Classic Fish Pie

Who doesn't love fish on a Friday night? This classic fish pie is easy to make and can be frozen in batches for easy after work suppers. Any white fish can be used for this recipe, but cod or hoki works best. Make sure you dry the fish well before cooking to stop the sauce becoming watery. Serves 4.

Drinks Review By John Boylan I was recently reminded of a depressing conversation my brother, Peter, had with a customer at Carringtons. Peter was asked to recommend a Malbec and rightly picked out a classic French Cahors. The customer queried my brother's suggestion by asking "isn't Malbec a region in Argentina?". My brother's response was justified. In fairness to the customer, with the fashion for Argentinian Malbecs, his ignorance could almost be forgiven. Almost. Malbec is a grape variety which is commonly used with Merlot and Cabernet Sauvignon to make Bordeaux claret, but as stand alone it can make some cracking wines, traditionally from Cahors. Like Sancerre is Sauvignon Blanc, Cahors is synonymous with Malbec. As part of my Christmas present from my father -in-law I was lucky enough to receive a magical box from Majestic containing, amongst others, this L'instant Truffier Malbec from Cahors. The nose on this wine is of black cherry, blackberry and raspberries along with hints of anise and prune. The palate is bold and robust with juicy fruit and peppery tannin. I had this wine by itself but it would be ideal to accompany beef, spicy food or hard cheeses. This is wine with versatility and one I shall be having again.

… On TV ! The sharp eyed among you might have caught sight of a film crew hitting the ‘top shops’ back in January… Certainly, the bright lights focussed on TOTALLY U were unmistakable as the long established salon was taken over by the BBC as filming began for a brand new comedy. Starring Denise Welch, the six episode series from Tiger Aspect Productions, titled Boy meets Girls will be screened on BBC 2 later on in the year. Filming took place over three days from January 20th - 23rd and involved a sixty strong crew transforming the shop overnight on Monday ready for the actors to arrive in AGV on Tuesday morning! Round the clock security was required to guard the shop due to the expensive equipment kept in the salon during the shoot. Salon owner and Alkrington resident Lisa Moran explained; “Totally U was selected from hundreds of other potential salon locations based on the size and appearance. We have now been ear marked for future BBC projects due to the location and excellent surroundings. Everyone was fantastic - it was a great experience for the Salon and our team to be involved with” Look out for the series in the autumn and keep your eyes peeled in and around Alkrington in the months to come - First Ed Milliband, now Denise Welch - you never know who might be next to visit…

Taking early retirement: what you need to know Although research shows that, surprisingly, most people are actually quite happy in their jobs that doesn't mean that given half a chance many of us wouldn't take an early retirement. But leaving work before 'official' retirement age isn't as simple as packing up your desk and heading for the golf course. When considering early retirement the first thing that will come to mind is the effect on your finances. All our libraries are taking part in a national scheme to support people with dementia and their carers. The Reading Well Books on Prescription scheme has seen a new list of 25 titles that provide support and advice for people with dementia and their carers. Health professionals will be able to use the list to prescribe books to their patients and the titles will be available for anyone to borrow free of charge from your nearest library. The scheme already helps over 275,000 people with common mental health conditions feel better through self-help reading, but it’s the first time they’ve offered support for dementia care in the UK. The 25 titles on the dementia list have been recommended by health experts as well as people with lived experience. The list includes a range of books offering information and advice about dementia and normal aging, support with living well after diagnosis, practical advice for carers, personal accounts, and suggestions for shared therapeutic activities. SHOPPING ON eBAY [PART 2: SELLING]

