Mince Meat Crescents 1/2 cup Margarine 4 oz cream cheese 1 cup flour 3/4 cup ready-to-use mince meat 1/3 cup sugar 1 tsp. cinnamon

Cream together margarine and cream cheese until well blended. Mix in flour. Shape dough into a smooth ball; wrap in wax paper. Chill 1 hour. Rollout on lightly floured surface to 1/8” thickness. Cut with 3” round cookie cutter or the rim of a glass. Place about 1 tsp of mincemeat in centre of each round. Fold over and press edges together. Place on un-greased cookie sheets. Bake 375 degrees, about 15 minutes. Combine sugar and cinnamon in small bowl. Allow crescents to cool slightly. While still warm, roll gently in combined mixture. Cool on rack completely. Pumpkin & Cranberry Muffins (makes 12 large healthy muffins)

3/4 cup Oat Bran (I prefer Scottish Oatmeal) 3/4 cup Whole-Wheat Flour 3/4 cup Sugar 1 TBS Ground Flax Seeds (optional) 2 tsp Cinnamon 1 tsp Nutmeg 1 tsp Baking Soda 1 tsp Baking Powder 1/2 tsp Salt Mix all these dry ingredients together Add: 1 cup Dried Sweet Cranberries (OR raisins OR mixture of both) 1 cup Coarsely Chopped Nuts (walnut or pecan) Toss to coat the Raisins and Nuts Add: 1 cups Canned Cooked Pumpkin 2 Eggs (unbeaten) 1/2 cup Vegetable Oil 1/2 cup Plain Yogurt or Buttermilk (I have always used Yogurt) Stir only until well mixed Spoon batter into paper-lined, or non-stick, large muffin tin. Bake in 400F (200C) oven for 30 minutes. G. Weeks

Hustle-Ups Cookie Recipe

Crispy Coconut Shrimp

½ cup butter ½ cup sugar 1 ¼ cup flour ½ tsp. nutmeg 1 egg pinch of salt Lemon juice for flavour – just a little Lemon zest for garnish

1 cup flaked toasted coconut 1 pouch Shake ‘N Bake Extra Crispy Original Coating Mix 1/4 tsp. each curry powder and cayenne pepper 24 raw large shrimp - peeled and deveined 1 egg beaten 1/2 cup Kraft Signature Creamy Masala Dressing 1 Tbsp. chopped fresh cilantro Heat oven to 400 degrees F Combine coconut, coating mix and seasonings in shallow bowl Dip shrimp in egg, then roll in coconut mixture until evenly coated. Place on baking sheet. Bake 10 to 12 min. or until shrimp are tender. Mix dressing and cilantro. Serve with shrimp.

Cream together ½ cup butter and ½ cup sugar. Add 1 ¼ cup flour and 1 egg; mix. Add pinch of salt, ½ tsp. nutmeg, and lemon juice; mix. Place cookie dough in dollops onto the ungreased cookie sheet. Sprinkle lemon zest on top of each dollop. Place into pre-heated 375 degree oven and bake for 10-12 minutes. Helen Clement

Chocolate Brittle Surprise 35 unsalted crackers 1 cup butter 1 cup packed brown sugar 2 cup semi sweet chocolate chips 1 cup chopped almonds (optional) Preheat oven to 350. Cover cookie sheet with parchment paper. Place crackers on parchment paper in rows. Melt butter and brown sugar over medium heat, stir often, until mixture almost comes to a boil. Pour over crackers. Bake 17-20 min. Should bubble not burn. Sprinkle chocolate chips over hot crackers. Spread chocolate chips when melted. Sprinkle with almonds (optional) Refrigerate 1hr. Break into pieces and store in fridge. Enjoy! C. Snelling

Fast and Easy Orange Coffee Cake

½ loaf (16 oz) each chocolate and plain pound cake 1 egg 1/2 cup sugar 4 tsp baking powder 1/2 cup orange juice 1/2 cup milk 1/3 tsp salt 8 tbsp melted margarine 2 cups flour grated rind of 1 orange Beat egg with fork in good sized bowl. Add milk, sugar, salt and grated rind. Mix well. Add flour, melted margarine, orange juice, baking powder & salt. Blend well. Place mixture in greased 8” or 9” square pan. Topping! In small bowl combine the following: 2 tbsp margarine 1/2 cup brown sugar 1 tsp cinnamon 1/2 tsp nutmeg Once well mixed, sprinkle on cake surface and gently press down. Walnut White Chocolate Snowball Cookies

3/4 cup walnuts finely ground 1 1/4 cups icing sugar 1 cup softened butter 1 tsp vanilla 1/4 tsp salt 2 cups all purpose flour 3/4 cup white chocolate chips Mix together 1/4 cup icing sugar and walnuts then In a separate large bowl beat butter until fluffy, stir in walnut mixture and then vanilla and salt. Stir in flour 1 cup at a time. Sprinkle with chocolate chips and stir in. Shape 1 inch balls of the mixture and arrange 2 inches apart on baking trays lined with parchment paper cover and chill for 30 mins. Bake at 325 degrees oven for about 22minutes. Let rest on pan for 3 mins then sprinkle with icing sugar in a wide bowl about 6 at a time place on a rack to cool and then reroll then in the icing sugar again.Can freeze up to a month.

