Mandii Green, owner and founder of Belles Creative, has partnered up with Steve Caldwell of Elevate Lifestyle to bring you Charlotte Wine & Tapas Magazine to coincide with Charlotte’s 1st annual Wine & Tapas Week. This magazine is a combination of everything about wine, fine dining and Charlotte culture.

I spent over 7 years working with brands such as DreamWorks, Target, and Salt Life while living in several major cities in the U.S. Then I made the move to Charlotte and fell in love with everything about the Queen City. I admire the support of local businesses and most importantly the people.

This publication is our way of getting more involved and showcasing some of the things that make this city a wonderful place to live - wine, dining and inspiring stories.

AN INTERVIEW WITH

Ted Williams

Ted Williams, owner/founder of Charlotte Agenda , has been changing the face of local digital media in Charlotte for the past couple years. The young entrepreneur took a leap of faith in his career, and it seems to be paying off well as his venture continues to grow.

We sat down with Ted to learn about Charlotte Agenda and where it’s going, as well as a little bit about the man himself.

Q: How would you describe Charlotte Agenda for our readers who may not be familiar with it?

A: We think of ourselves as the user’s guide to Charlotte. We focus on doing useful news content told in a conversational voice.

Q: What made you want to start Charlotte Agenda?

A: I worked in media for about ten years and felt like tomorrow’s media companies were being born then and there. I was actually at the Charlotte Observer, and we created a lot of strategic PowerPoint plans – which is much less fun than creating what the future of media can look like. At a certain point you want to see if you and your team are good enough to create what a local media company can look like. After talking with my wife back and forth for a couple of months I decided to leave a job that I loved and start The Agenda.

Q: How large has your company grown from when it all began?

A: When it all began I was starting from scratch. I just remember waking up at 3 AM on the day after I quit my job thinking “Oh Boy!”, but I started off with a newsletter. It was just me and a partner at the time, Katie (Levans) Loveluck. I recall signing my mom up first for the newsletter. I remember hoping that it would all work out. I would say the first nine months were very hard.

We were growing an audience and trying to define what the brand would look like. We had to figure out what the value proposition would be and build the actual product sections of the website. We planned how we would handle sections of our newsletter and have preliminary conversations with advertisers. It was a super stressful nine months. Now, we’re about 2 1/2 years old, we have six fulltime employees, four part-timers, and about six core freelancers that we work with regularly.

Q: In what ways do you think Charlotte Agenda has benefited the city of Charlotte and it’s locals?

A: We hear from a lot of readers who are new to the area. Charlotte is obviously a growing city. There are people looking to connect with leaders, find things to do, and really how to just experience Charlotte. I believe one of the problems that we’ve solved is helping people connect deeper with their own city. Cities are becoming more important in the U.S., and I think that Charlotte feels fresher and not quite as established.

That’s why I think our product is important.

It helps new transplants as well as people who are born and raised here discover their city, connect with each other, and just enjoy more fun activities. We also help raise better policy for the city.

Q: Are you a Charlotte native and if not what brought you here?

A: No, actually I grew up in South Florida in a town named Vero Beach. I went to school in Virginia and then lived in D.C. where I worked for a start up and a digital media company. My then girlfriend, now wife, was moving down to Charlotte. I thought “oh no”, as I didn’t necessarily think of Charlotte as the capital of digital media and marketing, as opposed to the northeast or west coast.

The girl was more important than my career options, so I moved down here about seven or eight years ago.

Q: What have you found are some your favorite things about Charlotte?

A: Like I touched on before, I feel like Charlotte is a little more merit based than some other established cities. It feels like there’s an opportunity to be involved, to lead, and to create new ventures that you may not see in other cities of our size. I love the people, I love the growth, and I love that it feels more like a blank slate as opposed to an already defined city.

Q: Do you have a favorite news piece that Charlotte Agenda has covered?

A: We cover things to do, food and drink, and other topics. I would say that our journalism and news coverage has really developed since Andrew Dunn joined the organization. I think he is the best local media journalist in the U.S. Some of his work about gentrification in Charlotte has been amazing.

Then I think from a different perspective, that our coverage of the dating scene around Charlotte has been some especially good journalism.

Those are really from two opposite ends of the spectrum, but I think that’s what is really great about our product. We have that range. We can laugh and joke, but we can also get serious.

Q: At the end of the day, what would you say is your driving motivation?

A: Our mission is to make Charlotte a smarter city and a more human city.

I believe we do that through media.

