Have you ever wondered what “Tangerine Dream” tastes like? Terpenes are flavor compounds predominantly found in plants. They’re often structurally recreated in labs and re-introduced to products such as perfume to help create scents or flavors as desired. Strain-specific terpenes can be directly isolated from plants in a natural CO2 extraction, in this case utilizing the cannabis plant, without the inclusion of cannabinoids such as THC or CBD so you’re left with the pure essence of the plant flavor-wise without any of the psychoactive effects or plant matter. In this class we’ll experience strain-specific terpenes safely extracted in a lab from plants grown and harvested in Maine, combined with complex and diverse domestic and international honeys. Additionally, we’ll pair the honey with cheese, layering flavors of terpenes and honey on top. If you’re into extreme flavors and experimental pairings, this is an introduction into an untapped market, combining natural animal and plant products. COURSE CODE: TERP Sec. 01: Wednesday, 6-7:30pm. WINE & SPIRITS VOLCANIC WINES WITH SAUSAGE Hannah Morrow | Cheesemonger, MA Gastronomy

Volcanos are a hot topic. Terroir differs globally and winemakers don’t back down in the face of danger. Actually, the land surrounding volcanos provides a unique environment for grapes and imparts earthy flavors in a completely unique way. Depending on the grape, flavors can range from saline to wet earth and pleasantly change the natural fruitiness of grapes we know and love, depending on where they’re from and what the unique land properties impart. Because these wines are essentially a true representation of volcanic terroir, they pair well with flavorful meat. In this class, we’ll taste volcanic wines from all over the world alongside regionally-specific styles and preparations of sausage.

This course is all about intonation, the most important part of English pronunciation. Intonation is the contrast between higher sounding parts of speech and lower sounding parts of speech. Often, when people don’t understand what you say, it has to do with intonation. We’ll also practice primary stress for words. Primary stress is the most prominent, loudest syllable in a word. Get English intonation under control, and greatly diminish the frequency with which you experience this problem. With practice, you can eliminate this problem. You’ll also learn how to pronounce sounds (phonemes) that are difficult for you.

LEVANTINE ARABIC Richard Cozzens | Arabic Instructor

Arabic today exists in multiple overlapping yet distinct varieties. In published writing and formal contexts (e.g., articles, novels, religious texts, presentations of news or information), people use Modern Standard Arabic. At the same time, there are several different regional varieties (also called dialects) that people use primarily in conversational and informal contexts (e.g., greetings, family and social life, daily communication, social media posts).

Levantine Arabic is the regional variety of Arabic used by speakers from Jordan, Lebanon, Palestine, and Syria and is the native language to more than 44 million people. Furthermore, it is considered one of the most widely understood varieties across the Arabic-speaking world because of the large amount of media (songs, TV series, etc.) produced in it. Levantine Arabic shares with other varieties of Arabic many fundamental grammar structures and a large amount of vocabulary. B E G I N NE R L E VE L 1

Á LIVRE OUVERT: FRENCH BOOK CLUB Michel L’Huillier | Stained Glass and Fusing Artist

FRENCH CONVERSATIONS WITH THE HISTORICAL NOVEL: VICTOR HUGO VIENT DE MOURIR Valerie Sutter | French Instructor

This compelling book by Judith Perrignon is rich in details and historical facts surrounding the death of eminent French novelist, poet, and statesman Victor Hugo. His influential life spanned the entire 19th century, one of the most agitated yet exciting centuries in French history, but his death proved even more troubling for the authorities. As Victor Hugo was a fierce defender of the poor and the downtrodden, his death signals the beginning of a real battle between the authorities who fear trouble in the streets from those who grieve his passing and those who need to defend the fledgling 3rd Republic. Author Judith Perrignon cleverly weaves her tale between secret meetings of forbidden dissent and open confrontation in the streets, between the individual and the collective, between ideologies and justice. The book also describes the beginning of the modern French state and one finds reflections of today’s dilemmas in this 19th-century world. There’s much to be discussed! Students must be prepared to read between 20-30 pages per week. Recommended for students with a high intermediate or advanced level (CEFR B1+ and above).

