S

ummer is by far my favorite season. While many Miami residents generally try to avoid the sweltering July heat, I’m happy to trade in my jeans for light, chic sundresses and my high heels for sparkling, jewel-encrusted sandals, and get going with my day. Perhaps it’s my Cuban-American genes, or the fact that I’ve spent roughly 40 summers in Miami, but South Florida’s subtropical temperatures do not faze me one bit. On the contrary, the climate offers a good reason to explore what’s hot (figuratively) and new in the city — including spots that offer respite from the sun’s rays via refreshing poolside cooking classes or innovative frozen cocktails.

Now that June is here, I’ll be keeping busy embarking on 35 fun-filled adventures: the very ones featured in our list of “Things to Do in the 305 This Summer” (p. 78). If I feel the desire to eat an exorbitant amount of ice cream, I know to skip the Ben & Jerry’s and head to Sugar Factory to satiate my craving with the King Kong Sundae and its 24 scoops of ice cream (#YOLO).

When I need to burn off the calories from my decadent snack, Jacqueline Kasen’s high-intensity, body-sculpting fitness class at Anatomy — approved by a legion of local influencers — will whip me into shape. Of course, a lively salsa dancing class at Ball & Chain will also do the trick, while simultaneously entertaining my fantasy of competing in “Dancing with the Stars.”

One of my greatest passions is photography, not so much taking photos as collecting them. Throughout my career, when it came time to find inspiration for whatever project I was working on at that moment, I often turned to my “well of visuals” — the mountain of coffee table books I own — to help my creative process. While planning the INDULGE 2019 summer issue, my mind wandered to photographer Slim Aarons’s images of bronzed socialites sunbathing by the pool and the cool, Jenny Starr Perez vibrant tones of David Hockney’s paintings. For me, this season represents joy and pleasurable, leisurely pursuits. My team Editor in Chief and I made it our mission to translate these summer vibes onto the pages of INDULGE with a spread featuring four Miamibased couples basking in their favorite activities (p. 88), whether it be entertaining at home and dressed to the nines in Pucci and Ralph Lauren, like Jennifer and Gabriel Montoya; or hanging at the beach with furry family members like TV star Louis Aguirre and designer Matt MacDonald, the first gay couple featured on an INDULGE cover. The result is a spread that exudes happiness and freedom, my favorite impressions of summer.

Those who follow me on social media are no strangers to my near-obsession with the HBO series Game of Thrones. The show that made corsets and leather outfits cool again also left many of us with a desire to see some of its most famous locations close up. Though King’s Landing may have burned to ashes on the show via dragon fire, Dubrovnik, the Croatian city that served as its background, is still very much intact and scenic as ever. That being said, it would be a disservice to the beautiful Eastern European country if a getaway simply revolved around its most recognizable spot. In this issue, writer (and photographer) Carina Mask takes us on a tour through three regions of Croatia (p. 73), each serving up gastronomic delights that are responsible for putting the country’s burgeoning food scene on the map — a total game changer!

American poet Ralph Waldo Emerson once suggested, “Live in the sunshine. Swim in the sea. Drink in the wild air.” After all, that’s what summer is about, isn't it? Adding a bit more color to our worlds, discovering the new and embracing adventure. Let INDULGE lead the way — just lie back and enjoy the ride!

elcome to the Summer 2019 edition, full of fabulous ways to enjoy the season. I penned a draft of this letter on the back of a napkin in Lisbon, Portugal, while enjoying a delightful pastéis de nata at the original Time Out Market.

These homemade Portuguese custard tarts are the stuff dreams are made of — and here at home, our dreams are about to come true with the recent opening of Time Out Market Miami (p. 57) in Miami Beach. Curated with well-known chefs like Norman Van Aken and Jeremy Ford, Time Out Market is sure to have patrons Instagraming their favorite bites from some 17 distinct kitchens. So while “time out” is usually reserved for misbehaving kids, the arrival of Time Out Miami means plenty of epicurean naughtiness for the rest of us!

While Lisbon has its pastéis da nata, Miami has its equal in homegirl Michelle Bernstein's empanadas. Her calabaza, brown butter and melted cheese version is the perfect starter at her lively new eatery, La Trova, Lesley DeCanio in Little Havana. Chef Michelle tells us how to make them at home, and chats up INDULGE contributor Eric Barton about her new concept and menu (p. 60).

All this amazing food calls for some exceptional libations, preferably with a whimsical summer vibe.

Fortunately, the Miami mixology scene is second to none when it comes to creative cocktails, so we’re featuring six specialty drinks that will get you dancing, remind you of your childhood or have you craving a juicy grilled steak (p. 62). The “Dancing Queen” at Sweet Liberty, for example, is a real ‘70s throwback which you can upsize and share with five friends. If smoky is more your style, try International Smoke Aventura’s dramatic nod to the Old Fashioned, aptly named “Smoke Signals.” Cheers!

What’s summer without a sun-soaked getaway? Our readers often request our picks for staycations that engage the senses while offering a respite from the everyday, and in this issue, we deliver on both. As locals, we’re fortunate to be able to pack an overnight bag and hop on down to our slice of paradise, the Florida Keys.

Marathon, for example, is ahead of the curve with the opening of the exquisite Isla Bella Beach Resort, at nearby MM47 (p. 68). Prepare for a weekend of exciting yet relaxing experiences, and arrive back refreshed and renewed.

Four years ago, Michael Schwartz expanded to Coconut Grove with a southern outpost of Harry’s Pizza. Delve into the Cuba remembered in Massaguer’s work at a show of nearly a hundred of his pieces on display now at The Wolfsonian–Florida International University. Massaguer influenced art for four decades in Cuba and the United States, where he sought refuge from the regime that ended an era of Cuban modernism. The international flamenco dance company Ballet Flamenco La Rosa will hold a pair of performances in June that would be worthy of seeing on their own. Now, her return shows include Alina Flamenco on June 16 at the Aventura Arts & Cultural Center, and Fuerza Flamenco on June 22 at the North Beach Bandshell. Rosal says the shows will explore a broader range of flamenco than what’s typically seen in public. “I’ve been dancing since I was a kid, and it’s something that is a part of my makeup,” Rosal said.

