JINN:

The First ever Netflix Original Arabic Series

Netflix is now one of the biggest production companies in the world, having produced smash hit series such as Stranger Things and Narcos. Although the company has licensed a number of Egyptian and Arab TV series, JINN is the first ever Arabic TV series produced and released by the platform in partnership with Lebanese

production company Kabreet Productions. Similar to Stranger Things, JINN is primarily a show about friendship with a supernatural twist. A group of talented Jordanian teenagers fill the cast and now lead the way for Netflix’s first production in the region, as it will be aired in 190 countries worldwide this month.

CCM: How did you audition for the show and how were you picked up

by Netflix?

Hamzeh Okab: For me it was a special case. Netflix was interviewing different schools, and a friend of mine that auditioned told me about it. Then, in February 2018, I saw the official announcement and the call for auditions and decided I wanted to try it out. So I started with an online video audition, and then I got a call back for a face-to-face interview, and the rest is history.

Sultan Alkhail: Actually it’s a long story. Once I heard that they announced the show, I read the press release and decided I had to be part of JINN. So I started Googling as everyone does and I reached Rajeev Dassani, the executive producer, who referred me to the casting agency that was taking care of the auditions. It was a really long process, it took about 2 months and a half, but it was very educational.

Aysha Shahaltough: A friend of mine who works in the film industry asked if I wanted to audition and I said, “Yes, of course!” I had to send in a video and it was a really long process and I had to keep reminding myself not to be sad if I didn’t get that part.

What was your experience in acting before JINN? Hamzeh Okab: This is my first time acting in front of the camera.

Before that, I acted in many school productions. Ever since Grade 5 I’ve been in every production for my school.

Sultan Alkhail: I began acting at the age of 8 and was always fascinated by this field. I tried to experience everything from acting to lighting and directing. My experiences include theatre and a couple of small projects.

Aysha Shahaltough: I acted in tons of plays at schools and small projects at university.

How have you been coping with filming such a big show while still being in school/university? Was it difficult?

Hamzeh Okab: I’m not going to say it’s easy. It’s been quite difficult and

there have been a few obstacles on the way, especially since this is my last year and I’m applying for universities. So it’s been stressful trying to be Keras for 12 hours a day and Hamzeh for 12 hours a day. But I love the challenge and I’m trying to overcome it, and I think that I’m doing a good job.

Sultan Alkhail: I study Theatre Arts.

I knew that I was going to shoot and have to study at the same time so I organized to have a limited amount of subjects, just two days a week.

Aysha Shahaltough: I study Design and Visual Communication. I’ve got 5 days of class a week. I missed two days this week and I’ve got a lot to catch up on.

What do you think you brought to your character?

Hamzeh Okab: Keras is sort of the outcast of the group. Everyone looks at him weirdly and the way he interacts with people is strange because he is new to this environment, having just moved to a new school. I actually went through the same thing so it was easy for me.

I lived abroad and when I moved back here I faced these challenges where I had to learn the language and learn how to interact with people again. So I understand what Keras is going through.

Sultan Alkhail: I can’t say that there are a lot of similarities between Sultan and Yassin but he’s a very CAIROCENTRALMAG.COM

interesting character. Yassin suffers from bullying at school and I find it interesting to play such a character that represents an issue that happens too often.

How has your experience been as a first time in a big production?

Sultan Alkhail: It has been interesting and exciting at the same time. You feel responsible because you really want it to be a big success. I’m trying to enjoy the process because it is fun and I’m looking forward for people to see the outcome.

Aysha Shahaltough: I’m interested in the film field so it has been exciting to be on an actual set and see how things work. I’ve been learning a lot. I met a lot of lovely people. It’s been lots of fun!

Khaled Shoukry - Botanica The costliest elements in terms of labor, electricity, water, fertilizer, and pesticides is maintaining a lawn – and prices have gone up exponentially! Opting for a desertstyle garden can cut water costs up to 70%, and the soil will retain its nutrients. When you flood desert soil with water, it completely kills what was there in terms of nutrients within two years, so then you must intensely fertilize which is a huge waste.

We are globally experiencing a water shortage issue, so it’s much more conscientious to opt for grass strains that don’t need so much water in order to maintain their health and growth. The most common large area grass type in Egypt is seashore paspalum, which needs daily irrigation, sometimes even twice in hot summer months, and cutting twice a week. Buffalo grass, for example, doesn’t need as much maintenance in terms of cutting or watering. It’s tough and sturdy, and

once it’s established it’s difficult to get rid off.

A lot of the semi-detached houses we find today in compounds have the small to medium size garden, these can easily be converted into an environmentally-friendly space.

The considerations at the design phase should include a number of

functionality factors such as whether the space is for dining, how much seating, swimming, etc. When selecting plants or trees, you take into consideration the sun exposure, windiness, and how you will be laying out the seating area and water features, if included. You can create magic in small or medium spaces without using grass at all.