Required book: Cyrano de Bergerac by Edmond Rostand. For students with a high intermediate or advanced level (CEFR B2 and above). COURSE CODE: FRBC Sec. 01: 5 Wednesdays, 6-7:30pm. Begins Jan. 31 (meets bi-weekly) | $165

LITERATURE A DICKENS SEMINAR: A TALE OF TWO CITIES

CATCHING THE WHALE: AN EXPERIMENT IN CRITICAL READING

Susan Glassman | Ph.D., English, University of Rhode Island

Michael Frank | Ph.D. Cornell University

If you last read Charles Dickens’ most famous historical novel, A Tale of Two Cities, in high school or have never read it, this is your opportunity to discover what you have missed. The plot centers on the years leading up to the French Revolution and culminates in the Jacobin Reign of Terror. Replete with memorable characters, historical background, challenging themes, and unforgettable images, the novel still reads as a thriller and shows how people both suffer and rise above their tragedies. Be prepared to read about profound human love and repugnant savagery, horror and redemption, a heroine and a grotesque revenger, two families with dark secrets, and two cities, all in the backdrop of the bloodbath that was the French Revolution. COURSE CODE: CITI Sec. 01: 8 Tuesdays, 10:30am-11:45am. Begins Jan. 9 | $250 Sec. 02: 8 Tuesdays, 2-3:15pm. Begins Jan. 9 | $250

Melville’s Moby Dick is an amazing mash-up of a coming-of-age narrative, a vivid picture of whaling, an inquiry into the nature of evil, and a great adventure story, all in wonderful, lucid, and often witty prose. It’s huge, it’s rich, it scares people, but it shouldn’t. This course, an experiment in collaborative reading, aims to go chapter by chapter, even paragraph by paragraph, stopping to unpack any issues—of story, of American history, of philosophy, of prose style—that deserve or demand attention. In our ten-week course, we may, with luck, get through a quarter of the book, but if our experiment works, we can plan additional courses. THE WORM IN THE APPLE: THE STORIES OF JOHN CHEEVER Petra Bittner | Literature Instructor

The Pulitzer Prize-winning writer, John Cheever, has been described as the Chekhov of suburbia. His fiction is mostly set in the Upper East Side of Manhattan, as well as old New England villages. WRITING NONFICTION

WRITING FROM YOUR OWN EXPERIENCE Mopsy Strange Kennedy | Book Reviewer, The Improper Bostonian We concentrate on two related genres using the first person. Nonfiction articles such as the “Lives” and “Modern Love” columns in The New York Times and “Connections” in the Boston Globe Sunday Magazine make use of the writer’s self, though the topic may be an external one. Books such as Intoxicated By My Illness by Anatole Broyard use fiction techniques to tell a story that is nevertheless the writer’s own. We’ll emphasize scenes, dialogue, and the use of pungent and telling detail. COURSE CODE: WREP Sec. 01: 10 Wednesdays, 10am-11:30am. Begins Jan. 10 | $315

WRITING IN CURVES Olga Katsovskiy | Creative Writer

In this six-week writing-intensive course, we will take what Burghild Nina Holzer calls a journey into the unknown; using our journals as a guide. We will write compelling stories, drawing inspiration from life’s ups, and downs, and the vast landscape of in-betweens. As our lives rarely follow straight lines, we’ll surprise ourselves by following the intricately curved pathways of our thoughts. We will explore topics fundamental to strong writing such as narrative voice, emotional arcs, shapes of stories, and tone. We will examine short fiction, essays, and nonfiction works to learn how to read as writers and apply writing theory. The aim is for each participant to create a short (under 2,000 words) semi-autobiographical piece that will be workshopped. All reading material will be provided. Writers of all levels are welcome. WRITING SHARED WORLD SHORT STORIES: A COLLABORATIVE WORKSHOP Michael McComas | Clarion Graduate and Founder of The Mechanics Writ