HIGH-BROW ANTICS: TALES FROM A MICROBLADING APPOINTMENT WITH PIRET AAVA All things waterproof are on our minds, so we decided a long-lasting temporary eyebrow tattoo treatment (i.e. microblading) was a summer necessity this year, especially when applied by one of the foremost talents in the industry, Piret Aava. A bit of background: the tall, blonde Estonian has a trajectory nearly 20 years long. As is the case with anything involving needles, the experience can seem intimidating.

Knowledge is power so we decided to walk you through it, step by step. The process begins with Aava removing residue from our face and applying numbing cream while we discussed, well, brows! Then, she filled our brows in with a pencil to give us an idea of what the result will look like. Once we approved the shape, she applied the ink with a series of small strokes that veer away from an overly shaded effect.

Roughly one hour later, we walked out with a little packet of Vaseline and a few basic instructions for the week. With the family business of candy-making serving as a muse, Argentine chocolatier Vasalissa brings their luxuriously enjoyable treats to a whole new market: Miami.

T Agustina Garcia Laredo has the sweetly satisfying task of overseeing the Vasalissa brand’s growth in North America.

he first thing one notices is the luxurious 18th century Toile de Jouy pattern that has become the signature of the Vasalissa brand’s packaging. Then, the eyes travel to the crystal chandeliers, before they rest on the main event of the experience: lots and lots of chocolate.

DISPLAYS OF DECADENCE True to the aesthetic of the surrounding Bal Harbour Shops, Vasalissa’s boutique has sweets displayed like jewelry in chic crystal platters. However at this, the only North American outpost for the Argentinian chocolatier, the shopper is urged to walk around the antique showcase table and interact with the product, delighting in the many designs its delectable product comes in.

“We have two store formats we will implement eventually: a chocolate shop with a snack menu and table service, and a much smaller layout that also offers coffee to go with no table service, ideal for cities where square footage is limited,” says Agustina Garcia Laredo, Vasalissa North America Executive Vice President, who recently hosted a González Byass sherry and chocolate tasting during the Food Network & Cooking Channel South Beach Wine & Food Festival. “But both will have the same ‘chocolate table’, where people get to see the product up close, as this is the essence of our brand.”

THE SWEETEST TALE The main protagonists of what one might call a chocolate-laced fairy tale are Dadi and Federica Marimucci, the mother and daughter team that created the Vasalissa Chocolatier boutiques in Buenos Aires as a tribute to their Russian ancestry, particularly Dadi’s parents, who migrated to Romania during the first World War, where her father, Abrascha Benski, opened a candy and chocolate shop.

Years later, the family relocated across the continents to Buenos Aires, Argentina. There, Abrascha discovered the general Argentinian fondness for deliciously sticky sweet dulce de leche and created a chocolate that enticed the taste buds of the locals. “Cabsha” as he called it, is a Russian word that phonetically means “I love you”, and the candy which bears the name soon became a cult classic in the South American country. The size of an Argentine peso, this semi-sweet chocolate-covered wafer is filled with rich dark dulce de leche and has a secret ingredient only known to the family.

Vasalissa's chocolate assures the full enjoyment of its artisanal fillings, like roasted almond cream, white ganache perfumed with rose petals, and exotic and slightly tangy passion fruit essence infused in a rich chocolate ganache.

This is just the tip of the chocolate iceberg. Lucky for dessert lovers in other parts of the US, the brand will soon take its products north.

“We decided to open our first chocolate boutique in the Bal Harbour Shops because it was right demographic market for us, and the best spot to test our brand,” says Garcia Laredo. “Simultaneously, we built our first chocolate ‘lab’ in Doral, which is also equipped to supply our future openings in other east coast cities in the US. Greenwich, Connecticut, is our next opening outside of Miami.”

Sam Moore

The original “Soul Man” makes a triumphant return home to Miami, picking up a few major accolades along the way.

Moore is the only artist from Miami ever to be inducted to the Rock & Roll Hall of Fame.

A MAN WITH SOUL Aside from being the only artist from Miami ever to be inducted to the Rock & Roll Hall of Fame, Moore is also multiple Grammy nominee and winner, as well as the recipient of the prestigious Grammy Lifetime Achievement Award.

But once long ago, he was just a boy from Overtown being raised believing he was an only child, by his mother and grandmother. In late 1956, a year after graduating from Booker T. Washington High School, burgeoning soul singer Sam Cooke recommended Moore to replace him as lead with his gospel group, The Soul Stirrers.

In 1961, Moore became the singing emcee at the storied club in Liberty City, The King O’ Hearts, where he met Johnny Lomelo, the man who would soon become the manager of Sam’s most illustrious project, 1960s soul duo Sam & Dave, together with the deep-voiced Dave Prater, Jr., who passed away in 1988.

am Moore is back home in Miami. How he got here is a mini saga of serendipity. It started when Miami Beach Mayor Philip Levine proclaimed on March 26, 2015 that the 100th Anniversary of Miami Beach was also “Sam Moore Day.” “Can you imagine? I was one of the first black children allowed to set foot on Miami Beach back in the days of Jim Crow.

Miami Beach is 20 years my senior and now they were honoring me with a Sam Moore Day. I never could believe that was possible,” says Moore.

Moore’s participation in the Centennial celebrations set in motion his permanent return to Miami, the city he’d left 50+ years earlier. Moore continues, “My wife and I met so amazing people that weekend, it got us thinking it was time for us to come home. So we did!”

MOORE OF MIAMI Less than a year later, life is good for Sam and Joyce, his wife of 37 years. The couple moved to Coral Gables, making more than a few influential friends along the way.

Celebrating his second year as an “Artist in Residence” at the College of Arts, Sciences and Education at Florida International University, Moore is helping to document Miami’s cultural history for the FIU Humanities Project they’re gifting. This is a history that Sam and friends like Jackie Wilson, Ray Charles, Lena Horne, Flip Wilson and The Champ, (then simply Cassius Clay) were all part of back in the 50’s and 60’s.

AN ENDURING LEGACY In 1964, Atlantic Record’s Ahmet Ertegun, Jerry Wexler and Tom Dowd went to see the group and decided to sign Sam & Dave. Wexler “loaned them” to Atlantic’s southern production arm, Memphis’s Stax Records.

By 1966, Sam & Dave were churning up the charts with their #1 R&B song “Hold On, I’m Coming.” Moore sang lead, with Dave as his counter baritone. Together they had over a dozen top 10 hits. Their association with producer, writer, arranger Isaac Hayes and the Stax team propelled them to international stardom with hits and the honors never stopped pouring in.

