Lo Nuevo What’s New NUEVO MENÚ EN EL HOTEL CONVENTO NEW MENU AT CONVENTO HOTEL El Chef Ejecutivo del Hotel El Convento, Luis Castillo, inspirado en ingredientes autóctonos puertorriqueños e internacionales, ha añadido nuevas alternativas al menú del hotel, que se suman a los tradicionales y exquisitos platos que se podían disfrutar en esta histórica hospedería, todas inspiradas en las últimas tendencias culinarias. El Equipo Culinario del Hotel El Convento está compuesto por dos jóvenes Chefs muy talentosos e innovadores: Luis Castillo,Chef Ejecutivo y Rafael Álamo, Sous Chef; quienes presentaron a los medios un menú especial que incluyó canapés, ensaladas, sopas, platos principales y postres. El joven Chef Luis Castillo cuenta con la siguiente experiencia culinaria: en el 2008 se unió al equipo de la Chef Jannette Berríos como Sous Chef para la apertura del restaurante Voga Italian Grill, en La Concha A Renaissance Resort, donde fungió además como chef principal del restaurante Solera. Desde el 2012 trabajó como Sous Chef en el Hotel Condado Vanderbilt junto al Chef Juan José Cuevas, hasta marzo de 2014 que fue nombrado Chef Ejecutivo del Hotel El Convento.

Actualmente, integra el Equipo Culinario de Puerto Rico donde ha obtenido varias medallas por sus ejecutorias.

Luis Castillo, the executive chef of El Convento Hotel has added new items to the hotel’s menu inspired by local Puerto Rican and international ingredients which complement the traditional and exquisite dishes you can enjoy at this historic hotel, all influenced by the latest culinary tendencies. The Culinary Team of El Convento Hotel is made up of two talented and innovative young chefs: Luis Castillo (executive chef) and Rafael Álamo (sous chef); who presented a special menu in a media tasting which included canapés, salads, main courses, and desserts.Chef Luis Castilo has the following culinary experience: in 2008 he joined the team of chef Janette Berríos as sous chef for the opening of the restaurant Voga Italian Grill, at La Concha A Renaissance Resort, where he was also the principal chef of the restaurant Solera. In 2012, started working as sous chef of the Condado Vanderbilt Hotel alongside Chef Juan José Cuevas until March 2014 when he was named executive chef of El Convento Hotel. In charge is the Puerto Rican chef Nelson Serrano Bahri, who converts Oil and Vinegar into a space where, not only can you learn about the art of a good oil or a good vinegar, but also about its history, elaboration, recipes, and an infinite number of combinations that are simple enough to be replicated at home. The client turns into a guest, which heighten the experience.

With the chef, we traveled from Spain to the Mediterranean; Italy, South Arica, Croatia and Holland; and we learned about the history and elaboration of the products. Since he was young, Serrano felt a passion

Emprendimos una travesía por la historia de lo que él llama “un buen aceite de oliva”. Ello inicia desde su fuente, el olivo. Un árbol de olivo puede producir su mayor cantidad entre siete y 35 años aproximadamente.

Oil & Vinegar has an extensive selection, what follow is a sample of the same. We started our journey through history with what he calls “a good olive oil.” Starting at its source, the olive. An olive tree can produce its greatest quantity approximately between seven to 35 years. What influences its growth, hence, its flavor is time, the amount of hours in the sun, and the quality of the soil; this is part of the formation of a good product.

At the store you can find different types of oils and vinegars elaborated by small families around Europe, South Africa and the Americas. Every product is studied and selected carefully to guarantee its quality. The balsamic vinegar is certified by PGI (protected geographical indication), a classification that guarantees its quality and regulation – this is the seal of Oil and Vinegar. The same is aged for approximately seven years. Among the extensive selection, the white wine vinegars made with moscato and sweet touches and the French champagne vinegar which is made and finished in Germany stand out from the rest.

Also, in Oil & Vinegar you can find olives, cookies, jellies, creams, spices, sauces, and pastas (directly from Italy). All the oils and vinegars are acquired in milliliters in a bottle chosen by the client. Then, if you want more or want to keep tasting their extensive variety, you bring the washed and dry bottle back to the store, and you will only pay for the product.

In the olive section, they are available stuffed with blue cheese, olives with touches of lavender or even stuffed with figs and pineapple. Since the opening of the store, the olives are of very high demand either to be consumed by themselves or in a good martini.

l Dente abrió sus puertas en Noviembre de 1989 y ha logrado mantenerse por 26 años, como el restaurante italiano más antiguo de Puerto Rico, donde su fiel clientela disfruta la buena comida italiana.

Giancarlo Amenta, original de Palermo, Sicilia, conoció a su esposa Margie Alcaraz, puertorriqueña, mientras estudiaban en New Orleans.

Ella estudiaba Comunicaciones en la Universidad de Loyola, él Ingeniería Electrónica en la Universidad de New Orleans. Se enamoran y se casan. Vinieron a Puerto Rico para que Giancarlo conociese a sus suegros y él se prendó de la belleza de esta bella isla. Decidieron quedarse y se propusieron abrir un restaurante donde se pudieran probar muchos de los platos de su, nativa, Sicilia. Y qué mejor que ponerle Al Dente. Nos dice Giancarlo: “el amor, como la pasta, deben de estar ‘al dente’, para alcanzar su punto preciso”. Yo creo que estoy de acuerdo…

l Dente opened its doors on November 1989 and after 26 years it continues to be the oldest Italian restaurant in Puerto Rico, where its faithful clientele indulges in its good Italian good.

Giancarlo Amenta, a Palermo native, met his wife Margie Alcaraz, a Puerto Rican, while they both went to college in New Orleans. She studied communications at Loyola University while he studied electronic engineering at New Orleans University. They fell in love and got married.

They came to Puerto Rico so that Giancarlo could meet his in-laws and he fell in love with this beautiful Island. They decided to stay and open a restaurant where diners could experience many of the dishes of his native Sicily. And what better name than Al Dente, Giancarlo tells us “love, just like pasta must be ‘al dente,’ to reach its precise spot.” I think that I agree…

Al preguntarle a Giancarlo cual ha sido su secreto para mantenerse favorito entre sus asiduos comensales por tanto tiempo y en una rampante recesión, nos cuenta: “mi filosofía ha sido siempre innovar la tradición, con comida simple, ingredientes frescos con un único sabor y textura que solo conocen los verdaderos italianos y sobre todo, tener una gran perseverancia”. Cosa que yo doy fe, pues soy parte de su fiel clientela desde sus comienzos.

A esto se puede añadir que su restaurante cuenta con un ambiente sumamente acogedor, decoración moderna y de buen gusto, muy parecido a las trattorias italianas. Las paredes se engalanan con las pinturas de Margie y con parafernalia antigua. La atención es excelente, pues Giancarlo siempre está presente para lograrlo.

La barra ha sido remodelada para darle más amplitud y que puedan sentarse a tomar uno de los deliciosos tragos que prepara el sumiller, antes o después de cenar, o meramente a tapear y tomar algún trago o algunas copas de los 30 vinos que ofrecen por copeo. Los cocteles que

To this, we can add that the restaurant has an extremely inviting atmosphere and modern decor, similar to Italian trattorias. The walls are decorated with Margie’s paintings and antique paraphernalia. The attention at the restaurant is excellent since Giancarlo is always there to ensure it.

The bar has been remodeled to give the area more space so that people can sit down and enjoy some of the delicious drinks prepared by the barman, before or after dinner, or to merely indulge in tapas, a drink, or a glass of one of the 30 wines that they offer by the glass. The cocktails that we enjoyed during our visit were: an elegant Champagne Mojito with Limoncello, a coffee martini and the Sicilian Cocktail with Campari and Averna.

Entre los platos emblemáticos de Al Dente se destacan algunos aperitivos como los “Cozze Al Vino (Mejillones al vino blanco, cebolla, en una salsa picantita de ajo, sal y pimienta), mis favoritos. Los Arancinis con prosciutto, mozzarella fresca y “petit pois”. Ambos exquisitos.

