) salted butter, softened

½ cup all-purpose flour

1 cup rolled oats

½ cup sugar

½ cup brown sugar

¼ teaspoon salt

Optional, for serving: vanilla ice cream and caramel sauce

4 Medium Sized

Pears, peeled and sliced

3 Apples, peeled and sliced

1 tsp Vanilla

1 1/2 tsp Cinnamon 1/4 tsp Nutmeg

Preheatovento350degreesF.Sprayacastironskilletwithcooking spray.

Placepeeled,slicedpearsandapplesinalargebowl.Addvanilla, cinnamon,nutmeg,and¼teaspoonsalt;tosstocoat. Transferpearsandapplestothepreparedcastironskillet.

Inaseparatebowl,useafork(oryourfingers)tomixtogether butter,flour,oats,whitesugar,brownsugar,andsaltuntil completelycombined.Themixturewillbelumpy,whichisfine.

Spreadtoppingevenlyoverthepearsandapples.

Sprinklewithmorecinnamon,ifdesired.

Bakefor45minutes,oruntilthetopbecomesgoldenbrownand crispyandthepears andapplesaresoft.

Removefromtheovenandletcoolfor5-10minutes.Servewarmorat roomtemperature.

Poached

Fillapotwithwaterandadd1tbspofvinegar(any kind).

Bringittoaboiloverhighheat.Onceitboils,turn theheatwaydownlow.

Crackyoureggsoneatatimeintoafine-meshed sievesetoveralargebowltocatchthedrips.Let eachdrainforafewsecondsbeforegentlysliding intothepot.

Addtheeggsatagentlesimmer.Playwiththeheat abitaftertheeggsareaddedtomaintainthat gentlesimmer(astheeggswillcoolthewater down).

Gentlypokeeggswithaspoonstartingat3minutes. Thewhiteshouldbeset(nowobbles)buttheyolk shouldbesoftandliquid.

Useaslottedspoontotransfereggstoapapertowellinedplatetodrainexcesswaterbefore serving.

Grabawell-seasonedcastironpan.Add twotablespoonsofcanola,vegetableor peanutoil(somethingthatlikeshighheat). Heatitonhighuntilshimmeringhot. Crackyoureggsintothepanoneatatime, leavingspacebetweenthem. Sprinkleeggswithsalt(ascant1/8tsp coarsesaltperlargeegg).

Waituntiltheedgesturndeepgoldenbrown andlacy.

Serveassoonaswhitesaresetforsunnysideup,orcarefullyflip.Cookonly15-20 secondsontheothersideforovereasy.

Grabapot.Addyourdesirednumberoflarge eggs.

Fillthepotwithenoughwatertocovertheeggs by1inch.Bringpottoaboiloverhighheat. IMMEDIATELYremovepotfromheat,cover, andleteggsstandinthehotwaterfor12 minutes.

Transfereggstoabowlfilledwithiceand watertocool(ifbeingservedcold),orrununder coldrunningwateruntiljustcoolenoughtopeel (ifbeingservedhot).

Peeleggsbycrackingtheirfatbottomsonthe counter,thenremovetheshellundercool, runningwater.Placeacolanderunderneathto catchshellfragments.

Scrambled

Grabapan,eithernonstickorwell-seasonedcastiron andheatitovermediumheat.

Whiskyoureggsvigorouslywithsalt(ascant1/8tsp coarsesaltperlargeegg)untillightandfrothy. Addbuttertopan.Iuseatablespoonofbutterfor4 eggs.

Assoonasbuttermelts,re-whiskeggsandaddtothe pan.Scrapethebottomofthepanastheeggsbeginto cookandgently,frequentlymovethecurdsaroundthe pan.Beinggentleiskeyforlarge,fluffyscrambled eggs(stirlikecrazyifyouprefercustardy,smaller curds).

Removeeggsfrompanwhentheyappearabout90% cooked.Theyshouldstillbemoist,astheywill continuetofirmupwithresidualheatandcarry-over cooking.

Addasplash(1-2tbsp)ofmilkorcreamatthistime andgentlyfoldintostopcookingandaddcreaminess ifyoulike.
