Here we are.

That anticipated time of year because of the holidays and all the traditions we get to celebrate. Yet, it’s also a reminder of another chapter closing. There is a duality isn’t there?! I love the coziness, twinkling lights and traditions with my family. Jen: Lets just start by discussing the Wild, Wild West of the online world People who are having five figure months feel as though they are not good enough because they aren’t six or seven figure months It reminds me of the diet culture which was centered around making you feel bad about yourself The online space is full of desperation and unnecessary urgency because there is so much hype marketing I wish female entrepreneurs would just be nice to themselves and have fun. Earning a thousand dollars in income is a thousand dollars more than you would have if you hadn’t started your business If we cannot honor a thousand dollars, how can we be entrusted with growth and scalability? If one thousand is not enough,then one hundred thousand will not make you feel differently

Colleen: Right I started in the entrepreneurial space to make five hundred a month That was my goal All I wanted was grocery money People discount the fact that a humble goal can lead to amazing things.

Jen: My goal was to make two thousand a month and that was my fiveyear plan At that time, I had left my corporate career and was a stayat-home mom. Now we have people who start online and expect to make one hundred thousand right out of the gate.

Colleen: I make money on social media and am a social media expert, but I believe people really need a social media diet They are ingesting so much information that it is impossible to implement anything

Jen: That is solid advice So many people believe the more information they have, the more success they will have But a confused mind says ‘ no to everything. You are holding yourself back if you spend too much time consuming information Instead of tripping over the information available, you must trust yourself Many people do not trust themselves and do not trust their community They believe their audience does not have money or will not invest They are making their community wrong before they even offer anything No one is winning if you do not trust yourself to have intuition, leadership, and stick-to-it-ness. Most people do not need to make a million dollars to have everything they want. Trust the thousand and the one hundred thousand is on its way It is also important to remember, high ticket price points do not necessarily mean higher value Unfortunately, some people are simply pushing the price point to make as much money as they can

Colleen: I call that unicorn hunting I was talking to someone and she has a very high ticket offer There is nothing wrong with that, but I can also make the same amount of money making more sales to more people. I am not looking for unicorns I am building a field of happy horses Rather than going out trying to find that one person who is going to make a high level investment, I offer a lower ticket item that is providing a lot of value and yields results. It’s not one or the other. It’s based on what feels aligned to you and ensuring it is done through integrity Both work if it comes from the right ethics

Jen: I am one of those people willing to invest in high ticket because I deeply value the privacy and one-to-one attention, but a wellestablished brand has multiple ways of working with people Clients can find a spot where they feel empowered financially and energetically versus being pressured into something because it is the only available option I have higher ticket and lower ticket offers, but do not give less of myself based on what someone pays.

Colleen: Thats such a good point In my membership there are new business owners and there are seven figure earners I don't know the difference and I do not treat anyone differently.

Jen: I love that! When you genuinely add value to somebody else's life it is a beautiful, clean exchange versus manipulation.What would you say to the entrepreneur who has had some success, or at least had the audacity to get started, but sales are not happening?

Colleen: If people are not coming into their world, I would ask, how are they connecting with their audience? Are they taking the time to build relationships and a sense of community? Many entrepreneurs go out and sell, sell, sell It is important to remember, people buy a feeling first and a product second If you have not laid the foundation of your brand and you are not somebody your audience is invested in, sales will not work Sometimes you must slow down to speed up After you have built relationships, that is your green light to sell and not make it weird If something is not working basically, I have found their strategy and copy can be tweaked, but their lack of sales is primarily because they removed the human connection

Jen: Agreed We have had trends where social media has been perfectly curated. I love social media that it is aesthetically pleasing to the eye, but the more human experience we can offer in the online space, the better off we are

Colleen: Yes I think curated is fine on your feed but get in your Instagram stories and be a freaking human!

Jen: How do you recommend selling in your stories?