Fifty-three years later — at the cool age of 83 — Sam is still opening his concerts with “Hold On” and closing with that trademark recording, their Grammy-winning and, as of last month, Library of Congress National Registry-recognized anthem “Soul Man”.

A SWEET SURPRISE FOR SAM The move to Coral Gables brought with it a shock. Soon after their arrival, Joyce received a Facebook message and then a phone call from a young man in Georgia. Sam’s father, who he didn’t see after the age of 5, had gone on to create a huge family.

“I handed Sam the phone and said ‘this is your great nephew and he has a whole lot to tell you’,” Joyce recalls.

Sam discovered he has eight half sisters and two half brothers, all alive and well — children of his father from before and after his relationship with Sam’s mother. Within weeks there were in person meetings, attendance at family reunions, and a whole lot of bonding.

“Who would have thought at my age I would have found a whole new family”, says Moore. “If there’s one thing I've learned, it’s that life is full of surprises.”

n today’s social media, screen-obsessed society that can feel devoid of actual human connections, Idalia Salsamendi wants to change that. She’s a fierce girl boss who’s building her influencer marketing empire based on three simple factors: be kind, deliver good work and stay professional.

“I never take my work for granted and always go above and beyond for my clients who become family,” she said. “I want to build relationships. In our email-addicted society we’re losing some of that. We need to bring the humanity back.”

A STARRY START One day while living in Los Angeles, Salsamendi answered a nondescript Craigslist ad for an internship at a modeling agency.

To her surprise it ended up being Ford Models, famous for representing icons like Naomi Campbell. Three years later, she transitioned to NEXT Management in L.A. before moving to Manhattan to run its talent division.

As social media gained even more traction and models began evolving into influencers, Salsamendi saw an opportunity to go off on her own and founded Idalia Salsamendi, Inc., an influencer marketing and social media business strategy firm, three years ago.

Focusing on designing creative and compelling campaigns, she delivers engaging content that’s executed with perfection.

The digital doyen, who works with luxury brands like Chopard and legendary influencers like Brittany Xavier and Jacey Duprie, has built her business on being selective on who she represents and making sure each of her clients has a philanthropic focus.

“Everything I do has to have a charitable element and do something better for society,” she said.

BEYOND BRANDING As the Director of Business Development for blogger and fashion designer Chriselle Lim’s company Chriselle Inc., Salsamendi created the “12 Days of Chriselle” holiday campaign, as a way for the influencer and brands to unite forces and not only highlight products but shine a light on specific charities. Since its inception, Chriselle has raised and donated $70,000 to nonprofits.

Salsamendi’s philanthropic affinity is also showcased in her jewelry line LaHavane that now boasts “it girl” fans like Danielle Bernstein and Emily Ratajkowski. Co-founded with her mom, the duo searches worldwide for inspiration and hand assembles each unique piece, with proceeds from sales going to charity.

As her reputation as a leader in the digital world grew, Salsamendi started to hear conflicting advice from her contemporaries. To remedy that, she started her own podcast, Realization, to share her personal and in-depth knowledge about digital marketing and take listeners behind the scenes of the influencer world.

In his persona as The Spice Detective, the co-founder of Shiraz Creative is expanding palates all over Miami.

W

hen Yaniv Cohen is in the kitchen, every day is Mother’s Day. And Grandmother’s Day. The handsome Israeli-American with the unearthly, nearly transparent eyes and the love for full-fat labneh learned almost everything he knows about cooking from family.

He gives credit where credit is due: “The masters of cooking were my mom and my two grandmoms, and my aunts too,” Cohen says.

“We had a big family and every Thursday was like a war room, cooking for Shabbat. It was like a big catered event. It’s not as if we served a main dish and a side dish. We had six to eight different starters to create a vegetarian mezze platter, and went from there. The number of dishes that came out of our small kitchen was amazing, for so many years. That,” he says, “was the training.”

FAMILY 2.0 The origin story of The Spice Detective is also about family; the inspiration for Cohen’s catchy brand came from the birth of his daughter eight years ago. In true Miami Modern Family style, Cohen is raising his daughter with a married female couple: her moms. “My daughter’s two moms didn’t grow up with these spices, so it was very important to me that my daughter develop a taste for the cuisine that I grew up with,” he says. “What was profound was that her moms actually said to me, ‘This is too important and too interesting to keep it just within our family. You need to create a platform so people can be exposed to this.’”

Cohen took their advice to heart: In 2014, he launched The Spice Detective blog; a YouTube channel followed. Then came pop-up dinners, private cooking classes — and his other baby, Jaffa Café in the Design District’s St. Roch Café.

The concept has proved so popular that Jaffa moved to a larger space in the market. “It has wraparound seating, so it’s more like a restaurant

‘Part of what I do is take classics and add an Israel/Mediterranean twist to it.’ than a booth,” Cohen says. “It’s the only space with its own seating.” A second Miami location seems in the cards.

“Instead of using cilantro, we’ll use mint.” Some of his go-to spices are sumac, cumin, turmeric, and cinnamon — and Cohen’s number one is za’atar, a mix of ground dried thyme and other herbs. “Once my followers hear about za’atar on Instagram, they are like, ‘My whole palate has changed. I use it on everything.’”

TURNING PAGES Meanwhile, Cohen’s digitally savvy brand is

readying for a more tangible channel: the summer publication of My Spiced Kitchen: A Middle Eastern Cookbook. “Some are old favorites from my grandma and mom, and others are new creations,” he explains. “It has 50 chapters, with each chapter dedicated to one spice — I write about the origin of the spice, the flavors, the properties and how to use them.”

But for the present, only Miamians can see Cohen in the flesh. And perhaps more than one Cohen. “You know what my mom said to me?

‘I cannot wait to come and cook with you for Jaffa.’” And then Yaniv’s green eyes light up, even more than usual.

This design duo create swimwear so sexy and Insta-worthy that it looks like jewelry for the body.

J

arrod Wilkins makes no bones about how he and husband Ilde Gonçalves became partners in love and design. “From my first glimpse of an Ilde swimsuit I was in love,” he says. “I asked Ilde where it was from and he simply stated, ‘I made it.’ I was like, Okay.”

The two talked about how Ilde had started making bathing suits by hand for himself because he was always seeing the same swimsuits on the beach. He wanted something no one else had. “I didn't love arriving at a pool or beach party to find three or five other guys with the same bathing suit!” Gonçalves readily admits. In Gonçalves’ telling, that social mortification was happening more than one might think.