Yehia El-Sherbiny - Genenti Desert style landscaping is a design direction incorporating a mixture of ‘hardscape’ and ‘softscape’ elements that treat water as a precious resource, and is better suited for areas where sunlight is abundant.

If you are aiming for a desert style garden, it should be incorporated as early on in the design phase as possible. Given the rising cost of irrigation water, a growing number of my clients are inclined to incorporate elements from desert style landscaping into their home gardens while maintaining the green element of the space.

Considerations may involve minimizing or eliminating the lawn area, which is viewed as one of the pillars of an environmentally friendly garden, replacing the lawn with rock beds, gravel pathways and/or artificial grass, while incorporating terrain elevations and drops.

Plant selection is as important as the design, a number of plant species are known to require little water and possess shapes and color properties that are suitable to create a beautiful garden all year round. Avoid planting traditional fences using evergreen plants such as Ficus or Conocarpus, as they require large quantities of water. The use of cacti is recommended, as they are by far the most characteristic of desert plants, requiring little water and a lot of sunlight. Cacti come in a wide range of sizes and shapes; and sometimes flowers. Some palms, particularly date palms and palms native to dry climates make for a great addition to a desert style garden. Yuccas are also a popular choice, as they are evergreen plants, native to the hot and dry climates and are a great way to complement any desert style garden.

Make Your Own Plant Food Forget store-bought fertilizer! You can make your own compost pile really easily.

Collect all your food and paper waste into an open container of your choice outdoors, along with any fallen leaves from your trees and let it sit working its magic for 5 to 8 months.

Make sure to turn it over with a pitchfork every two months so the compost pile can get oxygenated, for beneficial bacteria to grow. Every 1 to 2 weeks, dribble some water on the pile to add moisture.

This not only helps feed your plants and trees, but also helps with recycling and cutting down on landfill waste!

With levels of concern rising about bees becoming endangered by environmental factors and disease, Cairo Central Magazine went to seasoned beekeeper and honey-producer Peter Naiem to get the big picture.

BEiNg A BEE iN EgypT Egypt, for its main part, is an arid environment, except for the limited areas of the well-irrigated land of the Nile Delta, although the arable land is filled with cultivated crops, not much other beefriendly vegetation is available. Beekeeping for honey production has traditionally been in the Beheira, Manoufia, Gharbeya and Kalioubeya regions. Cairo, as a city, does have gardens, parks, flowering plants and trees, but the kind of trees and plants in use now do not offer much for the bee. This could be changed, but on a serious scale it would be a task for the people who are responsible for the public areas in the city. Citizens of course can help within the limits of own land or other space.

6 THiNgS TO KNOW ABOUT BEES AND CrOp SUSTAiNABiLiTy 1. Although there are more than 20,000 distinct bee species around the world, only seven species of bees make honey.

2. Bees are indispensable pollinators of most ecosystems. There are 369,000 flowering plant species, and 90% of them are dependent on insect pollination. Without bees, many of the world’s most important crops would fail and directly affect the food supply of humans and countless other species.

3. Crops pollinated by bees make up 35% of global food production. Some plants are pollinated by wind, but that rate is very slow.

Insects are the primary pollinators on the planet. Beetles and butterflies also pollinate, but bees are the most efficient insects for this purpose.

4. Without bees, we wouldn’t have apples, cherries, almonds, and many other fruits and vegetables like avocado, broccoli, most leafy greens, cucumbers, pumpkins, and many more.

5. While honeybees are important, there are many other pollinators out there, including butterflies, bats, hummingbirds, flies, and other bee species.

6. Cotton is very reliant on pollination. The disappearance of bees will lead to a huge setback in cotton production.

WHy BEES ArE ENDANgErED Many factors are influencing the decline of bees, including habitat fragmentation, increased use of neonicotinoid pesticides, colony collapse disorder, climate change and the deadly varroa mite, their number one killer.

HOBBy BEEKEEpiNg Although hobby beekeeping is on the rise around the globe, it should be known that according to a very recent Egyptian law from 2018, bee hives should not be kept closer than 500 m from any human housing. If you are fortunate enough to have a rural property or space on the outskirts of the city you may be able to start your own hive.

Anyone who wishes to pick up beekeeping should firstly make sure that they are not allergic to bee stings, bee venom or pollen.

A hive has to be in a windless spot facing east, to catch the first warming sun rays in the morning. The spot should be in the shade for the summer but in the sun for the winter. There should not be any domestic animals in the near vicinity, like horses, cows, donkeys or large numbers of dogs or cats, because their smell can make

bees nervous. The availability, close-by, of a variety of crops to ensure as much as possible a continuous flow of natural food for the bees, is of paramount importance.

Contrary to popular belief, bees are not really likely to sting.