Colleen: One day I might post a question box and ask my audience for questions or offer free coaching. Then I will create content centered around answering their questions Every third or fourth story, I will offer social proof supporting my programs It always works well if you can share your client’s average outcome I also make sure I post something every day that has nothing to do with anything that I sell It is just a weird part of my day and a conversation starter

Jen: A lot of entrepreneurs listening haven't necessarily had the experience of this yet, but what do you do when sales start to pop like popcorn? We all dream of that moment, but when it starts to happen, it can disrupt momentum What would you suggest to someone to prepare themselves for that big moment in their business when they have a wave of new clients and success?

Colleen: Everything changed for me when I realized I had a fear of success It is scary when you start experiencing new levels of success, but it doesn’t mean anything has to change.

It means you are doing the right things Pay attention to what you did for thousands of days before this level of growth and keep doing that. When I have a high sales month, I go back into my Instagram archives and watch every single story I did in the past thirty days and do it again You don’t have to readjust the wheel, just keep your hands on the wheel and you will be fine.

Jen: As our business starts to grow, sometimes we outgrow our current clients because we attracted them from yesterday's version of ourselves Now they are no longer aligned What do we do in those circumstances?

Colleen: I do not have a good answer for that and would love your input I have learned so much since I began four years ago What was the-top-of-my-game four years ago is basic for me now Some people are going to grow with you and some people aren’t

Jen: I have walked through these seasons where I have a string of totally aligned clients I go back and observe who I was then and how I was showing up to attract those like-minded gorgeous, generous, grateful clients When I have a string of clients that are totally misaligned, I always go back to who I was when I attracted that

Colleen, you have made sales sexy and fun again Your approach to sales is light and easeful, while most people are white knuckling, gripping to keep control. What would you say to someone who really loathes the idea of selling?

HOW I UNPLUGGED FROM THE FASHION AND FITNESS MATRIX

There was a time when I walked runways for designers like Calvin

Klein and Oscar de La Renta. The makeup and hair touch-ups, the missing shoe (never a missed cue), the spotlights, the cameras, and the world telling me I had “made it” At six feet tall and a mere 115 pounds, I had conformed to the fashion industry’s standards for a model, squeezing my body and soul into an unforgiving mold that was slowly breaking me I was cutting grapes in half to control calories, depriving my body of the vital nutrients needed for the fastpaced life I led In my pursuit of ‘beauty’, I lost my period for over a year and nearly lost myself in the process.

This was my Skinny Era.

When my doctor told me I was risking my fertility, everything stopped. I was barely holding on suffering from migraines, fatigue, and anxiety I remember blacking out on the subway after a day of castings, waking up in Harlem far past where I lived on the Upper West Side I had been running from myself for too long, and my body was begging me to stop. That moment in the doctor’s office, alongside the support and encouragement from my family, led me to leave the New York fashion scene and move back home to California, where the true healing began. I transitioned from living in a body obsessed with control and deprivation to one that sought to understand what it means to be a woman both biologically and spiritually I started my journey by rejecting restrictive diets and embracing strength training No more starving myself No more isolating myself to the cardio equipment in fear of the weight room. I allowed myself to enjoy food and to explore what fitness felt for me. My body responded with energy and vitality I hadn’t felt in years Slowly, I built a new foundation one rooted in strength training, nourishment, and femininity and began my career as a personal trainer But then, like many women recovering from extremes, I swung the pendulum in the other direction

I call this my Hustle Era.

Ifound my way into the world of bikini bodybuilding. It felt like a healthier alternative a world of sculpted muscles and lean physiques, and I was drawn to the “beauty” of it all These women were strong, empowered, and in control of their bodies, much like the Victoria’s Secret Angels I once idolized but with muscle As a former competitive dancer and martial artist, I craved the discipline and competition this world offered. Fresh off a divorce, I was determined to prove my worth again.

