1 cup Quinoa 4 garlic cloves, pressed or minced 1 can of your favorite vegetable-mix ¼ cup coconut oil 1 medium red onion, chopped ½ teaspoon dried thyme 1 large can (28 ounces) diced tomatoes, drained 2 cans black beans, rinsed and drained 4 cups vegetable broth 2 cups water 1 teaspoon salt, more to taste Pinch red pepper flakes Freshly ground black pepper Juice of ½ to 1 medium lemon, to taste