También tienen que probar las Bruschettas en ½ libra de pan horneado en casa, con aceite de oliva virgen, queso mozzarella fresco, tomates frescos y albahaca.

De los platos principales, caben destacar los Raviolis, hechos en casa, los Ravioli di Zucca alla Boscaiola (rellenos de calabaza), en una reducción de mantequilla, balsámico di Modena y carne molida, que son una experiencia obligada. El Atún fresco a la plancha con el risotto del día, y el que deben dejar de probar: Chuletón de Ternera a la plancha, acompañado de Risotto de setas y cebolla caramelizada, Al Dente ofrece más de 30 vinos por copa y cuenta con una selección de más de 200 botellas de vino de las principales regiones vitivinícolas.

En noviembre 27, cumplió Al Dente, 26 años y pensándolo bien, yo llevo lo mismo viniendo a comer aquí y siempre he disfrutado de una agradable velada con exquisitos platos y acertados vinos.

Among the iconic dishes at Al Dente are appetizers such as Cozze al Vino (mussels in white wine sauce, onions, and a spicy garlic, salt and pepper sauce), one of my favorites. The Arancinis with prosciutto, fresh mozzarella and petit pois. Both exquisite. You also have to try the Bruschetas, half a pound of house baked bread with extra virgin olive oil, fresh mozzarella and tomatoes, topped with basil.

Regarding the main dishes, we have to mention that the housemade Raviolis, the Ravioli di Zucca alla Boscaiola (stuffed with pumpkin), in a butter, di Modena balsamic and ground beef reduction, are a required experience. Also, the grilled fresh tuna with the risotto of the day, and don’t miss the Grilled Veal Chop with a side of mushroom and caramelized onion risotto.

Al Dente offers more than 30 wines by the glass and has a selection of over 200 wine bottles from the main wine regions. On November 27, Al Dente turned 26 and now that I think of it, I have been coming to eat here for the same amount of years and have always experienced a pleasant evening with exquisite dishes and the perfect wines.

ara el año 1950 era conocido como Hacienda San Miguel. En aquel entonces, Marcelino San Miguel, un español de la región de Asturias, encontraba en esta su casa de campo. Hoy, lleva plasmado el nombre de Restaurante Asador San Miguel. Ubicado en lo alto de una montaña en el Barrio Cedro Arriba en Naranjito, encontramos este lugar que desde que llegas, te sientes como en casa.

El reconocido y galardonado chef puertorriqueño Fernando Parrilla tiene a su cargo desde hace un año la confección, junto a un excelente equipo de trabajo, de cada plato en el menú.

Buena Mesa tuvo la oportunidad de visitar y degustar algunas de sus especialidades y hablar en detalle con él y su dueño, Orlando Rodríguez.

Asador San Miguel se le conoce por su sabor “neopuertorriqueño” y que, a pregunta de Buena Mesa, Parrilla lo definió. “Esto significa que los comensales pueden probar un mamposteao o un churrasco pero siempre lo vamos a llevar a otro nivel; desde la textura, aroma, sabor… siempre predominará lo puertorriqueño, lo que es campo. La base es el sabor de campo pero siempre llevado de una forma más elegante a la hora de servir”.

Today, it is called Restaurante Asador San Miguel. Located on the top of a mountain in the Cedro Arriba district in Narajito, we found this place that makes you feel like home as soon as you arrive.

For the past year, the recognized and award winning Puerto Rican chef Fernando Parilla has been in charge, along with an excellent team, of each dish on the menu. Buena Mesa had the opportunity to visit and taste some of their specialties, as well as, talk extensively with him and Orlando Rodríguez, owner of the restaurant.

Asador San Miguel is know for its “new-Puerto Rican” flavor, which to questions from Buena Mesa, Parrilla defined. “This means that guests can try a mamposteao rice or a skirt steak, but we are always going to take it to the next level; from texture, aroma, and flavor... but what will always predominate is the Puerto Rican influence, what is country. The base is the country flavor but served in an elegant manner.”

Parrilla, oriundo de San Juan y graduado del Instituto de Banca de Puerto Rico, cuenta con un extenso resume. Tomó cursos en Johnson & Walles, trabajó en el restaurante de cinco estrellas Agora, fue profesor en el Instituto de Banca, Director de Programa en MBTI en el área de gastronomía, ‘bartender’ y turismo.

También, formó parte del Equipo Culinario de Puerto Rico quienes en el año 2007 fueron el equipo con más medallas en traer a la Isla sumando 18.

En Asador San Miguel inició trabajando sólo sábados y domingos hasta que surgió la oportunidad de estar a tiempo completo. “Me motivó quedarme en Asador San Miguel sus dueños, su forma de ser, el potencial que tiene el restaurante, experimentar algo nuevo, el trabajar en el centro de la Isla ya que siempre he trabajado en el área metro. El ambiente más la oferta de carnes y asados me motivaron”, expresó Parrilla. Su trabajo se destaca en cada plato: gastronomía a otro nivel cuidando cada detalle y expresando su pasión.

Parrilla, a native of San Juan and an Instituto de Banca graduate, boasts an extensive resume. He has taken courses at Johnson & Walles, worked at five star restaurants such as Agora, was a professor at the Instituto de Banca, a Director of the Gastronomy Program at MBTI, and has worked as a bartender and in the tourism industry. He was also a part of the Puerto Rico Culinary Team, who in 2007, brought 18 medals to the Island.

At Asador San Miguel, he started working only on Saturdays and Sundays until a full time position arose. “What motivated me to stay at Asador San Miguel was its owners, their way of being, the potential of the restaurant, the experience of something new, and the opportunity to work in the center of the Island since I had always worked in the metropolitan area. The ambiance, as well as, the meats and roasts motivated me,” stated Parrilla. His work stands out in every dish: a whole new level of gastronomy, which expresses his passion and attention to detail.

Iniciamos la degustación con unos mojitos de parcha y uvas blancas. Ambos resultaron refrescantes y sus notas frutales fueron un deleite al paladar. El primer plato en llegar fue uno de los aperitivos: croquetas de risotto, chorizo y amarillo acompañado de un churrasco con cebollas caramelizadas y chimichurri de piña. El segundo plato fue una grata sorpresa: helado de calabaza sobre una capa de polvo de Nutella junto a un flan de coco y maíz. El toque dulce del flan y el helado son excelentes. Este postre es uno de los favoritos de Parrilla ya que como él mismo nos explicó, tiene su sello. El tercer plato vino acompañado de un martini de guayaba y lo fue salmón con un glaseado de mangó, salpicón de pimientos y majado de guisantes. El cuarto plato es uno de los más vendidos, carne ahumada con salsa de manzanas asadas y ron Barrilito junto a una fritas de papas con paprika ahumada.

La combinación de sabores entre el cerdo glaseado y sus fritas, delicioso. Y bien dice Parrilla: “si fuiste a Asador y no comiste la carne ahumada, no nos visitaste”. El siguiente fue otro de los postres de la casa: crepas rellenas de dulce de leche, mousse de chocolate, helado de vainilla sobre una We started the tasting with passion fruit and grape mojitos.

Both were refreshing and their fruity notes were a delight for the palate. The first dish to arrive were the appetizers: risotto croquettes, chorizo and sweet plantains with a side of skirt steak with caramelized onions and pineapple chimichurri.

The second dish was a wonderful surprise: pumpkin ice cream topped with Nutella powder and a coconut and corn flan. The touch of sweetness from the flan and ice cream were excellent. This dessert is one of Parrilla’s favorites. The third dish was a salmon with a mango glaze, a salpicón of peppers and mashed peas. It was served with a guava martini.

