Celebrating a Decade of Ideal Health: The Success Story of Ideal Protein + Taso Mikroulis A Journey of Transformation

28

This year marks a significant milestone for Ideal Health Center in New York City, as it celebrates its 10th anniversary. Established in the heart of the city, with locations in the Upper East Side and Flatiron, Ideal Health Center has become a beacon of hope and transformation for those embarking on their weight loss journeys.

The Ideal Protein Difference The center's success largely revolves around the Ideal Protein program, a medically supervised keto weight loss approach that predates the current keto trend by over two decades. This program stands out for its science-backed methodology and the exclusive use of high biological protein foods, available only in clinics and approved by FDA, EMEA, and Health Canada. These unique dietary components are key to the program's effectiveness, offering a trusted and secure path to weight loss. The Ideal Protein program is a medically developed weight loss protocol that emphasizes a ketogenic approach. It's structured in phases that guide participants from weight loss to maintenance. The program focuses on stabilizing blood sugar levels and promoting fat loss, primarily through a diet rich in high-quality, biologically available proteins and a reduction in carbohydrates and fats. The foods are specially formulated, and participants receive personalized coaching throughout their journey. This comprehensive approach not only aids in effective weight loss but also educates on how to sustain a healthy weight long-term.

Taso Mikroulis: The Heart of Ideal Health At the center of this success story is Taso Mikroulis, the clinic's founder, lead coach, and a testament to the program's efficacy. Having lost 45 pounds through Ideal Protein, Mikroulis's personal journey inspired him to establish the first Ideal Health Center. "I rented out a small room in a doctor’s office in the UES with our medical director Akis Ntonos. We had only 2 clients and a lot of drive. 10 years later, I run 3 companies alongside my acting career. I used to get fired a lot when working for others," Mikroulis recalls. His belief in the power of coaching and science as the twin pillars of successful weight loss is evident in his approach. "Weight loss is personal, and I can't stress how important it is to have a coach on your side every week. Seeing my clients change their lives inspires me to do better in my life and encourage those around me every day," he says.

Beyond Weight Loss Mikroulis's endeavors extend beyond Ideal Health. He is the cofounder of Aion Aesthetics (www.aionnyc.com), a venture that complements his wellness philosophy. Additionally, he's on the verge of launching The Kiki App (www.thekiki.app), a promising new project in the digital space. His versatility is further highlighted by his acting career, having worked with iconic figures like Oscar-winner Mercedes Ruehl and 'Grease' legend Didi Conn. Mikroulis has graced screens in notable shows like "Law and Order," "GIRLS," and Harlan Coben's "Shelter," showcasing his diverse talents. 29

A New Chapter for Ideal Protein Ideal Protein is embarking on an exciting new chapter, with Dr. Tran, a pioneer in medical weight loss, and Bariatrix Nutrition Inc., a leader in the weight loss industry for over 45 years, joining forces to acquire the program. This strategic partnership is set to enhance Ideal Protein’s impact, combining Dr. Tran's extensive experience and Bariatrix Nutrition's expertise in manufacturing high-quality protein foods and weight loss products. This acquisition, which involves maintaining the high standards of Ideal Protein's product line, is poised to innovate and expand the program, ensuring a seamless transition for clients. The shared vision of both Dr. Tran and Bariatrix Nutrition is to contribute positively to global health and wellness, reinforcing Ideal Protein's reputation as a leader in the diet industry.

Inspiring Change, One Person at a Time As Ideal Health Center steps into its next decade, the focus remains steadfast on personal transformation through dedicated coaching and scientifically proven methods. It's a place not just for weight loss, but for finding a new, healthier way of life. Mikroulis and his team continue to inspire and guide, one person at a time, proving that with the right support, anyone can redefine their health and life. He’s offering a free in body scan to all new interested clients to look at their biometrics.