Q: Are there any charities or organizations that you are passionate about or contribute to?

A: Locally, we are involved with The Knight Foundation. I also love an organization called Heart Meter led by a man named Andrew Jenkins. They supply video games to children’s hospitals. I just love what he’s done and the simplicity of the project, so I’ve been a supporter of his.

Q: I understand that you’re a father. So, do you find it difficult to juggle family and running a business?

A: My son is almost 3 and my daughter is about four months old, and so the answer is YES! I think anyone that says otherwise is lying. Honestly, you just become a little less of a good entrepreneur. I know that sounds a bit cutthroat, but in life you just need to prioritize things. Your business may suffer slightly, but sometimes we have to make trade-offs around family and life versus a growing business.

Fatherhood and family are important to me, and managing that through a growing business is challenging. I’d have to say for me personally it’s more fun than working an investment banking job or a consulting job where are you not in control of your schedule. When you are in control of your time, you can figure out the right balance. I would say though, that you also learn some things

from being a parent, like patience. I’ve also learned a different type of understanding and a different point of perspective on things, which can help you become a better leader.You may not be able to put in hours, but I think that the new perspective helps lead to better results as opposed to not having had the experience of parenthood.

Q: Do you have any advice for young entrepreneurs wanting to put their own stamp on the world?

A: My advice is to do what you know. I knew media sales, marketing, and advertising better than others, so I was confident in my skills there.

You make less money running a local digital media company versus starting a mobile payment company or some type of healthcare tech company, but that’s what I know.

The successful entrepreneurs that I have seen generally know their stuff cold. They enter their field because they’re drawn to it, not because they necessarily have a wonderful business plan or because they have analyzed the market. I’m a big believer in doing what you know, that’s kind of a core tenet for starting a business.

Q: What do you hope for the future of Charlotte Agenda?

A: Media is a pretty unpredictable field. We are going to focus over the next year and a half to two years on providing more useful information to Charlotte and creating deeper relationships with our audience. We also want to continue defining what a local media company looks like. We are a driven group, so I want us to always be growing. We know that there is a lot of room for growth in Charlotte from an audience perspective and an advertising perspective.

As the media environment continues to rapidly change, there will be more opportunity for smart teams that understand the dynamics of media to grow quickly.

Q: Finally, in celebration of Charlotte Wine & Tapas Week, I was wondering if you have a favorite wine and/ or tapas that you would like to share with the readers?

A: I think that Malabar is Charlotte’s go to place for tapas. In terms of wine, I am probably a most frequent visitor to Foxcroft Wine. I enjoy speaking with the staff about different types of wine. I would have to say one interesting thing, and it’s probably not new but new to me, is wine flights. They are available in numerous places throughout town, and it’s a great way to try a bunch of different types of wines and can be a great date night.

For the LOVE (and Health) of Wine We, as a global culture, have a love of wine and there are many aspects that draw us to the “nectar of the gods”. The taste, look, smell and even the camaraderie that come along with wine can be attractive. Another plus is the health benefits that are associated with our favorite glass of red. We’ve all heard this before, but how exactly is it good for us?

ANTIOXIDANTS. The term gets thrown around often these days, and we’ve been told time and time again that antioxidants are healthy for us. But why?

Simply put, they prevent cell damage caused by oxidation in the body.

Besides fighting disease this also means they can help SLOW PREMATURE AGING! Anything that can help in that department definitely has the vote of many wine drinkers. Antioxidants are also thought to be heart healthy by increasing blood vessel flexibility and reducing the risk of unwanted clotting, allowing for a fun and healthy lifestyle.

CHOLESTEROL CONTROL. When you hear the word cholesterol you may automatically think it’s a bad thing, but that is not the case. There is actually “bad” cholesterol (LDL) and “good” cholesterol (HDL). LDL or low-density lipoprotein causes buildup of cholesterol and blockage in arteries, increasing the risk for heart disease. Resveratrol, found in red wine, decreases this bad cholesterol.

THE AMAZING RESVERATROL. This incredible compound has been shown to lower blood sugar levels, aiding in the fight against diabetes. It also slows the progress of Alzheimer’s disease, along with

other memory disorders. Resveratrol can even help repair cell damage caused by consumption of other alcohols.

It has also been linked to fighting cancer by inhibiting the key action of a cancerfeeding protein.