The fourth dish is one of their top sellers, smoked meat with roasted apples and Barrilito rum with fried potatoes topped with smoked paprika. The combination of flavors was delicious. Just like Parrilla says: “if you came to Asador and did not have the smoked meat, you did not come at all.” Next up was one of the house desserts: crepes stuffed with dulce de leche and chocolate mousse served with vanilla ice cream over a strawberry sauce. As our last dish, Parrilla put forward one of the chef’s specialties, a smoked longaniza risotto with pork osso buco.

salsa de fresas. Como último plato, Parrilla nos presentó un mamposteao de longaniza ahumada y osobuco de cerdo, uno de los especiales del chef.

Asador San Miguel tiene capacidad para 150 comensales. El restaurante nos regala una espectacular vista hacia el área metropolitana la cual invita con una copa de vino y una buena conversación a disfrutarla. Tiene un área de billar, tres salones -uno de ellos el principal- y terraza. Cuentan con un huerto casero del cual más del 40% de su materia prima es cultivada: calabaza, cilantro, cuatro tipos de orégano, plátanos, entre otros.

Entre los planes futuros de su dueño, quien cuenta con estudios en arquitectura, Rodriguez nos comentó que desea ampliar el área de la barra al exterior para que los asistentes, aquellos que visitan para tomar una copa de vino o unos tragos entre amigos, se sientan más a gusto y a su vez, planea crear una cava de vinos. The restaurant has a spectacular view of the metropolitan area that is perfect to enjoy with a glass of wine and good conversation. They also have a pool area, three rooms – one of them being the main hall and the terrace. They also have a garden where more than 40% of their materials are cultivated: pumpkin, cilantro, four types of oregano, plantains, among others.

The future plans of its owner include expanding the bar area to the exterior of the restaurant so that those who come to have a glass of wine or cocktails among friends will feel more at home. Also, he plans to incorporate a wine cellar.

Comenzamos la velada con un “Mini Wichi”, una fritura de papa tradicional de Comerio, esta vez con una salsa de queso de bola y salchichón frito en tempura; esto acompañado de un espumoso Raventós L’ Hereu Brut. Los cursos comenzaron a desfilar ante nosotros, cada uno sorprendiéndonos más que el anterior. Estos manjares fueron degustados con los vinos: Albariño, Viento de Primavera. Ben Marco, Variedad 100% Malbec. Ontañón Crianza Variedad: Tempranillo, Graciano.

We started the evening with a Mini Wichi, a traditional potato fritter from Comerio, this time with an edam cheese sauce and tempura fried salchichón; this was paired with the bubbly Raventós L’ Hereu Brut. As each course made its appearance, each one surprised us more than the other. These were paired with the following wines: Viento de Primavera (Albariño), Ben Marco (Malbec), and Ontañón Crianza (Tempranillo, Graciano).

Panza de cerdo confitada y sellada en glaseado de maple y ají, acompañado de waffle de longaniza casera y guiso de gandules. Biftec de Lomillo del país con una croqueta de pitipuás y patita de cerdo, mermelada de guineítos niños y crujientes cebollas empanadas en granos de plátano. Mechada Ajimojito’s, guisada en demi criollo, croqueta de arroz blanco con tocino. Guanimes con rabo de res estofado y galleta de parmesano. Lomo de cordero ahumado con esencias de chocolate, crema de chimichurri de menta y Oporto con cuscús criollo. Y como el chef Nieves no solo nos deja sin palabras con sus platos principales, tenemos que dejarles saber como nos endulzó la noche. El postre lo fue una crujiente empanada de arroz con dulce de calabaza con una malteada de jengibre y tomate seco; simplemente original y espectacular.

This was demonstrated once again during a ten course dinner in which the dishes were paired with wines from Balleste Hermanos, presented by sommelier Pedro Alvarado. Aside from enjoying various customer favorites, we got to know the delicious new creations.

Shredded Meat Ajimojito’s style, stewed a in creole demi with white rice and bacon. Ox tail guanimes with a Parmesan cracker. Smoked lamb loin with a chocolate essence, mint chimichurri cream and an Oporto with creole cuscus. And since chef Nieves left us without words with his main dishes, we have to tell you how he sweetened our night. The dessert was a crispy rice empanada with pumpkin candy and malted ginger and dry tomato; simply original and spectacular.

isitamos el restaurante francés L’ami Du Bistro en Dorado para conocer sus nuevas facilidades. Su propietario, Frederick Salgado, nos presentó su nuevo espacio, acogedor y moderno, en el cual promete continuar con un servicio de excelencia y una magnífica oferta gastronómica, que completará la experiencia de los comensales. L’ami, además de un servicio de primera ofrece una amplia carta de vinos. El primer jueves de cada mes tienen Jazz en vivo con el reconocido trompetista Humberto Ramirez. De viernes a domingo podrás disfrutar de Jazz, Blues y Rock Clásico.

Fueron cuatro los platos que degustamos en nuestra visita. Comenzamos con un Sachimi de panza de salmón con salsa de ajonjolí, aceite de aguacate y aceite oliva en una cama de calabacines y pepino; al centro algas marinas.1 Un plato refrescante con el toque asiático. Continuamos con unas exóticas ancas de ranas, acompañadas con un puré de ajo y salsa tarragón.2 Le siguió una sabrosa ensalada de pulpo a la vinagreta con un puré de guineitos en escabeche.3 Terminamos deleitando el paladar con un filete de lubina con langostino, estos en salsa verde de tarragón y menta, con papas horneadas al oliva, ratatouille y habichuelas verdes.4 Como siempre, pasamos una velada maravillosa, y pronto volveremos para degustar los platos que nos faltaron. L’ami, in addition to a first class service, offers an extensive wine list. On the first Thursday of every month they have live jazz with renowned trumpeter Humberto Ramirez. From Friday to Sunday you can enjoy Jazz, Rock and Classic Blues.

We tasted four dishes on our visit.

We started with a salmon´s Sachimi belly with sesame, avocado and olive oil on a zucchini and a cucumber bed; the center was full of seaweed.1 A refreshing dish, with an asian touch. We continue with exotic frogs legs, served with a garlic puree and tarragon sauce.2 It was followed by a tasty octopus salad with marinated mashed “guineitos” vinaigrette.3 We ended up delighting the palate with a sea bass fillet with shrimp in green sauce of tarragon and mint, with potatoes baked in olive oil, green beans and ratatouille.4

¿SERVICE COMPRIS?

L

a práctica de agradecer el servicio data desde la década del 1810 en Europa. Los caballeros de los diferentes reinos visitaban en sus travesías los establecimientos para reabastecerse. Llevaban consigo una carta de su Rey exigiendo un servicio rápido y amable, el cual seria compensado de acorde. Este es y ha sido el motor de gran parte del salario de la industria de servicio en los restaurantes desde entonces.

Por años he estado escuchando las interrogantes de como calcular la propina al momento en que la cuenta llega a la mesa pero el consenso general siempre ha dictado que se adjudique de un 15% a un 20% de propina.

La ley establece que el salario mínimo para un mesero(a) es de $2.75 la hora ya que con la propina esto equipara y en la mayoría de las ocasiones sobrepasa el salario mínimo estatal de $7.25.

Recientemente ha comenzando una tendencia de eliminar las propinas para equiparar los salarios entre los cocineros, meseros y los demás empleados. Cabe destacar que para que esta fórmula funcione el establecimiento tendrá que aumentar los precios de la comida en un 20%.

El exitoso restaurateur Danny Meyer, fundador y propietario de “Union Square Cafe”, “Gramercy Tavern”, “Shake Shack” y otros, quiere ser uno de los pioneros en este cambio y ya anunció que va a comenzar a aplicar esta nueva propuesta en su restaurante “The Modern” en el museo del Moma en Nueva York. Muchos chefs se encuentran esperando los resultados del cambio para decidir si lo aplican también en sus restaurantes ya que les preocupa que el servicio se vea afectado. En un editorial de Zagat del 9 de noviembre la Chef Allison Robicelli (de Robicelli’s en Brooklyn) relata que ya se le hace difícil mantener sus puertas abiertas y que ahora con el movimiento de propina incluida va a considerar relocalizarse fuera de Nueva York.

