Resolution Update During the 57th Annual General Meeting of Calgary Co-op held on March 10, 2014, members were provided with an update regarding the eggs and pork resolution passed at the 2013 AGM. This resolution stated “that Calgary Co-op phase out the sale of eggs and pork sourced from intensive confinement cages (sow/gestation stalls and battery cages) within the next five years, since this type of intensive confinement has been widely viewed as inhumane and that in the interim, Calgary Co-op work with suppliers to find alternatives not sourced from these types of intensive confinement cages.” We are pleased to tell announce that within eight months of the passing of this resolution, Calgary Co-op met the interim standards. At the time of the vote,Calgary Co-op already offered free range,free run and organic eggs,and has since put a greater emphasis on the promotion of these products. However, we did not have a pork offering that met this resolution. As a result, our management team immediately began meeting with local farmers, producers and industry experts to determine how we could achieve this goal. As of November 2013, we now exclusively offer Co-op Perfect Pork at all of our locations - fresh, open pen raised 100% Alberta pork that is vegetable grain fed with no hormones. In January, we began offering Co-op Perfect Beef 100% Alberta Angus beef that is range fed with no hormones or antibiotics. Calgary Co-op is pleased to be the only local retailer to offer 100% Alberta beef – beef that’s bred, born, fed, raised and processed only in Alberta. Further, in February of 2014, we introduced Co-op Perfect Goat – free range Alberta fresh spring goat that is grass and grain fed with no antibiotics or hormones. All of these products were investigated, sourced and presented to our members within one year of the resolution being passed. No other grocery retailer has been able to provide these options and in such a short amount of time. As a locally-owned and operated co-operative, Calgary Co-op believes in listening to our members and adjusting our business to meet their changing needs. We are proud to share these exclusive new products and encourage you to visit your local Calgary Co-op for the opportunity to try these new items!

Calgary Co-op Community Foundation It has been just over a year since the Co-op Community Foundation was launched. In that time, our members and Calgary Co-op have made a difference in the lives of those in our communities. The Foundation is the cornerstone of Calgary Co-op’s community investment strategy. Our mandate is to invest in local youth programs, education, preventative health and poverty relief. Some of the not for profit groups and charities we support are the Mustard Seed, Meals on Wheels, EMS Foundation Project Smile, Canadian Legacy Fund (which supports veterans food banks) and Brown Bagging for Calgary’s Kids. Our members are able to support the Foundation by participating in the 3 cent bag reuse program when shopping at our centres, by donating your member refund cheque each February, or making a donation throughout the year. Cash donations of $20.00 or more will receive a tax receipt. The Board Report The results of the 2014 Director Election were announced at the Calgary Co-op AGM held March 10. We are pleased to announce that as a result of your votes, Terry Geib, Roy Goodall and Peggy LeSueur will each be joining the Board for a three year term. Following the AGM, the Board Reorganization Meeting was held where Laura Sullivan was elected as Chair, Terry Geib as Vice Chair and Elaine Smith will serve as Board Secretary. Even though the year has just begun, your Board has already been dedicating efforts to fill a recently vacated position. Due to personal commitments, Lisa Wise is unable to fulfill her full term as Director. With one year remaining in her term, the Board could choose to leave the position vacant or appoint an individual to complete the term. Based on a recommendation from the Nominating Committee, the Board considered the two candidates who were tied with the fourth highest number of votes in our recent Director Election. A suitable replacement was then determined through a GAP analysis and our skills matrix. We are pleased to announce that Mark Gerlitz has been appointed to your Board and will serve as a Director for the one year remainder of the vacated term. On behalf of Calgary Co-op, we wish to warmly welcome Mark to the Board.

Tandoori Goat Curry • 1 kg cubed Co-op Perfect goat meat, bone-in • 500 g Greek yogurt • 2 oz. canola oil • 2 bay leaves • 1 cup yellow onion, diced • 2 Tbsp. fresh ginger, minced • 2 Tbsp. fresh garlic, minced • 1 ½ cups potatoes, peeled and diced

• 28 fl. oz. can diced tomatoes • 2 x 400 mL cans coconut milk • Tandoori spices (dry or sauce)

Bison Meatloaf Meatloaf: • 1 cup breadcrumbs • ½ cup milk • Onion, coarsely grated • 2-3 garlic cloves, crushed • ½ cup tomato sauce (or ketchup) • 1 egg • 2 lb Co-op Perfect ground bison • Salt and pepper to taste

Sauce: • ¼ cup ketchup, tomato sauce or chili sauce • 1 Tbsp. brown sugar • 1 Tbsp. grainy mustard

Hoisin Pork Lettuce Wraps • 1 lb Co-op Perfect pork loin, cut into 1-inch strips • Drizzle of oil • Small onion, chopped • Red pepper, chopped • 1 cup fresh mushrooms, chopped • 1 Tbsp. fresh ginger, grated • 2 or 3 garlic cloves, crushed • 1/3 cup Hoisin sauce • Lettuce leaves, Romaine or butter


Tandoori Goat Curry Combine yogurt with tandoori spices. If using a dry tandoori spice mix, use 4-6 Tbsp. If using a prepared tandoori sauce, use 3 cups. Whisk well to combine, pour over goat cubes. Toss to combine, cover and refrigerate overnight. Heat oil in a heavy bottomed skillet. While it heats up, drain the goat meat out of the yogurt marinade and reserve the marinade for later. Sear goat cubes in hot oil until browned on all sides. Transfer the seared goat to the slow cooker. Add a splash of oil to the same skillet and sauté onions, ginger, garlic and potatoes until soft. Add tomatoes, coconut milk, remaining yogurt marinade and bring to a boil. Use a wooden spoon to scrape the bottom of the skillet clean – that’s all flavour ! Pour sauce and vegetables directly over top of the seared goat in the slow cooker. Add hot water so the goat is 90% submerged. Add bay leaves, cover and set slow cooker to simmer slowly – at least 6 hours and up to 8 or 9. Serve hot with fresh basmati rice. Remember to watch out for the bones.

Bison Meatloaf In a large bowl, soak breadcrumbs in milk. Add onion, garlic cloves, tomato sauce (or ketchup), egg and bison. Season with salt and pepper. Mix gently with your hands (overworking it will make the mixture tough) and shape into a loaf pan. Bake at 350°F for one hour. After 30 minutes, brush with a glaze made of ketchup, tomato sauce or chili sauce, brown sugar and grainy mustard. Serves 6-8

Hoisin Pork Lettuce Wraps In a large, heavy skillet, heat oil over medium-high heat and sauté onion and red pepper until soft. Add pork loin, mushrooms, ginger and garlic cloves. Cook, stirring, until the meat is no longer pink and all excess moisture is cooked off. Add hoisin sauce and stir to heat through. Serve with small romaine or butter lettuce leaves. To eat, spoon some filling into a leaf, wrap and eat. Serves 6
