02 HELLO Food is so much more than just a way to fuel the body. It could be argued that sharing a meal is the oldest form of hospitality, reaching as far back as the hunter and gatherers whose combined efforts scratched up enough food for survival. So, sitting around a table enjoying a meal has been the natural way of things since the dawn of man. I love to think about this as I dish out (“plate up” as my daughter likes to say – thanks reality TV) dinner every night – all those people, all those homes, all those calls to “come and get it before it gets cold”. It’s even more delightful when that “tea” (my five year-old-son swiftly corrects me when I use that ancient term) has been made using a heirloom recipe, something passed down from one generation to the next. That’s why I can’t wait to find out if My Kitchen Rules runners-up Courtney and Valerie Ferdinands (P12) do score that publishing deal for a cookbook full of their family’s recipes. Adding a pinch of another family’s food ancestry to my own can only make my family’s shared dining experience richer.

The origin of the famed XXXX mascot is a subject of debate. It could be the man (right), whose name has been lost in the annals of time. Or, the original 1924 advertisement where the mascot first appeared, could have been modelled on the then-general manager Paddy Fitzgerald. Greece is the word ANASTASIA PENKLIS 17, Paniyiri dancer Until she was seven, Anastasia thought the Paniyiri Greek Festival was held to celebrate her birthday. She loved that tens of thousands of people, along with her family and friends, were taking part in a giant party at Musgrave Park, at South Brisbane, on her birthday weekend. “It was a pretty good birthday party and there were even fireworks. Everyone was dancing, there was great food and everyone was having a great time. I did wonder why most people hadn’t brought me presents,” she laughs. Anastasia, who turns 18 this weekend, will make her debut with the Hellenic dance group that performs at Paniyiri, Australia’s largest Greek festival. This year the theme is Central Greece. Her parents, Kon and Vaitsa, met while dancing in the group. Her younger brother Michael, 16, has already followed the family dancing tradition, but Anastasia, a QUT student, was too busy while at school to join in. “I’m really nervous and excited because there will be so many people watching,” she says. “By learning the dances it makes me feel more connected to my parents and grandparents … it ensures our culture is not lost.” Her father Kon, a Hellenic Dancers teacher, says about 100

dancers are expected to take part as the troupe celebrates its 40th year. Anastasia has had to learn up to 10 dances. A fourth-generation Greek, she says her favourite dance is from Kastellorizo Island, the origin of her forebears. (Anastasia posed for Brisbane News in the traditional costume from Kastellorizo Island, right.) “Some of the dances are thousands of years old, and it’s amazing to think these steps have lasted through all the generations and we still perform them. “The Greeks have been dancing since antiquity. We know how to enjoy ourselves, to dance and party. That is why we invite the rest of the community to be part of the celebrations because we like to share the good times.” Anastasia says her non-Greek friends love to come and everyone is invited to dance. “Greeks will never judge you for trying … in fact, they will respect you more for trying. Dancing is better exercise than the gym – just don’t forget your water bottle.” Anastasia sees herself as a GreekAustralian. “All of us, including my parents and my brothers, really appreciate my Greek grandparents coming to Australia. I’m proud of my Greek heritage but I think Australia is the greatest country in the world,” she says. FIONA PURDON

Belinda Seeney There I stood: completely naked, a bottle of wine and a digital camera before me As my robe dropped to the floor, every single one of my internal warning systems shrieked their alarm. There I stood: alone in a hotel room, completely naked, a bottle of wine and a digital camera before me, ready to take nude selfies and send them to a complete stranger. It felt so very, very wrong. This isn’t a dating disaster story – rather, my attempt at artistic expression. I swear. A new Johnson Art Series Hotel package invites guests to pose for a life drawing in the privacy of their hotel room. Using a customised iPad app, guests photograph themselves and select their favourite pose for an artist to sketch. It sounded like a right laugh, a fun way to spend an afternoon. It was not. It was terrifying and confronting. I’m not in the habit of photographing myself, naked or otherwise. Sure, I love a sneaky selfie but usually apply a salve of Instagram filters to smooth and soothe. Alone in my hotel room, fiddling with the self-timer, I had nowhere to