I threw myself into the matrix I was building a fresh client list as a personal trainer in a new city, and ventured to become a bikini competitor myself I quickly learned that this world, too, had its pitfalls The gym became my sanctuary and my battleground In many ways, I had traded one set of shackles for another, grinding away in the gym, measuring my worth by my body fat percentage and trophy collection.

And as I dug myself deeper into this hustle hole, I became disconnected from my true feminine nature I was living a hypermasculinized version of myself, equating my success with how hard I could push, how much I could lift, and how little I could rest The gym and my work schedule became a game of survival, a way to mask my betrayal trauma and the brokenness from my divorce. I was the man I needed in every sense provider, protector, fierce competitor. But it was suffocating. The grind was endless, and I could feel it draining the color from my life

And that’s when the veil lifted I realized I was living the flip side of the same distorted reality I had run from in the fashion industry just in a different form as a bodybuilder and fitness model My self-worth was still tied to my body, but now the illusion of “strength” and “empowerment” masked the same self-abuse rituals I thought I’d set myself free from.

I had enough.

I retired from bikini competitions after placing top 10 nationwide two years in a row and winning multiple local, state, and regional titles My heart and soul weren’t in it anymore it was the end of an era Around this time, I began exploring new ideas like cycle syncing, ancestral wisdom, masculine and feminine polarity, and what it truly means to thrive in our feminine design. This was the conception of Flex Your Feminine.

Welcome to my Strong Soft Girl Era.

My real feminine awakening came after I experienced a breakup that challenged me to reevaluate everything I thought I knew about health, fitness, relationships, and femininity It was more than just the end of a relationship with a man it was the end of my relationship with hustle culture and external validation I even broke up with hormonal birth control, which allowed me to reconnect with my natural cycles for the first time since I began modeling at 16 For the first time in years, I felt like I could trust my body.

During this season, God also blessed me with my now healthy, masculine husband, who fully honors and supports my feminine design Our beautiful marriage has become a reflection of the very balance between masculine and feminine that I sought to embody in my life one where I can rest in my softness while still standing strong in my purpose With his strength as my support, I have been able to further deepen into my femininity and find a peace that is both sacred and liberating

I stopped chasing society’s definitions of what “strong” and “beautiful” look like and started listening to my body’s wisdom. I discovered that the blueprint for true health and happiness was inside me all along, written in my biology. I began to align my workouts, my nutrition, my rest, and even my business with my menstrual cycle, and I found the peace and balance that I’d been chasing for so many years I was no longer at war with myself Instead, I was in harmony with the way God designed me: a woman, cyclical and confident in the truth of how He made me

This was a spiritual awakening more so a soulful remembering as much as it was a physical one. It was about reclaiming what had been stolen by an industry that profits off keeping women in the shadows disconnected from their feminine birthright, chasing an ideal that only leads to burnout and betrayal fearful of the very parts of themselves that hold the keys to the freedom they seek Flex Your Feminine was born out of my desire to help women break free from that matrix, to stop grinding against their biology and start thriving in alignment with it

It’s about integrating strength, nourishment, rest, and responsibility in a way that honors our biological design Instead of fighting against our cycles, we train with them Instead of measuring our worth by how much we can hustle, we learn to honor the ebb and flow of energy that naturally comes with being a woman

One of the core problems in the mainstream fitness industry is that its research and programming are predominantly geared toward men, designed around the 24-hour male hormone cycle rather than the infradian monthly rhythm of the female menstrual cycle Women are not miniature men and our physiology deserves a different approach from the ways men exercise and eat Flex Your Feminine addresses this gap by aligning exercise, nutrition, and recovery with the four phases of a woman ’ s cycle For women who aren’t menstruating, we implement a lunar strategy, aligning perfectly with our program ’ s framework

How a Veal Sandwich changed A Woman's Life at 45 The Unexpected Second Act:

When Daniela first moved into her charming apartment, her fresh start days began with a complimentary soundtrack of construction happening outside her kitchen window. A chorus of jackhammers, and the more than occasional percussion of metal clanging. Rather than surrender to the morning ruckus, she took a different approach. She picked up some fresh veal, from her butcher, went into her kitchen and made some of the best veal sandwiches ever made She marched outside, handed them out to the crew and there began the takeover It didn't take long before they would message her asking if it was too early to start in front of her house, or if it best they begin down the street For two seasons until the work was completed, Daniela prepared their lunch daily - a myriad of veal sandwiches, lasagna, eggplant parmigiana, pasta and the occasional espresso and biscotti station she'd prepared for their breaks.

