BAKER’S DELIGHT

Pizza Poppers

Bakers

Delight

Things you need:

2 dough balls, divide in 4 pieces thawed

Cornmeal (to keep dough from sticking to muffin pan or pie tin)

Pizza sauce- 1 ¼ cups

Pepperoni chopped, sausage crumbles – 1/3 cup each

Spices: ½ tsp. each of basil, oregano, garlic powder

Mozzarella cheese- 1 cup

Here’s how:

1.Preheat oven to 400 degrees

2.Place cornmeal on bottom of flat surface

3. Roll out dough balls thin

4. Cut out dough circles

5. Spread pizza sauce on dough circle

6.Add chopped pepperoni, sausage

7.Add spices

8.Top with cheese

9.Place pizza circle in muffin pan or pie tin

10.Heat in oven for 5-7 minutes until crust is done and cheese melts

Fruit Pockets

Baker’s Delight

Things you need:

Muffin pan

Cherry pie filling

Apple pie filling

Peach pie filling

Puff pastry (cut in half)

Cinnamon/sugar

4 eggs

Here’s how:

1. Preheat oven to 475 degrees.

2. Add 3 Tbls. of filling to your puff pastry (don’t overfill or it will burst while baking).

3. With a sharp knife, cut 3 slits into the top of your pie.

4. Put in a spoon full of filling of your choice on the pie crust.

5. Whisk eggs in separate bowls, add a Tbls. of water and put a drop of food coloring in each bowl. Brush with the egg wash

6. Bake for 12 minutes in oven.

7. Mix the powdered sugar and water to make a thin glaze for the pies.

5. Drizzle over the top and enjoy!!

Sausage Pinwheels

Things you need:

2 dough balls, divide in 4 pieces thawed

Cornmeal (to keep dough from sticking to pizza stone)

Butter (melt 3 tablespoons)

Cream cheese – 1 8 0z. block

Sausage crumbles- ½ cup

Cheddar Cheese

Here’s how:

1.Preheat oven to 450 degrees.

2.Brown sausage if raw, if already cooked, just heat up

3.Roll dough balls thin

4. Place cornmeal on baking pan

5. Roll out pizza dough into rectangle

6. Brush with melted butter

7. Mix sausage and cream cheese together

8. Roll up pinwheels, slice in ½” slices and place on baking pan

9. Bake for 10-15 minutes until cheese melts eat and enjoy.

Belba’s Chocolate Chip Cookies

Baker’s Delight

Things You Need:

2 ¼ cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 cup shortening

¾ cup granulated sugar

¾ cup packed brown sugar

1 tsp vanilla extract

2 eggs

2 cups mini chocolate chips

Here’s How:

1.Preheat oven to 375 degrees.

2. Combine flour, baking soda and salt in small bowl.

3. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition.

4. Gradually beat in flour mixture.

5. Stir in morsels.

6. Drop by rounded tablespoon onto ungreased baking sheets.

7. Bake for 9 to 11 minutes or until golden brown. Cool for 2 minutes.

Pizza Pinwheels

Dudes Baking

Things you need:

2 dough balls, divide in 4 pieces thawed

Cornmeal (to keep dough from sticking to Pizza stone)

Vegetables (onions, bell peppers, mushrooms, etc.)

Mozzarella Cheese

Here’s how:

1.Preheat oven to 400 degrees

2.Cut and Sauté vegetables on the cooktop

3.Roll dough balls thin

4.Place cornmeal on baking pan

5. Roll out pizza dough into rectangle

6. Brush with pizza sauce

7.Add sausage, pepperoni, vegetables and cheese

8.Roll up pizza, slice in ½” slices and place on baking pan

9.Bake for 5-8 minutes until cheese melts

10.Eat and enjoy.

Mexican Street Corn Dip

Dudes Baking

Things you need:

16 oz. cream cheese

2 cups of corn (canned or frozen)

8 oz. pepper jack cheese (shredded)

½ cup milk

½ cup sour cream

2 Tbls. Tajin seasoning

Queso Fresco for garnish

½ lime juice squeezed over the top

Here’s how:

1.In a large skillet over medium heat, melt together cream cheese and pepper jack cheese for 3-5 minutes until melted and smooth.

2. Reduce heat and add corn, milk and tajin seasoning, stirring well.

3. Continue to heat until the dip is thick and bubbly, for about 7 minutes, stirring frequently to avoid burning.

4. Stir in sour cream

5. Squeeze the juice from half a lime over the top.

6. Make Air Fryer Corn chips and serve

7.Eat and enjoy.