A BRAND IS BORN “I told him this was an amazing opportunity and he said he didn’t have the time to do it by himself, so I immediately jumped in and started to help,” Jarrod recalls. “Hence Ilde swimwear was created!” Gonçalves says that when he met Jarrod, “I was designing the line in a more artisanal way.

Thanks to him we took the brand to the next level. Jarrod brings to the brand all his knowledge from working as a model for so many years and also working and managing clothing retail stores.”

LA VIDA LOCA It was a fairly dramatic moment when a certain pop star became an Ilde advocate. Wilkins was awoken by Gonçalves yelling, Oh my god! Oh my god!

“I thought something horrible had happened,” Wilkins says. “Then he showed me his phone — Ricky Martin in one of the bathing suits we’d hand made. The power of social media is incredible — our website crashed and the bathing suit sold out in no time.”

Gonçalves has been a fan of Martin and his music since his Menudo days. “I’ve always loved his voice and how he represented the Latin community,” Gonçalves says. “But seeing pictures of him wearing our swimsuits was mind-blowing.”

MADE WITH LOVE Their plans for women include more star power. The feedback from the pieces they designed for the last Miami Swim Week was ecstatic, and with their friend and top model Agueda López as a muse, and some pieces sent over to Rihanna, Gonçalves may find himself awoken to delighted screams once again.

“We design and select all the prints together and the brand is a true representation of both of us,” Gonçalves says. Wilkins grew up in Australia, which Gonçalves says adds a certain swagger to the brand: “Men in Australia look very confident wearing bikinis at the beach even if they are straight, and Jarrod brings that into our brand's culture.”

“I'm beyond thankful to have a partner like Jarrod that supports me and makes the experience so much more fun and beautiful,” Gonçalves says. Wilkins adds, “Our tags say ‘Made with Love’ and we remind each other of that every day.”

Is there a particular case you can mention that exemplifies the firm's work and success?

Due to the nature of our practice, our client matters are not public. Therefore, we cannot mention our client’s names or provide information that might indicate who they are. Nevertheless, I can describe a couple of our more interesting matters in general terms.

Years before the recent recession, I implemented an estate plan for a highly leveraged real estate developer, which included a structure to protect his accumulated assets that were not subject to mortgages or other liens associated with his business. When real estate values bottomed out, he found himself with mortgage and other debt in excess of $25 million over the value of the underlying

properties. After protracted litigation and negotiation with his lenders, they foreclosed on the properties, but were unable to attach any of his other assets. If he had not had engaged in the planning we did for him, he would have lost everything he had, except his home, which was his protected homestead.

We have many clients who, as part of their estate tax reduction planning, have made sales of their assets to trusts for the benefit of their children or other intended beneficiaries. These sales are structured to avoid any income tax consequences, provide for lifetime payments back to the client/ seller and remove the assets from the client’s taxable estate. One client in particular, a very successful physician, who unfortunately had a terminal illness, engaged in such a sale. Without the transaction, his estate would have incurred more than $6 million in estate tax. Instead, at the time of his death, there was no estate tax liability.

What is something people may not know about your firm that you would like them to know?

We are concerned about our community and thankful for the opportunities we have. As such, we all support and participate in local charitable organizations, as well as national organizations of particular interest to our friends, family and clients. Often, our clients want to create their own charitable organizations, which we assist them in doing. I encourage everyone to give something back to his or her community whenever possible.

Does the firm have any major plans for 2019?

We are planning on doubling the size of our office and adding staff to serve our clients more efficiently. In addition, we have acquired an attorney from a large South Florida firm whose specialty was real estate to expand the real estate aspects of our planning practice.

After becoming huge in Lisbon, the grandfather of modern food halls launches a worldwide expansion in Miami.

TIME OUT’S GLOBAL GAMBLE STARTS HERE

ay back in September 2017, when Time Out Market first confirmed the rumors that it was headed to Miami Beach, Miami.com ran an article with a sentence that just might blow your mind.

You can find it in the very first paragraph: “while pretty much every major metropolis has their own upscale food courts,” wrote journalist Lesley Abravanel, “Miami does not.”

Two years later, Miami’s dining scene is dominated by food halls; a half dozen and counting. But Time Out Market promises to be something more special; 17,500 square feet of space featuring 17 kitchens, including ones helmed by chefs Norman Van Aken of Three, Michael Beltran of Ariete, Jeremy Ford of Stubborn Seed and Scott Linquist of Coyo Taco, and a demonstration kitchen for visiting chefs.

It is, after all, the food hall that kicked off the trend and is just now going global, with Miami being its first stop on a multi-city, multi-country expansion over the coming years.

To figure out how this all got started, we tracked down three figures involved in its development, each giving us a taste of what diners can expect at the recently opened location.

HOW JOÃO CEPEDA’S CRAZY IDEA WENT GLOBAL As the story goes, the idea for the Time Out Market, originally, was something pretty small.

It began back in 2013, when former foreign correspondent João Cepeda was the Portugal editorial director for Time Out, the dining and nightlife magazines that began in

London in 1968 and since spread to 315 cities in 58 countries. He had this dream of opening an exhibit space where he could bring to life whatever they were writing about in the magazine. Maybe one month it would be a chef cooking up something, and maybe next it would be actors putting on small plays.

“I love going into the office and saying ‘I have a crazy idea,’ and they all put their hands on their heads, like, not again!” Cepeda says.

At the time, Portugal’s economy was nearly crashed, and so when he went looking for a piece of property for his little installation project, Cepeda stumbled on something huge, something iconic and something that was far cheaper than it should have been: the Mercado da Ribeira, a historic, stunning space with soaring ceilings and light streaming in from big windows.

Cepeda’s small idea turned into a $9 million project, a curation of Lisbon’s best food, drinks and cultural experiences. It would also become a template for the modern food hall movement, a collection of 32 restaurants and kiosks, with chefs and vendors selling everything from flowers to sardines to custard pastries. With 3.9 million visitors last year, the market is now the city’s largest tourist attraction.

Miami made sense as the second spot for Time Out Market, Cepeda says. Our Latin influence means things move at a pace he can understand, even if that means it took his team two years to open the Miami Beach location. He’s also captivated by the passion here, how people are either not interested in something in the least or entirely crazy about it.

“We just have to now get them excited about Time Out Market Miami,” he says.

