Dear Premier Club Members, AS WE WRAP UP THE CLUB’S HIGH SEASON, I’d like to thank all Members for helping to make the past year so successful. It’s been an exciting time! Our golf course renovation has led to increased tee time bookings, and participation in Club events has been better than ever. We’ve gotten outstanding feedback on our new programming, including the Corks & Conversation wine dinner series, the Artist-in-Residence program, and the enhanced live music lineups across the resort. The end of our high season does not, however, signal an end to new Club events and opportunities! We have new partnerships to announce this month, and our strong momentum will continue into the summer. First: we have just launched a partnership with JetSmarter, the world’s largest private air travel community. JetSmarter connects leaders in business, sports, entertainment, and culture with high-end experiences, including private jet travel all over the world. Through our partnership, all Premier Members will receive discounts on private jet travel, and we expect to unveil other exclusive Member benefits over time. To learn more, see page 18 or stop by the new JetSmarter Beach Club Cabana. We’ve also added a great new brand to our already diverse collection of boutiques. Michelle Farmer has been creating unique jewelry designs since 1996; her pieces combine fresh contemporary design with inspired accents of bohemian and vintage glamour. Michelle opened her first shop in Easthampton, NY, and boutiques soon followed in Palm Beach, New York, and St. Barth’s. With Michelle Farmer Collaborate, she has added captivating, ready-to-wear apparel to her expanding lifestyle brand and has also integrated pieces by fellow designers, artists, and friends. Michelle Farmer Collaborate at the Club joins children’s boutique EGG & Friends, injecting even more style into our lobby shopping experience. See page 17 for more details. Lastly, get ready for an amazing, innovative July 4th experience. The Singer Songwriter Experience – from July 1 to 4 – will include Artist in Residence Ed Roland, former front man of Collective Soul, and his new band Sweet Tea Project. This is a great chance to learn about the songwriting process first hand from the Sweet Tea musicians and lyricists, as well as to enjoy live performances of their original music across the resort. Congratulations to all Member children and grandchildren graduating this spring, Happy Father’s Day to all Member dads, and I hope to see many of you over the big Independence Day weekend!

AHI TUNA CRUDO

MAKES 4 SERVINGS

This dish is one of our most popular appetizers at SeaGrille.

INGREDIENTS •12 ounces ahi tuna medium, diced •1 ripe avocado, diced •2 ounces Peanut and Chile Sauce (see recipe below) •3 ounces Minneola tangelo segments or orange segments •2 ounces micro cilantro or regular cilantro •4 ounces soy citrus sauce

METHOD • Combine the diced tuna with 1- 2 tablespoons of the Peanut and Chili Sauce; mix gently with a spoon. • Divide into four bowls and garnish with avocado, citrus segments and cilantro. • Pour 1 ounce of the soy citrus sauce around the tuna and enjoy!

PEANUT AND CHILE SAUCE INGREDIENTS •1/2 cup rice bran oil •1/2 cup extra virgin olive oil (EVOO) •1 cup peanuts •1/2 small yellow onion, diced •2 1/2 garlic cloves •10 dried chiles de arbol, soaked in warm water •1 1/2 tablespoons kosher salt •1/4cup hot water

METHOD • In a large sauté pan, add the rice bran oil and EVOO heat on high for 5 minutes. • Add onions and garlic and toast for 2 minutes. Add peanuts and toast for another 2 minutes. • Add the chiles and water; cook until the peanuts are brown. Remove from heat. • When cool, put in blender and blend until smooth. Add the following: •Soy citrus sauce •1 serrano chili, charred •1/2 cup light soy •1/4cup fresh lime juice •1/2 cup orange juice

•1 garlic clove •2 sprigs fresh cilantro leaves •pinch kosher salt to taste Put all ingredients in the blender and blend.

THE SWEET TEA PROJECT

E

ED ROLAND reconnected with the rich club and coffeehouse scene in Atlanta when he was on hiatus from his duties as front man for Collective Soul. A number of the city’s most in-demand musicians found their way to Roland’s house, where the relaxed atmosphere inspired late-night jam sessions and unexpected collaborations. Bassist Brian Bisky and Christopher Alan Yates, who plays banjo and trumpet, were among the most frequent visitors. Guitarist Jesse Tripplet and drummer Mike Rizzi became regulars, too. Something special soon began brewing in those sessions. Creativity flowed, new songs took shape. As word got around Atlanta about the exciting happenings at Roland’s house, the band was asked by a local radio station to open a gig for Band of Horses. Following that, they did three-week “Rooted in Georgia” residencies at Eddie’s Attic in Decatur, where everyone from the Indigo Girls to John Mayer and Shawn Mullins cut their teeth, and The Melting Point in Athens. Ed Roland and the Sweet Tea Project then entered – and won – ESPN’s contest to re-imagine its NBA themed music. The band was featured on the SportsNation section of ESPN.com, and their version of the song – featuring an arrangement with banjo, dobro and trumpet – aired during the NBA All-Star weekend. That track was a preview of the unique sound that Ed Roland and the Sweet Tea Project subsequently captured when they recorded their debut album. Their unique sound is also showcased on their version of Bob Dylan’s “Shelter From The Storm,” which was released on the four-CD, all-star compilation “Chimes of Freedom: Songs of Bob Dylan Honoring 50 Years of Amnesty International.” So, get ready for a Red, White & Blue celebration infused with fresh flavor. Because, as anyone in Atlanta will tell you, nothing goes down smoother on a summer day than Sweet Tea.