Experience Ultimate Relaxation: Discover Paradise in Palm Springs By Dara Kaplan

Every year January comes and if you’re like most of us, you start to struggle to keep up with your yearly New Year’s resolutions as soon as February rolls around. For most, it includes some version of being healthy, whether it is cleaning up your diet, practicing good mental health routines or getting into the gym more often. And again, if you are like most of us, you stick with it for the first months and then life gets busy, and you fall off and that is because we don’t have the root understanding of easy and intuitively living with health and longevity as the goal. When the switch is activated from superficial “health” to a quest of true health for longevity, you understand the long game and the routines that go along with it. It no longer is a chore to stick to your resolutions but a valuable way of life. In my never-ending search for ultimate health and the amorphous buzzword of the year, longevity, I stumbled upon We Care Spa. I was told it “Was an experience like no other”, it was “the retreat of the stars” and I “would leave a new woman”. Yes, yes, and yes! I was sold, especially after peeking at all the celebrities that were recently on property. Then I was told it was a seven-day liquid fast. Cue my jaw hitting the floor! However, being the selfacclaimed guinea pig for anything to do with health, I signed up, in trepidatious manner. I landed at Palm Springs Airport with my two girlfriends that I sold on the experience as well. I quietly hoped I would leave with the two women still my friends after they went through the seven-day fast. Long story short, we are still friends. We were officially on our way, having followed the instructions for the pre-fast, olive oil shots and prune juice to prime our systems. We drove along a dusty road and appeared in front of an ominous gate that mechanically opened to greet us. Once we crossed the threshold, the magical oasis of health unfurled in front of us, and all worry melted away.

33

Meet We Care Spa, an absolutely idyllic 20-acre Sanctuary tucked into the mountains in Desert Hot Springs, California. Consider We Care Spa as the handbook to health, forget having to stick to resolutions, here you will understand how mind body and spirit interact to provide a sense of Zen and tranquility which underpin the meaning of health. You can choose from a 3 day, 5 day or 7 day experience which includes luxurious private villas with uninterrupted desert vistas that provide a spectacular indoor-outdoor experience, 40+ spa treatments, daily nutrition and yoga classes, evening sound baths, and weekly fire ceremonies. The 28 luxury villas are spread across an expanse and rich landscape of bougainvillea, lemon groves, statues of Hindu and Buddhist symbols, large crystals, shaded meditation gardens, floating swings, and walking paths. The property features two beautiful pools perfect for lounging, a juice bar, a gym, an outdoor infrared sauna, and steam room. The property leaves nothing out, and you certainly will never be without something to do. However, rest and relaxation are the goal, therefore I certainly took some forced downtime to read, meditate and lounge. Okay, so let’s de-mystify the fast as I know that is what is the most intimidating part, it was for me, but once understood, it was a lot less so. The We Care Cleanse features a nutritious liquid fast with teas, pressed juices, shakes, and soups, with supplements. You are ingesting nutrients almost every hour, which leads to you never feeling hunger pains, if anything, you may need a break from drinking so much! And the health benefits? ENDLESS! Allowing a break from digesting solid foods, allows the body energy to combat toxins, sick cells, and stress. The break from traditional meals also encourages healthier coping skills like breath-work, meditation, and mindfulness to reset emotional blockages and poor diets. We Care Spa’s program is based on the convergence between ancient modalities and modern healing so while you are going through this revitalizing detox, you are in back-to-back educational classes, spiritual appointments and spa treatments. The Spa treatment offerings are vast, which have been mostly created by Susan Belen, the original founder, whom you can still find walking the paths on property. 34

The treatments range from System Recovery Treatments with a castor oil body wrap, Magnesium Wraps, Crystal Craniosacral Massages, and scrubs to colon hydrotherapy, nutritional guidance, shamanic healing, cupping, hypnosis, reiki, and many more. The philosophy behind the founder’s vision for a healthy lifestyle is all encompassing of breath-work, meditation and yoga, diet, and conducting a weekly or quarterly fasting protocol, essentially, a holistic approach of mind, body, and spirit with a healthy dose of socialization. One of the most unexpected joys of the way that We Care Spa is created and set up is the sense of community and friendships you make with the other guests. You can spend as much time alone or with people as you choose. Soup time becomes a very much welcomed time of the day, and most attendees gather in the lobby to share their days, tips and tricks to making the soups as gourmet as possible. One of my friends I brought with me turned into a venerable Jean-George of sorts with her daily soup concoctions that drew quite the request list. At the end of our week, we felt clear, energized, and revitalized, and I am happy to say, my friends still considered me a friend after selling them on a week of no solid food. They even thanked me for bringing them along, phew. So, would I recommend this to all? A wholehearted yes is the answer. There is something that everyone can learn and take home from this holistic lifestyle approach to health, whether it is one tip and trick you learned from a class or a whole new way of living. The choice is yours. Retreat options start at $2,019+ for two nights, $5,049+ for five nights, and $6,149+ for seven nights. Treatments may be booked online at WeCareSpa.com or by calling 1-800-888-2523.