THE MAN RESPONSIBLE FOR BRINGING ON 120 CHEFS It would be difficult for Didier Souillat to say exactly where he’s from.

Growing up, his parents taught French in a variety of international destinations including Morocco, Ireland and Venezuela.

He had managed hotels and restaurants the world over by 2002 when he landed at Harrod’s, the famed and historic London department store. Here, he oversaw over 28 in-house food hall restaurants. Hakkasan hired Souillat in 2010, and he spent six years working on an expansion of the global Cantonese restaurant chain with a Michelin star to its name.

When Time Out Group brought him on as Time Out Market CEO in 2016, the company had ambitious plans for expansion. This year alone, the company expects to add five locations: Miami, New York, Boston, Chicago and Montréal, with a Dubai opening planned for next year, London in 2021 and Prague in 2022. (Including Lisbon, together these will showcase a curated mix of over 160 top chefs.)

Time Out Market Miami, located on one block south of Lincoln Road; French Laundry’s Miguel Massens will be showcasing his culinary prowess during a three-month residency in the food hall’s Demo Kitchen; The Market’s Chamomile Sling by Broken Shaker; a vegetable-packed pizza from Beach Pie by Norman Van Aken.

“Some people think we’re brave, and I think maybe some think we’re stupid,” Souillat jokes.

But Souillat is certain that Time Out Market Miami will survive the city’s trend of over-saturation of the food hall concepts and that if they build it, foodies will come. “We tell chefs that any food hall can promise they will be busy on weekends, but we want to be busy at Monday for lunch,” he says.

THE RESTAURANT EXPERT YOU’VE NEVER HEARD OF It would be tough for Rod Gutierrez to enjoy any job more than the first one he had in the industry, working at the ice cream stand at Lincoln Center. “People are so happy when you hand them an ice cream,” Gutierrez says. “And imagine how many hundreds you’re selling in the middle of Lincoln Center.”

While attending college in North Carolina, he took a side job at the Capital City Club in Raleigh. The

property’s owner, ClubCorp, has exacting standards that Gutierrez credits with crafting his management style, right down to the well-pressed shirts and the crumber, a pocket tool to remove bits of bread from every table.

“Those early rules really made me into who I was going to be,” Gutierrez says.

Who that was, it turns out, is an expert in the largely behind-thescenes management of restaurants and nightclubs, including local favorites Pearl at Nikki Beach, three locations of B.E.D., Michael Mina 74, Sweet Liberty, Mercer Kitchen with Jean-George Restaurants and Hakkasan.

Even though he has played an integral role in the success of so many places, Gutierrez has largely avoided the spotlight, instead watching it shine on the owners, chefs or bartenders. When he got the offer in 2017 to become General Manager of Time Out Market Miami, he said he knew this could become his biggest achievement.

“I’ve always been an adrenaline junkie, to be honest with you. The things that are the hardest, that’s what interests me,” he says.

Gutierrez found a worthy challenge in opening Time Out, one that has found him focused on customizations, with each chef needing slicers for charcuterie, special grills or designer espresso machines.

Now that is has opened, Gutierrez will still remain largely in the background, letting the chefs do the talking. “I’m OK with that,” he says. “Let them be the stars.”

The New Old Way Michelle Bernstein taps into her family’s story for an empanada that tastes like fond memories.

ichelle Bernstein, that chef so many of us know from birthday and anniversary dinners for a generation now, was moving into a new apartment back in ’04 when a bedframe slipped from her grasp. It landed smack on her leg.

She and husband David Martinez were moving into a place in Cancun that they would use as a base of operations for a new restaurant there.

Deciding against braving a Yucatan hospital, they headed to the hotel where the restaurant would be based.

“My husband was half carrying me the whole way to the hotel,” Bernstein recalls, “and the first person to help me and then bandage me up was Julio.”

INTERNATIONAL CONNECTIONS Julio Cabrera was the beverage director at the hotel where Bernstein’s restaurant would be operated and had a reputation for throwing ingredients in drinks that hadn’t been seen anywhere. Bernstein and her bartender-turned-nurse became close, even after Hurricane Wilma washed her Cancun restaurant into the sea.

Cabrera moved to Miami, and when he called Bernstein to see if she might have a job for him, she took him on at Michy’s. She had only a beer and wine license, so he finagled sake and wine-based cocktails, until Bernstein opened Sra. Martinez. There, Cabrera

became something of a mentor to many of Miami’s top-flight bartenders, helping usher in a new cocktail era.

“It was this amazing combination,” she says. “My husband’s brain for concepts, my cooking and Julio’s great palate.”

A FRIENDLY AFFAIR When Bernstein opened her new homage to Cuban food this year, she brought in Cabrera as a partner at the new La Trova in Little Havana.

Not only did Cabrera take charge of the bar program, but the location also is designed in part based on the early memories Cabrera has of his father’s restaurant in Cuba. They wanted the place to feel like a fulltime fiesta, so when the bands play at night, bartenders will break out instruments of their own and Cabrera will often jump in to sing. “Then I’ll pop out of the kitchen and do a little salsa myself,” Bernstein says.

A NOD TO THE PAST For Bernstein’s part, she designed a menu that’s reflective of her personal story. Growing up in Miami, her Jewish-Argentine mom would make dishes that combined her two cultures. The empanada may be Argentine, but the filling of charred scallions and roasted pumpkin coated in warm spices and brown sugar is pure Latin fusion.

The trick to this dish, Bernstein says, is to make sure to cook the pumpkin hot and fast, so that it doesn’t become mush. If you can’t

CALABAZA, BROWN BUTTER AND MELTED CHEESE EMPANADA INGREDIENTS 3 tablespoon butter 4 cups calabaza 1 tablespoon olive oil 1 tablespoon kosher salt ¼ cup light brown sugar ¼ teaspoon ground cloves

1 teaspoon cinnamon ¼ teaspoon ground star anise 6 scallions 1 cup grated tetilla or fontina cheese

½ cup heavy cream 1 package of 12 empanada dough, La Salteña or similar, thawed 1 egg

1. Heat butter in a medium sauce pan over medium heat and swirl as it slowly turns brown and nutty.

2. Peel the calabaza almost entirely, leaving small bits of skin remaining before seeding and dicing into quarter-inch cubes. Toss with oil, brown butter, brown sugar, salt and spices. Bake on a cookie sheet in a 375-degree oven for 40 minutes or until cooked thoroughly but not mushy.