Es un hecho que el 75% de la experiencia de un comensal esta basada en el servicio. Esta es la carta de presentación de cualquier restaurante. Cuando salimos a comer y se tardan un poco con la comida, puede que nos molestemos pero cuando llega a la mesa se nos olvida. Si llega con poca sal, lo arreglamos y siempre se puede devolver el plato. Pero un mal servicio no se puede devolver y se nos hace difícil olvidarlo.

De mi parte nunca he tocado las propinas de mis meseros. Ellos forman gran parte del elenco en el drama de lo que es correr un restaurante. Mis cocineros siempre han contado con salarios justos y en acorde con su labor. Además, creo que no es justo que yo le otorgue un empleo a alguien con poca experiencia y se gane lo mismo que un profesional que lleva 10 años en la industria. Nadie avanzaría a ninguna posición porque no tendría ningún atractivo y los meseros buenos renunciarían porque van a terminar ganando menos.

Desaparecería el reto y las ganas de progresar y servir con deseo.

T

he practice of thanking for services provided dates back to the decade of 1810 in Europe. During their journeys, knights of various kingdoms visited establishments to refuel. They took with them a letter from the King demanding prompt and kind service, which would be compensated accordingly.

This is and has been the motor behind the salary that the service industry has established in restaurants since then.

For years, I have listened to questions regarding how to calculate the tip when the check comes to the table, but the general consensus seems to be that it consists of 15% to 20% of the bill.

The law establishes that minimum wage for a waiter or waitress is $2.75, since when you add the tip to the equation’ it would surpass the minimum state salary of $7.25.

Recently, there is a trend gearing towards eliminating tips to equate the salaries of cooks, waiters, and the rest of the employees. It is important to point out that for this formula to work, the establishment would have to raise prices by 20%.

The successful restaurateur Danny Meyer, founder and proprietor of Union Square Café, Gramercy Tavern, Shake Shack, and others wants to be one of the pioneers of this change and has already announced that he will apply this new model to his restaurant The Modern in the Museum of Modern Art in New York. Many chefs await the results of this change to decide if they will also apply the same to their restaurants since they worry that the service will be affected. On November 9, Chef Allison Robicelli (from Robicelli’s in Brooklyn) wrote an editorial for Zagat stating that it was already hard enough for her to keep her doors open and that with this tip included movement she would have to consider relocating out of New York.

It is a fact that 75% of the diners experience is based on service. It is the presentation card of any restaurant. When we go out to eat and the food takes a little while, we can get mad, but as soon as the food reaches the table we forget about it. If the dish needs a little salt, we fix it or we always have the option of returning it. But bad service cannot be returned and is difficult to forget.

As for me, I have never touched the tips of my waiters. They are a part of the great cast in the drama that is running a restaurant. My cooks have always had just salaries in accordance with their labor. Also, I do not think that it is fair that I employ somebody with little experience and that the person earns as much as a professional that has been in the industry for over 10 years. Nobody would advance to any position since it would have no appeal and good waiters would quit since they would earn less. The challenge, the willingness to get ahead, and the desire to serve would disappear.

Mamposteao de quinoa y setas Quinoa and mushrooms “manposteao” 1 taza de quinoa 3 tazas de agua o caldo de preferencia aceite de oliva 1 ajo ½ cebolla violeta 2 ajies dulces 3 setas Baby Bella perejil cilantro 1 quinoa cup 3 cup water or broth olive oil ½ red onion 2 sweet “ají” chili 3 Baby Bella mushrooms parsley cilantro Hervir la quinoa por 12 minutos. En un sartén sofreír con aceite de oliva,el diente de ajo en láminas,la cebolla violeta en cubos pequeños, los ajíes dulces cortados pequeños y las setas crimini/Baby-Bella. Agregar el quinoa, mezclar bien y agregar hierbas como perejil y cilantro.

Natilla de coco con mermelada de limón y polvo de coco Coconut custard with lemon marmalade and coconut powder Panacotta: ¼ taza agua 3 cucharadas gelatina 14 oz leche de coco 1 taza heavy cream ¼ taza azúcar blanca ¼ taza azúcar de coco 2 cucharada crema de coco 1 cucharada vainilla

Panacotta: ¼ cup water 3 tablespoons gelatin 14 oz coconut milk 1 cup heavy cream ¼ cup white sugar ¼ cup coconut sugar 2 tablespoon coconut cream 1 teaspoon vanilla

Diluir la gelatina en agua,luego disolver la misma sobre baño de maría. Aparte unir leche de coco, crema, ambas azucares, heavy cream y vainilla. Calentar por 3 minutos. Retirar del fuego y añadir la gelatina. Mezclar. Dissolve the gelatin in water, then dissolve it over a double boiler. Apart mix coconut milk, cream, two sugars, heavy cream and vanilla. Heat for 3 minutes. Remove from heat and add gelatin. Mix. Mermelada de limón: Lemon marmalade: 1 ½ libra limón pelado 1 ½ pound peeled lemon and chopped into strips y picar en tiras 4 ½ tz water 4 ½ tz agua 3 lbs sugar 3 lb azúcar Colocar en una olla el limón y cocinar con el resto de los ingredientes por 6 horas. Place in a pot and cooking lemon with the remaining ingredients for 6 hours.

Boil 1 quinoa cup in 3 cups of seasoned water or broth of your preference for 12 minutes. In a skillet, fry 1 garlic clove, sliced, it with olive oil, 1/2 cup of purple onion, cut in small cubes, 2 small sweet peppers chopped, 3 crimini / BabyBella mushrooms, add the quinoa, mix well and add herbs like parsley and cilantro.

Coconut powder: Polvo de coco: 1 cup shredded coconut 1 taza de coco rallado 2 tbsp coconut sugar 2 tbsp azúcar de coco Tostar el coco en el horno. Luego mezclar ambos en el procesador.

Usar para decorar. Toast the coconut in the oven. Then mix both on the processor. Use to decorate.

as Bodegas Franco-Españolas es una de las grandes bodegas de La Rioja. Con sus 125 años de historia continúa siendo un referente a la hora de hablar del mundo del vino. Inquieta y renovadora, no es ajena a la evolución y compagina a la perfección el respeto por la tradición y la innovación tecnológica con el fin de obtener los Grandes vinos que avalan su larga trayectoria.

BODEGAS FRANCO-ESPAÑOLAS se funda en 1890 gracias al apogeo que vivió Rioja en el S. XIX, cuando los franceses se instalaron en la región para reemplazar con los vinos riojanos sus viñedos agonizantes por el ataque de una plaga.

Eran los inicios de las elaboraciones de los “vinos finos de Rioja”. Todo esto llevó a Frederick Anglade Saurat de Burdeos, a fundar en 1890 “Bodegas Franco–Españolas”, fusión entre Francia (Franco) y España (Españolas). Un año después se realiza la primera vendimia, donde nacen Diamante, Royal y “Estilo Borgoña” que en los años 50 pasa a llamarse Rioja Bordón.

En sus 125 años de historia ha recibido muchas visitas ilustres entre las que se encuentran las de personajes como Hemingway o el rey Alfonso XIII. En manos de la Familia Eguizábal desde 1983, en la actualidad está inmersa en nuevos proyectos y comienza a ser un referente entre la oferta de ocio y cultura con sus propuestas enoturísticas. Los vinos de Rioja están amparados por la Denominación de Origen más antigua de España desde el 6 de junio de 1925 GARANTÍA DE ORIGEN: esta categoría garantiza el origen y añada del vino. Suelen ser vinos en su primer o segundo año, que conservan sus características primarias de frescor y afrutado. Esta categoría también puede comprender otros vinos que no encajan en las categorías de Crianza, Reserva o Gran Reserva, aunque hubiesen sido sometidos a procesos de envejecimiento, por no estar éstos certificados por el Consejo Regulador.

CRIANZA Tintos: corresponde a vinos al menos en su tercer año que han permanecido un año como mínimo en barrica de roble.

Blancos: el período mínimo de envejecimiento en barrica es de 6 meses.