Air Fryer Tortilla Chips

Dude’s Baking Things you need:

Corn Tortillas- 6

Garlic Salt

Pepper Olive Oil

Plastic knives Here’s how:

1.Cut corn tortillas into 6 triangles

2. Brush lightly with olive oil and sprinkle with garlic salt

3. Place in Air Fryer and bake for 10 minutes

4. Serve with dip

Crepes

Dude’s Baking

Things you need:

Flour- 1 cup

Eggs- 3

Milk – 2 cups

Pinch of salt

Cooking Spray

Filling: Savory

Chicken- ½ Cup Cooked

Spinach- 1 Cup Sauteed

Ham- ½ cup Cubed

Alfredo Sauce- 1 Small Jar

Mozzarella Cheese- 2 Cups

Bowl or large measuring cup

Here’s how:

1.Preheat crepe pan

2. Mix crepe mixture in a measuring cup and pour on hot crepe pan and cook on both sides.

3.Sauté spinach in a saucepan with olive oil

4.Season spinach with salt and pepper

5. Add cooked chicken and spinach to Alfredo Sauce

6.Cook crepes and fill with Chicken mixture

Hibachi Chicken & Rice

Dude’s Baking

Things you need:

Fajita chicken – 2 cups

Eggs – 2 large beaten

Olive oil- 3 Tbls.

Green onion

Bell Pepper

Chopped garlic.

Salt & Pepper

Rice – 2 cups

Soy Sauce- 3 Tbls,

Here’s how:

1. Cook rice according to directions or can use instant rice

2. Cut chicken into small pieces

3. Cook and stir eggs in hot oil until cooked through

4. Chop green onions and garlic

5. Divide ingredients into two pans to allow more campers to cook at one time

6. Add olive oil to frying pans, then add chicken, eggs, green onions, and garlic and cook for about 5 minutes.

7. Season with salt, pepper, and soy sauce

8. Remove from heat, add rice, mix

9. Serve and enjoy

Sheet Pan Fajitas

Dude’s Baking

Things you need:

1 Tbsp chili powder

1/2 Tbsp paprika

1/2 tsp onion powder

1/4 tsp garlic powder

1/4 tsp cumin

1/8 tsp cayenne pepper

1 tsp sugar

1/2 tsp salt

2 small yellow onions (or one large)

3 bell peppers, any color

1 lb. chicken breast

2 Tbsp cooking oil

1 lime tortillas

½ cup sour cream (optional)

Here’s how:

. Preheat the oven to 450ºF. Mix all the spices for the fajita seasoning in a small bowl and set aside

2. Cut the onion and bell peppers into 1/4-inch-wide strips.

3. Slice the chicken breast into thin strips.

3. Add the chicken and vegetables to a large baking sheet or casserole dish.

3. Drizzle the cooking oil over the chicken and vegetables, then sprinkle the fajita seasoning mix over top. Spread the chicken and vegetables out over the baking sheet evenly.

4. Bake the chicken and vegetables in the preheated oven for 10-15 min

5. To serve, scoop a small amount of meat and vegetables into the center of each tortilla. Top with a few sprigs of cilantro, a dollop of sour cream, and an extra squeeze of lime if desired.

Breakfast Scramble Tacos

Dude’s Baking

Things you need:

Bacon- 8 pieces

Eggs – 12, cracked and mixed in bowl.

Olive oil- 3 Tbls.

Green onion

Bell Pepper

Shredded cheddar cheese

Salt & Pepper

Tortillas- 15

Salsa

Here’s how:

1. Preheat Blackstone to 350 degrees

2. Cut bacon in half, place it on the griddle and cook for 5-8 minutes

3. Cook and stir eggs in hot oil until cooked through

4. Chop green onions and garlic, sauté on Blackstone

5. Heat tortillas on Blackstone

6. Mix all ingredients together and add ¼ cup to each tortilla

7. Top with cheese

8. Add salsa if desired

9. Serve and enjoy

Teriyaki Chicken Skewers

Grill Masters

Things you need:

Chicken Breast

Teriyaki Sauce

Pineapple

Onion

Bell Pepper

Here’s how:

1.Soak skewers in water.

