Dear Premier Club Members, The end of the year is an ideal time for reflection and appreciation, so I’d like to look back on what was a truly outstanding year for the Club. Thanks to all of you, we forged new paths while solidifying time-honored traditions. We celebrated events big and small and created lasting memories along the way. We have steadily evolved over the years and are now universally regarded as one of the top private clubs in the country. Most recently, we were recognized as one of the top 10 resorts in Florida by Condé Nast Traveler’s 2018 Reader’s Choice Awards. Thanks to you, our valued Members, who have continued to support us over the years. I’m sure you’ll all agree that our spectacular oceanfront setting, unparalleled Member experiences, and the iconic legacy of founder Addison Mizner makes this a truly special place. And we keep getting better! In recent years, we’ve built upon the success of long-standing programs, like LobsterBash and One Nite Stand. We’ve added new experiences, such as the inaugural singer-songwriter series, New Sounds of Nashville, Dockside Live and Artist-inResidence programming. We’ve curated truly unique, intimate experiences, such as Corks & Conversations and Sunset Rituals. And our culinary offerings are the best they’ve ever been. We have also invested in upgrading major facilities, such as the Country Club golf course. I’d like to thank our dedicated staff, including those that work tirelessly behind the scenes, for sustaining an excellent level of service day-in and day-out. And thank you to our Members for all the valuable feedback – your input and ideas continue to make our Club the success it is today. I look forward to celebrating with all of you as we say a fond farewell to a truly exceptional year.

CORKS & CONVERSATIONS

Q&A

Q: What can we look forward to for this season of Corks & Conversations? A: This year we are broadening the spectrum of artists and craftsman. When we founded the series two seasons ago, it was built upon the idea of bringing wine makers and chefs together. The idea was to host small and intimate dinners in unique locations and create an entire sensory experience, curating not only the menu and wine pairings, but also the décor, music and entertainment. For the majority of these dinners we focused on renowned wineries and wine makers in the industry. This year we have expanded this concept to feature the individuals that provide notable ingredients such as a Balsamic dinner we will host in Lucca in February alongside Giusti, a 400-year-old producer of some of the finest balsamic vinegars from Modena. Q: What other new developments can we look forward to? A: We are also expanding our cooking class lunches that we launched last year in Lucca, after resounding success, to now include both Chef Adam of Lucca and Chef Jordan of SeaGrille as hosting chefs of these multi-course, interactive lunches. We are bringing in several celebrity craftsmen, with visits from Chef Jimmy Bannos and Chef Mitch Lienhard. As a new addition to this season, we are introducing a series of celebrity bartenders who will host bar takeovers in Monkey Bar. At present we have Julie Reiner of the Clover Club in Brooklyn, New York, and Jason Stritch of Manresa in Los Gatos, California. Stay tuned for another exciting addition to this program. Q: Can you tell us more about the featured Celebrity Chefs? A: We are looking forward to collaborating with these talented chefs. Chef Jimmy Bannos, a third generation restaurateur based in Chicago at restaurant Heaven on Seven, is known for his Louisiana-style cooking and passion Julie Reiner for everything Cajun and Creole. Bannos’ ability to season aggressively without overpowering the palate is a defining characteristic of his flavor and style. Our Members can look forward to tasting his flavorful dishes in March. Our other visiting chef, Mitch Lienhard, is based in California and is the former chef de cuisine at Michelin three-star restaurant Manresa and winner of the S.Pellegrino Young Chef 2016 worldwide competition. Lienhard focuses on simple cuisine, showcasing ingredients for what they really are. Members will have the chance to dine with Chef Lienhard in April. Q: Anything else you’d like to leave us with? A: Our next Corks & Conversations event on Friday, December 21 is sure to be a night to remember. We will transform Boca Beach Club into a chic Champagne Soirée under the stars to celebrate the birth of two of the greatest masters of Champagne, Dom Perignon and Veuve Clicquot. Glasses will be overflowing with bubbly and rare vintages from both houses. This high-energy evening will feature passed hors d'oeuvres, a live DJ and dancing, all in an unparalleled atmosphere. RECIPE FROM SEAGRILLE CHEF JORDAN LERMAN

FLORIDA CITRUS CAPER BEURRE BLANC The perfect sauce to accompany any fish INGREDIENTS

DIRECTIONS

1 tablespoon vegetable oil

1. Heat 1 tablespoon of oil in a medium-size sauce pot over medium heat. Add the shallots and black peppercorns. Cook until tender, 3 - 4 minutes.

