Traditionally cakes were baked as normal circular loaves of bread, they were not decorated as the cakes we see today. A cake was a common food for the English men and was a part of every celebration. They were baked in a regular mud oven, the concept of icing was still unknown. The icing is also known as frosting in many other parts of the world and has become a must these days. The icing spread is prepared using castor sugar mixed with the either with water or milk, beaten with butter. All these ingredients are added one following the other, then forming a dense foam kind of a substance which is then applied over the cake using a pallet knife with a light hand.

When the same icing is made in a little flowing consistency then it is also called as filling. The other type is little thick compared to the one that is coated over a cake, which we usually see on a cake, shaped out as a flower or a leaf and sometimes they are filled in the piping bag and used to write names and messages on the cake.