Eating Disorders

Don’t Just Disappear When You Have a Baby By Hope Virgo, Author and Founder of #DumpTheScales + Author of “You Are Free?”

“Do it for your baby.” “It’s not that hard, just add an extra snack for your baby.” “Come on you don’t want them to see you struggling over food.” The statements echoed through my brain as I sat there in NICU clutching my little boy. The 3 days had been a complete whirlwind. I had come in on Sunday with reduced movements, had him scanned, found out he was too small (whatever that meant!), come back on the Tuesday morning sat there watching the scan with my little boy barely moving. Sent for more monitoring and then told at 37 weeks I was going to need an emergency induction that day. I hadn’t had time to process any of what had happened, and the guilt I was feeling already as I looked down at him. Taking every inch of him in so in love with him but feeling like after him being out of tummy for those few hours I had already failed him.

36

You only have to scroll on Instagram for 30 seconds to see the expectations put on parents, but the reality is and something few acknowledge properly is the difficulties of becoming a parent. Your life literally turns upside down and whilst for me, Joshua was perfect, and I loved him so much the pressure I was putting on myself was huge. On top of that, navigating wider family politics, realising how you as an individual are changing, and then throw in an eating disorder and you have this perfect storm brewing. I remember sitting down to play with Joshua one evening and all I was thinking about was calories. I couldn’t be in the moment with him, and I felt wrong in myself again like I had failed him. It is in these vulnerable moments when emotion is high, when you are sleep deprived and feeling uncertain that eating disorders can seduce you back in. They tell you to fixate on certain behaviours, telling you that if you restrict, then everything will be fine. Eating disorders are still highly stigmatised with people often seeing them as a lifestyle choice, a phase someone goes through or someone being difficult. There is also this huge misconception that they are about body image. These stigmas, especially when you have a child left me feeling completely isolated and alone with my thinking. 67

Renee McGregor, a leading Sport and Eating Disorder Dietician, told me, “I often see women who have recently become mothers in our clinic. Motherhood is a time of transition, not to mention fluctuating hormones, reduced sleep and responsibility for a baby that is not predictable. For many women who may have been “functional” with their eating disorder prior to having a baby due to having set routines and always trying to live with certainty, becoming a mum change all this and this is why even someone who has previously been well, or functioning will often return back to behaviors that provide them with a false sense of security.” Whilst people can and do fully recover from eating disorders, recovery can be different things at different times and will look different to people. Recovery in those first few weeks since Joshua was born was choosing to rest as my body needed it, choosing to eat more even though I was barely moving, choosing to let others cook for me, having that extra snack and choosing to sit with how this has emotionally made me feel. And since then, it has been choosing to reframe things, challenge beliefs and also accept my body. It’s been choosing to communicate through words and not using eating disorders behaviors to suppress those emotions. Recovery is hard work at times, but I believe the more we challenge the behaviors, challenge the fear, and sit with this the easier it gets. Even after those first few months with a newborn, there are still challenges and pressures you put on yourself. Things that the eating disorder does to try and pull you back in. Ways that it makes you feel that you think it is the solution to everything. It’s not easy being in recovery from an eating disorder and being a parent alongside that is tough. But there are things you can do to help alleviate some of the feelings. Have distractions in play. Joshua is brilliant at offering these distractions after mealtimes and helping me get out my own head. Reminding yourself why you want to get well or stay well. Knowing your whys doesn’t necessarily take away the pain of recovery but it really helps keep you keep focused on those hard moments. Knowing your triggers: for me when Joshua is unwell, I must be mindful of how things are with my mental health and realize that even in the uncertainty the eating disorder won’t solve anything. Talking: whether that’s at a support group or to family or friends find your tribe. Show your vulnerabilities and create space for yourself as you matter. Self-care: ugh that word! I hate it and with a baby the candles go out the window and sometimes selfcare literally is taking of a jumper covered in poo and swiping sick out your hair with a wet wipe. But find what works for you whether 5 minutes of journaling, or some space to breath! Then beyond this, we need a space to work on our recovery and what that looks like. Renee McGregor says: “I think helping an individual appreciate the purpose of their behavior is critical. When you lose your sense of identity, you may be driven to attain your worth in our ways, and this is where fixation on body image or eating in a particular way may provide a false sense of control. We often work with Mums to help them appreciate the true value of food – not just nutritional value but also the impact food has with social connection but also how healthy behaviors round food can support good role modelling for their children. A lot of the work that needs to be done is not created selfimposed rules and beliefs about food – no one food is going to cause you harm or change your body. However, the only way to provide yourself with evidence and knowledge that these beliefs don’t stand is to challenge them. While there will be a feeling associated with this challenge, this doesn’t mean that the feeling is fact or truthful.” Having an eating disorder when you are a parent doesn’t make you a bad parent, but I encourage you not to settle and to keep pursuing recovery and the freedom it brings.