RESERVA Tintos: Corresponde a vinos muy seleccionados con una crianza mínima entre barrica de roble y botella de tres años, de los cuales uno al menos en barrica.

Blancos: el período de crianza es de 2 años, de los cuales como mínimo 6 meses en barrica.

GRAN RESERVA Tintos: Corresponde a vinos de grandes cosechas que han sido criados un mínimo de dos años en barrica de roble y tres años en botella.

Blancos: En vinos blancos el período de crianza es de 4 años, de los cuales 6 meses como mínimo en barrica.

eet NY es un festival gastronómico diseñado para dar a conocer chefs de diferentes partes del mundo, y se dan cita en la ciudad de New York. En el 2015 Puerto Rico fue el país invitado. Durante el primer fin de semana del mes de octubre se combinó el arte y el estilo de la ciudad de Nueva York con la gastronomía y tradiciones culinarias puertorriqueñas. Fueron ocho chefs, que junto a sus sous chefs llegaron a NY para colaborar con siete chefs de esa ciudad, para ser parte de cinco días de alta cocina y fiesta.

eets NYC, a culinary festival designed to introduce chefs and culinary legacies from around the globe to the New York City food scene, chose Puerto Rico as its 2015 feature destination. During the first weekend of October, Puerto Rico Meets NYC (PRMNYC) combined the art and style of New York City dining with talented chefs who introduced the gastronomic epicenter to the genius of Puerto Rican culinary tradition. The list of participants was vast, bringing eight Puerto Rican chefs and their sous chefs to New York City to collaborate with seven NYC chef powerhouses for five days of high-end cuisine, rum and revelry.

Kicking off PRMNYC was an Opening Party on September 30th where visiting chefs cooked alongside one another in the massive open kitchen of Union Square restaurant Botequim. Each chef crafted their own canapé for the 250 hungry guests armed with Rums of Puerto Rico cocktails created by Puerto Rican bartending royalty Lynnette Marrero, Natasha Sofia and Roberto Rosa.

During the first night of dinners on Thursday, October 1st, Chef Kevin Roth collaborated with Chef Sean Rembold at the Wythe Hotel in Williamsburg, Brooklyn. The New York born Roth brought real Puerto Rican flavors and, with the help of Chef Rembold, elevated them into modernized dishes. Most notable were the bread fruit tostones passed as hors d’ouvres and grosella

Otros cenas fueron entre Juan José Cuevas y Didier Elena en Chefs Club, Pedro Álvarez y JJ Johnson en The Cecil, Xavier Pacheco y Camilo Becerra en Navy, y Eric Ripert y José Santaella en el comedor privado en Le Bernardin. Chef Wilo Benet, ofreció en Chefs Club un menú de cinco cursos.

As one of five PRMNYC’s Friday night chef dinners, Chef Mario Pagan’s chops were on display as he sent out beautiful dishes such as Sweet Plantain Duck Pionono with Goat Cheese and Foie Gras Crème. Other dinners featured partnerships between Juan Jose Cuevas and Didier Elena at Chefs Club, Pedro Alvarez and JJ Johnson at The Cecil, Xavier Pacheco and Camille Becerra at Navy, and Eric Ripert and Jose Santaella in of the private dining room at Le Bernardin. Chef Wilo Benet, who also cooked at Chefs Club, showcased a five-course menu on his own.

En el último día, PRMNYC organizó una fiesta de barrio, “Lechón Asado”, en el jardín del restaurante de moda, Roberta en Bushwick, Brooklyn. El “Lechón Asado” llevó a PRMNYC al siguiente nivel de autenticidad; dejando atrás la formalidad y la alta cocina, fue una fiesta a la cultura puertorriqueña.

Con música y bailes típicos de Puerto Rico los Nuyoricans lo disfrutaron mucho, ya que era como caminar por las calles de su país, mientras degustaban de sus platos.

Más de 400 invitados disfrutaron de la longaniza puertorriqueña, a cargo de Pedro Alvarez. También se sirvieron 125 libras de cerdo, cortesia de la lechonera “La Piraña”. Largas filas se formaron para el mofongo, el cerdo y las croquetas de pastrami. De Brooklyn “Tumbador Chocolate” mantuvo a los adultos y niños sonrientes con sus dulces y chocolates. El ron de Puerto Rico hizo que los aistentes rapidamente se hicieran amigos. Pero lo más importante, durante los cinco días que duró PRMNYC, fue que le dio a la gastronomía de Puerto Rico el respeto y la exposición que sin duda merece.

On the final day, PRMNYC hosted a Lechon Asado Block Party in the outdoor garden of the trendy Roberta’s restaurant in Bushwick, Brooklyn. The Lechon Asado brought PRMNYC to the next level of authenticity; leaving behind formality and haute cuisine, the Lechon was the festival’s bridge into Puerto Rican culture. With traditional Bombayo music and dancing

by Dr. Drum, true Puerto Rican street foods and plenty of Nuyoricans in attendance, the lechon was one serious Sunday party.

Over 400 guests munched on delicacies from master butcher Pedro Alvarez who dished up his Longaniza Puertorriqueña, and indulged themselves on 125-pound roast pigs courtesy of La Piraña Lechonera. Long lines formed to get a taste of pork Mofongo from NYC pop-up MofonGO, and also of the infamous El Ñosh Pastrami Croquetas. Brooklyn’s own Tumbador Chocolate kept adults and kids smiling with sweet treats like their Chocolate and Palcha. The abundance of Puerto Rican rum made fast friends among all in attendance. Yet most importantly, over the five days of festival PRMNYC ultimately gave Puerto Rico the epicurean respect and exposure it most certainly deserves.

l pasado 3 y 4 de octubre se celebró la tercera edición del FUDIS: Gourmet Truck Festival en el lujoso Hotel The St. Regis Bahia Beach. El evento reunió a los mejores food trucks de Puerto Rico quienes presentaron sus suculentos platos para todos los asistentes del evento. Durante nuestra visita al evento, tuvimos la oportunidad de sentarnos a conversar con Gustavo Sánchez, chef ejecutivo del hotel, para hablarnos un poco sobre sus comienzos, sus planes para la cocina de St. Regis, y por supuesto, sobre FUDIS. El interés por la cocina del chef Sánchez despertó desde una temprana edad cuando cocinaba en su casa junto a su madre.

Comenzó sus estudios universitarios en arquitectura en la prestigiosa universidad Pratt Institute de New York, sin embargo, rápidamente se dió cuenta que ese no era su camino. Incursionó brevemente en cursos de pintura en la Escuela de Artes Plásticas de Puerto Rico hasta por fin dirigirse hacia su verdadera pasión: la cocina. Comenzó como cocinero de línea en Dragonfly donde trabajó por dos años bajo la dirección del Chef Robert Treviño. Posteriormente, tuvo la oportunidad de trabajar con David Chaymol en Café Le Plage en Isla Verde y en Bistro de Paris. Luego de adquirir esta experiencia, regresa a Dragonfly como primer cocinero donde, por su liderazgo y disciplina, fue promovido a sous chef a solo un año de su regreso.

También trabajó en las cocinas de Aguaviva y Koco hasta llegar en el 2011 a su actual hogar, el hotel St. Regis Bahía Beach, como chef de Molasses. Después de un tiempo con el hotel, gracias a su excelente desempeño, le ofrecen la posición de “executive sous chef” tieniendo a su cargo los restaurantes Molasses y Seagrapes, al igual que, los banquetes y el in-room dining. Finalmente, en el 2014, fue nombrado chef ejecutivo del hotel, donde fue puesto a cargo de toda la operación culinaria del mismo.

Volviendo a FUDIS, el chef Sánchez nos cuenta que la idea del evento surge de Gerry Farrulla, Directora de Banquetes y Servicios a Grupos del St. Regis. Inmediatamente se entusiasmó por el evento, pero tuvo una solicitud, que le brindaran un “food truck” a él y su equipo para mostrarle al público general sus deliciosos platos.