hide. The sum total of my preparation was 15 minutes spent trawling the internet for life drawing poses. All those artful poses on Google looked awkward and contrived as I attempted to replicate them. When the concierge delivered my iPad – along with a bottle of liquid courage from McLaren Vale – he said he’d collect it two hours later. Ninety minutes in I was wishing for something stronger than shiraz and increasingly concerned I would not have one usable image. I sat, I stood, I reclined; I leant forward and arched back; I crossed my legs, dropped my shoulders and even fussed with my hair. Each image was viewed through hypercritical eyes – there’s a lump, a bump, a scar, a roll, a dimple – before being deleted. But here’s the thing. After a while – quite a while – how I saw myself changed. I realised I was no longer cringing at saggy, stretched bits – rather, I started to critique myself as an artist would. I culled photos not because of cellulite or stretch marks but because

my foot was just out of frame or my fingers cast shadows on my face or my chin was not tilted high enough. I focused on incorporating the afternoon light streaming through the window, not how far I could suck in my stomach without rupturing my spleen. Then, six minutes before collection time, everything came together. I gazed at the fusion of angles, shadows and shapes, took a deep breath and hit “send”. Yes, it was terrifying, confronting and difficult but it was so much more. It was challenging and exhilarating. It forced me out of my comfort zone and made me take a long, hard look at myself – literally and figuratively. As for any wonky, wobbly or weathered bits that make the cut? Meh, I’ll just tell everyone it’s a Picasso.

There’s something about shopping malls that sets my teeth on edge. Is it the lighting? It’s certainly the crowds. And don’t get me started talking about the car parks. I was at a certain western suburbs mall the other night and the traffic was bad enough on the way over but then I hit the car park. What a nightmare! I eventually found a space and then took a photo of the location in case I got lost on the way back. It has happened. Remember that Seinfeld episode where they can’t find the car and Jerry has to go to the loo and ends up weeing in a corner of the car park? Then the security guard catches him? Okay, I have never done that (not yet), but I understood that situation perfectly. I was at this mall car park to pick up my wife. Rather inconveniently, her hairdresser has moved there from the city. Getting across town at 7pm

on a Thursday night to pick her up is not fun. Couldn’t she get her hair cut around the corner? Apparently not. I waited outside and then went down an escalator into the centre and immediately felt anxious. The crowds, the brightly lit white environment, the sense of claustrophobia ... I have experienced this feeling in malls all over the world. The malls in Hong Kong have great shops but some of them are so vast and labyrinthine that it takes up to half an hour just to find an exit. I recall once becoming disoriented in the vast Harbour City shopping centre and I ended up buying my way out, spending money on things I really didn’t need because I was in such a state of high anxiety. We were in Thailand recently and they have some amazing malls downtown but the crowds are horrendous. Still, the air-conditioning is attractive.

Phil Brown In Asia, malls are best visited around 10am (which is when they open) because there’s hardly anyone there. When we were visiting relatives in Kuala Lumpur, Malaysia, a few years ago we spent quite a bit of time in the Suria KLCC Mall and if you ever go there, I suggest arriving just after 10am and leaving by noon. My favourite mall overseas is the Park Royal in West Vancouver near where my brother lives. It always seems relaxed, even when it’s busy. When we visit Vancouver we head straight there, which may be a bit sad but it has become a ritual. The car park there is pretty civilised and mostly outdoors, which makes it more relaxed than the multi-level hell hole I parked in the other night to pick up my wife. Still, we found the car and I didn’t need to pee. Just saying.

THE mouthwatering aromas wafting from the Ferdinands family home envelop guests before they’ve made it past the front door. A combination of sweet, spicy and savoury scents emanates from the kitchen, where Valerie, 61, stands over the stove, putting the finishing touches to dinner. A pork roast rests on the island bench, while daughters Ella, a 26-year-old singer-songwriter, and 30-year-old Courtney – Valerie’s sidekick during the most recent season of Channel 7’s reality cooking juggernaut My Kitchen Rules – mill about nearby, sipping tea and snacking on various treats peppered throughout the place. Ever the host, Mumma V, as she has affectionately become known, has prepared a gorgeous platter of fruit, cheese and dips and leads her girls and me away from the buzz of the household and out on to the balcony overlooking the leafy streets of New Farm to settle in for a chat as the sun sinks below the horizon. “We have only been here for about a year – we moved in literally just before I went on MKR,” Valerie says. “We went to an auction and soon after that, while we were recording Courtney’s back story for the show, I got a call to pick up the keys and we were off to do MKR the next week.”