So long as you avoid wearing perfume or cologne and move calmly when near them you should not be at risk. You need protective gear when working on the hive though.

To start out you need a hive, a feeder, a protective hat and costume, or several layers of clothing with well-closed arms and legs, plus sugar for the first month - 0.5-1 kg per week per hive, dissolved with water into a 50:50 syrup. Raw honey can be added, or a herbal tea can be used, made of plants that the bees normally love, like thyme.

• Plant bee-friendly plants and flowers. In the countryside, bees enjoy various herbs like lavender, thyme, marjoram, spearmint, black cumin and rosemary as well as beans and other non-hardy plants, then citrus trees like lemon and orange yield pollen.

Guava is a great bee tree, again providing pollen. Various gourds, like zucchini and watermelon in the early spring are also mainly pollen plants; then cattle fodder like clover and alfalfa in the early summer; then cultivated cotton and banana in late summer. There are also some surprising everyday good sources - like for example the gazania, or African Daisy, which also flowers almost around the year, and quite abundantly in the winter and early spring, and is a very good source for pollen, with an antibacterial effect for the hive.

• Provide water for bees to take back to the hive, and ensure year-round planting so bees have a source of flowers in the winter.

• Avoid the use of pesticides.

• If you just have a window box or balcony, you can still plant bee-friendly flowers.

Are You Living a Plastic Life?

We can’t deny it. Left, right and center we are being bombarded with the scary images of a world drowning in plastic, seas full of floating islands of the stuff, and marine life suffering the consequences of human carelessness. Micro-particles and micro-fibers from plastic and polyester have permeated the fish we eat, the water we use for crops and drinking, even the air we breathe. Our health and the health of our planet are under threat.

We have become so used to singleuse or disposable plastic items we tend to overlook the environmental consequences. Around the world, one million plastic drinking bottles are purchased every minute, while up to 5 trillion plastic bags are used worldwide every year, most of them only end up being used once. In total, half of all plastic produced is designed to be used only once.

What can you do to reduce your use of plastic?

• Use a washing machine with a micro-fiber filter.

• Go natural with cotton, silk or wool clothing. Avoid synthetics where possible.

• Avoid individual plastic water bottles; fill a flask with drinking water from a larger source.

• Buy whatever dried foods like legumes, rice, nuts and dried fruit you can from bulk tubs. Take paper bags or small re-usable cloth bags.

• Buy fresh fruit and vegetables unpackaged. Use re-usable cloth bags. Then take things home in a re-usable grocery bag.

• Stock your kitchen with Pyrex or glass jars for storage, they look good as well as being healthier.

• Use metal, ceramic, bamboo or glass bowls instead of plastic.

• Use wooden clothes hangers.

• Eat at places with an environmental policy. Paper straws are being introduced in many, for example.

• And very importantly – dispose of your plastic bags and other plastic items responsibly!

There’s more to it than battling rising electricity bills, you know. It’s very much about cutting down on the use of fossil fuels and tapping into renewable energy sources. Our planet will love you for it!

1. Use natural air flow, open windows to cool down a house, but make sure your mosquito screens are in place.

2. Fans use less electricity than an air-conditioning unit.

3. If you must use your airconditioning, try to keep the space closed to minimize any loss of cool air.

4. Don’t aim to cool the whole house, try to keep your activities to one or two rooms.

5. Set your water heater to a lower temperature, especially in summer.

Take shorter showers and also save water by using a smaller shower head.

6. If an appliance is not in use, turn it off or completely unplug it. Power down your computer and unplug it at the end of the day. That goes for phone chargers as well.

7. Reduce your use of electric appliances where possible.

8. Wash clothes on a cooler cycle and try to reduce the number of washes you do each week. Wait until you have a full load.

9. Change over to LED lighting, and use solar-powered lighting in outdoor areas.

Replacing regular incandescent light bulbs with LED bulbs is a big energy saver.

10. Make use of natural light by using sheer or light weight curtains.

11. Turn off the light when you leave a room.

12. Replace old appliances like refrigerators with energy-saving models.

13. Insulate your home by making sure there are good seals on the doors and windows. Insulation conserves cool air-conditioned air in the summer and retains heat in the winter.

14. Consider solar water heating panels if you have roof space. The initial investment may be steep, but it will pay off long term.

15. Even better, install solar energy panels to power your home, and sell the excess back to the electricity company! Local solar companies can guide you on the A-Z of becoming self-sufficient energy-wise and turning a profit as well. Yes, it needs a cash layout, but pays off long term.

Padel is a type of sport that combines elements of tennis and squash, so it is likely to boom in Egypt faster than you think! We caught up with Seif Abou Senna, one of the founders of PadelPod, who is responsible for bringing the trendiest European sport to Egypt.

What is Padel?