FIGHT THE COMMON COLD. A 2010 study in the American Journal of Epidemiology found that among 4,000 faculty members at five Spanish universities, those who drank more than 14 weekly glasses of wine for a year were 40% less likely to come down with a common cold. The wonderful antioxidants found in red wine and grape skins are to thank for this find.

GETTING SLIM. Then pour another glass, right? Red wine can actually prevent the growth of fat cells, as shown in a series of lab tests. Researchers found that piceatannol binds to the insulin receptors of fat cells, basically blocking the pathways necessary for immature fat cells to mature and grow.

Not only is red wine a welcome addition to dinner, whether cooked with or as an accompaniment, it has qualities that can help keep us healthy and happy. So, pour a glass and enjoy!

Dennis Vineyards is a family-owned and operated winery since 1997, making it one of the first North Carolina wineries. They specialize in the Muscadine or ‘the grape of the South’ but also produce many top quality fruit and berry wines as well as some more traditional French varieties.

Fall Food Wine Pairings

Along with the cooler weather of autumn there are certain foods that are synonymous with the season. So, to help you navigate some of these seasonal standards, we’ve compiled a list of a few fall edibles and the types of wines that pair best with them.

Pumpkin It doesn’t feel like fall without pumpkins and pumpkin spiced treats. For sweet and rich dishes pair with a Viognier (a white wine grape variety) and for salty or savory snacks try a barrel-aged Port (dark red fortified wine).

Apples They are available year-round but apples are at their best in late summer and early fall. Arrange raw apple slices on a cheese plate and serve it with a fruity Gewürztraminer (aromatic wine grape variety used in whites). For candied apples and apple pie, try out a sweet Vouvray (a white wine made with Chenin Blanc grapes).

Pears These are another popular fall fruit and they can be enjoyed raw or made into a tasty dessert. For a dish such as roasted pears with apricots and pistachios, a glass of Sauternes (a French dessert wine with hints of honey, ginger, and lemon) would go perfectly.

Venison or Wild Game Fall is a big hunting season and because these meats tend to have strong, rich flavor a big red with lots of tannin will smooth out when paired with the richness of the meat. Suggestions are Red Bordeaux (made from a blend of grapes), Barbaresco (an Italian wine made with the Nebbiolo grape), or Barolo (another red Italian wine made from the Nebbiolo grape).

Mushrooms These too are available year-round but wild mushrooms generally appear in the autumn months.

When grilled and layered on top of garlic toast they pair wonderfully with a Chablis (a dry white burgundy wine) or Champagne (a white sparkling wine). If you prefer reds, pair a Rioja (made from a blend of grape varieties, Tempranillo being the dominant grape) with a mushroom soup or mushroom risotto.

Sweet Potatoes Being a versatile vegetable, sweet potatoes can be mashed or made into fries and pies. If baked into a dish like shepherd’s pie, pair it with a Zinfandel (full-bodied wine made from a variety of black-skinned wine grapes). For mashed sweet potatoes, a lighter red blend or Pinot Noir (a red wine grape variety). If baked into fries, go for a White Burgundy (a more acidic white wine).

Of course, it really comes down to preference but don’t be afraid to try something new.

Who knows? You might just find a favorite.

YUME Bistro is scheduled for a late November opening in South End’s Gold District. It will offer many of the same items that can be found on the menu at it’s sister location in Matthews such as authentic ramen, rice bowls, Japanese street foods and appetizers along with other options. Tony Yum (chef) and Rosena Tong (manager) are husband-andwife owners and Tony worked under a Japanese chef for 8 years to hone his craft.

Bardo is another new restaurant coming to the Gold District of South End with a scheduled opening in October. It is a small plate concept with plans of an open kitchen and seasonal “progressive American” cuisine. The co-owners are Jayson Whiteside and Chef Michael Noll who have more than 20 years of experience in the restaurant and beverage industry. Prices will range from $7 – $27.

Sophia’s Lounge 127 North Tryon Street, Suite D Charlotte, NC 28202 (980) 260-3227 Sophia’s Lounge is an elevated gathering place in The Ivey’s Hotel with a vintage feel serving cocktails & small plates. The space is described as “opulence meets a vintage touch and vibrant European flair”. The lounge is operated and managed by Patrick Whalen, Alejandro Torio, and Top Chef alum Jamie Lynch of 5Church. Prices range from $10-$24 for the small plates and valet parking is available.

The partners behind this are Stefan Huebner, a 25 year veteran of the hospitality industry and Conrad James Hunter, an 8th generation Charlotte native. The menu features small plates made of seasonal ingredients from local purveyors and craft cocktails.