Although Ella lives nearby, Courtney is now based in Sydney, working on a media career – most recently behind-the-scenes at Nova – which she put on hold for the series. “Our family is very close,” Valerie says. “We go on holidays together – it’s amazing.” Valerie and her husband Errol, 63, hosted more than 30 family and friends at their house to watch the recent MKR grand final, during which she and Courtney were runners-up to fellow Brisbane team Amy and Tyson Murr. True to form, Valerie spent the day cooking for her guests. “All of our family was crying – it was very emotional,” Valerie says of the last episode, which revealed the winners months after it was shot. “We really like Amy and Tyson … so it was just one of those things where we found a really good team to compete against. Mind you, we wanted to win but we knew they were the best in the competition.” The mother-daughter team made no secret of the importance and love of family throughout the show – their “secret weapon” was a cookbook of Anglo-Indian recipes handed down to Valerie by her late father, Joe, to whom they paid tribute often. It was not only cooking, but singing and a love of music that “Poppy” passed down through the

generations. Valerie was born in India but moved to Brisbane with her parents as a child. She met Errol while she was singing in a band. “It was persistence at first sight and not by me either,” Valerie says, with a laugh. “He went to a phone box the next day and there were no mobile phones back then so, when I wasn’t home, he stayed in that phone box and kept ringing until I got home. Can you believe that?” The pair married when Valerie was 21 and a few years later took off on a working holiday. They ended up staying in Adelaide for 20 years. At the time, her parents were living in Perth and her father would fly to South Australia after the birth of each of the children and stay with them to help out for months at a time. Courtney says of her grandfather: “He was like a second dad.” Despite their “great lifestyle” in South Australia, the family moved

back to Brisbane in 2002. Valerie’s mum, Flo, 84 – “a marvellous, strong woman” – now lives in nearby Carindale. “We always knew that this was home,” Valerie says. Talent surges through the tight-knit family’s veins. Valerie’s son Lochie, 24, is a plumber like his father and Courtney inherited her mum’s intense passion for cooking. Ella takes after Valerie and her Poppy in a very different way. “My dad was a great singer too – my mum used to say ‘stop singing so loudly in church, Joe’,” Valerie says. “Anglo-Indians have got really good rhythm and they love music.” Ella has been singing since she can remember, starting in a choir in

Adelaide. She went on to study at Griffith University’s Young Conservatorium, and completed a musical theatre internship. After that, she began writing her own music and branched out as a solo artist. Her singles, including popular track Chemistry, have been picked up by radio stations. A primary school teacher, Ella recently went part-time to focus on her music, with a single – a cover of Des’ree’s You Gotta Be and video featuring Valerie and Courtney’s journey – due out this week. Ella is completely at ease on stage or in a recording studio, but is far less comfortable in the kitchen. “Our next series should be teaching Ella to cook because she

is next level terrible,” Valerie says, turning to scold her daughter. “Ella, you can’t even turn the stove on.” Valerie’s efforts to teach Ella to cook may be in vain, but Mumma V is considering a wealth of post-MKR opportunities. She is “on the verge” of signing a deal to publish a collection of Ferdinands family recipes and will run cooking classes in Brisbane. Meanwhile Courtney is determined to find a way to fuse her passions for food and media. The rumour mill is churning that she is being eyed by Channel 7 for a presenter gig. Whatever comes next, the Ferdinands women will tackle it – deliciously – together.

his wine cellar and grew a strong appreciation for the beauty of wine. I studied at hotel business school in Brittany. I was always drawn to the attention and detail of a sommelier, but it was not until I moved to London that I truly discovered my passion for working in the wine industry.