We are all familiar with the concept of shared worlds, many writers working on stories set in a shared fictional milieu. The Marvel Universe and Star Trek are two of the best-known commercial properties in this genre, and Thieves’ World and Future Boston both resulted in successful anthologies of short stories. In this course, we will look at the process of defining a world, its culture, and the characters who inhabit it. We will then write short stories within this collaboratively defined setting, staged against the backdrop of impending change or cataclysm. The events, the world, and even the genre are yours to choose and explore. At the conclusion of the class, we will arrange the stories in a logical and internally consistent order to include in a class anthology. COURSE CODE: WHIP Sec. 01: 8 Wednesdays, 7-9pm. THE WORST CENTURY: THE CRISIS OF THE ROMAN EMPIRE, 192 AD-284 AD Allan Converse | Ph.D. in Comparative History, Brandeis University

As the Second Century of the Common Era neared its end, the Roman Empire had been in existence for two hundred years and had reached a peak of power and prosperity. Yet within a few decades the empire was falling apart, staggered by constant civil wars, plague, barbarian invasions, and economic failure. How did such a mighty state come so close to collapse so quickly, and how in the end did it survive what was arguably the worst 100 years in the recorded history of Western civilization? This course looks at the history and historiography of this dramatic period, which offers parallels to our own times. C O U R S E C O D E : WO C E Sec. 01: 6 Mondays, 3:30-5:30pm. A CULTURAL AND ENVIRONMENTAL HISTORY OF DESERTS Maggie Freeman | Ph.D. candidate in History of Architecture, MIT

Deserts and drylands encompass 40% of the globe and shelter two billion people. Arid regions are the birthplace of world religions, empires, and civilizations and are home to valued natural resources and major cities. Throughout human history, however, deserts have been seen as empty, hostile lands—spaces to be either feared and avoided or conquered and exploited. Consequently, we often fail to understand drylands as complex ecosystems and as places of rich cultural, ecological, societal, and economic diversity. This course delves deeply into deserts around the world and throughout history, examining deserts both as places lived in and shaped by humans and as imagined constructs. We will study deserts from an environmental perspective, defining what a desert actually is; where they are located; the materials and various forms of life found in deserts; and the effects of climate change on drylands. We will also explore aspects of the cultural history of deserts, studying the art, architecture, and literature produced in about deserts. How deserts have been imagined, exploited, and colonized also constitutes an important theme of this course, and we will study deserts as sites of imperialism, nation-building, geo-engineering, and resource extraction. LOCATION, LOCATION, LOCATION: HOW GENEALOGICAL RESEARCH CAN BENEFIT FROM HISTORICAL MAPS

WHAT’S IN A NAME? BOSTON PLACE NAMES AS SIGNPOSTS TO HISTORY

Edward Mitukiewicz | Mathematician, Computer Scientist

So often we don’t really think about what’s behind the names of our streets, neighborhoods and landmarks. But let’s do so together! These names reflect people and events that have shaped Boston. In this illustrated talk, we’ll virtually travel around the city and delve into some of the names that mark our street signs, buildings, and other places of note. History will come alive in ways that enrich our sense of place and illuminate connections between the past and present.