3. Char scallions lightly on grill or sauté pan, being sure to not cook thorough, and cut into half-inch slices.

4. Simmer cream over low heat until reduced by half.

5. Allow calabaza, scallions and cream to come to room temperature and mix together with cheese, tasting for salt and pepper.

6. Place tablespoon of filling in middle of dough. Wet half-inch rim surrounding filling with water, fold and seal with a fork.

7. Whisk egg with tablespoon of water and brush empanadas carefully with egg wash.

8. Bake at 400 degrees for 20 minutes or until golden.

find the tetilla cow’s milk cheese from Spain, other salty cheeses like fontina will do well, even goat cheese, as long as it’s not too oozy. Serious home chefs out there can make their own empanada dough, but Bernstein swears by her mom’s favorite frozen supermarket brand, La Salteña.

In the end, you’ll have an empanada that combines the sweetness of the calabaza, the savory char of the scallions and the saltiness of the cheese. It’s a melding of the traditional and the new, just like Bernstein, and, she says, just like Miami.

Tucked between Biscayne Park and El Portal, “The Village Beautiful” has blossomed from a quiet hamlet to a burgeoning community.

Although Miami Shores was incorporated in 1932, its history goes back decades prior to the 1870s when Miami movers and shakers relocated to a community they called Biscayne. With the arrival of a post office, county road, and even a pineapple plantation, the tree-lined district grew quickly. Dozens of homes were built, Barry University opened in 1940, and the village now boasts a population of more than 10,000. Its expansion continues today, with more restaurants moving into the village, the arts supported in the Miami Theater Center and Miami Arts League, and residents recently voting for their first black mayor, Crystal Wagar.

The owner of JWI PR, Jessica Wade Pfeffer’s firm just celebrated its 10th year anniversary. But she also recently toasted to being a new resident in the village of Miami Shores. Although she was raised in Kendall and lived in Upper East Side Miami for years, when she and her husband were looking to buy a home, they were immediately attracted to the Shores for its history and sense of community. “Everyone is so nice and so welcoming. Two hours from Miami, Marathon is no longer a quick drive-by on the way to Key West — the new Isla Bella Beach Resort entices you to stop and stay.

N

ever a sought-after destination on my Florida Keys radar, I always buzzed past the Middle Key of Marathon, writing it off as the last stop before the Seven Mile Bridge on the march to Key West. Now, tucked away to the left of the iconic bridge — on what used to be an RV park before Hurricane Irma — is a new luxury oasis that laidback Marathon hasn’t seen before. A winding road flanked by towering palm trees leads to Isla Bella Beach Resort, where the lobby makes a breathtaking first impression.

Upon entry, all you can see is open ocean, challenging you to count the many shades of blue during check-in, while the fresh scent of cedar from the untreated wood floors (made of 200-year-old trees from Vermont) entices the nose. Spanishand Mediterranean-style buildings, enveloped in white and light-colored wood, ooze European chic. No, this is not your typical Keys’ resort — and we’re here for it.

One of the prettiest spots on the property is the Beach Bar, where you should order the Hot Passion, a tequila concoction made with passion fruit and rimmed with salt and cayenne, or frosé crowned with a bright orchid that goes down easily when watching the boats sail by.

At sunset, head to the dock on the resort’s point to settle in a chair and watch the sun majestically dip behind the Seven Mile Bridge.

A MARATHON OF ACTIVITIES Bright-white sand beaches effortlessly slope into the water that wraps around the resort, creating a shallow cove for swimming, while a rocky peninsula that juts into the ocean serves as a haven for marine life. Guests can grab snorkel gear to hunt for prized starfish and vibrant parrot fish that feed on the rocks, or explore the water on kayaks, parasails and jet skis from the marina. Don’t miss an eco-tour with Miranda Murphy of AquaVentures (flkeyskayak.com); the expert guide will lead you to a hidden mangrove tunnel boasting some of the clearest water in Marathon and estuaries that juvenile

For a moving experience — a lady in our group cried — book an interactive Dolphin Encounter at Dolphin Research Center (dolphins.org), a non-profit education and research facility that houses 26 dolphins and sea lions who were either born there or adopted. With the guidance of a trainer, you’ll enter the sea to dance, laugh, shake hands and catch a dorsal ride with friendly dolphins. No matter what you choose to do, it’ll be hard to say goodbye to beautiful Isla Bella.

Scene Stealer Game of Thrones may be over but you can get your fix for medieval aesthetics by enjoying Croatia’s rich culture, including gastronomic offerings that are as memorable as the country’s many heart-stopping views.

S

ome people have described Croatia as the crossroads of Eastern and Western Europe, where the enigmatic nature of the region is reflected in its art and culture. The country’s somewhat tumultuous history may have even inspired a future where Hollywood came calling.

Up to this past May, the southern seaside city of Dubrovnik — particularly its distinctive Old Town, encircled with imposing stone walls completed in the 16th century — has had a starring role in a not-so-little television series called Game of Thrones, as the background to King’s Landing, the location that houses the infamous coveted Iron Throne. (At press time, the series was one week away from its final bow).

While Croatia certainly has its share of enchanting views and scenic spots, the eastern European country is also a burgeoning culinary hot-spot. And traveling through its many towns and communities, savoring their regional gastronomical offerings, serves as a summer well-spent.

the life Of the many delicacies being exported out of Croatia, the most popular items include hand-harvested olives, olive oil and white wines, as well as earthy black and white truffles; the Istrian Peninsula is also well-liked among tourists and locals alike because of its freshly caught seafood; the recognizable rooftops of Dubrovnik.

THE LESSER-KNOWN DELICACIES OF ISTRIA In November, as the boisterous tourists dissipate, many seaside Croatian cities transform back into sleepy fishing villages. Ancient port towns dot the coast of the Istrian Peninsula, where rolling hills with occasional towering cypress trees dwarf the rest of the local flora.

This area is slowly becoming more celebrated for extra virgin olive oils (utilizing olives that have been harvested by hand), as well as the production of black and white truffles, and dry, well-balanced white wines.

One of the most dominant grape varieties found in the Istrian peninsula is the Malvazija, (pronounced as MAL-VAH-ZEE-YA), an indigenous grape grown for over two thousand years in that region and aged in Acacia barrels.

