Pan-seared Fillet Mignon with a creamy Peppercorn sauce Rinse Cycle Using the same water temperature you started with, rinse the shampoo out starting with the canopied ears again. Use your thumb to move the hair around and loosen the suds. When the ear doesn't feel slimy and the hair squeaks when your rub it, you have rinsed it well. Move on to the other ear, then the neck and chin. Then direct the water flow straight down the spine slowly, moving the hair around by tunnelling your fingers into the wet hair from neck to tail keeping the line of soap suds ahead of the water flow. (Suds in the lead, your hand second, moving water and suds towards the tail and water flow third, closest to the head.) This is the quickest, most efficient way to rinse shampoo out of the hair using gravity and the water flow with gentle agitation to help move it along. Do the same technique along the sides and down each leg and down the chest area. Next rinse the tail and bum area thoroughly. Then rinse the inside legs and arm pits, belly and groin areas last because if you follow the natural path of the water these areas are where the rinsed soap, from the top of the dog, ends up. You rinse this area last. When the top of the dog is rinsed squeaky clean and believe me, you'll hear the hair squeak as you run your fingers through the well rinsed areas, you'll know if you missed any spots because they will be slimy or slippery to the touch. So, rinse the under carriage of the dog last and thoroughly. Using the same basic procedure as for the small dogs, large dogs are not that hard to wash. The only thing different is that you do half of the dog at a time. Wet half of the dog, then, turn the dog around using the swing turn and wet the other half. Wash half the dog, swing, wash the other half, rinse that half, then swing and rinse the other half and so on.Most dogs only have to have one shampoo if you scrub them properly. Some dogs will need to be spot cleaned in the second shampoo. For example, lower legs, under arms or belly because of mud etc. You only need to shampoo that area again, not the whole dog, till that area is squeaky clean like the rest of the dog. Outdoor or farm dogs or dogs that roll in a wonderful scent will need that second full shampoo to get everything out. There are certain breeds you can't get away with only one shampoo, Cocker Spaniels for example because of the excess oil in their very fine thick coats. Use your eyes, nose and touch to determine if you need to spot clean or go for the full second shampoo. Don't be lazy, do it right the first time. Conditioner Pump a blob of conditioner into your hand and rub your palms together. Once again, start at the ears and lightly slide them through your hands, leaving a skiff of conditioner on them. Next, move to the tail and squeeze in the rest from base to tip. Pump another blob into your palm, rub your hands together and glide your hands over the entire body and down the legs distributing the conditioner evenly over the hair. Run your hands and fingers over the entire body again and work the conditioner into the hair. You know when you`ve missed a spot because the hair feels rough. Apply conditioner to the missed spots. Comb the bum pants and leg feathers with your fingers to distribute conditioner thoroughly through them and apply more conditioner where needed. Different hair types and lengths require different amounts of conditioner. Common sense rules here. The tenderloin is the most tender cut of beef and also the most expensive. It lacks the flavour of other tender cuts, so it is usually served wrapped in bacon or with a sauce like our creamy peppercorn sauce. The flavors of the brandy and the pungent aroma of peppercorns fuse perfectly with the shallots and heavy cream to make this one of my favorite dishes to make.
4 cuts of Filet mignon 6 oz each 2 tbsp grape seed or olive oil 3 Tbsp butter Salt and Freshly ground pepper Sauce 1 finely chopped shallot 1 Tbsp brined green peppers or colored peppercorns 1/2 cup Cognac or Brandy 1 tsp Dijon mustard 1 1/2 cups beef stock 3/4 cups 35% cream In a cast Iron pan, heat the oil on Medium high heat. Season the steaks well with the salt and pepper on both sides. Once the oil is hot, add the steaks. Brown the steaks for 2-3 minutes on the first side or until caramelized. Turn the steak and add 2 tbsp of the butter and cook as desired. Set meat aside on a plate and cover with foil. In the meantime, and in the same pan, melt the remaining butter 1 tbsp and sweat the shallots and peppercorns for 1 minute stirring frequently. Deglaze with cognac and let reduce by 1/2, while scrapping browned bits from the bottom of the pan. Add the mustard and beef stock. Let reduce for 2 minutes. Add the cream and let reduce to a sauce consistency. Taste and adjust the seasoning. Set aside to keep warm. Serve the filet mignon steaks drizzled with pepper sauce.

It’s the New Year and you’ve made a commitment to better your health – Congratulations! This is a big step towards leading a healthier life. If part of this commitment involves a membership at a health club, keep reading to learn more about how trainers can help you reach your goals at Anytime Fitness. Each member who joins Anytime Fitness receives a complimentary Fitness Consultation with one of our friendly, certified personal trainers. The objective of the fitness consultation is to arm the member with the knowledge of what they need to do to achieve their specific goal. How many days they should work out. What type of exercises they should do. How to properly stretch. How often they should rest. How nutrition impacts their success. Some people have the dedication and discipline to use the information obtained in the fitness consultation to stick to a routine and make fitness a consistent part of their lifestyle. For everyone else, personal training is a proven method for achieving your goals and holding yourself accountable. There are a variety of options to choose from when considering personal training services. Virtual Coaching Cost: $ (low) The new Anytime Fitness App will allow you to track your meals and workout, while also integrating with wearable tech and other fitness apps such as MapMyFitness or MyFitnessPal. In addition to all of this, for a low monthly fee, members can have access to a virtual coach through this app. Their coach (who is a personal trainer employed at their home club) can provide them with workout ideas, recipes, and hold them accountable to completing the recommended amount of workouts each week. If the coach notices their member has not been to the gym in a few days, they will touch base to see what is happening and if needed, remotivate the member.
Group Training Cost: $$ (mid range) Group training is an effective and fun way to get in shape. Not only will you be held accountable by your trainer, your new peer group will also be cheering on your success. Group training sessions can accommodate anywhere from 3 to 12 participants and are a great idea if you are serious about your fitness goals, want to meet like-minded individuals, and get personal attention from a trainer. It is also a very economical option compared to 1:1 training. A variety of fitness levels, ages, and goals can be accommodated in these sessions and the participants are amazed at how much fun exercising can really be. 1:1 Personal Training Cost: $$$ While this is the most expensive training option, there are many reasons to choose this route. If you have specific n e e d s s u c h a s r e c o v e r i n g f r o m a n i n j u r y, athletic/competition or job-related (i.e. corrections/military) training, or simply do not feel comfortable/confident working out on your own or in a group, 1:1 personal training is for you. Each session will be just you and your trainer. While they will be working on your physical health, trainers in this setting can also be beneficial for their client’s mental or emotional health. 1:1 personal training is also a great place to start in order to gain the confidence and physical strength to move into group training. Regardless of how a member chooses to begin their fitness journey, Anytime Fitness provides a scalable approach to personal training, allowing clients to adjust their services depending on their budgets, goals, or physical ability. Our objective is to keep members engaged so that their success is inevitable. Rosanna Catenaro, O2i