2 shallots, sliced thin 1 tablespoon black peppercorns 2 cups dry white wine 1/2 cup orange juice, freshly squeezed 1/4 cup lemon juice, freshly squeezed 1/4 cup grapefruit juice, freshly squeezed 2 cups heavy cream

2. Add the white wine and simmer until it has reduced 3/4 of the way down. 3. Add the fresh citrus juices and cook until reduced in half. Then add in the heavy cream and reduce in half until the sauce coats the back of a spoon. Lower the heat on the sauce to low. 4. Cube butter and set aside.

Salt, as needed

5. While whisking the sauce, add in a few butter cubes at a time until all completely incorporated.

Lemon juice, as needed

6. Season with the lemon juice and salt.

1 tablespoon capers, chopped

7. Strain through a fine mesh strainer. Mix capers into the strained sauce.

1/2 pound butter

This month, Morimoto’s special feature is the ICHIRoll, a favorite some Members may already be familiar with as an item on our secret menu. The roll was created by Chef Ichiro years ago at Boca Resort & Club and is made with Hamachi (fresh Japanese Yellow Tail), avocado, spicy mayo and is topped with tempura eel and eel sauce. It is a delicious combination of texture and flavors. She was a series regular on How to Be a Grownup for TruTV, the hidden camera show Girls Behaving Badly and has appeared on The Jay Leno Show, Hello Ross! with Ross Mathews, Jimmy Kimmel Live, Last Call with Carson Daly, Hell’s Kitchen, Last Comic Standing, Set List TV, and The World Stands Up on Comedy Central. QUINN DAHLE With appearances on the Tonight Show, Showtime, Comedy Central, Lopez Tonight and Carson Dal, Quinn is a smart, clean and witty stand-up comic with impeccable timing. Quinn’s comedy appeals to all age groups and ethnicities and he loves to talk about them all. Being married to a Mexican-American girl from east L.A., he is never short of material. Originally from Minnesota, before settling in Los Angeles, Quinn tours nationally as well as internationally and has entertained our troops as far away as Japan. KIVI ROGERS Turning off his computer was the best decision Kivi Rogers ever made. He hit the comedy circuit in the early ‘90s and has enjoyed the ride ever since. From landing a television development deal with Castle Rock Entertainment to being a featured performer on shows like The Tonight Show with Jay Leno, HBO’s Def Comedy Jam, and The Last Comic Standing, Kivi made his big screen debut in 1996 in the cult film “Romy and Michelle’s High School Reunion.” He followed that up with guest starring roles on hit shows to include Everybody Loves Raymond, Dharma and Greg, and The West Wing. While acting is cool, Kivi enjoys nothing more than making audiences howl.

THE IMPACT OF EXERCISE ON CHOLESTEROL CAN BE SUMMARIZED:

SOME EXERCISE IS BETTER THAN NONE AND MORE IS BETTER THAN SOME! SIMPLE CHANGES CAN HELP IMPROVE CHOLESTEROL.

BEFORE RESORTING TO MEDICATION, physicians often suggest exercise and diet modifications to increase HDL (good) and decrease LDL (bad) cholesterol levels. These lifestyle adjustments also help lower unhealthy triglyceride levels. EXERCISE GOALS: Experts recommend exercising at moderate to high intensity for a minimum of 30 minutes most days of the week. Aim for the goal of four 40-minute moderate-to vigorous-intensity cardio workouts per week or vigorous exercise for approximately 75 minutes per week. It is also recommended to combine intensity levels. For example, if you don’t have much time in your day, do a short, more intense workout. When you have time, but lack energy, exercise longer with less intensity. You can even break things up a bit on days you can’t find a solid block of time, by exercising in 10- or 20-minute segments. COMBINATION OF CARDIO & STRENGTH TRAINING: Studies prove a combination of aerobic and strength training produces the best results. The exercises synergize to achieve greater outcomes in fat loss, heart health, weight loss, and muscle gain. Aerobic workouts are most advantageous for cholesterol improvement. The American Heart Association recommends strength training a minimum of twice weekly. Building muscle mass improves your metabolic rate. The increased metabolic rate allows you to burn more calories, including while at rest. If you are overweight, shedding only 10 pounds can lower LDL cholesterol by up to eight percent! For the biggest cholesterol benefits, experts recommend increasing repetitions, not weight, as you progress. A personal trainer can customize a program for your needs. Use equipment, free weights, and exercise bands—or resistance train with your own body weight. MINDFULNESS: Stress negatively impacts health in many ways. During stressful times, cholesterol numbers can quickly worsen. Exercise works directly to improve cholesterol, while simultaneously providing stress relief. Consider adding mind-body workouts such as Yoga or Pilates to your fitness regimen. Done regularly, this complements your cardio and strength training by easing stress and cultivating a more balanced life.