What’s new with you? I have just finished our new wine list, which has been designed to be more approachable for every guest who visits Nickel Kitchen & Bar (in Fortitude Valley). I would like each guest to learn something new about wine when they dine with us. I have included some peculiar grape varieties. (Chef) Gordon MacGregor works very closely to make sure the wine on offer complements the menu. How did that come about? I started working at Nickel Kitchen & Bar in September 2016. Before making the move to Australia, I worked in London, at Texture, a Scandinavian Michelin-starred restaurant, and its sister venue, 28-50 Wine Workshop & Kitchen. I first started my career as a sommelier at Les Airelles Courchevel, France, when I was 19. This place had

an extensive wine list with more than 500 bottles of wine from all over France, which was very exciting. Why live in Brisbane? I moved to Australia in December 2015 with my girlfriend who is from Brisbane. We met in London. This has been my first trip to Australia and I

am enjoying the culture, the people and learning about Australian wines. Why work in the wine industry? I grew up surrounded by good food and wine. In France this was always paired with family, friends and great conversation. When I was young I spent a lot of time with my father in

Your greatest inspiration? In London I was fortunate to work with Xavier Rousset, who became the youngest Master Sommelier in the world in 2002. He shared his vast knowledge of wine with me, which I am so grateful for. Another inspiration is Adrien Butko, from Les Crayeres in Champagne. He was my head sommelier at Texture. He taught me everything about champagne. This is now my favourite style of wine. What’s next for you? I would like to continue to explore more of Australia. British writer and restaurant critic Jay Rayner is a self-confessed show-off. Luckily, self-confidence is a quality required in abundance for his career offshoot as a speaker and stand-up comedian. The award-winning restaurant critic and UK MasterChef judge is bringing his new show, The Ten (Food) Commandments, to the Brisbane Powerhouse on Sunday (May 21) as part of the Writers + Ideas: International Series. He admits to having a low boredom threshold and to have been fortunate to find jobs which did not require him to attend meetings. “The shows came about because I don’t like doing discussion panels so I started to say to festival organisers I will give you my one-man show instead … it is also a fantastic way to meet your audience,” he says. “I’m a writer first – that is what is behind my entire career – but I’m also a performer. I do a live BBC show and I perform in a jazz quartet.” Jay, 50, says the Brisbane show will be based on his new book The Ten (Food) Commandments. “It (the show/book) is a comedic response to all those people who tell

us how we should eat and what we should eat. I like the idea of taking the piss out of people who are being dogmatic about food.” Jay chose the topic because it was a great way to explore with “depth and substance” topics such as the history of leftovers and superfoods. It is the first of his handful of books that has included recipes. He is bestknown in Britain as a food critic and has produced about 900 restaurant reviews in an 18-year career. A fascination with food and cooking has endured all his life. “I’ve always cooked, my mother made sure I’ve always cooked, and I was making banana bread when I was young,” he says. FLOWER POWER … Stephen Nothling’s We're Having A Heatwave.

Floral hits and Misses GALLERIES Phil Brown When it comes to painting, Stephen Nothling is often more interested in the past than the present. Colourful retro imagery pervades this Brisbane artist’s work and in his latest show he offers us a stunning suite of funky portraits of former Miss Queenslands. The exhibition at Woolloongabba Art Gallery is entitled Subject to Change Without Notice and it’s vintage Nothling. Fans of his floral work (a subject he has explored for decades) won’t be disappointed because there are still plenty of flowers. Images from the everyday include washing powder packets, the odd pineapple and biscuit tins. A biscuit tin can be beautiful when it is painted by Stephen. The biscuit tin in The Delivery is ornately decorated with floral art, and next to that painting is an image of the postie delivering it. That painting is called Elizabeth Delivers and if you look carefully you will notice that the postie in question is actually The Queen. Why? “Well there was a postman in a painting in my Highgate Hill exhibition at the Museum of

