hether gathering with friends for a cup of good cheer, perusing boutique-lined streets in search of that perfect gift or delighting in festive markets and events, immerse yourself in the heart of Vancouver –and its many merry-making districts – this holiday season.

Starting with the city’s very own Rodeo Drive, Alberni Street dazzles with shops baring some of fashion’s most iconic names. Grab a cuppa from JJ Bean Coffee Roasters and saunter through Versace, Yves Saint Laurent, Prada and Tiffany & Co. for presents to please the most discerning style-seekers on your list, or support local at Vancouver-based Blubird, brimming with the season’s trendiest fashions. Craving some seasonal self-care? Check in to Chi, The Spa at the Shangri-La Hotel for some serious pampering before feasting on sustainable seafood at Coast – one of many world-class restaurants sprinkled along the street.

Next, shop till you drop on Robson Street – a three-block district boasting 150 shops, including well-loved Canadian brands Lululemon, Aritzia and Roots alongside Japanese minimalist retailers like Muji and Miniso. hen it’s time to make merry, set your bright eyes on South Granville – stretching from the south end of Vancouver’s Granville Street Bridge to 16th Avenue – for some of the best seasonal shopping, dining and holiday experiences in the city. Never had gravlax? Make it a must to try it this Christmas! This Nordic dish consisting of cured raw salmon is a great way to start your festive meal.

2 pcs Sockeye salmon filets, skin on, pin boned 140 g kosher salt 400 g brown sugar 2 bunches fresh dill, chopped coarsely 20 g coriander seeds 20 g fennel seeds 8 g star anise 2 pcs lime, zested 2 pcs lemon, zested Pat salmon filets with paper towel to remove moisture. Combine coriander, fennel seeds and star anise in a pan and toast on medium high heat. Careful not to burn. Once spices have cooled, coarsely crush spices in a mortar and pestle. In a small bowl combine spices, salt, sugar, dill and zest of lemon and

lime. Mix thoroughly. In a large casserole dish place 25 per cent of salt mixture on the bottom and spread loosely. Place salmon fillets skin-side down onto curing mixture. Then place remaining mixture on top of filets and evenly spread over salmon until completely covered. Loosely lay plastic wrap over salmon and place

Lucky us, strawberries are available year-round, and make a perfect paired-with-brie holiday bite! 2 each medium strawberries 1 tbsp balsamic reduction 100 g brie cheese 25 g pistachios 1 puff pastry 1 egg whisked with 2 tbsp water 14 dark-chocolate chips Cut off strawberry stems and cut strawberries in half lengthwise. Cut each half into three wedges. Place in bowl. Toss with balsamic reduction and set aside. Cut brie into half-inch cubes. Set aside.

Toast pistachios in oven for 5-7 minutes. Cool, crush and set aside. Preheat oven to 375 F. Spray a mini muffin tin. Roll puff into quarter-inchthick sheet. Using a fork, dock sheet. Take rounds and press into muffin tins. Bake in oven for 5-7 minutes, then take out and press down sheet to form a tart. Place back in oven for 7-10 minutes or until golden. Remove from oven, immediately place 2 pieces of dark chocolate chip in each tart and allow to melt. Place a piece of brie in each tart. Place in oven for 3-4 minutes just to melt the brie. Remove and top with one strawberry wedge and sprinkle with pistachio crumble.

Brining is one way to ensure a moist bird, and it’s easy – it just takes preparation. Serves 12. 4 Chestnut And Apple Stuffing

1 Roasted And Stuffed Turkey 1 turkey, 12- 15 lbs 2 tbsp smoked paprika 5 tbsp unsalted butter Juice of 1 lemon 2 tbsp vegetable oil Preheat the oven to 400 F. Begin by removing the turkey legs. Wrap the legs tightly in plastic wrap and refrigerate until needed. Remove and set aside the giblets, then rinse the turkey and pat it dry with paper towels. Season the turkey inside and out with 1 tbsp of the smoked paprika and some salt and pepper. Rub 2 tbsp

5 Finish Turkey Preheat the oven to 400 F. Cut 2 squares of aluminum foil large enough to hold the turkey legs. Unwrap the turkey legs. Using a boning knife, hold a turkey leg and run the knife along the side of the bone to separate the meat from the bone. Try to keep the meat in one long piece. Repeat with the second turkey leg. Place the meat on a clean work surface and season with 1 tbsp of smoked paprika and salt and pepper. Arrange 1/4 of the stuffing down the centre of each piece of leg meat. (Spoon the leftover stuffing into a small casserole dish.) Tightly roll the leg meat over the stuffing. Rub 1/2 of the remaining butter on each piece of foil, then rub the foil over the turkey rolls. Place a rolled turkey leg onto each piece of foil. Fold the bottom half of the foil over the turkey leg, then the top half and fold