Born into an Italian family, Daniela spent countless hours in the kitchen with her mother, learning the many techniques and dishes that make Italian cuisine the most loved around the globe "Even then as a little girl standing on a phone book propped chair to reach the table, I began to appreciate the romanticism of Italian food and culture Over the years, having the opportunity to learn from the many young at heart people across Italy has truly extended my mother's lessons to that of a great respect for simplicity" Daniela recalls.

What she incessantly shares is a journey into the heart of Italian culture, where food is an experience to be savored and shared.

But the real turning point came when I launched my own spray tan salon It wasn’t just about beauty it was about connection I learned firsthand how to build a business from scratch, not just through marketing but through prioritizing deeply understanding my customers and growing my visibility The success of my business didn’t come from clever Instagram hacks or ads it came from understanding people and creating a brand that truly resonated with them.

ventured down many paths searching for that one thing that would fill my heart and light my soul. I know now, with certainty, what I was searching for was never out there It was always within, but I needed the journey to learn who I am and what I was made for On the other side of tragedy, loss, grief and illness, I found myself

My name is Ameera, it is an Arabic name my father chose, and it means Princess I grew up in a small townhouse in Ottawa, Canada, the youngest of four children. My father passed away from cancer at the age of 41, two years after I was born. My family had just immigrated from South Africa and my mother had to secure a job and raise four children with an eighth-grade education. She worked hard earning a very modest salary and took every opportunity to compete for new roles throughout her career We did not have a lot of disposable income but always had food on the table in our modest, vibrantly decorated, cozy home

When I was a young teen, my eldest brother made a mistake that would follow him for most of his life. He hit rock bottom and the impact on our family was financially and emotionally devastating. It was a gritty time where our strength and resolve were tested daily. We had no choice but to weather the storm and endure the judgment, looks, and whispers of others. It was during this time, one fateful night, that my brother watched Anthony Robbins’ infomercial on Personal Power He ordered the cassettes, did the program, and he never looked back Our family went on to create a business promoting Tony Robbins across Canada A small startup business became an international company with sold-out audiences around the world, producing live events featuring legendary speakers, best-selling authors, entertainers, media icons, former Presidents, and Olympic athletes.

I was privileged to grow up in the business of personal development and motivation At a young age, I held the firm belief that you could create a life you love through vision, perseverance and faith Our small and mighty team was the embodiment of excellence in a hustle culture era

My sister had been rushed to the hospital after suffering what appeared to be a stroke After weeks of tests, she was diagnosed with an inoperable brain tumor She courageously endured 2 years of treatment, lost her ability to walk, write and speak She passed away one month shy of her 50th birthday Shamim was truly God’s angel on this earth Our life was forever changed

Ttumultuous Our business endured one hit after another, and in 2011 we had to close our doors, leaving our family and team unemployed The decades of knowledge I had accumulated about mindset, resilience, NLP, positive affirmations, and self-talk felt distant and unreachable when I most needed them My body, mind, and spirit were being transported back to my teen years of uncertainty and shame I was battling old beliefs of fear, money scarcity and felt completely exposed and vulnerable. I had no income, my husband and I were expecting our first child, and financially supporting his newly immigrated parents. I sat at home, pregnant, clipping coupons for groceries, and learned there is duality in every aspect of life I have witnessed loved ones, myself included, live this life and never stop to ask themselves what they truly desire. They never pause to ask themselves if they are happy and fulfilled. Imagine spending decades in the shadows of your truth After the loss of my sister and our family business, I became stuck again in an old paradigm of hustle, lack, and scarcity. I had found a job that I liked but no longer fulfilled me. I was going through the motions, living each day for the weekend The child who was raised surrounded by the motivation icons of the 80’s and 90’s was no longer recognizable