Brisbane,” Nothling says. “And I wanted to paint one for this show.” But he decided the postman couldn’t just be any postman and, inspired by some stamps featuring Queen Elizabeth II in an old album, he made the postie a young Elizabeth. Cute, huh? This is how the mind of Stephen Nothling works, gathering images and material, often from old magazines and other sources. The retro images of Miss Queenslands (they include Nancy Knudsen, Gay Walker, Jan Taylor and others who readers may remember) are presented against colourful backgrounds: a sort of artistic wallpaper. Stephen’s wife Deirdre helped source the images of these beauty queens because he is, he explains, a Luddite. “I don’t use a computer,” Stephen says. “I don’t even know how to turn our computer on. So there’s no photoshopping going on.” The beauty queen works also relate to a series of his featuring beauty queen images of a character known as Miss Light Bulb, gleaned from a US magazine. As I said, old magazines often inspire him and there’s a great painting based on one he found that has avocado recipes and instructions

on how to use an avocado as a beauty treatment. That work is called Beauty Hint No. 1. It’s a hoot. There are some lovely selfportraits too, including a hilarious one called Half Albino Elvis and a major self-portrait which Stephen may enter in the Archibald Prize. This is a comprehensive show. Note too that his daughter, Lily, has written an informative catalogue essay about her dad and his work.

Heath Ledger’s death at 28, from an accidental overdose of prescription drugs, was a very public event. Almost a decade later, his family and friends speak publicly, and we see a wealth of “home movie” footage shot by Ledger (pictured) himself. This affords audiences an intimacy that is at times slightly disturbing but also insightful. The young actor expresses nervous excitement about working with Mel Gibson on The Patriot. And he displays a natural athleticism in rehearsals for the dance sequence in A Knight’s Tale. Friends, directors, and fellow actors fill in the gaps. Former partner Naomi Watts recalls the constant stream of guests at their Los Angeles home – a crash pad for Australians trying to make it in Hollywood. I Am Heath Ledger does not delve too deeply into the reasons behind Ledger’s use of prescription drugs. The dark side of Ledger’s story – if there is one – is left for somebody else to tell.

white girlfriend’s parents. “Do they know I am black?” he asks. Rose (Allison Williams) jokes that the middle-class professionals would vote for Obama again if they could. Chris knows liberal racism well but he relaxes – until an accident on the highway involving a deer with a death wish and a redneck policeman. It gets stranger from there.

PORK PIE (M) hhhj Director: Matt Murphy Starring: Dean O’Gorman, James Rolleston, Ashleigh Cummings Rating: M Running time: 105 minutes Matt Murphy’s road movie debut is a remake of the 1981 Kiwi classic Goodbye Pork Pie, the original helmed by his father, Geoff, and a creative triumph. It’s a tale of three accidental outlaws who traverse the length of New Zealand in a souped-up yellow Mini. The cinematography is spectacular. And there are winning performances from the reimagined “Blondini Gang”. Jon (Dean O’Gorman, pictured) is nearly run over by Luke (James

Rolleston) who has stolen the aforementioned Mini to evade thugs. Stopping for burgers, they collect Keira (Ashleigh Cummings), a vegan activist who joins them to escape an irate manager. They elude the police in a high-speed chase, end up as overnight folk heroes, and then a trigger-happy redneck malevolently informs the authorities their quarry is armed and dangerous.

French evolution RESTAURANT Tony Harper Fish Lane has gained yet another dining spot, but it’s a little removed – both physically and spiritually – from the busy little enclave at the Grey St end of things. It’s between the Cordelia St and Merivale St corners under the new Melbourne Residences building. Called La Lune, it’s a new venture by Paul McGivern, and sibling to his South Brisbane restaurant The Wolfe. It’s small – bar seating for half a dozen plus some tables and a small mezzanine for private dining – but very open with few barriers between the staff (both kitchen and floor) and the diners. I’m not sure that I’ve ever seen an Australian wine – excluding the likes of Grange and Hill of Grace – breach the $40 mark by the glass. The 2008 Tout Pres By Farr pinot noir is listed at La Lune for $45, sealed and poured under Corovin. It’s a great wine – arguably the best pinot made in the country – aged with care and right now about as good as it will ever be. Is it worth $45 a glass? You bet, especially when it’s used to marry a plate of veal tongue ($30, miso, pumpkin, sesame and cress). Imagine unusually plush pinot (that’s the Farr signature) on the cusp of the earthy, compost characters that mark old wines, but still mostly rich, sweet, berry compote fruit. Wine is a big deal here, and while the $45 a glass is the very pointy end of what’s on offer (there are good glasses to be had from $9), it kind of