The holidays aren’t just about turkey. Try this delicious fish dish – it’s a main course that’s sure to impress! Sablefish

Finish Barley Pilaf

Six 5 oz portions of sablefish, skinned and boneless 250 ml low-sodium soy sauce 125 ml sweet soy sauce 125 ml maple syrup 3 tbsp butter 1 tbsp kosher salt

2 cups cooked pearl barley 1/4 cup chicken stock 6 tbsp finely sliced leeks 4 tbsp sour cream 2 tbsp butter 4 tbsp tomato dice (peeled and seeded) 4 tbsp finely sliced chives 2 tsp lemon juice 1 tbsp extra-virgin olive oil Kosher salt and white pepper to taste

Combine all ingredients in a mixing bowl and whisk until combined. Place fish into marinade and let it sit for 24 hours. Remove fish from marinade, pat dry and transfer to baking tray. Take remaining marinade and transfer to a small sauce pot, place on medium heat and reduce by half. Strain through a fine strainer into another clean sauce pot. Bring glaze to a simmer once more and add butter. Whisk glaze until butter is fully incorporated and set aside. Preheat oven to 375 F. Place marinated sablefish in a baking tray, place in oven and bake for 12 minutes. Insert a fine skewer into the centre of the fish. If you feel no resistance, then the fish is cooked through. Using a blow torch char the surface then brush on the maple tamari glaze. Pearl Barley 1/2 cup pearl barley 6 L water 2 tbsp extra-virgin olive oil Place 2 L of water in a pot with pearl barley, bring to a simmer and cook for 30 minutes. Strain barley and transfer back to pot. Add 2 L of water again and bring to a simmer, repeating the process twice more. After cooking with clean water three times, strain, rinse in cold water and toss in olive oil.

In a pan over a medium heat, incorporate the cooked pearl barley, chicken stock, leeks, sour cream and butter. Stir continuously until most of the liquid has been absorbed and has the consistency of a risotto. Add the rest of the ingredients and set aside. Cook Vegetables 1 bunch radishes (washed and tops trimmed) 1 clove garlic 1 bay leaf 1 sprig thyme 1 bunch broccolini 1 bunch green onion cut in half (roots trimmed) Kosher salt and olive oil to taste Place radishes in a small pot with just enough water to cover, add bay leaf and thyme, and simmer for 15 minutes. They should be bright pink and tender to touch. Season with salt and a touch of sugar. After cooking, cut radishes in half. Toss green onion and broccolini in a mixing bowl with salt and olive oil. Place veg on grill until charred and cooked through. To plate Place barley pilaf into the centre of the plate, garnish with your vegetables. Place sablefish on top of the barley. Drizzle tamari glaze as a place sauce. Garnish with desired garnishes. Serve.

What makes this holiday dessert so good? By combining the warm tart and all the spices and flavours in the garnishes with a scoop of creamy ice cream, a harmony of hot and cold, subtle and flavourful, smooth and crunchy is played out on the palette. Makes 20 3-inch tarts. Almond Filling 1-1/2 cups butter (soft) 1-1/2 cups sugar 1-3/4 cups ground almond 3 eggs Cream butter and sugar until pale yellow. Add ground almonds and mix until incorporated. Then add eggs one at a time and mix until incorporated. Set aside. Pear Vanilla Glaze 3/4 cup pear puree 1/3 cup water 1/2 pod vanilla 1/2 tsp pectin Scrape the seeds out of the vanilla pod. Combine all in a pot and boil for 1 minute. Reheat glaze and brush onto the baked tart before serving.

Spiced Cream 3 cups cream 1/2 cup sugar 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cardamom Whip cream and sugar till medium peak, add in spices to your liking and mix well. Tart Assembly Par bake 3-inch store-bought frozen tart shells. Fill tart shells 3/4 full with almond filling. Slice pears to your liking, place pears into almond filling. Bake at 180 C for 20 minutes or until the top is golden. Brush top of tart with warm pear vanilla glaze to give it a shine. Serve with spiced cream for a touch of holiday warmness. Optional garnish: caramelized cinnamon almonds, salted caramel sauce, pear ginger coulis, fruit compote.