Chez Francis Chez Francis is a quintessential Parisian brasserie serving traditional, gourmet French fare in a lively atmosphere. Located on Park Avenue South, Chez Francis brings the epicurean vision and passion of its bon vivant founder, Francis Staub, to life in a convivial setting designed for guests to gather over a sense of joie de vivre. The kitchen at Chez Francis is overseen by veteran Chef Jaime Loja (previously of Brasserie Ruhlmann) and serves an extensive array of French staples, from familiar classics such as Escargots and Steak Frites to more extravagant preparations meant for sharing including a 2 ½ Pound Lobster Thermidor and Whole Roasted Cornish Hen served in one of Francis' famous cocottes. Diners can begin their meal with starters like Cheese Soufflé with Cauliflower Velouté, Homemade Foie Gras, and a wide selection of locally sourced artisanal charcuterie. Mains include Moules Frites, Bouillabaisse, Sole Meunière, and Boeuf Bourguignon. Homemade sauces take center stage at Chez Francis, with offerings like Béarnaise, Peppercorn, Beurre Blanc, Shallot Marmalade and Café de Paris available to complement the flavors of any dish. An assemblage of flambées, cart service and tableside presentations bring culinary theater to the restaurant's grand brasserie setting. During Saturday and Sunday brunch, guests can indulge in the Le Gigot d'Agneau, a traditional French-style roast leg of lamb that is carved from a rolling trolley for unlimited service. 411 Park Ave S, New York, NY 10016 Chezfrancis.com 40

Revelie Luncheonette Revelie Luncheonette is a new French-American diner, soda fountain and bar, helmed by the lauded Raoul’s team. The restaurant quietly opened its doors to SoHo’s Prince Street mid-summer and brings the style of Raoul’s to a casual-yet-elevated diner setting. Already dubbed an instant classic, the local hotspot draws inspiration from the luncheonettes and soda fountains that charmed the neighborhood throughout the 1920s and beyond. Executive Chef David Honeysett (who has been at the helm of Raoul's kitchen for the past 18 years) brings comforting brunch, lunch, and dinner menus, each featuring a playful selection of diner staples, with a French twist. Their classic French Onion Soup is a must-try and perfect precursor to staples like Moules Frites and their spin on the Chicken Cordon Bleu. Karim Raoul and Jillian Fracassi are the husband and wife duo behind the new concept, which they’ve named after their daughters, Reve and Amelie. A family business full of heart, Revelie brings simple, classic food, and does it exceptionally well. 179 Prince St, New York, NY 10012 Revelie.com

A Deeply Personal Cauliflower Pizza By Joey Skladany

PREP TIME: 25 MINUTES COOK TIME: 30 MINUTES TOTAL TIME: 55 MINUTES YIELD: 1 (10-INCH) PIZZA

FOR THE CAULIFLOWER CRUST 3 cups riced cauliflower (from 1 large head cauliflower) 1/4 cup freshly grated Parmesan cheese 1 cup freshly grated mozzarella cheese (about 4 ounces) 1/2 teaspoon dried oregano 1/2 teaspoon dried basil 1/2 teaspoon garlic powder 3/4 teaspoon kosher salt 1 egg, lightly beaten 1/3 cup tomato sauce 1/2 cup freshly grated mozzarella cheese Fresh basil leaves, for garnish (optional) Red pepper flakes, for garnish (optional) Parmesan cheese, grated, for garnish (optional) Every time I’m pitched cauliflower-something by a publicist, an angel loses its wings. It’s like people who vape or get their septum pierced: We get it, it’s a thing, congratulations, but stop telling us about it every day of our lives. Cauliflower crust definitely makes personal pizzas healthier, but it’s similar to those times when I say I’m going on a five-mile jog and am back ten minutes later. The intentions are there, though the selfsabotage is real. So enjoy this pizza however you’d prefer. If you opt for the surprisingly delicious cauliflower crust below, that’s great! But just know that you’re probably going to top it with processed meat and cheese anyway. It’s pizza and your diet should be reserved for less amazing things, like dandelion-green salads and cayenne/ lemon juice elixirs. 1. Preheat the oven to 425ºF. Line a baking sheet with parchment paper. 2. First make your crust: Add the cauliflower rice to a microwave-safe bowl and cover. Heat on high for 6 to 8 minutes until tender. Uncover and allow to cool slightly. 3. Once the cauliflower has cooled, transfer to a kitchen towel and wring out the excess moisture. Return to a large bowl. Add the Parmesan, mozzarella, oregano, basil, garlic powder, salt, and egg. Mix to combine. Transfer to the prepared baking sheet and press into a 10-inch circle. Place baking sheet in the oven and bake for 15 minutes until golden. 4. Remove from the oven and top with the tomato sauce and mozzarella. Return to the oven to bake until the cheese is melted and bubbling, about 5 minutes. Remove from the oven and garnish with basil, red pepper flakes, and Parmesan. Slice and serve.