Whip 2 cups of margerine until light and fluffy. Add to the margerine, 2 cups packed brown sugar, & 1 tablespoon vanilla, cream until completely mixed. Add 4 large eggs, 1 at a time, mixing until completely incorporated. In a second bowl, mix together, 4 cups white flour, 4 cups rolled oats, 2 teaspoons baking soda, & 2 teaspoons salt. mix the dry ingredients from the second bowl, to the ingredients in the first bowl. This will make a stiff mix. If you have no heavy mixer, a pair of vinyl gloves and mixing by hand works wonders. Finally , mix in 2 cups of candy pieces (m&m’s, smarties, choc chips, whatever you desire). use teaspoons to drop on parchment paper, and bake for 12 minutes at 375 degrees. Makes approximately 5 dozen. Enjoy! F. Maslen

Chocolate Kahlua Balls

Peppermint White Hot Chocolate

1 c semi-sweet chocolate pieces 1/2 c Kahlua 3 tbsp corn syrup 1/4 c finely chopped cherries 1/2 c finely chopped raisins 2 1/2 c crushed chocolate wafers 1/2 c sifted icing sugar 1c finely chopped walnuts or pecans

2 ounces white chocolate, chopped 1/2 cup whole or two percent milk 1/2 cup half and half 2 tablespoon clear peppermint syrup Optional: Whipped cream for garnish

Directions: Place the white chocolate in a small bowl. Combine the milk and half and half in a small saucepan over medium heat and heat until scalding Melt chocolate over very low heat. Remove from (until bubbles appear around the edges). Grama’s Holiday Ginger Snaps

ngredients: 1 Tbsp. corn syrup 1 1/4 cups white sugar 1 cup butter 1/4 cup water 1 1/4 cups toasted slivered almonds 1 cup Bernard Callebaut (or any other good quality) milk or dark chocolate chips Instructions: In a large heavy saucepan, gently boil syrup, sugar, butter and water until “hard crack” appears on candy thermometer, 300F (150C). Do not stir. This will take at least 20 minutes. Remove from heat, add almonds and stir well. Spread on an ungreased cookie sheet and before candy is allowed to cool, sprinkle with chocolate chips. As the chocolate melts use a spatula to spread it evenly over the candy. Cool in fridge or freezer. Break into bite-sized pieces. Don’t attempt to double recipe.

Almond Hazelnut Biscotti with Sambuca Ingredients: 1 3/4 cup unbleached white flour 1 cup whole spelt (farro) flour 1 ½ tsp baking powder ½ tsp salt 1 ½ tsp ground anise seed, I have used the whole seeds too, if that is easier ¾ cup sugar 3 Tbsp melted butter or walnut oil or a combination of the two 3 large eggs 1 tsp vanilla extract 1 tsp almond extract 4 Tbsp Sambuca ¾ cup toasted almonds ¾ cup toasted hazelnuts put the nuts into a strong bag and bash them up with a rolling pin or run them through the food processor for a few seconds, just crushed not pulverized to dust Directions: Combine well all dry ingredients in a largish bowl. Blend with a whisk all wet ingredients in a small bowl. Pour the wet ingredients into the dry, stir until the dough comes together then turn it out onto a lightly floured surface, knead ball with floured dusted fingers until dough is too sticky to handle, with a knife divide the dough into two, then roll/shape into into two logs of approximately 13inches long, 11/2 inches wide and 1 inch high. Transfer onto a parchment lined cookie sheet, logs at least 3 inches apart, flatten the tops them slightly. Bake at 350 F for 30 minutes, until they are dry and fairly firm to the touch. Remove and turn the oven off, cool logs about 10 minutes, then slice, pop them back on the pan, and leave them in the warm oven overnight or about 6-8 hours to dry out. T. Silberer

Frosty the snowman was a jolly happy soul, With a corncob pipe and a button nose and two eyes made out of coal. Frosty the snowman is a fairy tale, they say, He was made of snow but the children know how he came to life one day. There must have been some magic in that old silk hat they found.