Bill Keeth comes a cropper as an e-Bay shopper There are people who make an absolute fortune selling stuff on eBay. And there are tradesmen whose lives have been completely turned around by the commercial opportunities there afforded. Witness the died-in-the-wool family butcher I saw on TV one night, scion of generations of family butchers – features florid as a Man U shirt, face broad as a side of beef – who had sold a chain of butcher’s shops in favour of working from home, shifting beef, pork and mutton by the ton via the internet. Meanwhile, there’s a local guy who sells antique furniture for a living. Long-gone are his (rent draining) shop premises since he’s been trading via the internet – gone, too, are the super-sized (gas-guzzling) estate car and the heavy (hernia-inducing) lifting of yesteryear. Since opening his e-Bay account the heaviest thing the guy has needed to lift is a telephone handset. And his wallet. Because every one of his business transactions bar none is conducted via the internet. He’ll locate an item (or advertise it), then commission a local carrier to collect that item (or deliver it), and to pick up any payment that’s due to him, too. He does bomb in the United States, would you believe it? Not that he needs to travel thereto. Because, by arrangement, his carrier will simply deliver items of interest to major show grounds in the south of England where the deal is done. Meanwhile, another local couple – long-retired to Cornwall: sea views, milder weather – ended up with a stack of Man U programmes due to a family bereavement. Every last one of these was sold on eBay – some in batches, some singly. Then with the proceeds the vendors treated themselves to a top of the range Ford Mondeo saloon. Not bad if you don’t mind shelling out for fuel. Which I do, it just so happens – which is why I love the Ford Focus 1.8 diesel estate I’ve now driven two models of. Which is the reason why I recommended such to my son and daughter-in-law, who nowadays have two bread-snatchers to run about – Alex (age 3) and Will (12 months). Put them on to a 2 litre version of the beast, locally bought and a good example of the model. Then advertised their old car on eBay. Oh dear. eBay sales and I do not mix. Get this! Their Ford Focus 2.0 saloon in good condition, on which everything worked – YIPPEE! Sold for £495. Whereupon . . . The buyer (eBay calls them “winner”) must have changed his mind. Because the only subsequent e-mail I would receive from the guy invented an argument between us. “I note you have declined to supply your home address,” he whinged. “So I can only assume you no longer want to sell this car. So I don’t want to buy it and will complain to eBay.” You ever hear the like? My complaint to eBay was not heeded by the Po-voiced rep on the end of eBay’s telephone receiver – and I lost £70-odd in advertising fees. Had one more attempt at selling, advertising half a dozen brand-new pine interior doors for sale. RESULT – TWO guys claimed to have “won” the item, both Scousers - each of them had made their own pricing up. Whereupon eBay very kindly permitted them to libel me on site. Naturally, I no longer sell on eBay. Not that I ever did!

A FOOTBALL CHANT ANCIENT & MODERN Here’s something Association Football fans amongst our readership may be surprised to learn. That is to say, when a capacity crowd of 98,767 Catalans thronging Barcelona’s Camp Nou football stadium sings the praises of its favourite team: ‘Barça! Barça! Barça!’ – they are inadvertently chanting the surname of the Barça family whose most famous son, Hannibal (the “elephants”, not the “cannibal” one), crossed the Alps in 218BC to threaten the gates of Rome itself.

And lest we make any mistake about it, be it noted that had the outcome of that ancient conflict been different – that is to say, if Rome had lost the Punic Wars and Carthage had won, then those Catalans chanting: ‘Barça!’ at Barcelona’s Camp Nou would not nowadays be speaking another word we might recognize – and we, ourselves in the UK would be speaking a language totally different from what is sometimes referred to as the Queen’s English! The Barca family (pron. Barka in ancient times) were Carthaginian traders with wide-ranging commercial interests in Spain. (Hamilcar Barca was Hannibal’s father, Hasdrubal and Gisco Barca were his uncles.) So powerful were the Barcas that their place of origin together with the very tools of their trade are still remembered in contemporaneous place names (the town of Cartagena in Spain, for instance) and in the word bark (or barque), which is a small sailing vessel. The Carthaginians of north Africa were descendants of Phoenician traders from Tyre and Sidon in what is nowadays Lebanon. They settled around the entire rim of the Aegean and Mediterranean in cities such as Troy, Beirut, Tripoli, Acre, Tangier, Carthage, Utica, Marseille, Genoa, Cagliari, Palermo, Medina, Rabat, Cádiz, Cartagena, Málaga, Ibiza, Barcelona, Tarragona and – I would strongly (and controversially) suggest, Venice. Because, notwithstanding the fact that most Venetians would dispute this fact for reasons best known to themselves, it is to my mind somewhat more than interesting to note that the “Phoenix”, the emblem of the Phoenicians, translates as “Fenice” in Italian – that is to say, “Phoenix” translates as “Venice” in Italian if we but give a tad more emphasis to that incipient labial sound. QED, methinks. So why on earth would Italians look elsewhere for the founding fathers of Venice? Well, maybe it simply doesn’t suit a so-called Catholic country for the city of Venice to have been founded by devotees of the heathen God, Baal, in much the same way as it doesn’t suit present-day Red Flag loudmouths that the Labour Party was originally founded with strong support within the English Low Churches such as the Congregationalists, Methodists and Quakers. The Phoenicians trading methods differed greatly from those of Rome. There was minimal law making, road building and other forms of empire building. They would simply establish a trading post on the coast in order to attract commerce from the hinterland. When you are next in Venice block out all sound except the soughing of water alongside your gondola, breath in the dankness of the canal on which you are afloat. The clues to Venice’s foundation and history are eminently available via your five senses. Evil lurks there still and (see Casanova, Napoleon) reasserts itself from time to time, though in general it is competently contained by the widespread Christian culture of the past two thousand years.
