WARRIOR Wellness

JOSEPH KRAFT

This Warrior Week Alum, had an experience at camp that is helping him pursue health in wellness in a whole new way!

On January 31 2018 Joseph Kraft went to the emergency room unsure of what was happening to him. Upon admission, he discovered that he was having a diabetic episode Between 70-99 is considered a normal blood sugar level and once it reaches 200 it is considered at a type 2 diabetic level; that day Joseph’s blood sugar tested at 757

We met Joseph at Camp Southern Ground in January of this year during a Warrior Week session Joseph had an impactful week at Camp; one of his highlights was learning about his strengths He said not only has it been beneficial for him to understand himself better, but it has also given him a better understanding for his wife.

Another highlight of Joseph’s week was his time with the culinary team. During his week at Camp, he learned how to create meals that are both nutritious and delicious He learned more about how to enjoy meals keep his numbers from spiking and how to incorporate natural sweeteners. Not to mention that during his time at Camp, Joseph did not have to use his insulin and toward the end of the week he didn’t even need his medicine to stabilize his blood sugar

Bakingalmostalwaysputsasmileonpeople'sfaces.Thereissomethingspecialaboutenjoyingalittle somethingsweetwithalovedone.Whetherit’sattheendofamealorwhenweordercakesorcookiesfora lovedone’slifeevent,sweettreatsoftentimesbecomethecenterpieceoftheevent.Mostofushavefond memoriesofbakingathomewithlovedonestoo;bakedgoodsare createdandgivenoutoflove.Theyaresomethingthateveryoneshould beabletoenjoytogether,includingthosethatcannothaveglutenor otherdietaryrestrictions.That’swhyit’sajoyformetobeabletofind newwaystomakeglutenfreedessertsaswellasusedessertswith naturalsweeteners

DuringmytimeatCampSouthernGround,I’velearnedsomuchabout baking TherearetimesthatIgettobounceideasoffmydaughter Maggie,whichisafunwayforustoconnect.Othertimesit’salotof trialanderror,butthereissomethingsoexcitingwhenyouhave success!SoIholdontowordsfromTheodoreRoosevelt,'Believeyou canandyou’rehalfwaythere.'"

Baking almost always puts a smile on people's faces.

BakingTips with ChefChris

Gluten free baking can be tricky and challenging, baking in general is a science, it almost always needs very specific measurements, patience and a lot of love 1 to 1 GF flour available at most grocery stores, and for the most part if you find a recipe that calls for AP flour (all purpose) you can substitute 1 cup of GF flour The key here is in how you measure each cup. If you don’t have a scale, make sure you “fluff” your flour, spoon the flour into a measuring cup and then level off with the back of a knife

Mixing your GF batter with a electric hand mixer or stand mixer will allow for a smoother batter, If your making muffins or cakes let your batter rest for 20 to 30 minutes before pouring into your pans, ( do not let it sit any longer than this) this allows the GF flour to hydrate

I also increase the baking powder and baking soda when it's in the recipe to help with leavening Vanilla is another one I add more of for flavor

In the beginning of 2020, our culinary team decided to drastically reduce our use of refined sugar I am still new to this, but here are a few things I’ve learned.

My favorite sugar substitutes are coconut sugar, honey, and maple syrup

Gluten-free recipes tend to need more liquid, so 1 to 1 conversions work most of the time. If you are using honey or maple syrup, reduce the cooking temperature by 25 degrees If you use banana as a sweetener, understand that the banana flavor does not mask well

StrawberryCreamPie

PrepTime:20Minutes|CookTime:30Minutes|Servings:4

Ingredients

Strawberries

2-lb Fresh strawberries ¼ Cup Honey

CreamFilling

8 oz Cream Cheese, room temperature

1 Cup Heavy Whipping Cream, Cold 1/3 Cup Honey

1 tsp vanilla

Directions

Fruit

Dough

3 Tbsp Ice water

1 1/2 Tbsp Sour cream

1 ½ tsp Rice vinegar

6 ½ oz GF flour (can use AP flour)

1 ½ tsp sugar

½ tsp salt

¼ tsp Xanthan gum (do not use if its already in your GF flour or using AP flour)

8 Tbsp unsalted butter cut into small pieces, freeze for 15 minutes.

Wash and hull strawberries. Cut in half (quarter if they are large berries) Toss berries with honey in large bowl, cover and refrigerate, best if its overnight

Dough

Combine water, sour cream and vinegar together in small bowl In food processor add flour, sugar, salt and xanthan gum (if using) process until combined Add butterAnd pulse until crumbs look uniform About 20 pulses.Pour sour cream mixture over flour mixture and pulse until dough comes together in large pieces on the blade. Place dough onto plastic wrap and shape into a disk. Wrap tightly and refrigerate 30 minutes to an hour.Before rolling dough out, allow to soften on the counter.Lightly spray a 9-inch pie plate with cooking spray.Place dough between to sheets of plastic wrap and roll out to a 12 inch circle, remove top layer and gently invert dough into pie plate, remove remaining plastic and lightly press dough into pie plate Trim and crimp dough around edges Cover loosely with plastic and freeze until chilled, about 15 minutes Preheat oven to 375 degrees and bake on middle rack until crisp and golden, about 25 – 30 minutes, rotate ½ way through baking.

Cream Filling

In a stand mixer, beat heavy cream to stiff peaks, transfer to another bowl and refrigerate.In same mixer bowl add cream cheese, honey and vanilla and beat until smooth Add Whipped cream to cream cheese mixture and fold in until completely incorporated Cover and refrigerate until needed

Assemble Pie

Fun Fact/ Did You Know??

Spoon cream mixture into cooked and cooled crust. Level out the top. Spoon strawberries on top of cream mixture using a slotted spoon.Keep refrigerated.

CarneAsadaStreetTacos

Ingredients

2 tablespoons vegetable oil

3 lbs flank or skirt steak

1 onion chopped

2 fresh limes plus extra for toppings

1 bundle of cilantro

1 Tablespoon salt

1 teaspoon pepper

1/2 stick butter

16 mini corn tortillas

Directions

Thinly slice the steak. Then chop into bite site pieces.

In a skillet, begin to brown the steak in the oil.

Add half the onions to the skillet and cook until soft. Save the rest of the onions.

Meanwhile season with salt and pepper.

Squeeze the juice of two fresh limes over the meat and onion mixture.

Continue cooking until the meat is cooked through.

While the steak is cooking, melt the butter in another skillet or I used an electric skillet.

Fry the mini corn tortillas in the melted butter for 1 minute until they are soft.

Allow them to cool slightly.You will need 2 mini corn tortillas per taco. Spoon the meat mixture on the tortillas.

Top with cilantro, fresh onions and serve with limes.