Es así como nace el “food truck” del St. Regis, el cual se encuentra disponible para el evento de FUDIS, en ocasiones especiales para los huéspedes en el St. Regis Bar, y para banquetes en el hotel.

n 3rd and 4th of October, the third edition of FUDIS: Gourmet Truck Festival took place at the luxurious St. Regis Bahia Beach Hotel. The event brought together Puerto Rico’s best food trucks who delighted those in attendance with their succulent dishes. During our visit, we had the opportunity to sit down and talk with the executive of the hotel, Gustavo Sánchez, to chat about his background, his plans for the St. Regis Hotel’s kitchen, and of course, FUDIS. Chef Sánchez’s interest in cooking started from an early age when he cooked alongside his mother in his home. He went on to study architecture at the prestigious Pratt Institute of New York, however, he quickly realized that this was not his path. He dabbled briefly in painting courses at the Plastic Arts School of Puerto Rico before diving into his true passion: the kitchen. He started as a line cook at Dragonfly where he worked for two years under the direction of chef Robert Treviño.

Subsequently, he had the opportunity to work with David Chaymol at Café Le Plage in Isla Verde and Bistro de Paris. After all these experiences, he returned to Dragonfly as a first cook, where due to his leadership and discipline he was promoted to sous chef in just a year.

He also worked in the kitchens of Aguaviva and Koco before arriving at his current home, the St. Regis Bahia Beach Hotel, to work as the chef of Molasses. After some time at the hotel, he was offered the position of executive sous chef due to his excellent performance and was put in charge of Molasses and Seagrapes, as well as, the banquets and inroom dining. Finally, in 2014, he was named executive chef of the hotel in charge of the complete culinary operation of the same.

Back to FUDIS, chef Sánchez tells us that the brain behind the operation is Gerry Farrulla, Director of Group Services and Banquets at the St. Regis. After sharing her idea with chef Sánchez, he was immediately excited about the event, however, he had one request, a food truck to be operated by him and his team where he could show the general public his succulent dishes. This is how the St. Regis food truck was born, which can be found at the FUDIS event, on special occasions for guests of the hotel at the St. Regis Bar, and for hotel banquets.

Chef Sánchez decided to give us a tour of the festival, starting of course, with a tasting of the wonders of the St. Regis Food Truck. Its menu includes foods that typically can be found in a food truck but they include that indisputable touch of luxury that only the St. Regis experience can

Buen Vivir Good Living El Chef Sánchez entonces decidió llevarnos en un recorrido por el festival, comenzando, por supuesto, degustando las maravillas del food truck del St. Regis. Su menú, incluye comidas que típicamente pueden ser encontradas en un “food truck” con ese toque de lujo indiscutible que solo la experiencia St. Regis puede proveer. Entre los platos que disfrutamos se encontraba el decadente foie gras cubano, el sabroso pulpo a la plancha con papas bravas y chipotle, las irresistibles croquetas de longaniza con mermelada de ají dulce, los adictivos vianda nachos with lobster fontina cream, y los coconut shrimp tacos with coco aioli and sesame slaw.

Cabe señalar que los platos del menu del “food truck”, al igual que, los platos que el Chef Sánchez prepara para sus comensales en el hotel son confeccionados mayormente con productos locales ya que sus platos integran productos de suplidores tales como Frutos del Guacabo, Quesos Vacanegra, y longaniza de Alcor Foods.

De ahí caminamos al food truck de Veuvue Clicquot para endulzarnos la vida con las delicias del reconocido pastry chef del St. Regis Anibal Rodríguez. Ahí probamos unos pecaminosos “smores” que venían acompañados del mantecado de tu preferencia, ya sea coquito, guayaba, o cerveza. Tambien degustamos unas barquillas con mantecado de cerveza que estaban divinas.

La próxima parada en nuestro recorrido con el chef Sánchez nos llevó a uno de sus food trucks favoritos, Thon Thai, donde probamos un Bun Bao de Atún con Escabeche de Pimientos y un Pollo Sesame que estaba para chuparse los dedos.

Nuestra última parada fue en Bluefin, donde nos saboreamos unos espectaculares Calamari Tacos, un fabuloso Filet Mignon Plate cocinado a la perfección, y unos ricos Sliders.

La frescura y calidad de sus productos se sentía en cada bocado. Por último, el Chef Sanchez nos recomendó que no nos fueramos sin probar el “food truck” Dondesea y La Arepa Preña.

En fin, la tercera edición de FUDIS fue un éxito total! No podemos esperar a la próxima edición para disfrutar de la comida de nuestros “food trucks” favoritos y descubrir a nuevos participantes. provide. It is important to point out that the dishes featured in the food truck’s menu, as well as, the meals that chef Sánchez prepares for the hotel guests are mainly made using local products since he integrates products from suppliers such as Frutos del Guacabo, Quesos Vacanegra, and Alcor Foods.

From there, we walked over to the Veuve Clicquot food truck to sweeten our life with the delicious pastries of Anibal Rodríguez, the St. Regis’ Pastry Chef. There we tried sinful smores that were served with the ice cream of your choice, coquito, guava, or beer flavored. We also enjoyed beer ice cream cones, which were simply divine.

The next stop in Chef Sánchez’ tour took us to one of his favorite food trucks, Thon Thai, were we tasted a Tuna Bun Bao with Pickled Peppers and a Sesame Chicken that was simply amazing.

Our last stop was Bluefin, where we savored spectacular Calamari Tacos, a fabulous Filet Mignon Plate cooked to perfection, and yummy Sliders. The freshness and quality of the products used was felt in every bite. Lastly, chef Sánchez recommended that we did not leave without trying the food trucks Dondesea and La Arepa Preña.

In sum, the third edition of FUDIS was a complete success. We can’t wait for next year’s edition to taste once again the food from our favorite food trucks and discover the flavors of the new participants.

a experiencia comenzó tan pronto llegamos al aeropuerto de Vieques, donde fuimos recibido con una calurosa bienvenida en el “lounge” privado del “W”, ahí pudimos disfrutar de refrigerios y cocteles, como una muestra exclusiva del estilo único del “W”.

Al llegar al “W” nos dimos cuenta que es una hospedería especial y diferente. Exhibe una elegancia rústica conceptualizado por la diseñadora española, Patricia Urquiola, quien unió hábilmente elementos naturales y locales, dándole vida a una arquitectura novedosa, contemporánea y visualmente atractiva. A lo largo de la propiedad hay una meticulosa atención al detalle, diseño, artesanía y combinación de materiales reciclados, los cuales son una celebración de la naturaleza e identidad de la isla de Vieques. Eso lo pudimos percibir tan pronto entramos al “Welcome Desk”, donde hay paredes cubiertas de madera recuperada; luego se pasa al icónico ‘Living Room’, el corazón de todos los hoteles de la marca W. he experience began as soon as we arrived at the Vieques airport, where we were welcomed at the W’s private lounge; there, we enjoyed snacks and cocktails, as an exclusive sample of the unique ‘W’ style.

When we arrived at the W, we realized immediately that this is a unique and different hostelry. It exudes a rustic elegance conceptualized by Patricia Urquila, a Spanish designer, who skillfully joined natural and local elements, giving life to an innovative, contemporary and visually attractive architecture. All along the property, there is meticulous attention to detail, design, craft and a combination of recycled materials that are a celebration of the nature and identity of Vieques Island. That is what we immediately perceived as soon as we entered the Welcome Desk, where the walls are covered with salvaged wood; then we went to the iconic Living Room, the heart of all the W hotels. An inviting space a doble altura interior-exterior with the details in the wooden ceiling, area rugs, hanging lamps that are a work of art, comfortable chairs and furniture with colorful tones, and a bar that offers top notch drinks.

Immediately, we wanted to see more, so we started to explore the property. We went outside and were impressed with the amazing ocean view and vegetation. We got to know “Wet,” a relaxing infinity pool were you can listen to music underwater and at night, admire its spectacular lighting.