Q&A

H/K/B Plastic Surgery Center & MedSpa Choosing a plastic surgeon is an important decision. With so many doctors and centers to choose from, how should you choose who’s right for you? We spoke with Dr. Bharti of

Hunstad/Kortesis/Bharti Plastic Surgery & MedSpa, to show Charlotte what makes them the cosmetic go -to!

Q: Could you give us a little background about yourself and practice?

A: We are a full-service plastic surgery office with trailblazing, award-winning, worldrenowned, board certified surgeons. We have more than 50 years of combined experience performing more than 1,000 surgeries per year.

We specialize in strictly performing cosmetic surgical and nonsurgical procedures. This includes things like mommy makeovers, facelifts, breast surgeries and tummy tucks. We also perform procedures such as Brazilian butt lifts and vaginal rejuvenations, which some people don’t even realize is an option and includes things like labiaplasty.

We also offer non-surgical services such as Botox, fillers, facial resurfacing using CO2 lasers, as well as skin tightening lasers in both offices.

In our South Park office we offer a lot more of the noninvasive procedures like Coolsculpting.

Q: So, are the noninvasive options an outpatient procedure?

A: Yes, some of the procedures that are considered bigger surgeries, such as breast augmentation, breast reduction and labiaplasty are still outpatient procedures. In our South Park office we hold a lot of surgical consults. For example, we do consultations for breast augmentation surgery where we can use 3-D imaging to show them what the outcome of the surgery will look like. Our South Park office is where we perform Botox, fillers, injectables, neck tightening, and eyelid lifts (a new procedure), which can be done under local anesthesia. We tailor to each patient’s needs and their level of comfort. The less invasive, the better. Overall, we just want them to have a great experience.

Q: Who would you consider to be a good candidate for plastic surgery?

A: Traditionally you would think that it’s women, maybe after having children, but the truth is it’s really across the board and everyone has specific needs. It’s becoming more and more common for people to realize their options and want to look as good as they feel. There are also men who are self-conscious about a little too much tissue in their chest, known as gynecomastia. We can get rid of that with minimal scarring so that they don’t have to be self-conscious about being shirtless at the beach or wearing a certain type of shirt at the gym. You also have women after several children, these mothers feel that they have lost their beautiful shape, have excess skin or may have lost breast tissue causing the breasts to have dropped. We can help them lift and give them a little volume. Then, you have older individuals who are showing signs of aging in their face and just want a more youthful appearance but do not want to look artificial or pulled. We’ve even done things for teenagers. As an example we have helped several people with prominent ears by performing our ear pinning surgery.

We’ve also performed several breast reduction surgeries allowing women to live pain free. We even specialize in simple tweaks, for example, a patient may have bad hollows under their eyes and they just want to look more rested. We can do injectables for that.

and then be able to make an educated decision. Gone are the days where the surgeon picks what happens for the patient. Now, it is a process where we choose together exactly what is going to achieve their goals. That’s sort of our mantra here, finding like-minded patients that think in the same fashion so that we can meld together and really help them find what they are searching for. At the end of the day, we just want to have everyone happy with the process.

Q: What would you say to a prospective patient who would like to have some work done but is nervous about the surgical aspect of it?

A: : I would say that is 100% normal. Patients who aren’t nervous, I view with a cautionary eye. Safety is priority. We do everything we can to keep people safe. If a patient needs us, we will stand by to take care of them. With our training, it allows us to provide excellent care to our patients, and if anyone has any issues we’re capable in our care to make sure they are safe. As we see our patients very frequently, they always have access to us so that we can address anything. We are an open book.

One of the new things that I’d like to mention we’re doing is vaginal rejuvenation. This can even include devices that can help with things such as urinary incontinence or helping in the aid of lubrication for intercourse. It is not just cosmetic, these procedures can actually help and improve functionality.

Q: How would someone go about finding the right plastic surgeon?

A: People should first do their homework. Patients can look at different providers and make sure they have a decent reputation. They can even do their initial evaluation online. This, however, only scratches the surface. Word-of-mouth is another important factor, so that someone knows how well that doctor takes care of other patients. The next thing is to look at their credentials to ensure they are a board-certified plastic surgeon by the American Board of Plastic Surgery. If looking at an aesthetician, be sure that they are a board-certified member of the American Society of Aesthetic Plastic Surgeons or ASAPS. Of course patients should meet with them to discuss options. I am a big believer in the face-to-face interaction, where you can go over all the options