Answering the question “where do our ancestors come from?” is often key to a better understanding of the history and traditions of our families. Identifying the places where our ancestors used to live could be a critical step in finding sources of genealogical information, but locating those places can be quite a challenging task, particularly in Eastern Europe. Web-based resources—including digital repositories of historical maps and geographic information databases—can help overcome those challenges. This workshop demonstrates the use of such resources in order to enable correlating information from multiple sources and facilitate locating our ancestral towns in Europe. 19TH CENTURY MIND CONTROL: FAKE SCIENCE AND REFORM IN ANTEBELLUM UNITED STATES Brian Bixby | Ph.D. in History, UMass Amherst

In changing times, how does one help construct a healthy society and find a satisfying place within it? This was the problem Americans faced in the 1830s, with political equality, social mobility, and industrialization revolutionizing their world. The academic disciplines of psychology and sociology were of little help, for they were both in their infancy. So Americans turned to two pseudosciences, phrenology and animal magnetism, to provide the answers. People sharing magnetic fluids and reading the bumps on their heads would provide the key to a better world. We’ll explore the careers of such varied reformers as O.S. Fowler, the dean of phrenology and inventor of the octagon house; La Roy Sunderland, crusading Methodist minister alleged to have seduced his second wife through animal magnetism, and the charlatan Robert Hanham Collyer, who ended up an honorable member of the Royal Anthropological Society! We will explore the linkages between white rage and white fragility by looking at the cycles of progress and backlash in the United States, and also by exploring relevant theories of psychological functioning. Participants in the class will develop an understanding of the interlocking historical and psychological factors that impede movement towards an equitable society. WHITE PEOPLE CHALLENGING RACISM: MOVING FROM TALK TO ACTION - PART 1 Kim Beamon, Michelle Chalmers | Co-Facilitators

While this five-session workshop welcomes participants of all identities, its focus is on racism as a system that White people created, maintain and condone - and White people have a responsibility to dismantle. The workshop will take participants beyond the headlines to impart an antiracist world view that will infuse every aspect of participants’ lives, when hearts are open to it. In this group setting you will: Examine the role of White people in dismantling racism, in becoming antiracist, and in building an equitable society. Explore the impact of White privilege and how being unaware of that advantage helps perpetuate racism. Write about your own racial awareness journey. Enhance your understanding and capacity for action through discussion of short readings, videos, and other materials. Share everyday racism-related situations where you may not have effectively responded and, using role plays, work out effective ways to challenge racism. Develop a specific plan for challenging racism in the workplace, an organization, or in the community, while being encouraged to find other people in your life who can provide support and serve as an accountability partner in implementing your plan. We’ll concentrate on the strength that color gives to our drawing, using your choice of pastels, oil pastels, or colored pencils. Some drawing experience is useful but not necessary.

Intaglio printing means printing ink from the incised marks in a plate or matrix. This is a course for beginning students seeking thorough exposure to intaglio printmaking without any of the nasty chemicals. We will give special attention to a broad array of intaglio applications: drypoint, found objects, collage, and monoprint techniques. Often referred to as Provincetown Prints, these prints require less carving than traditional woodblock prints, yet allow for making multiples that vary at the whim of the maker. We will approach this introduction with equal parts levity and seriousness, and before long you will be on your way. COURSE CODE: PRWL Sec. 01: 2 Tuesdays, 6-9pm. Practice one of the most instantly-rewarding forms of printmaking: monotypes! The first session will feature reduction monotypes, the use of monotype base, watercolor and water-soluble crayons, and the qualities of various printmaking papers. In the second session, we will experiment with stencils, masks, and trace transfer monotypes. You can combine these methods and others to create unique prints, employing multiple pressings to build up layers on the same print. During the third and fourth session, we will try chine collé, a form of collage, using lightweight papers and the press to add richness and texture to your images, along with water-soluble oil-based printmaking inks, which offer rich color and options for printing in layers. The final class session will include time to finish projects and discuss how monotype printmaking can be continued at home without a press. Our studio uses non-toxic materials and some tools and supplies are provided or can be purchased on-site from CCAE. A list of supplies and resources will be provided to enrolled students. WHAT MAKES HARVARD SQUARE A SQUARE?