Wines that are aged in these encasements have a similar mouthfeel to French oak barrel-aged wines, but have a much more subtle woody flavor that allows for the fruit forward bouquet to become even more pronounced. It pairs wonderfully with exquisite shrimp and sea bass, which are caught right off the coast, as well as savory mussels that are farmed in small bays or coves of the peninsula.

THE HAPSBURG’S PLAYGROUND The city of Pula boasts one of the worlds greatest architectural treasures: an amphitheater constructed sometime between 27 BC and 68 AD, listed among the six largest surviving Roman arenas in the world. Two hours east of the Pula Arena lies the resort town of Opatija. In the late 1800s, aristocrats and nobility would flock to their vacation villas on the Opatija Riviera to enjoy a variety of seasonal activities.

Ruzmarin, one of modern day Opatija’s finest restaurants, is a reflection of the county it resides in: cozy, unpretentious and not without its secrets. Visitors who insist on walking will certainly put a lot of physical work toward their

meal because this hidden gem’s elusive location can be found behind a hotel and a residential area that leads to a romantic surprise: an exposed terrace nestled on top of a steep hill.

With a menu that almost reads like War and Peace — i.e., it’s long — it can be hard to make a decision on what to order. But the highlight of the meal comes after the plates have been cleared from the table, when the waiter brings out complimentary homemade Teranino. The Istrian liqueur, a local favorite, is derived from Teran, a red wine from that region which is spiced with cinnamon, anise, fennel and nutmeg. Not overpowering or overly sweet, the beverage is a bit reminiscent of a port or sherry.

Rustic hills frame a sprawling Adriatic Sea; narrow walkways can lead to romantic seaside spots; an order of Teranino for four; a charcuterie-style appetizer in Dubrovnik.

THE CENTER OF IT ALL As you arrive in the old city of Dubrovnik, climbing up on the ancient walls to get a bird’s eye view is practically a rite of passage as a local and visitor alike. If you look hard enough, you can find 360 Dubrovnik, the city’s only Michelin starred restaurant, tucked away in its walls, structures that are listed as a UNESCO World Heritage Center.

As the name promises, you get a 360-degree view of the walled city. Chef Marijo Curic marries seasonal and locally sourced Croatian ingredients with modern French cooking techniques; the food is flavorful, sophisticated, and inventive. The constantly evolving menu promises delicious surprises with ingredients that are seasonal, just like the actual restaurant, which opens its doors in late March and closes at the end of October.

Pantarul is another regional gem, this time located in Lapad, slightly off the beaten track in the newer side of Dubrovnik. The menu is an eclectic mix of Asian, Mediterranean and French cuisine that somehow finds a refreshing balance as a result of locally sourced ingredients. Wine aficionados will enjoy the many selections of very reasonably priced Croatian wine. It’s not fine dining, however, the relaxed atmosphere, and the low hum of locals speaking in Croatian really adds authenticity to the ambiance. The portions are very generous here, especially if you try the tasting menu featuring five or six courses.

A TRIP WORTH TAKING There are currently five restaurants in Croatia which have been honored with Michelin stars — most recently Noel in Zagreb and Draga di Lovrana in Lovran. While the summer will eventually come to an end, a culinary adventure spent delighting in whimsical dishes brimming with regional flair never goes out of season.

LOUIS AGUIRRE & MATT MACDONALD In 2017, TV news reporter and actor Louis Aguirre returned to Miami from Los Angeles, where he spent three years co-anchoring the entertainment news show The Insider. The Deco Drive alum is now an anchor at WPLG, Miami’s ABC affiliate. His love story with interior designer Matt MacDonald has just as many Hollywood twists and turns. After a chance meeting in the Design District, their paths crossed at a party in New York, where Aguirre was living at the time. MacDonald was stranded in the city because of a hurricane back in Miami. “It was straight out of a movie,” recalls Aguirre.

“We locked eyes across a crowded room.” The pair spent the rest of the week together. Nineteen years later, the couple lives in their Mid-Beach home with two rescue dogs.

What’s your favorite thing about summer in Miami?

Louis: Life slows down. The social calendar eases up. There’s time to chill, read books, enjoy the house, the dogs and each other. Sometimes you feel like you have the whole beach to yourself, plus the water is warmer so you can just marinate out there in the ocean. First thing in the morning, before I look at my phone or answer texts and emails or turn on the TV, I walk my dogs to the beach. We swim in the ocean. It’s the best way to start my day.

Where are you traveling this summer?

Matt: We’ve been going to the Bahamas a lot recently. I have projects in Exuma and Harbour Island, so Louis tags along and we make a long weekend out of it. We always stay at the Rock House when we’re in Harbour Island.

We’ve been staying there for the past 10 years. It feels like home. They’ve got the best staff, who treat us like family, and the best restaurant on the island.

Louis: We always plan one big trip abroad. This summer, we’ll be taking in the local culture in Spain. I look forward to hearing some great flamenco guitar. I’ve never been to the Prado in Madrid and I can’t wait for The Picasso Museum and all that Gaudí in Barcelona.

What are your favorite Miami restaurants in the summertime?

Louis: Mandolin Aegean Bistro in Buena Vista is one of my favorite restaurants in Miami. When I’m there, I feel like I’m back in Greece at a taverna on the beach. It’s got the perfect summer menu: watermelon tomato feta salad, stuffed zucchini, plenty of veggie options, salads and the best French fries on the planet.

Matt: Lately we’re also really loving Via Emilia on South Beach at 15th and Alton. They have the best homemade pasta on the beach. It feels and tastes like you’re in Italy. We love the pumpkin ravioli, the artichoke and lemon tagliatelle and the best eggplant parmigiana I’ve ever had. We’re big fans.

MICHAEL HONABLUE & MARIJKE VANDERVENNET In March 2012, Michael Honablue met Marijke Vandervennet at an Irie Foundation charity event at the Whole Foods Market in South Beach.

“We have been in love ever since,” says Honablue, a four-time Emmy Award-winning producer and architect. Belgian-born Vandervennet, a classically trained ballerina turned Pilates and yoga teacher, is also an interior designer with Home Express, working primarily with clients in South of Fifth. The couple lives in South Beach and Honablue has two children in Beverly Hills, Yori, 16, and Avery, 14.

What’s your favorite Miami summer ritual?

Michael: We do a great deal of yachting. We’ll charter a Sunseeker from The Advantaged and journey around Biscayne Bay to Stiltsville and then down the Miami River to Seaspice. We also love South Pointe Park.