Padel is a racquet sport that integrates the components of tennis and squash. It is an ideal sport for all age groups and different fitness levels since it is considered an easy sport to learn and requires strategy rather than strength. The padel court is a third of the size of a tennis court, making it easier for players to communicate and matches more thrilling. It is one of the world’s fastest growing sports with over 10,000 courts and more than 10 million players worldwide.

How is Padel played?

Padel is played in doubles in an enclosed court surrounded by walls of glass and metallic mesh.

The court is divided by a net and the ball can only bounce once and can only touch the back and side walls after that bounce. Players can gain a point by attacking from their net position. The ball can bounce off any wall, but can only hit the turf once before being returned. Points can be scored when the ball bounces twice in the competitors’ field.

What is the difference between tennis and padel?

Despite the similarities with tennis and the scoring system, it is a different type of sport.

The main differences include: Ball: The balls used in padel have less pressure.

Racquet and shovel: Padel shovels are smaller but weigh more, although they are still very light. The surface is hard with holes, whereas CAIROCENTRALMAG.COM

the tennis racket’s surface is made of strings.

Rules: The serve is one of the main differences between padel and tennis. In tennis, the serve is done by throwing the ball in the air and hitting it before it can reach the ground. In padel, it is necessary to give a bat of the ball that can never exceed the height of the hip.

Technique: The ball hit is more basic and simple and the plays are more dynamic. Meanwhile, in tennis the movement of the ball is much more intense and explosive and requires a higher level of technique.

Court: Padel courts have walls and are half the size of a tennis court.

Where to play!

Currently, there is only one academy offering the chance to padel to your heart’s content, but the sport is poised to take off big time! PadelPod is an academy that organizes padel tournaments and trainings in Egypt,

founded by Khaled El Shawarby, Khaled Nagy and Seif Abou Senna, the first and only professional padel players and certified coaches in Egypt. There are currently 110 Egyptian padel players playing on 12 courts across Egypt in New Giza, Palm Hills, Lakehouse, City View, and

Hacienda White and Seashell Playa on the North Coast in the summer.

Future plans include an Egyptian Padel Federation and a National team!

How Feseekh Can Harm You this Sham El Nessim!

One of the traditions of Sham El Nessim is eating salted-fish such as feseekh and herrings.

Despite the Ministry of Health warnings every year about the health hazards of feseekh in particular, we just can’t seem to stay away!

Poorly prepared feseekh can lead to botulism poisoning. Symptoms can include nausea and/or vomiting and one or more of the following: double or blurred vision, drooping eyelids, dry mouth, difficulty speaking, difficulty swallowing, weakness, respiratory failure, paralysis and death in severe cases. Symptoms generally begin 12 to 36 hours after eating contaminated food, but can occur as early as six hours or as late as 10 days after.

The fish contaminated with the clostridium botulinum toxin may not look or smell spoiled, so if you are not giving up feseekh, make sure to buy it from a trusted and reputable store.

• Kidney disease • Kidney stones • Enlarged heart muscle • Headaches The elderly are more prone to these adverse effects. They are advised to abstain from salted-fish, as are pregnant women, as high salt intake can increase the likelihood of developing pregnancy-induced hypertension. Excess salt intake can also cause increased water retention which leads to puffiness, bloating and weight gain.

Consuming potassium-rich foods

So if you’ve overdone it on sodium, eating more potassium can help you re-achieve the “balance” of these two minerals. Potassium is mostly found in fruits and vegetables. Good sources include bananas, oranges, cantaloupe, potatoes, tomatoes, spinach, broccoli, cucumber and peas. Some dried fruits, such as prunes, raisins, and dates, are also high in potassium.

If you have taken in too much salt and are trying to dilute it by drinking water, go for a jog or spend an hour at the gym to help your body purge some of the excess salt.

Another health concern associated with eating salted fish is the effect of the excessive salt intake, which is not restricted to increasing blood pressure. But even if there is no increase in blood pressure, excess dietary sodium can harm such organs as blood vessels, heart, kidneys and brain.

Lost in Sawah, the Movie

When we learned that rising talent Karim Kassem secured a role in Luxembourg-based production Sawah, we were eager to find out more. Sawah tells the tale of a young Egyptian DJ named Samir who is mistaken for an illegal immigrant and detained in a country he’s never heard of before while on his way to a championship in Brussels.

We caught up with Kassem to learn more about the project and what the audience can expect.

CCM: playing the role of a DJ must have been a different experience for you, how did you prepare?

K.K: I took private DJ classes, and the production also enrolled me into a professional DJ academy in Luxembourg and I took 18 hours of classes there. I believe I reached a good level and the work is believable, we did a lot of rehearsal and script rewrites. Adolf El Assal, the writer and director, is very open to collaborative work.