JUST THE TIPS: You can also cook your cauliflower rice in the oven. Add it to a sheet tray and bake for 15 minutes until tender. Let it cool and then wring out. 55

Tieghan Gerard, the brilliant mind behind the online food destination "Half Baked Harvest," has garnered immense acclaim not only for her mouth-watering recipes but also for her unique perspective on culinary creativity. With a keen eye for innovation and a passion for blending flavors, Tieghan has single-handedly revolutionized the way we view and savor food. In this interview, we explore Tieghan's inspiration to break free from culinary norms and her relentless pursuit of flavor combinations that truly stimulate our senses. We get a glimpse into her creative process and learn about the transformative influence that her inventive recipes have had on the cooking landscape. From food bloggers to Michelin-starred chefs, Tieghan's artistry has captured the hearts and appetites of countless individuals around the world. In anticipation of our 2024 Food Revolution Issue, I am thrilled to present to you an exclusive interview with Tieghan, a culinary force to be reckoned with. Join me as I sat with Tieghan and delved into her journey in redefining the way we approach food.

What inspired your culinary journey and led you to become a prominent figure in the food industry? This path was born from my love of cooking and sharing that joy with my family. I come from a large family of eight children. As you can imagine, mealtimes were chaotic, so that’s where my journey began. In my attempt to reduce some of the chaos, I taught myself how to cook. I soon realized that I could show my love through cooking by creating meals for the people I care about most. Now, I get to do it for millions of people, which keeps me motivated every day!

In the current food landscape, what trends or changes do you foresee shaping the way people approach cooking and dining in the future? Food trends vary by region and are changing constantly. I see a large focus on quality and tracing foods back to their origin sources. It's important to know where our food comes from. I think people are becoming more aware of this. I also think sustainability is important going forward. An easy way to begin practicing sustainability can be as simple as using what's in your pantry. I also feel strongly about promoting an environment that's less about diet culture and more about eating real food. That means food with real ingredients and no additives or preservatives. I know this may not always be possible, but this is what I gravitate towards when developing recipes and cooking for my family and loved ones.

Your recipes often blend creativity with comfort. How do you strike a balance between innovative flavors and the familiar, making your dishes accessible to a wide audience? Keeping recipes creative yet approachable is so important and can be much easier than people think! I try to use ingredients that are readily accessible for most. Sometimes, that means just using a simple cheddar cheese instead of something fancier that not everyone can access. Trust me, no one will complain if you use Swiss cheese from the supermarket versus a fancy Gruyère from a specialty market. I try to use what's in my pantry and available at my local grocery stores. This also incentivizes me to get creative with what I have and to come up with new spins and ideas! I always say, "use what you got"! 58

This issue of BELLA magazine emphasizes a "Food Revolution." What role do you believe food plays in driving societal change, whether it's related to sustainability, inclusivity, or cultural appreciation? Food brings people together. Food is and always has been the center of society. Nothing is more special than pouring your love into a meal and having family, friends, and loved ones gather around and enjoy it together. The kitchen is a place of community and happiness. That's why I love what I do so much! It means so much to me that I can bring joy to those around me. Beyond that, I also hope to affect environmental change, even if it's only in a small way. Teaching people to cook using unprocessed foods and to use what's in their pantry can also help the environment. Heavily processed foods usually have a higher carbon footprint than real food. And if you aren't making a trip to the grocery store, that helps the environment too. Small changes eventually lead to larger ones!

As a successful food influencer, how have you navigated the evolving digital landscape to continue to connect with your audience and keep your content fresh and engaging? Constant evolution! You must be able to change and adapt very quickly in the digital space. You have to keep people on their toes and get them excited for what's next! Don't do the same thing every day.