ROOMS The decoration of the spacious rooms was inspired by the tropical exuberance present at the W Retreat & Spa’s location; incorporating neutral tones and elements of vibrant colors over dark wood designed exclusively by Patricia Urquiola. At the rooms, you can finds books on various themes ideal to suit everyone, enjoy the “munchies box” which has an exquisite variety of snacks and drinks from water to champagne; a 42” inch LCD television and modern polished cement floors. The bathroom has an open concept with a rain showerhead, a metal bathtub painted to have a rustic appearance and over it, exclusive lamps that offer unique lighting. Also in the rooms, there are round loveseats full of cushions, these are “Potato/Patata Seating,” designed by B&B Italia exclusively for the “W” Vieques, they are ideal for relaxing and the perfect complement to the books that are in the room.

Continuamos conociendo el W Vieques Retreat & Spa, y llegamos al “AWAY Spa”, donde consentirse y revivir el cuerpo y la mente es fácil.

Hay un pabellón hacia el mar el cual es el complemento perfecto para que los huéspedes puedan relajarse del todo en el ambiente único de la isla. Para continuar complementando la experiencia, el cuarto principal es un espacio abierto con un área a un nivel más bajo que le da al huésped un sentido de intimidad, en el mismo se encuentran los servicios de manicura y pedicura, todo esto rodeado de cautivantes jardines, áreas para sentarse, piscinas y ocho cuartos privados de tratamientos interior/exterior cubiertos de plantas de enredaderas, estos cuartos están separados por un espejo de agua, esto le ofrece al huésped un aislamiento adicional para que el estrés y las tensiones desaparezcan. Otras facilidades que visitamos lo fueron el W Café, donde puedes degustar comidas y bebidas ligeras, ideal para el viajero on the move; y el FIT Gym, que para la conveniencia del huésped está abierto las 24 horas.

GASTRONOMIA Después de recorrer el hotel fuimos a conocer al Chef Ejecutivo Javier Meléndez; el encuentro fue en el exclusivo restaurante Sorcé, un salón amplio con puertas abiertas que dan a la terraza, dando la sensación de amplitud y que el exterior es parte del interior.

El chef puertorriqueño Javier Meléndez comenzó en la cocina a una edad temprana, solía levantarse temprano para sorprender a su familia con el desayuno, ya que siempre ha sido un apasionado de complacer a la gente con su comida. Incluso, a sus 14 años de edad partió a Alemania a la base militar Patton Baracks, donde preparaba un brunch los domingos para la base.

We continue getting to know the W Vieques Retreat & Spa and we arrive at the “AWAY Spa,” where pampering the body and mind is easy. There is a pavilion that leads to the ocean which is the perfect complement for guests to completely relax in the unique ambiance of the Island. To continue complementing the experience, the main room is an open space with an area at a lower level that gives guests a sense of intimacy. It is here that manicure and pedicure services are provided, all while being surrounded by captivating gardens, seating areas, pools and eight private treatment rooms covered by vine plants; these rooms are separated by a water mirror which offers the guest additional isolation so that tensions and stress disappear. They also offer yoga by the sea.

Other facilities we visited were the W Café, where you can enjoy light meals and drinks, ideal for the on the move traveler, and the FIT Gym, that for the guest’s convenience is open 24 hours.

GASTRONOMY After roaming the hotel we went to meet Javier Meléndez, the hotel’s executive chef, at the exclusive restaurant Sorcé, in a spacious room with open doors that leads to the terrace, which gives a feeling of spaciousness and that the exterior is part of the interior.

The Puerto Rican chef Javier Meléndez got involved in the kitchen at an early age, he used to wake up early to surprise his family with breakfast, since he has always been a fan of pleasing people with his food. When he was 14 years old, he moved to Germany to the Patton Baracks military base where he prepared brunch on Sundays for the whole base.

After working in various restaurants in Puerto Rico, he moved to New York with a small amount of savings and the dream of working alongside the best chefs in the city to continue learning. To his surprise, he had the privilege of working at Nobu, a renowned Japanese restaurant which has been awarded three stars by the New York Times and a Michelin star. There he got his start at the tempura station, which was only the beginning of his journey. He continued to grow along the five years he worked there until he reached the position of Junior Sous Chef.

Meléndez has a degree in Administration and Culinary Arts.

In 2010, he was invited to join the W Retreat & Spa, and since then, his techniques and abilities in the kitchen have not stopped evolving.

W Vieques Retreat & Spa Luego de adquirir experiencia en varios restaurantes de Puerto Rico, se mudó a Nueva York con solo unos pocos ahorros y el sueño de trabajar junto a los mejores chefs de la ciudad para continuar sus estudios. Para su sorpresa, tuvo el privilegio de trabajar en Nobu, un renombrado restaurante japonés galardonado con tres estrellas por el New York Times y una estrella Michelin. Allí se inició en la estación de Tempura, que era sólo el comienzo de su viaje, ya que siguió creciendo a lo largo de cinco años, hasta que se convirtió en Junior Sous Chef.

Meléndez cuenta con un grado en Artes Culinarias y Administración.

En el año 2010 fue invitado a formar parte de la apertura del W Retreat & Spa, y desde entonces no ha dejado de evolucionar en sus habilidades y técnicas de cocina. Meléndez es responsable de todos los puntos de venta de alimentos y bebidas, incluyendo el exclusivo restaurante Sorcé en donde presenta un menú colorido en el que recientemente se han incorporado platos vegetarianos para satisfacer todos los gustos del comensal. También se le ha añadido al menú platos exquisitos con el toque local caribeño; así el huésped no tiene la necesidad de buscar variedad fuera del “W”.

Para el chef Javier Meléndez los vegetales no son un simple adorno, sino protagonistas del proceso creativo. Su cocina se distingue por ser una moderna, en la que se elaboran platos con ingredientes frescos de temporada, producto del esfuerzo de agricultores locales. También emplea técnicas y elementos de la cocina japonesa, engañando al paladar con texturas inesperadas y combinaciones de sabores únicos. El chef asegura que lo más importante en la cocina es divertirse y sentir los ingredientes.

En esta ocasión, degustamos varias propuestas interesantes: Ceviche de dorado marinado con aguachile a base de limón fresco, ajo, jengibre, jalapeño y cilantro, servido con batata.

Ensalada de celery blanco y verde, semillas de cardamomo y manzanas marinadas en champagne. La idea de este plato es que cuando llegue al comensal sea algo refrescante que te abra el apetito.

Meléndez is responsible for all the food and drinks sold at the hotel, including the exclusive restaurant Sorcé where he presents a colorful menu that recently incorporated vegan dishes to satisfy every palate. Also, exquisite dishes have been added that feature a local touch so hotel guests do not have to look for variety outside of the “W”.

For chef Javier Meléndez, vegetables are not a simple garnish, but the protagonists of a creative process. His kitchen distinguishes itself for being modern and a place where dishes are elaborated with fresh seasonal ingredients and local products. He also employs elements and techniques from Japanese kitchens, fooling the palate with unexpected textures and unique flavor combinations. The chef assures us that the most important thing in the kitchen is to have fun and feel the ingredients.

On this occasion, we tried various interesting dishes such as: Mahi mahi ceviche with aguachile, a base of fresh lemon, garlic, ginger, jalapeño, and cilantro served with sweet potato.

White and green celery salad, cardamom seeds and apples marinated in champagne. The idea behind the dish was that the guests enjoy something refreshing that opens up the appetite.

Lo que el chef se propone es evocar emociones a través de su cocina. Cree en levantarse cada día y conquistar nuevos retos con constante dedicación. “Cuando se trata de la elaboración de nuevos platos, yo creo en un 60% de creatividad y un 40% de técnica”, aseguró.

Luego de tan ameno encuentro con el chef, fuimos a contemplar el atardecer en el “Paradise Edge”, lugar perfecto para interactuar con la naturaleza y en donde se realizan bodas de ensueño.

En la noche tuvimos la oportunidad de ir a cenar a Sorcé, pero antes disfrutamos del ‘Sunset Sip”, coctel que se ofrece al huésped todos los días al caer la noche.