Nothing is set in stone, and the dialogue was changing to suit

what the scene needed. In terms of Samir’s character, I could relate on a personal level to his need to break out and move out of the country to experience work abroad. The whole tension of the film, being lost in a foreign country with no passport, no wallet and no phone - that’s a personal fear and paranoia of mine, so I could use that to make the character relatable.

What were the most challenging scenes to shoot for you?

The most challenging part of the production was nature and shooting outdoors in the cold! I didn’t expect to be so paralyzed from Luxembourg’s weather, in some scenes I was freezing to death and stuttering from the cold. The crew tried to layer me up with thermal clothing and portable heating, but filming over 10 hours in the cold every day for two months is really challenging. There were also a lot of scenes in French, and although I’m a fluent French speaker, I had to pretend I didn’t understand a thing!

What do you hope audiences will take away from the film?

The main theme of the film is identity and how this character is treated like a refugee, although he’s not. It is about breaking the stereotype of Hamam fi Amsterdam, a character who is lost and doesn’t understand a thing, because Samir is an educated and English-speaking Egyptian, but at the same time, he is treated as a refugee. It’s a relevant topic right now with the political climate and immigration debates happening in Europe, and this movie tackles the subject in a humorous and powerful way.

How did taking part in the film change your perspective professionally and personally?

On a professional level, it was a wonderful experience to work with such a diverse and talented multicultural international cast and crew – I learned a lot being on set in Europe and seeing the way film production runs there. On a personal level, I had the chance to discover this beautiful country I’ve never been to before and meet people from all over the world.

Mistiqa in Gezira Club, Zamalek

Gezira Club’s vast garden was the chosen location for oriental cuisine specialist, Mistiqa, new branch opening. We were keen for a Thursday evening visit, to breathe some fresh air, drink a fresh juice and eat the night away. Upon our arrival, we are greeted by Mustafa, the friendly and well informed branch manager, who was eager to boast what he has in store in for us, while the Shish Tawook’s flavorsome aroma coming from the outdoor grill tickled our noses and made our mouths water.

Other menu options that appealed: Mistiqa’s menu includes most classic and authentic oriental dishes. For appetizers, the Vine Leaves and the Hawawshi definitely looked tempting. As mains, the classic Mix Grill is another option that sounded appealing. Mistiqa also offers a wide range of fresh juices.

Signature dishes: Mistiqa’s menu includes oriental classics, a wide variety of cold and hot mezze dishes, salads, and fresh juices. We let Mustafa make the choices for us as he was eager to ‘wow’ us with the restaurant’s signature dishes.

Dishes sampled: Mustafa started us off with grilled kebda, immaculately seasoned in lemon and cumin to break its iron flavor, the grilled kebda was perfectly complemented with the accompanying baba ghanoush.

The baladi bread was fresh out of the oven, steaming hot and delicious. We were also presented with impressive kofta served with French fries. The kofta was seasoned and cooked to perfection and taste amazing after a quick dip in the tahina.

As mains, we started with the signature grilled half-chicken. The chicken was covered with a light flavorsome herby crust which we loved. After smelling the flavor coming from the outdoor grill where Shish Tawook skewers were being cooked, we had to try it! The tender and juicy chicken cubes were presented on top of each other in the center of a white plate, with grilled green pepper and tomatoes,

Décor and ambience: A fresh garden feel, white wooden dining tables are set up around big beautiful old trees and large canvas parasols. We could hear birds chirping and the bushes moving with the evening breeze.

The outdoor cooking grill leaves a flavorsome aroma in the air, and plays a part in opening your appetite. At the back of the garden is a smaller indoor area, surrounded by glass walls and a TV which will come in handy on the days of big sporting events. The staff is very friendly and knowledgeable about the signature dishes and how they are cooked. The restaurant also includes large tables for the bigger groups.

Clientele mix: The clientele includes big groups and families.

As it is located at the sports club, groups of moms who are waiting for their children to finish their various trainings can be seen indulging in fresh juices or simply having coffee and chatting away. You’ll also see men in suits having business meetings or simply grabbing a bite after work.

Izayaka in Palm Hills The Peruvian-Japanese Favorite is Back After what felt like forever, Izakaya is back in a brandnew swanky location with the same tantalizing flavors and impeccable service.

The Izakaya team is still just as committed to offering a unique menu you won’t find elsewhere in Cairo, so we dropped by to sample some key dishes in a second-tonone atmosphere.

The Muse Trendy New Spot at Guezira Plaza

When Thursday evening rolls around, we just feel like kicking back, grabbing a bite and a cool drink, and letting the weekend vibe take over. With that in mind, we headed down to The Muse.

Type of cuisine: International, with a wide range of nibbles and starters, along with pasta and risotto dishes, sandwiches, salads and signature steak and chicken options.