ARTS + CULTURE EXPLORING MIAMI’S CULINARY SCENE, TEAM BELLA’S FAVORITE RECIPES

Miami’s Culinary Scene expands with the help of Female-Powered PR By Jennifer MacLellan

Headquartered in Miami and with an established local and national reach, Gnazzo Group is a femalepowered public relations, marketing, and events agency working at the intersection of luxury and culture. Representing some of the most popular and prestigious restaurants and hospitality groups in Miami, this woman-led operation recently announced the significant expansion of their long-standing collaboration with dynamic entrepreneurs and industry innovators, Omer and Jennifer Horev, with the addition of Horev Hospitality. As the current agency representing Pura Vida, this will expand their role to encompass Abbalé Telavivian Kitchen, which recently opened a new location in Aventura. Each venue promises Miami goers diverse and delicious dining selections. Since their partnership commenced with Omer and Jennifer in mid-2020, the growth and success of their revered lifestyle brand, Pura Vida, has been nothing short of extraordinary. Pura Vida is an all-day café established in South Florida offering a balance of nutritious and delectable dishes, sourcing local and organic ingredients, and high-quality proteins. Founded by husband-wife team, Omer and Jennifer Horev, the Miami-based concept provides an extensive menu that showcases a range of raw, organic acai bowls, freshly squeezed juices, superfood smoothies, clean chef-driven salads, wraps, bowls, and more. Since its inception in 2012, Pura Vida has evolved into a lifestyle brand, providing a nourishing allday menu and refreshing dining experience that has quickly become the “go-to” spot for people in the wellness community in the area. Drawing inspiration from Omer’s and Jennifer’s travels, as well as recipes from friends and family, Pura Vida was designed to feel like an extension of their own home with a menu that can be enjoyed at any time of the day. Serving enriching options for breakfast, lunch, dinner, and everything in between, Pura Vida is a community of individuals who value health. Under the culinary mastery of two-time James Beard Foundation Rising Star nominated Chef Sam Gorenstein, Abbalé Telavivian Kitchen made its mark in the South of Fifth neighborhood in 2021, swiftly establishing itself as a cornerstone for authentic modern Mediterranean cuisine. The restaurant serves lunch, dinner, and Sunday Brunch, and offers a bevy of dishes perfect for sharing. The restaurant’s wine list is notable for its dive into lesser-known Mediterranean wines from Israel, Lebanon, Macedonia, and other wine-producing countries. Better-known varieties from Argentina, France, Italy, Spain, Germany, and the USA are also available. Specialty cocktails include crafted mixes of herbs, flowers, and spices from the region, designed to perfectly complement the cuisine. Just last month, Abbalé expanded its footprint to Aventura, unveiling a remarkable 4,000 sq. ft. outpost, and introducing over fifteen new menu items to complement its beloved offerings. Mirroring the success of the brand’s South Of Fifth outpost, Abbalé Aventura is now open for lunch, dinner, and Sunday brunch. 62

Banana Pancakes I discovered this recipe years ago and it’s so easy and healthy to make! Plus, Kevin Bacon loves these and that’s enough endorsement for me. 1 egg 1 tbs. Peanut butter (or alternative nut butter) 1 banana, mashed First, peel the banana and mash it with a fork in a bowl. Next, add in the egg and peanut butter and stir together. Then, add the batter to a buttered skillet that’s been warmed to medium heat. Allow the pancake to cook, monitoring closely so that you can flip it over once it turns golden brown. Follow the same process on the other side and then remove from heat. You can top it with more melty peanut butter, chocolate chips, or even add in your favorite protein powder to the mix for an extra boost. Amanda Mactas Food + Travel Editor

Oreo Dream Cake INGREDIENTS 1 box chocolate cake mix Plus ingredients to make cake 2 packages of Instant Oreo pudding (4 ounces each) 4 cups 2% milk 1 package of Oreo Cookies Family Size. Double Stuff is even better

😉

64

INSTRUCTIONS 1. Make cake mix according to directions and bake in a greased 9×13 pan. 2. When cake is done, immediately poke holes over the cake using the end of a wooden spoon in about 1 inch intervals. 3. Let cake cool while you prepare pudding mixture. In a medium size bowl whisk together milk and pudding mix. Make sure to whisk out all of the lumps. Let the pudding mixture sit for about 2 minutes. You want it somewhat thickened but not set like pudding. 4. Pour pudding mixture over the warm cake. 5. Put the package of Oreos in a ziploc bag and crush them with a rolling pin or mallet. Pour over the pudding mixture on top of cake. 6. Put foil or a lid on and refrigerate for at least 8 hours or overnight so the cookies soften up. Dr James Mercer Partner + Assistant EIC | CAL + TX

