1. Cook the sweet potato in boiling, lightly salted water until tender, about 15-20 minutes, Drain well, then mash and cool slightly.

2. Stir in the low fat soft cheese and tomato puree. Season. Keep warm over a low heat whilst cooking the pasta, stirring often. If needed, add 2-3 tablespoons of boiling water to thin the sauce down.

3. Cook the pasta in a large saucepan of lightly salted boiling water for 1012 minutes, or according to pack instructions.

4. Add the broccoli and courgette for the final 5 minutes. Drain thoroughly and share between 4 warm bowls or plates. Spoon the sauce over the pasta and scatter the pine nuts and chopped parsley or basil leaves over the top.

1. Preheat the oven to Gas Mark 4/180째C/fan oven 160째C. Place 12 paper or silicone standard sized cake cases into a bun tray.

2. Put the soft margarine, caster sugar, eggs, vanilla essence and flour into a large mixing bowl. Beat vigorously for 1 minute with a wooden spoon until pale, light and creamy. Spoon the mixture into the cake cases.

3. Bake in the centre of the oven for 20-25 minutes, until risen and golden brown. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

4. To make the icing, beat the low fat soft cheese in a bowl until smooth and creamy. Sift in the icing sugar and beat well. Separate into two batches, mixing red food colouring into first batch and yellow food colouring into the second batch. Chill for 20 minutes, then pipe or spread on top the cakes and decorate with the sugar sparkles.

Hey, I was out running with my dog early this morning The first time I've been out running for a few weeks.

I mainly stuck to the grass on the run, because I don't like having my dog on the lead when running and he doesn't understand roads at all.

Anyway....

I pretty much ran at an easy pace the whole time. I very rarely say this.... but running slow is actually really good for you (in my opinion).