Signature dishes: Grilled Sliced Beef, Escargots de Bourgogne, Risotto Dishes sampled: Settling into the mood, we started off by ordering something to sip on. Mojito and Passion-fruit Mojito duly delivered, we browsed through the menu and opted for Stuffed Salmon Tapas and Baked Camembert to start. The salmon tapas were a treat, both for the eyes and the palate. The dainty

rolls of salmon came stuffed with a creamy, herb accented filling, with a garnish of prunes, strawberry and harankash. Innovative and delightful! The camembert was oven-baked, hot, oozing and irresistible. We had asked for the option of fresh mango chutney as a condiment, and the elements paired up perfectly.

When it came to a main course, we couldn’t resist going for risotto.

When prepared correctly, it is a dish to treasure. With several to choose from, we went for the Green Herb and Sundried Tomato version, and a classic favorite, Mushroom Risotto.

Chiqita A Hidden Treasure at 4 Mix Mall in Beverly Hills, Sheikh Zayed

Other menu options that appealed: The menu is extensive, so we would explore further. Peri-Peri Chicken would be a must, though.

Beverage choices: Juices, smoothies, shakes, mock-tails and hot beverages.

Décor and ambience: Chiqita offers both indoor and outdoor seating.

The indoor area is cozy, with an open wood-burning fire laden with spits of mouthwatering chicken. The outdoor area has a large projection screen so diners can enjoy the latest match or Ramadan series. The atmosphere is relaxed and friendly, with a warm, hospitable vibe.

Just mention Peri-Peri and we jump to attention. We have hunted it down from Camden to Capetown, so when we heard that a great new venue in our neck of town had wood-fired rotisserie chicken with this unique spicy, aromatic seasoning and sauce, nothing could hold us back.

Type of cuisine: Peri-Peri chicken plus a host of other popular dishes.

Vegans and vegetarians are also well catered for, with a great choice of rice dishes, pasta dishes and salads.

Dishes sampled: We went with soup to start, both the rich, flavorpacked Creamy Mushroom and Creamy Chicken got our seal of approval. A few minutes later we were digging into a myriad of salads and sides. Hot Spinach Dip served with garlic bread, Artichoke Salad with herbs, garlic and a light dressing, Rocca and Mushroom Salad with cherry tomato, olive oil and fine shavings of Parmesan, Chicken Caesar Salad with chunks of chicken, croutons, anchovy and Parmesan, Beetroot Salad with dainty cubes of crisp apple mixed in, and so much more.

While we were waiting for our PeriPeri Chicken, we couldn’t hold back when tubs of hot roasted sweet potato and nut and raisin packed khalta rice miraculously appeared, along with a generous serving of Mac ‘n Cheese, Chiqita Lasgana, made with spinach pasta, béchamel and hearty chunks of sausage, and a saffron-infused Chicken Biryani.

All washed down with an Oreo Shake and a Berry Yoghurt shake, which were exceptionally good, we had enough calories to see us through an average day.

Then, along came the star of the show, the Peri-Peri Chicken. With a crisp spicy and slightly sweet exterior, the chicken was moist and tender with the enticing aroma and flavor that can only be found with a

Favilla Lounge

New Menu at Plaza 34, Sheikh Zayed meal at Favilla Lounge. The filet was was served with the restaurant’s renowned berry sauce alongside two other sauces: coffee bean sauce and the signature Filetto Oliva sauce.

After dipping our medium rare meat into all three separate sauces, we were in love!

For dessert, we headed for Favilla’s Cookie Pan and the Lotus Cheesecake. The pan is described as a taste of heaven at Favilla Lounge, and the taste indeed lived up to the metaphor. The Lotus Cheesecake was a perfectly satisfactory last-bite before we set out for home.

This cozy lounge in Plaza 34 has given its menu a major upgrade with creative new dishes.

Other menu options that appealed: The rib-eye steak, described as flame grilled, fatty beef cut, marinated carefully, perfected with Garlic Maison Butter is definitely one to try during the next visit.

Signature dishes: Polpette Di Pollo, Filetto Oliva and Parmigiana De Melanzane.

Dishes sampled: We sat down and chatted with the very welcoming owner who helped us select appetizers from the new-andimproved menu to start. We began with Avocado Salad, which was delicious and delivered an explosion of flavor. Strips of grilled chicken smothered in mango chutney, lying on a bed of lettuce, sprinkled with sweet corn, crunchy apple and bell pepper, and a thick zesty greencolored dressing, which came to us on the side. We also tried Shrimps Coconut, pan-fried shrimps wrapped with crispy Japanese breading and served with Tartar dressing – a comfort bite to say the least.