Quick + Easy Anti-Inflammatory Cauliflower Chicken Soup

The winter season has inspired me to explore my soup making skills, while preparing for my wedding also had me scouring Pinterest for anything not loaded with heavy creams and diet-unfriendly ingredients. I stumbled upon this recipe from @beautybitesorg and have now made it weekly. This antiinflammatory cauliflower chicken soup checks all the boxes - easy to make, healthy, and packed with superfoods that help reduce inflammation. I tweaked it a bit, so here is my spin on this delicious recipe! Ingredients: 8 oz/chicken breast, cooked (I use pre-made rotisserie) 2 1/2 cups cauliflower florets, chopped 1 carrot + 1 onion, chopped (packaged + chopped for a time-saver) 1 1/2 tbsp ginger, grated 1-75 tbsp minced garlic (depending on if you love garlic as much as I do) 1/2 tsp turmeric 1 tsp dried mint Chicken bone broth (amount dependent on the consistency you prefer) 2 tbsp olive oil Salt + pepper to taste (who measures this anyway?) Directions: Heat olive oil in a medium-large cooking pot, then sauté onion, garlic, turmeric, and pepper until fragrant. Add cauliflower and 2 cups of chicken broth. Cover and cook at medium-high for around 7 minutes. Add ginger, mint, and carrot. Cook for another 5 minutes or until carrots have softened. Then, blend the soup using an immersion blender, to the consistency you prefer. You can also add more broth in at this stage if needed. Add in the chicken, salt, and of course, more pepper. Cook for 5-6 more minutes allowing the flavors to combine. Top with a tbsp of olive oil or Greek yogurt – I use a non-fat Greek yogurt. (I also top with a sprinkle of vegan cheese.) Serve and enjoy!

Carrot + Sautéed Garlic Hummus

I am a notorious raw veggie snacker, but that alone can get boring real quick. Instead, try dipping your favorite vegetables in one of my favorite and healthy dips, hummus! Carrot + Roasted Garlic Hummus to be exact! You’re welcome! Carrot + Sautéed Garlic Hummus Ingredients 6-8 cloves Garlic peeled (I love garlic so add more or less if you choose) 1 bag of baby Carrots Olive or coconut oil to taste 1 tsp Salt 1 tsp pepper 1 small onion, optional Instructions Boil carrots until tender. In a separate pan, coat with 1-2 tbs of oil of choice and sauté garlic cloves. If you decide to add onion, peel and cut in small pieces and add to pan. Sauté until tender and golden. When everything is ready, drain carrots and add to blender or processor along with garlic and onion sauté for several minutes. Drizzle in oil while machine is running, blending until the hummus is smooth and creamy. Chill for a few hours and serve with plant-based crackers and veggies. Enjoy!

Come Hungry for Nourishment + History in

San Antonio By Amanda Mactas

Things might get weird down in Austin, but San Antonio is the place to go if you’re looking for a quiet cultural escape. As one of the oldest cities in Texas, San Antonio is rife with history and is worth exploring should you be looking for a getaway where you can not only dine like a king (or queen) but also absorb some fascinating nuances of US history. It’s not as big or as bustling as some of its big city brethren like Houston or Dallas, but San Antonio has a charm all of its own, and that’s exactly why it’s one of the most popular cities to visit in the entire country. Indeed, it’s San Antonio’s lively, yet laid-back atmosphere that resonates so strongly with travelers.