2. Chop chicken, onion and peppers  into 1 inch pieces.

3. Alternate chicken, pineapple pieces, onion, peppers on skewers.

4. Use grill brush to apply teriyaki sauce to ingredients.

5. Place on grill; rotate after 2 minutes.  Grill until heated through and charred on edges.

6. Take off grill and allow to cool for a few minutes.  Remove from skewer and enjoy!

Things you need:

· 1 cup plus 2 Tbl flour

· 1/2 tsp baking soda

· 1/2 tsp salt

· 1/2 cup butter

· 1/4 cup plus 2 Tbl sugar

· 1/4 cup plus 2 Tbl brown sugar

· 1/2 tsp vanilla

· 1 egg

· 1 cup chocolate chips

Here’s how:

1. Preheat grill. Spray pie tins with cooking spray.

2. Combine flour, baking soda, and salt in a small bowl.

3. Beat butter, sugar, brown sugar, and vanilla with a mixer until creamy.

4. Add eggs, beating well after each addition.

5. Gradually beat in flour mixture.

6. Stir in chocolate chips.

7. Place rounded tablespoon of dough in tin. Spread evenly.

8. Bake in grill for 9-11 minutes or until golden brown.

9. Cool. Add ice cream and chocolate or caramel syrup.

Things you need:

Brat sausage- cut in 1/4ths.

Green Pepper- sliced.

Green Onions - sliced.

Bun Ketchup

Mustard

Spices: onion powder, garlic powder, cumin, salt, and pepper

Here’s how:

1. Preheat Blackstone to 350 degrees

2. Grill onions and peppers on the Blackstone

3. Butter bun and place buttered side down

4. Heat until toasted

5. Add brat, veggies, and season as desired

6. Eat up!

PIZZA TIME

Pizza- Breakfast

Pizza Time

Things you need:

2 premade pizza shells

ranch dressing (homemade)

eggs sausage

hashbrowns (raw)

Cheddar Cheese

Here’s How:

1.Preheat pizza oven to 800 degrees.

2.Place pizza shell on perforated pan 15 minutes before cooking

3.Bake pizza for 1-3 minutes until browned

4.Crack eggs (enough for the class) and mix with a whisk and cook

5.Brown sausage and hash browns on the Blackstone

6.Assemble pizzas, top with cheese

7.Heat for 1-3 minutes until cheese melts

8.Slice into small slices so that each camper gets a slice of each pizza.

Things you need:

2 premade pizza shells

Pizza sauce

Pepperoni

Sausage

Vegetables (onions, bell peppers, mushrooms, etc.)

Here’s how:

2. Put frozen pizza shell on perforated pan 15 minutes before baking (to thaw)

3. Precook the pizza for 1-3 minutes until browned

4. Cut and Sauté vegetables on the Blackstone

5. Brush with pizza sauce

6. Add sausage, pepperoni, vegetables

7. Assemble pizzas and top with cheese

8. Heat for 1-3 minutes until cheese melts

9. Eat and enjoy.

Chicken Bacon Ranch Pizza

Things You Need:

2 pizza shells

ranch dressing

fried chicken

bacon pieces

mozzarella cheese

Here’s How:

1. Preheat Pizza Oven to 600 degrees.

2. Place frozen pizza shell on perforated pan 15 minutes before baking (to thaw)

3. Bake pizza shell for 1-3 minutes until browned

4. Mix ½ pkg Ranch dressing mix or make homemade ranch dressing (see recipe)

5. Layer ranch sauce, bacon pieces, and fried chicken pieces. Top with mozzarella.64. cook for 13 minutes until cheese is melted

7. Slice into small slices so that each camper gets a slice of each pizza.

Fruit Pizza

Things you need:

For the Crust:

2 premade pizza crusts

Brush with melted butter

Sprinkle cinnamon-sugar mix (1/2 cup sugar to 2 Tbls. cinnamon)

Bake in pizza oven for 1 minute

Top with the filling and enjoy

For the Filling:

1- 8oz cream cheese, softened

2 cups powdered sugar

1/2 tsp vanilla extract

Cream the above ingredients together with a mixer

Add Fresh fruit (blueberries strawberries, bananas for topping).

Here’s how:

1.Place Shell on Perforated Sheet 15 minutes before use. Preheat oven to 350F.

2.In a large bowl, cream together the butter and sugar.

3.Add the egg yolk and vanilla. Mix until smooth and fluffy.

4.Add the flour, baking soda and powder to a small bowl. Stir together and then add to the butter mixture.

5.Mix until well combined (dough may seem crumbly).

6.Use a small cookie scoop to portion 1 1/2 inch balls of dough, and use your hands to roll them into a smooth ball. (I found the dough seemed dry until I rolled each scoop by hand.)