sets a mark: La Lune has some serious intentions. Most of the publicity about La Lune that I’ve read talks of French inspiration. But forget the 1970s style of French cooking that has tended to dominate the Queensland take on the cuisine; this is styled on more contemporary bistro cooking, sometimes bending traditions, and at others stealing from further afield. Such as, for example, the miso component in the veal tongue, or a “Raw” section on the menu that

peddles sashimi, oysters and a magical ceviche ($16) of kingfish, finger lime, pimento and kimchi. And there’s an element of Australian native foods woven through a few of the dishes – kangaroo tartare ($18: wow!) with juniper, cocoa and smoked celeriac; a classic slab of rabbit terrine ($20) with pickled carrot, pistachio and muntrie berries (emu apples); and oysters with Davidson plum. It’s thoughtful food with enough surprises to keep even jaded diners

interested, but not whacky enough to alienate conservatives. And it’s exceedingly wine-friendly. The open layout means plenty of interaction between staff and diners, and it’s a crack team – polished, attentive and with a good understanding of the product it provides. Despite its relatively small size, there’s a flexibility to La Lune – as alluring for a serious wine and dine experience as it is for a casual seat at the bar for a glass and nibble. It has certainly raised the bar.

VALUE BREAK … Malaysia’s Berjaya Langkawi Resort, with its over-water chalets, offers a Maldives-style holiday at a fraction of the price you’d expect to pay.

The sound of lapping water soothes me as I sip my cool cocktail and read a book, lazing about on the deck of my overwater chalet. The sun – not too hot – warms my skin enough to consider rising from my cocoon of zen to collect a towel and walk to a nearby white sandy beach. But I only get as far as the palm-shaded pool. I’ve always wanted to have a holiday like this but believed locations such as the Maldives would be far beyond my wallet’s reach – the Sheraton’s water chalets there, for example, cost upwards of $800 a night. But here I am in Langkawi, Malaysia, at a four-star resort for my “mini-moon”, and it’s picture-perfect in every way. I’m living the dream, for a fraction of the price. Langkawi Island houses the fabulous Berjaya Langkawi Resort, with individual chalets built on stilts. And while staying in an overwater chalet might be classed as splurging, there are cheaper options, such as staying in a rainforest chalet. The weather is perfect, mostly all year round, and in a resort such as this, you’ll find yourself going from chalet to pool and repeat, all day. On the way, there are five restaurants to stop at. Sometimes the hardest part of the day is figuring out which cuisine takes your fancy. From Chinese, Japanese and seafood buffets to indulging in a romantic threecourse Thai dinner in an overwater restaurant, there are plenty of options. If cabin fever strikes, the cure is a stroll down to the Oriental Village, five minutes away. It’s a duty-free

shopping area which can get busy. A nice change from the resort means you can enjoy some Malaysian and Indian market food much cheaper, and browse many clothing stalls. While you’re at the Oriental Village you can test your fear of heights for less than $10 with the Langkawi SkyCab (cable car), which is a major attraction. It provides an aerial link from the Oriental Village, at Teluk Burau, to the peak of Gunung Mat Cincang, which is also where the Langkawi Sky Bridge is. If you’re feeling adventurous, head off the beaten track on a 2km walk to the Seven Wells Waterfall. You may have second thoughts once you find the track, but persevere as the end result is rewarding. Entry is free and you can go any time of the day. Known as Telaga Tujuh, the Seven Wells Waterfall was named after the seven natural pools formed at different levels by water streams that flow down the second highest mountain of Langkawi – Mount Mat Cincang. The gushing water has smoothed the rocks and in some areas formed a natural water slide into a pool. My tip is to go early so you don’t have to compete with all the tourists wanting to take a dip to cool off. This small island has so much to offer, and it’s really up to you whether you want to splurge and put a dent in your credit card, or kick back, relax and explore the island on foot. HERVEY BAY SCALLOPS, MANDARIN AND THYME BUTTER, MACADAMIA PANGRATTATO INGREDIENTS 3 slices stale sourdough, crusts removed, crumbed 1 mandarin, zested ½ clove garlic, finely chopped 20ml extra virgin olive oil 1 tbs thyme leaves 20g macadamias, toasted 2 tbs thyme leaves 1 golden shallot, peeled and finely chopped 2 cloves garlic, peeled and finely chopped 1 mandarin, zested, juice of half 200g butter, softened Sea salt and freshly milled pepper 20 Hervey Bay scallops 100ml mayonnaise Rock salt, to serve