Boston By Foot

Charles Bahne | Boston Historian

From the 1600s to the mid-1900s, women’s contributions to Boston were often under-recognized. Who were these Bostonians and what achievements have been overlooked? Including women of mixed classes, lines of work, and domestic lives, their passions and professions ranged widely from creative survival to medicine, nutrition, education, art, literature, philanthropy, gender rights, and more. Overall, this tour acknowledges the steps these women took in making Boston and America what they are today. Meeting point: At the corner of Tremont and Court Streets, in front of the entrance to the Government Center MBTA station.

Harvard Square has been an intellectual and cultural center for nearly four centuries now. Join us as we explore the haunts of Joan Baez and Bruce Springsteen, Teddy and Franklin Roosevelt, Ralph Waldo Emerson, and T. S. Eliot. We’ll see the Gold Coast, a castle and a horsecar barn, and the First Church and the First Parish (and learn why they split). Walk the square and learn why this part of Cambridge is one of the most fascinating places in the world. Meeting point: Courtyard of 42 Brattle Street. C O U R S E C O D E : H VS Q

HISTORY & CONTEMPORARY ISSUES WERE THEY REALLY THE DARK AGES? THE EARLY MIDDLE AGES (500-1000 AD/CE) Anatole Sykley | Historian and Member of the WWI Historical Society Were the Early Middle Ages from 500 AD a “dark” era lacking social and intellectual progress? This era has many surprises. As pieces of the old Roman Empire in the west struggled for stability, monarchs such as Charlemagne the Great arose. In the east Byzantine rulers held on and even expanded. Bookish monks in the west and curious Islamic scholars in the east, preserved classical learning, making some progress, despite the ravages of Viking and Bulgar raiders, plagues and superstitions. SPOTLIGHT ON

LAUREN DARIEN

PROGRAM DIRECTOR FOR FOOD & WINE, BUSINESS, FINANCE & TECHNOLOGY fresh fruit at the peak of summer that reminds me of growing up in southern California. Briny oysters and clam chowder that bring me back to my first fall in New England.

WHO TAUGHT YOU HOW TO COOK? I first got into food and cooking where I think a lot of people start, in my mom’s kitchen. She has always been an incredible home cook, and I learned from an early age that food is more than just something that feeds your body. Cooking is also both a creative expression and a language of affection. WHAT IS YOUR FAVORITE FOOD IN THE ENTIRE WORLD AND WHY? It’s impossible to pick just one! In general, my favorite foods are ones that inspire strong emotions: My mom’s all day pasta sauce recipe that’s been handed down from mother to daughter for generations. Ripe

WHERE DO YOU DRAW INSPIRATION FOR YOUR COOKING? As a home cook, I think some of my best meals are often the ones made on the fly, drawing inspiration from what’s on hand. I find it very satisfying to find ways to reduce kitchen waste and make delicious meals at the same time. Is it summer and I have a surplus of zucchini? Then it’s time to start making fritters and bread. Maybe I have milk that needs to get used up so I’ll make pudding or white sauce. HOW DID YOU BECOME INTERESTED IN LEADING THE COOKING DEPARTMENT? CCAE has been my home for a little over 6 years now, starting out as Registration Staff and then becoming the Student Services Manager.

Harvard Square 42 Brattle Street Cambridge MA 02138 T (617) 547-6789 E info@ccae.org  ccae.org

From the very beginning, I’ve loved interacting with our students and furthering our mission of offering engaging classes to curious adults. When the opportunity to move behind the scenes creating and curating those same classes opened up I had to jump on it!

WHAT ARE SOME OF THE IDEAS THAT YOU WISH TO MAKE HAPPEN FOR THE COOKING AND BUSINESS DEPARTMENTS AT CCAE? So many things! Right now, I’m focused on bringing in new classes that emphasize the creative diversity of our community. Cambridge is a vibrant melting pot, with people from all over the world, from all walks of life. CCAE has always been a meeting place for people who celebrate that and my goal is to further inspire it. In the future, keep an eye out for more classes that focus on local produce and goods, neighborhood restaurants and chefs, and gathering together with your friends and neighbors.