For our main course, we had two new items: Crispy Tender Chicken Sandwich with chili sauce, Drawn

Roll Chicken, and two wonderful steaks. We started with the chicken dishes. If you like crispy chicken, this burger is a must, the combined flavor of the classic burger toppings, cheddar cheese, and chili sauce works. Next, we dove into the Drawn Roll Chicken, a roasted chicken roll with a tasty marinade, stuffed with gouda cheese, mozzarella cheese, fresh mushroom, smoked turkey, and served on layers of tasty angel hair. We followed with Monterey Jack filet. Charcoaled to perfection, the beef filet came topped with sliced beef sausage with a homemade queso cheese sauce, served with fresh vegetables and French fries. However, the Berry Tenderloin was an absolute favorite

Situated conveniently at the Holiday Inn CityStars, Simply Neon is anything but simple. Driven by a nostalgic itch for all that is 80s, we set out to the new Nasr City hot spot for Wednesday Karaoke Night. It would be a night of belting out our favorite guilty pleasure songs and trying out snazzy cocktails in the hopes of forgetting the embarrassment we were determined to make of ourselves.

Dishes sampled: To kick-start the fun and work up the courage for our moment on stage, the dexterous bartender whipped us up a Long Island Ice Tea and an Electric Smurf with excellent showmanship, one we could only

hope to match later when our turn came up on the mic. The Long Island was strong and sweet while the Electric Smurf lived up to its name with Blue Curaçao for the color and a generous dash of Bacardi for that ‘electric’ factor. We paired our cocktails with Chili Poppers and Spicy Buffalo Wings with creamy ranch for starters, and shared juicy Cheese Burger Sliders with a side of fries to seal the deal.

Other menu items that appealed: Other items from the tantalizing bar menu included loaded Nachos, Hot Dogs, Garlic Cheese Fries and more American classics that would all have to wait for another time. We kept our game sharp while scanning the 80s karaoke playlist for some premium tunes. A wide range of cocktails and mocktails are available, and the bartender will be glad to whip you up your usual drink if not found on the menu. The options are endless.

Décor and ambience: Upon entering the hotel, our eyes were immediately caught by the neon-lit stairway, which surely enough, led us straight to our destination for the night. The unapologetically - rather than ‘Simply’ - neon-lit bar is spacious and setup with lounges, a dance floor, disco balls and a fully stocked neon bar. An 80s playlist gets the crowd excited and an MC pumps up the crowd pumped in between songs. Simply Neon is definitely the place to be if you’re looking to kick back with a few cocktails and bites while enjoying a high octane kick of nostalgia. If you’re looking for quiet drinks and conversation, this is not for you.

Clientele mix: The crowd is mixed. Since Simply Neon is located in a hotel, groups of tourists are frequently found jamming to 80s pop and rock tracks. Groups of locals in their 30s and 40s were spotted too, out on a Wednesday for a good time. Everyone is eager to get on the microphone and there is always someone showing off singing skills.

Price Range: On the pricey side.

Casareccio brings the taste of Italy to Cairo with authentic Italian dishes curated by Carlo Giovanni. Casareccio roughly translates to “home-cooking� in Italian and the menu is filled with authentic dishes that bring the mantra to life.

Signature dishes: Just like Nonna’s kitchen there are no signature dishes because guests are expected to eat everything! It would not be a truly memorable trip to Casareccio without trying the homemade pasta made from scratch, the fresh-to-order pizza or the handmade gnocchi.

Dishes sampled: To start we chose to sit outside to watch the sunset and grabbed a fresh juice and coffee while we previewed the twenty-page menu at Casareccio. To start our meal, we had tempura battered calamari: crispy, fresh and complemented with a delicious tartar sauce, the hearty potato croquettes, and finally, the buffalo mozzarella sending us over the edge with its rich taste. Biting off far more than we could chew,

restaurants we decided to try all three of the signature Italian dishes starting with the Ricotta Ravioli. Ravioli has big shoes to fill and this homemade masterpiece was rich in flavor and stood out with its attention to detail. Each piece of raviloi was fresh and stuffed perfectly with cheese contrasting the sharpness of the tomato sauce. The Pesto Gnocchi was just as memorable with just the right amount of pesto and cheese. As the Don Livio Pizza came out fresh from the oven we thought it would be hard to top the two previous main courses but were again surprised with the mouthwatering flavors of the goat cheese, arugula, cherry tomato, and mozzarella. Wishing we had infinite space to eat into the night we decided to end our meal with the classic tiramisu and chocolate cheesecake.

Other menu options that appealed: The menu was extensive and could have fed us for a week but we decided on our next trip that the fresh fish, veal, and cannelloni cannot be missed. Casareccio also serves breakfast and lunch items including eggs and burgers so stopping in for a daytime bite was also appealing.

