The Mid-Autumn Festival, also known as the Moon Festival, is a traditional celebration observed in many East & Southeast Asian cultures. It occurs on the 15th day of the 8th lunar month, typically in September when the moon is believed to be at its fullest and brightest. Every year on Mid-Autumn day, people get together to celebrate peace, harmony, and friendship. The Moon festival is a day for families and friends to wish each other good luck, good health not to mention to enjoy mooncakes with a cup of hot tea (or something stronger!).
Dough
60g golden sy
Snow skin Mooncakes
1/4 tsp lye water (kansui)
24g vegetable oil
100g cake flour
Filling
10 salted egg yolk
220g store-bought lotus paste
Egg wash to brush the mooncake
Dough Instructions:
In a bowl, mix golden syrup, lye water, and vegetable oil. 1. Sift in the flour and combine well. 2. Wrap the dough in cling wrap and refrigerate for 30 minutes. 3.
Filling Instructions:
Rinse and pat dry the salted egg yolk. 1. Wrap it with lotus paste and form into a ball 2.
Wrapping Instructions: Roll out the pastry between two sheets of plastic wrap. 1. Remove the top layer and fold the pastry over the filling. 2. Trim excess pastry for even thickness 3 Roll the mooncake into a ball. 4.
Preparation:
Dust a surface with flour and roll the mooncake dough.
Flour the mold's piston, shake off excess, and place the dough on a baking tray.
Position the mold over the dough and press the piston to imprint the design
Baking:
Preheat the oven to 175°C (350°F). Bake for 5 minutes until the surface firms.
Remove from the oven, brush with egg wash, and bake for another 10 minutes until golden brown.
Cooling:
Let cool at room temperature, then transfer to an airtight container. Enjoy within 3 days.