7.Portion a dough ball into each of the wells of your pan and press down slightly.

8.Bake for 8-10 minutes or until the edges are golden. Allow to cool before removing from the pan.

9.Cream together the cream cheese and powdered sugar until thick and smooth. Add the vanilla extract.

10.Pipe or spread the filling into the cooled cookie shells. Top with fresh fruit.

Things you need:

Here’s how:

1.Cut corn tortillas into 6 triangles

Avocados- 2 peeled, pitted and diced

¼ cup Cilantro chopped

Lime juice- 1½ Tbls.

Salsa- ¼ cup

Garlic Powder- ¼ tsp.

Ground pepper to taste

Refried Beans- 1 can

Black Olives (optional)

Sour Cream- 8 oz.

Tomato – 1 diced

Green Onions – 2 chopped

Shredded Cheese – 2 cups

Here’s How:

1. Peel and mash avocados in a medium bowl to desired consistency. Mix in cilantro, salsa, lime juice, garlic salt and pepper. Set aside.

2.Spread refried beans in bottom of pan

3.Top with sour cream, cover with guacamole.

4.Cut up tomatoes in small dices, cover the guacamole.

5. Cut up green onions, cheese and black olives (optional)

6. Make air fryer tortilla chips (see recipe)

7.Enjoy!

7 Layer Dip

Things you need:

Pan

Avocados- 2

Lime juice- ½ Tbls.

Garlic Powder- 1 tsp.

Things you need:

Funfetti cake mix- 1 box.

Yogurt- 2 cups

Whipped topping – 1 cup

Graham Crackers

Strawberries

Here’s how:

1. Mix together cake mix, yogurt, and whipped topping until completely combined.

2. Serve with graham crackers and strawberries.

Rotel Cheese Dip

Chips and Dips

Things you need:

1 block of velvetta

1 can of rotel tomatoes

1 lb of ground beef chips carrots and celery

Here’s how:

1.Melt the velvetta in a microwave oven

2.Mix in the rotel tomatoes

3.Brown the ground bee on the Blackstone

4.Cut up celery and carrots (peeled)

5.Make Air Fryer Chips or corn tortillas on the Blackstone (salt and cut in 1/4ths)

WACKY WAFFLES

Sam’s Famous Waffles

Wacky Waffles

Things You Need:

1 3/4 cup flour

1 3/4 cup milk

1/2 cup vegetable oil

1T baking powder

2 egg separated (save yolk)

pinch salt

1/2 T sugar

1/2 T vanilla

whipped topping syrup

Here’s How:

1. Pre-heat waffle iron.

2. Separate egg yolks from egg whites.

3. Mix all ingredients (including yolk) in bowl, then beat the egg whites seperately and gently fold them in when fluffy.

4. Spray waffle iron generously with cooking spray.

5. Pour batter onto hot waffle iron.

6. Cook according to waffle iron directions.

7. Makes 2-3 waffles.

Cinnamon Roll Waffles

Things you need:

2 dough balls, divide in 4 pieces thawed

Cinnamon Topping:

¾ cup brown sugar

½ cup butter melted

1 Tbls. cinnamon

Cream Cheese topping:

1 ½ cup powdered sugar

1 (3 oz.) cream cheese

¼ cup butter, softened

½ tsp. vanilla extract

1/8 tsp. salt

Here’s how:

1.Preheat and spray waffle iron with Pam

2. Roll out dough balls thin

3.Cut into 12 rectangles

4.Cook 12 rectangles in waffle iron

5.Make toppings while the waffles are cooking.

6.Drizzle toppings over warm waffle

Enjoy!

Pizza Waffles

Wacky Waffles

Things You Need:

1 recipe pizza dough or refrigerated crescent rolls

8 ounces mozzarella cheese, sliced 32 pepperoni slices, cut into quarters

Marinara sauce or ranch dressing or dipping

Here’s How:

1.Preheat your waffle iron. Lightly grease with nonstick spray.

2.Roll out the pizza dough on a lightly floured surface to 1/4 inch thick. Cut into equal-sized squares, about 3″ x 3″ but it doesn’t have to be exact.

3.Lay the sliced mozzarella in the center of the dough, being generous with the cheese because some will leak out. Add the pepperoni, then top with another square of pizza dough. Press down on the edges.

4.Place on the waffle iron and close the lid, pressing down firmly but do not lock the lid. The lid will raise slightly while the dough cooks, but that is fine. Cook for about 5 minutes, or until the dough is golden brown. Serve with marinara sauce or ranch dressing for dipping.

