The Easiest Hamantaschen Recipe! INGREDIENTS 3 eggs 1 cup granulated sugar 3/4 cup vegetable oil 2 1/2 teaspoons vanilla extract 1/2 cup orange juice 5 1/2 cups all-purpose flour 1 tablespoon baking powder 1 cup fruit preserves, any flavor

DIRECTIONS 1. Preheat oven to 350 degrees and grease cookie sheets. 2. In a large bowl, beat eggs and sugar until fluffy. Stir in oil, vanilla and orange juice. 3. In a small bowl, combine flour and baking powder. Then stir into batter to form stiff dough. 4. On a lightly floured surface, roll dough to 1/4 inch in thickness. Cut into circles using a cookie cutter. 5. Place cookie rounds 2 inches apart onto cookie sheets. 6. Spoon 2 tsp preserves into the center of each round. 7. Pinch edges to form three corners. 8. Bake for 12 to 15 minutes until lightly browned.

9. Allow cookies to rest for 1 minute

on cookie sheet before moving to wire racks to cool.
