The Best Hamantaschen of All
Hazelnut Raspberry Hamantaschen! Ingredients
Directions
3/4 cup ground roasted hazelnuts
1 Whisk flour, ground hazelnuts, baking powder, salt, and cinnamon together.
2 1/4 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1/8 teaspoon cinnamon 2/3 cup coconut oil Scant 2/3 cup sugar 2 large eggs 1 teaspoon vanilla extract Raspberry preserves, Nutella or the filling of your choice
2 In another large bowl, cream the coconut oil and sugar with an electric mixer. 3 Add eggs and vanilla, and beat until smooth and well-mixed. 4 Slowly add flour mixture to oil mixture and beat until dough starts to form a ball. 5 Knead dough till ingredients are mixed. Flatten into a disk, wrap in plastic wrap, and chill for 20 minutes. 6 Preheat the oven to 350 F. 7 Divide dough into quarters. Place each piece between wax paper and roll out 1/4-inch thick. Use 2-inch round cookie cutter to shape. Repeat with remaining dough.
8 Transfer circles to parchment-lined baking sheets. Place 1/2 tsp of filling in center of each circle. 9 Fold up edges to form a triangle, allowing some filling to show. Pinch corners to seal. 10 Bake hamantaschen for 12 to 14 minutes, until dough is firm and bottoms turn golden. 11 Transfer hamantaschen to a wire rack to cool. Enjoy!