Mientras nos tomamos el refrescante coctel nos sentamos alrededor de la fogata que se encuentra al aire libre escuchando el sonido del mar. Decidimos volver después de cenar. The chef seeks to evoke emotions through his kitchen. He believes in waking up every day to conquer new challenges with constant dedication. “When elaborating new dishes, I believe it is 60% creativity and 40% technique,” he assured.

After a great meeting with the chef, we went to watch the sunset at “Paradise Edge,” the perfect place to interact with nature and where dream weddings take place.

That night, we had the chance to dine at Sorcé, but first we indulged in a “Sunset Sip,” a cocktail that is offered to hotel guests at nightfall. As we enjoyed the refreshing cocktail, we sat around the open-air campfire listening to the sounds of the ocean. We decided to come back after dinner. ún recuerdo como si fuera ayer mi primera visita a The Meatball Company, el año pasado justo el mes que abrieron. Gracias a las redes sociales, me había enterado sobre un food truck que vendía diferentes comidas incorporando albóndigas en el corazón de la Milla de Oro en Hato Rey. La curiosidad me mataba. En ese momento, me encontraba en el último mes de mi embarazo y yo, que siempre he sido una antojá, decidí dirigirme en medio de una lluvia torrencial y mis super panza hacia The Meatball Company.

Ese fue el día que conocí a Yareli Manning, dueña de The Meatball Company, quien en ese momento, impresionada por mi barrigota y el hecho de que fui a comer allí en medio de un diluvio me dijo “la última mujer embarazada que comió aquí dió a luz el día después”. Yo le dije entre risas “bueno espero que yo no”. Fue en esta visita donde comenzó mi relación fiel con The Meatball Company.

still remember my first visit to The Meatball Company like it was yesterday. It was last year, the month they opened. Thanks to social media, I had heard about a food truck located in the heart of the Golden Mile in Hato Rey that was selling different types of food and incorporating meatballs into each one. My curiosity was killing me. At that time, I was in the last month of my pregnancy and this was a craving I needed to satisfy. So, I decided to head over there in the middle of torrential rain with my huge belly.

That was the day I met Yareli Manning, owner of The Meatball Company, who impressed by my monstrous belly and the fact that I drove all the way there despite the heavy rainfall to eat said to me “the last pregnant woman that ate here gave birth the next day.” In between laughs, I responded “well I hope that is not my case.” It was after this visit that I became a loyal customer of The Meatball Company.

Café Coffee En la producción de café, ¿cuál es la relación entre el precio y la calidad del producto?

E

n los pasados días se ha estado discutiendo el precio del café y los efectos que esto tiene sobre la industria. Para un sector tan debilitado por los factores climatológicos, la falta de mano de obra , el aumento en precio de los insumos y las plagas que afectan la producción, esta parece ser la hora cero. ¿Cómo se determina realmente el costo del café y a qué se deben las diferencias en precios?

En Puerto Rico se utiliza con frecuencia el termino “café gourmet” como una descripción de aquellos cafés que por sus características o su precio van por encima del café comercial o los cafés de producción masiva que se encuentran en el mercado. En realidad ese término es una descripción criolla que hemos adoptado localmente. Dentro de esa categoría se han colocado muchos cafés sin que se lleve a cabo una evaluación de la calidad de el producto.

Es importante señalar que la mayoría del café que se consume en Puerto Rico y en el mundo es café comercial. Este es un producto cuyo precio es bajo y que no posee los atributos de un café de alta calidad.

En la mayoría de los casos se trata de cafés que se sobre tuestan para esconder los defectos de producción que poseen y cuando los tomamos el sabor predominante es el quemado resultado del tueste, dejando un sabor residual amargo que la gente disfraza con grandes cantidades de azúcar o endulzantes.

Por encima de esta categoría encontramos los cafés especiales o de especialidad, cuya clasificación no puede tomarse a la ligera por que implica un gran esfuerzo y dedicación de los productores y siempre viene acompañado de un aumento exponencial en costos de producción. En palabras simples, la calidad cuesta y en este caso el costo es alto.

De acuerdo con el Specialty Coffee Association of America (SCAA) los cafés de alta calidad, que por sus atributos obtienen una catación de 80 puntos o más son considerados cafés de especialidad. El SCAA ha establecido unos protocolos de catación o evaluación que nos permiten a los catadores evaluar un café utilizando los mismos parámetros en cualquier lugar de el mundo. De esta forma hay un lenguaje uniforme para evaluar y describir el café y se hace de forma objetiva con un método científico.

Realmente se trata de una evaluación que refleja el extraordinario trabajo que conlleva la producción de un café de alta calidad. El grano nos da un mapa de el cuidadoso proceso por el que pasó desde ser sembrado hasta llegar a la taza. En este paso se refleja todo lo bueno o lo malo que le sucedió a ese grano.

Se requiere entrenamiento y preparación para hacer una evaluación como esta, pero según mi experiencia es el consumidor de un producto quien tiene la última palabra al evaluar calidad. Es cada día más frecuente encontrar clientes que pueden diferenciar la taza, que son selectivos al escoger cafés y que entienden a qué se deben las diferencias en precio y por qué se paga más por un café de alta calidad.

La producción de café de especialidad es mucho más costosa que la del café comercial en cualquier lugar de el mundo. En Puerto Rico donde los costos de operación y la mano de obra son más altos que en ningún otro país productor se agrava la situación.

Por lo expuesto anteriormente, se habla de la desaparición del café de Puerto Rico que es parte de nuestro patrimonio. Ese es el producto del que nos hemos sentido orgullosos los puertorriqueños. Para evitar eso nos toca a los productores responsabilizarnos de producir cafés de la más alta calidad y a los consumidores apoyar lo que con tanto esfuerzo se produce.

n the past days, there has been discussion regarding the price of coffee and its effects on the industry. For a sector debilitated by climate changes, lack of workforce, a rise in the price of supplies, and plagues that affect production, this seems to be the zero hour. So, how is the price of coffee really determined and why are there differences in prices?

In Puerto Rico, the term gourmet coffee is used frequently to describe coffees whose characteristics or price are higher than commercial coffee or coffees with massive production that are available in the market. In reality, that term is a description that we have adopted locally. Many coffees have been put into that category without evaluating the quality of the product.

It is important to point out that the majority of coffee consumed in Puerto Rico and the world is commercial coffee. It is a product whose price is low and does not possess the attributes of a high quality coffee. In the majority of cases, these coffees are over roasted to hide defects in production and when we drink them, the predominant flavor is the burnt from the roasting, leaving a sour residual taste that people disguise with great quantities of sugar or sweeteners.

Above this category we find the specialty coffees whose classification cannot be taken lightly since it implies great effort and dedication by its producers and is always accompanied by an exponential increase in production costs. In layman’s terms, quality has a price and in this case, the cost is high.

According to the Specialty Coffee Association of America (SCAA), high quality coffees that due to its attributes receive 80 points or more in a tasting are considered specialty coffees.

The SCAA has established tasting or evaluation protocols that allow us evaluate a coffee using the same parameters everywhere in the world. This way, coffee is described and evaluated in a uniform objective language with a scientific method.

Truly, it is an evaluation that reflects the extraordinary work that high quality coffee entails. The grain gives us a map of the careful process it went through, from being planted to reaching the cup. These steps reflect everything good and bad that happened to the grain.

Training and preparation are required to make and evaluation such as this, but in my experience, it is the consumer of the product who has the final word when evaluating quality. Every day, it is more common to find clients who can differentiate between cups, are more selective when choosing coffees, and understand the reason behind the differences in price and why you pay more for a high quality coffee.

The production of specialty coffee is much more costly than commercial coffee in any place in the world. In Puerto Rico, where operation and workforce costs are higher than any other producer in the world, the situation is worse.

In light of the above, there is talk about the disappearance of Puerto Rican coffee, which is a part of our heritage. This is the product that makes us feel proud to be Puerto Rican. To avoid this, it is the producers’ responsibility to produce high quality coffees and for consumers to support what with much hard work is produced.