71

Stay Located right on the riverwalk, The Westin Riverwalk is ideally situated for travelers to stroll along the river and easily get from place to place when staying in town. As the saying goes, everything is bigger in Texas, and the rooms here prove it. Equipped with ample space, a private balcony or terrace that provides lovely views, and outfitted in Spanish colonial decor, The Westin sets the precedence for your stay in San Antonio. Plus, the grand hotel has an outdoor heated pool, a 24-hour fitness studio, and even pet-friendly rooms should you be traveling with a furry friend. Explore One of the best ways to get acquainted with the area is by hopping on a Go Rio river cruise. With many docking spots throughout the riverwalk, it’s easy to score a ride on one of the company’s electric riverboats. You can even BYOB aboard! On this short, 30-minute tour, your guide will point out city landmarks and explain some of the colorful history of the city along the way. Hailed as the heart of Texas, The Alamo is of course one of the big draws of visiting San Antonio. And while it’s certainly worth a visit, especially for a history buff, I highly recommend the often overlooked other Missions for an even more all-encompassing dose of history, culture, and architecture. A UNESCO World Heritage Site, the five San Antonio Missions date back over 300 years during the times of the Spanish colonial period. The remnants of these churches and community hubs today are worth a visit – in fact, many tourists opt to view them along the hike & bike trail, which connects all the missions along an easy trail path. The visitors center is a great place to start so you can learn all about the history of the missions before you embark on your journey. A short drive from the city center lies a Japanese Tea Garden built over 100 years ago. A truly beautiful and majestic sight, this garden – which features koi ponds, stone bridges and walkways, a waterfall, and a spot to score refreshments or sit down for a meal – is the consummate place to escape to should you be looking for some downtime. Shop Located right on the riverwalk, La Villita, which once stood as San Antonio’s first neighborhood, now houses a unique local art community, where visitors can peruse artwork, jewelry, clothing, home goods, and more. Make sure to stop inside Villa Tesoros, Bird & Pear, and the River Art Gallery. Plus, don’t forget to wander to the Pearl District on your excursions. Not only does this area have delicious restaurants, but it’s also home to The Twig, a renowned bookshop that’s over 50 years old. Wine + Dine As previously mentioned, the Pearl District has many wonderful places to mosey around. Among them is Bakery Lorraine, one of the top bakeries in the country. It’s an idyllic spot to venture for breakfast, with its array of quiches, sandwiches, and soups, but as a bakery, it has a countless array of goodies, including macarons, French pastries, and tarts. In the same vein, a visit to La Panaderia is a must. With many locations throughout the city, it’s best to come before you’re hungry as there’s typically a wait to get in. The restaurant and bakery specializes in handmade bread and pan dulce, but has a whole array of breakfast items to make your mouth water. 72

67

Back at the hotel, dinner at Zocca makes for a quintessential San Antonio evening. Situated right along the riverwalk, patrons can watch the sunset as visitors stroll by, while enjoying Italian fare with a Texan twist in an approachable, yet elevated ambiance. Nearby, Little Rhein Prost Haus is a great place to post up for happy hour and a lively atmosphere. Lastly, don’t miss out on Tito’s Mexican Restaurant for some authentic eats. This local hotspot is a casual watering hole and eatery that serves some of the best Tex-Mex in town. ome up with new spins and ideas! I always say, "use what you got"!

AROUND TOWN PARTYING WITH PURPOSE

75

Partying

with a purpose By Yolanda F. Johnson

76

Guest of a Guest, Patrick McMullan, and New York Social Diary are just a few of the places where you can find photos of people celebrating, networking, striking a pose and looking fabulous all for the sake of charity and good work. If you are even a part-time extrovert and like to meet people and have fun while looking your best, or if you want to branch out to try something new and be more social, why not embrace your inner socialite and hit the events scene this year? “Special” events are only special because the people who attend them care about the cause, all while enjoying themselves. One of the things to remember in our day-to-day lives is to try to think more intersectional vs. compartmentalizing and judging, because the fundamental aspects of life are intersectional and carry through in many ways. So instead of seeing events, social outings, and party pics of fashionable people as something only of face value or shallow and fleeting, think of them as potential opportunities to try something new. Be ready for doors to open at these events as you make connections that could potentially change your life or career trajectory. You may meet your new husband or wife. And best of all, you may find ways to go deeper with the charities, which could even lead to opportunities for leadership, by serving on an event committee and using your talents and skills, or perhaps even chairing an event yourself over time! And don’t forget to have fun with it all! This is a perfect opportunity to experiment with new fashion ideas, hairstyles, jewelry, and makeup. Come up with a signature style or the thing about you that starts to get you noticed. Be bold. Be unafraid. Be unabashedly you. Events and social activities are also great ways to be an ambassador for what you believe in and to educate yourself about other causes and people you may not know much about yet. Social events mean social media! Be sure to document your foray onto the red carpet and don’t forget to snap plenty of photos both to enjoy and to remember. But don’t just highlight yourself; remember to spotlight the work of the charity as well. So now that you’re ready to embrace your inner socialite, I challenge you to find or choose three events to go to in the first half of this year. Strike a pose, meet new people, celebrate a cause you love, and look and feel fabulous while doing it. And that, my dears, is partying with a purpose.