We’ll picnic and then walk down to the beach. I think it’s easily the most photographed place in South Beach. Everyone wants their picture taken there early in the morning during golden hour.

Where are you vacationing this summer?

Michael: We’re traveling to Provence and staying at our friend’s six-bedroom villa on a hill with phenomenal views of the Pont du Gard, an ancient

Roman aqueduct. The villa has everything you need: a pool, jacuzzi and the sounds of nature. There’s not much around other than amazing countryside and a little town where we get our baguettes, butter and olive oil in the morning. It’s different and relaxing. We plan to stay about a week and then travel to Belgium, where Marijke is from.

What are your favorite summertime meals?

Michael: We love going to Planta in SoFi for their organic, healthy clean food and beautiful ambiance. We’ll usually get a few shared plates, like the queso dip, cauliflower tots, spring rolls, volcano roll and kelp Caesar salad. We go to Milos for a quick lunch that still feels very sophisticated.

We love the bigeye tuna tartare, tomato salad, Faroe Island organic salmon and lobster pasta. For dessert, we enjoy the greek yoghurt and a seasonal fruit platter.

We also love cooking at home. We trained with Eleanor Hoh’s Wok Stars and we’ll prepare her Hoisin shrimp with broccoli or rainbow and lettuce wrap recipes — but the beauty of wokking is to be creative with what you like and empty the fridge for ingredients, as long as you’ve got vegetables, protein, oil, garlic, ginger and white pepper. You’ll always have an amazingly fresh and delicious meal in 20 minutes.

AM Y & BORIS STOJANOVIC Amy and Boris Stojanovic met when Amy took an internship with Boris’ brother during her senior year at the University of Miami. Their courtship was pure South Beach magic. Amy worked at Ocean Drive magazine, Boris owned the Lincoln Road lounge Funkshion and they lived on Jefferson Avenue.

“Our entire lives were within a 15-block radius and we got around on our cream-colored Vespa,” recalls Amy. “It was total bliss.” Today, the couple lives in Morningside with their children, Maja, 5, and Oliver, 1. Boris is an executive creative director at Sapient Publicis and Amy is the managing partner of Mochee, a social media agency headquartered in Little River.

Amy: At Mochee, I’m lucky to work with Miami’s premiere literary institutions, Miami Book Fair and Books & Books, so my reading list is always very long. I just finished Circe followed by Son of Achilles, both

Where are you vacationing this summer?

Amy: We take an annual trip every summer to Montauk, where we rent a home for a couple of weeks. It’s a good break from the Miami humidity and as long as you go before the Fourth of July, it’s very peaceful with lots of day trips and activities, like hiking, horseback riding and enjoying amazing food.

JENNIFER & GABRIEL MONTOYA Philanthropy is at the core of Jennifer and Gabriel Montoya’s shared bond.

“Our family motto is, ‘If we can, we must,’” says Jennifer, an attorney and board chair for No More Tears, a 501c3 non-profit organization focusing on rescuing victims of domestic violence and human trafficking. Gabriel, a longtime entrepreneur, is the founder and CEO of Dvdendo, an automated savings and investment platform aiding in wealth management for the Hispanic community. The pair met in New York and moved to Miami in 2009.

They live in Coral Gables with their children Oliver, 9, and Georgian, 3, as well as their Yorkie Bender.

What are your favorite summertime activities?

Jennifer: Summer means quality time with family. We spend weekends at Soho Beach House or the Riviera Country Club to relax by the pool and play a lot of tennis. We also love entertaining poolside at home with LaurentPerrier Cuvee Rose Brut, Dall’Armellina DOC Brut prosecco and VerAri prosecco. I’ll prepare my famous watermelon gazpacho with feta, jalapeño and microgreens, and Gabriel loves to grill ribs and entrañas with sea salt.

Gabriel’s mom is half-Lebanese, so we love to include Mediterranean sides like hummus, grilled eggplant and cucumber labneh yogurt.

Tell us about a memorable summer trip.

Jennifer: One of our most memorable summer vacations was a trip to

France with our son, Oliver. After he learned about France in school, we decided to take him on a road trip through Normandy. We started our drive at the UNESCO World Heritage Site Le Mont-Saint Michel and stayed in chic Deauville. We visited Normandy to learn about World War II and honor the brave soldiers who landed on the beaches. We ended our trip in Paris.

What’s your summer beauty and style routine?

Jennifer: I don’t wear much makeup in the summer, just a bit of Dior concealer and mascara and MAC Fresh Brew lipstick. I love Goop’s Exfoliating Instant Facial Masque and G.Tox Himalayan Salt Scalp Scrub.

For date night, I spritz on my Tom Ford Soleil Blanc Shimmering Body Oil. I am all about the kaftan in summertime — chic, comfortable and effortless, and I always have a statement handbag, like my Ximena Kavalekas. My go-to sandals are Valentino Garavani Rockstud Cage slides or Jimmy Choo wedges. BohoHunter’s Colombian swimwear at their Wynwood boutique is my all-time favorite. And I love my Eugenia Kim and Artesano straw hats and Miu Miu sunglasses.

Gabriel lives in his Vilbrequin swim trunks, polo shirts and breezy linen pants. His staple summer shoes are Swims penny loafers made of mesh and rubber. For the kids, I love to match them in Jacadi, Burberry Swim, Dolce & Gabbana and Fendi, or for more formal occasions Pili Carrera.

The Art of the Party Peréz Art Museum Miami honors Christo during their biggest art bash of the year.

Presented by Valentino, PAMM’s annual fete brought together philanthropists, artists, civic leaders, and arts supporters, as well as Indulge’s own Contributing Fashion Editor, Elysze Held, who in turn dubbed the celebration “The Art of Dressing Well for the Party”! In honor of the evening’s honoree, Christo, one of the most influential living artists, guests were encouraged to wear pink as a nod to the 35th anniversary of Christo’s pastel-hued Surrounded Islands in Miami’s Biscayne Bay. A Grand Affair Baptist Health South Florida raises over $6.5 million during its lavish Grand Gala.

Attended by more than 2,000 guests, the Grand Gala organized by Baptist Health South Florida was the largest social and fundraising event in the leading healthcare organization’s history, with proceeds benefiting the Baptist Health cause of each gala-goer’s choice, including Miami Cancer Institute and Miami Cardiac & Vascular Institute.
