BBQ Chicken Salad This Fourth of July, include a hearty salad in your food plans. With a mix of veggies, greens and protein from black beans and chicken, you and other healthconscious party-goers can enjoy a healthy option at any summer celebration. Ingredients: Dressing 1 tbsp. barbecue sauce 1 tbsp. fat-free plain Greek yogurt ¾ tsp. ranch dressing/dip seasoning mix Salad 4 cups chopped romaine or iceberg lettuce

¼ cup chopped tomato ¼ cup peeled and chopped jicama ¼ cup canned black beans, drained and rinsed 1 oz. (about 2 tbsp.) chopped avocado 2 tbsp. sweet corn kernels

Method: To make the dressing, combine barbecue sauce, Greek yogurt and ranch seasoning in a small bowl. Add 2 teaspoons of water and stir until uniform. Place all salad ingredients in a large bowl.