Mamma Dalya’s Homemade Gnocchi • Ingredients • 2 & 1/2 cups fresh buffalo Ricotta, chilled • 1/2 cup all-purpose flour, plus more as needed for rolling the gnocchi • 1 large egg • 1/4 cup freshly grated Parmigiano-Reggiano cheese • 1 tablespoon butter, melted • 1/2 teaspoon salt • 1/4 teaspoon sugar • 1/8 teaspoon freshly grated nutmeg, or more to taste • Freshly ground black pepper to taste

Preparation 1. In a large bowl and using your hands, mix the ricotta, flour, egg, Parmigiano-Reggiano, butter, salt, sugar, nutmeg and pepper, adding more flour as needed until the dough is slightly sticky. Cover and refrigerate until cold, 1 hour or up to 2 days.

2. When ready to make the gnocchi, lightly sprinkle flour on a large cutting board and a rimmed large shallow pan.

Transfer the dough to the floured board and cut it into 4 equal pieces. Using your hands, roll one of the pieces on

the board into a long log about 1/2 to 3/4 inches wide.

Don’t worry if the dough isn’t uniformly shaped—the gnocchi will be charmingly irregular. Take care not to pick up too much additional flour or the gnocchi will be tough.

You want just enough to keep them shapeable, but still a little sticky.

3. Cut the log into 3/4-inch pieces and toss them on the floured sheet pan, leaving space between them. Repeat until all the dough has been rolled and cut. Cover with plastic wrap and chill at least an hour or up to 2 days.

4. Cook in a large quantity of salted lightly boiling water.

Cooked gnocchi will rise to the top. Remove from water and allow to drain. Serve with your choice of sauce.

sabaya Outstanding Lebanese Dining at Semiramis InterContinental

Timing is paramount when cooking fish and seafood, as it is so easy to overcook them, but both the sea bass and the shrimp were cooked to perfection.

The dessert menu offers plenty of choice, but this time we steered away from usual picks and shared Mafroukeh, pistachio-laden semolina topped with eshta and strawberries. From beginning to end, every dish had hit the spot, attesting to the skills and vast culinary experience of Chef Walid.

Other menu options that appealed: Fattah Bel Dajaj, Othmanlleya and definitely the Flavors of Lebanon Degustation menu.

Beverage options: A full bar is available, along with soft options and hot beverages.

Lebanese born Chef Walid Baz has set a challenging benchmark with the launch of his exciting new menu.

Anyone who finds it hard to resist Lebanese cuisine shouldn’t waste a minute in heading along to Sabaya for an unparalleled gastronomic treat.

Type of cuisine: Traditional dishes delivered with contemporary flair and cooked to perfection. Expect to find hot and cold mezza, salads, fattah, soups, and a mouthwatering array of seafood, poultry, meat and vegetable dishes to pamper all tastes and appetites.

with Shrimp to Raheb, created from chopped grilled eggplant with diced tomato, sumac, pomegranate and olive oil, before dipping into an exceptional Mohamara, a blend of red pepper, onion, walnuts and tomato. The garnish of cashew nuts was new for us, but worked well.

Signature dishes: Absolutely everything!

We let Chef Walid guide us in the choice of our main course, and couldn’t fault the tender Dajaj Matmor (grilled boneless chicken) covered with onion, garlic, sumac, and served with Lebanese rice. Our sea bass fillet had been marinated in black pepper, cumin and fresh coriander, and shared a platter with some of the largest, most succulent shrimp we have ever enjoyed.

Marinated in black pepper, mustard, cumin and garlic, they went down very quickly and are on our short list for our next visit.

Dishes sampled: We firmly believe that any good meal should start with salads and mezzeh.

Taking things slowly, we enjoyed a refreshing aperitif before addressing the increasing array of dishes that started to fill up our table. Not knowing where to start, we wandered from Tabbouleh to Mofasakh Eggplant, an addictive dish of sliced grilled eggplant with yogurt, garlic, sumac, pomegranate and olive oil, then from Hummus

Salmon Sriracha ingredients (Serves 4)

preparation

• 1/4 cup reduced-sodium soy sauce

In a 1-gallon zip-top plastic bag, combine soy sauce, vinegar, sriracha, ginger, and garlic. Add the salmon, toss to coat evenly, and refrigerate for at least 1 hour, or up to 8 hours, turning the fish once.

• 1 tablespoon rice vinegar • 1 tablespoon sriracha sauce • 1 tablespoon fresh ginger, grated • 1 tablespoon garlic, minced • 1 pound (around 0.45 kg) wild salmon fillet, cut into 4 (4-ounce) pieces

Remove the salmon from the bag, reserving the marinade. Heat a large sauté pan over medium-high heat and add the sesame oil. Rotate the pan to coat the bottom evenly and add the salmon. Cook until one side of the fish is browned, about 2 minutes. Flip the salmon and cook until the other side browns, 2 more minutes. Reduce heat to low and pour in the reserved marinade. Cover and cook until the fish is cooked through, 4 to 5 minutes.

Place a piece of salmon on each of 4 serving plates and sprinkle with the seaweed.
