butter and icecream from the ‘farm gate’. Cheeses available will include several varieties of hard cheese (such as Gouda, cheddar and Wiltshire), soft cheeses (including feta and camembert) and blue cheeses. Where possible, Mike will also make varieties ‘to demand’.
In 2009, Mike, originally from Zimbabwe, and Sue, from New Zealand, settled in Talgarno after Mike took up a position as Mechanical Projects Manager at Charles Sturt University. Mike had previously owned a dairy farm in Zimbabwe for about 20 years, which supplied pasteurised and packaged milk, cheeses and flavoured milks to schools and major supermarket chains. He then spent nine years in New Zealand where he started up a small herd of Guernsey cows, again supplying milk and cheeses locally. Although Mike came to Australia with valuable experience and an extensive knowledge of milk and cheese production, he nevertheless undertook a further course to familiarise himself with Australian conditions, similarities and differences. Mike’s Talgarno herd of Guernseys produces milk containing the A2 protein, which is suitable for people with a lactose intolerance. He also uses non-animal rennet, making it suitable for vegetarians. Mike has chosen the Guernsey breed for both their temperament and good production rates - 20 litres of their milk produces 2.2 kg of cheese, compared to Holstein Friesian cows which produce 1.6 kg.