Chicken and Waffles

Things You Need:

Frozen chicken nuggets

Waffles:

1 cup flour

3/4 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1 cups milk

1 Tbl butter

·1 eggs

1 cups grated cheese

Bacon bits, green onions, other add-ins

Here’s How:

1. Place chicken in air fryer in a single layer. Cook 400 deg for 10-15 min, turning 1/2 way through.

2.Preheat waffle iron.

3.Mix waffle ingredients. Add flavor add-ins according to taste.

4.Spray waffle iron generously with cooking spray. Pour 2/3 cup batter in waffle iron. Cook according to waffle iron directions.

5. Place chicken nuggets on waffles and top with honey, syrup, BBQ sauce, Copy-Cat Cane’s sauce (see recipe) or other sauce, if desired.

6. Makes 2-3 waffles.

OTX Secret Sauce

Things You Need:

· 1/2 cup mayonnaise

· 1/4 cup ketchup

· 1/4 tsp salt

· 1/2 tsp garlic powder

· 1/2 tsp Worcestershire sauce

· 1 tsp Cajun seasoning

· 1/2 tsp black pepper

Here’s How:

1. Mix ingredients together.

2. Set aside to let flavors set.

3. Serve over chicken and waffles.

4. Enjoy

CAMP OTX CLASSICS

Christmas Cookies

Camp OTX Classics

Things You Need:

1/2 cup shortening

1/2 cup butter

1/2 cup white sugar

1/2 cup powdered sugar

1/4 tsp vanilla

1 egg

2 1/2 cups flour

1/4 tsp salt

1/4 tsp baking soda sprinkles

Frosting: 4 tbl butter

2 1/4 Tbl shortening

1-3 Tbl milk

3 cups powdered sugar

Here’s How:

1. Mix shortening, butter, white and powdered sugar. Add vanilla and eggs and mix.

2. Sift flour, salt, baking soda. Gradually add dry ingredients to dough and mix.

3. Use melon scoop to drop on baking sheet.Press with sugared mallet.

4. Bake 350 degrees for 8-10 minutes. Let cool.

5. Make frosting by mixing milk, butter and shortening.Gradually add in powdered sugar.Add vanilla. If it is too stiff, add milk a tablespoon at a time, until it is creamy and will spread. Do not let it get too runny. Mix well in mixer.

6. Frost and press lightly in a bowl of sprinkles.

Chicken Quesadillas

Things you need:

Chicken Fajita Meat- 2 Cups

Onion- 1 small diced

Taco Seasoning

Butter- melted

Mozzarella cheese shredded

Flour Tortillas

Salsa Here’s how:

1.Preheat oven to 350 degrees

2.Combine chicken with onion, spices and cheese

3. Brush the tortilla with melted butter

4. Spread mixture over one tortilla, folded

5. Place in oven and cook until done, approximately 5 minutes

6.Add salsa and enjoy

Cinnamon Rolls and Chocolate Milk

Things You Need:

1 pastry dough ball

1/2 stick butter

cinnamon sugar

cooking spray

Icing:

1 cup powdered sugar

1 tbl milk

1/2 tsp vanilla

Here’s How:

1. Melt butter in a sauce pan over medium heat.

2. Separate dough into small individual balls and place on floured surface. Roll out dough until 1/4”-1/2” thick.

3. Spread melted butter on top. Sprinkle generously with cinnamon sugar.

4. Roll dough up like a jelly roll, but to not make it too tight or it will not properly rise.Cut with metal cutter into 1 1/2” thick slices.

5. Place rolls on greased baking sheet, with space in between rolls. Bake at 350 degrees for 20 minutes. Let cool.

6. Mix icing ingredients together until smooth. Drizzle over warm cinnamon rolls.

Stromboli

Things You Need:

2 balls Pizza dough

4 cups mozzarella

pepperoni

1/2 stick butter / margarine

Italian seasoning

Here’s How:

1. Thaw pizza dough balls.

2. Roll each out into rectangular shape on floured surface. Roll out thin.

3. For each dough rectangle, layer center third of dough with 1 cup of mozzarella cheese and 7 slices of pepperoni. Fold one third of dough over center layer and add another layer of cheese and pepperoni.Sprinkle with Italian seasoning.Fold last third of dough over cheese and pepperoni. Tuck lightly into loaf shape.

4. Brush with melted butter. Poke holes on top of crust.

5. Bake 400 degrees for 15 minutes or until golden brown