METHOD For the pangrattato, preheat oven to 180C. Toss breadcrumbs with zest, garlic and oil. Spread over a baking tray and bake for 5 mins or until golden. Cool slightly. Place thyme and macadamias in a food processor and pulse until roughly chopped. Add breadcrumbs and pulse to combine. Preheat overhead grill for scallops. Combine thyme, shallot, garlic, zest and juice in a bowl. Add butter and beat until well combined then season to taste. Add a teaspoon of butter to each scallop and place under grill for 2 mins – a bit of translucence is fine. Next, anoint each with a teaspoon of mayonnaise, followed by a teaspoon of pangrattato. The great irony of creating shelter for our daily lives is that so often the goal is to make living spaces feel like they are part of the garden. Few homes embrace that notion as much as this New Farm abode designed by architect Sandy Cavill. Here architecture and landscape are designed to be complementary, with a stunning courtyard and succulent roof garden made an integral part of the building structure. “What we tried to do was imagine that everything we built underneath the house was a series of garden relics or landscape walls,” Sandy says. “One of the ideas that drove the project was this idea of occupying the landscape underneath the building.” The undercroft of the worker’s cottage has been transformed into a veritable oasis with living spaces designed to traverse the terrain with a gentle rise and fall. Beneath the cottage is the living room which opens to the sunny central courtyard. The kitchen and dining room step up and around the crepe myrtle tree and open to the back lawn. A sitting room completes the journey, built over a small creek that

feeds the courtyard garden bed. “The idea was to make distinct terrains,” Sandy says. “On the high side is a very flat terrain and a very habitable terrain. “On the other side is this rolling landscape that starts at the back and falls under this bridge section (the sitting room) and rises again before falling into the sunken living space.” To amplify the presence of nature, creepers have been planted at the roof edges. “(With Dan Young, landscape architect) we selected Fraser Island creepers with the idea that they will grow around the perimeter and fall to make a veil,” Sandy says. “They will

contribute to the shading of the building and the diffusion of light and help to manage the privacy to the street.” Generous openings to the front and back of rooms and carefully placed windows to the sides balance views and privacy. “The management of light is also a very carefully considered thing, not just in the roof but in the walls,” Sandy says. “There is a really careful attempt to have specific moments of light so they are more dramatic.” One of the most striking lightwells illuminates the kitchen bench top. A curved and stepped concrete edge enables views to the sky and provides an extraordinary light quality inside. Other lightwells are scattered across the roof to animate walls and

ceilings with coloured light and allow skyward vistas. Upstairs, the old cottage has been converted from one bedroom to three, and two bathrooms have been added. The upper floor benefits from a level garden thanks to the green roof that shelters the living spaces below. The roof terrace provides an additional oasis for relaxing after dark and in the cooler winter months. Go with the flow Michelle Bailey Architect Joseph Pappalardo was determined to challenge the usual idea of a suburban water feature in the front yard of a Westlake home. Incorporating hydroponic gardening in an innovative design was the solution. Working with aquaponics specialist Luke Brinsmead, gardener Alan Keen and his brave client Carole, they came up with something unconventional. The result is a custom steel arbour with an in-built hydroponic (soil-free) watering system that nourishes beds of fruit, vegetables and herbs below and enhances the garden with the

relaxing sound of water, familiar to anyone who appreciates the melodious sound of a bubbling brook. Steep steps lead to the top of the arbour which can be used as a drinks terrace or viewing platform. Additional garden elements make the sprawling lawn a delightful place

to explore. An open fire pit and zigzagging concrete bench seat provide a place for after-dark gathering. The watering system works by feeding water from a central concrete reservoir into open concrete channels. From there water is pumped