he years following her passing were In 2020, I contracted an illness, and my immune system was so low from fatigue and neglect that I was hospitalized I was burntout and was forced to take medical leave to diagnose my inexplicable symptoms My body, mind and spirit were depleted. After losing my dad and sister to cancer, I couldn’t help but think that I was dying I decided then-and-there this was not going to be the end of my story I used everything I had learned to call-in my personal power and define my future I began advocating for my health, literally chasing down doctors and investing thousands of dollars into medical care I was finally diagnosed, treated, and able to return to my life My brother had restarted his business and was encouraging me to do what I truly desired I began to search for a new career and pursued my Life Coaching certificate I was determined and re-

energized I invested time in re-learning and integrating every lesson, theory, and framework from my earlier days in the self-development industry I unlearned outdated thought patterns, fear based self-talk, and negative beliefs that did not serve my singular focus I was driven by my personal mission to design a life and legacy of freedom, health, wealth, and fulfillment Time was too precious not to pursue my passion and purpose

seeing a musical, when I checked my messages I quickly asked my husband to pull the car off to the side of the road, where I stepped out into the cold rain and sobbed uncontrollably as I was told my eldest brother had died of a heart attack just hours earlier I felt like I was being swallowed by an ocean of grief during a hurricane My oldest brother was so much more than a brother. He was my fearless protector, father figure, mentor, and friend. Over the next few months, I endured anxiety, panic attacks, insomnia, and massive emotional swings including anger, fear, guilt, sadness, and numbness on any given day I had to hold it all together for my children who had lost a beloved uncle, and my mother who had lost her husband, daughter and son in one lifetime It was unbearable Five months later my father-in-law passed away and that same ocean of grief swept-in and took hold of my husband and his mother My only choice was to surrender and trust that we would all be held

2024 is the year I turned 50, and it is not lost on me how quickly months turn to years and years turn to decades. When I look back on my life, I want to be able to say I took hold of opportunities with both hands and gave it my all I want to say I lived

The holidays are meant to be magical a time filled with joy, warmth, and

connection Yet, for many, they’ve become synonymous with stress, exhaustion, and endless to-do lists This year, I want to share a different approach a way to reclaim the magic by focusing on wellness, balance, and intentional living.

Let me take you back to a few holiday seasons ago. My days were jampacked with events, gift shopping, and deadlines. I was running from one thing to the next, barely catching my breath By the time New Year’s Eve rolled around, I was utterly exhausted The joy I had hoped to experience with my family and friends felt fleeting, buried under the weight of endless commitments I realized I had been so focused on creating the *perfect* holiday, I had forgotten to enjoy it

That experience became a turning point. I decided I no longer wanted to associate the holiday season with burnout. Instead, I chose to prioritize my well-being and make intentional choices that supported a stress-free, joyfilled season. And that’s the heart of this article a guide to help you cultivate a calm and centered holiday experience, where you can truly be present

Mindful Mornings for Centered Days

The hustle of the holiday season often means diving into the day without a moment’s pause. But I’ve learned that starting my mornings with intention changes everything. Whether it's five minutes of meditation, writing in a gratitude journal, or simply enjoying a hot cup of tea while watching the snowfall, carving out these quiet moments sets a tone of calm that lingers throughout the day

Last Christmas, I remember waking up before anyone else in the house Instead of reaching for my phone or diving straight into holiday prep, I sat in the stillness of the early morning, lit a candle, and just breathed That simple ritual created a grounding energy that I carried with me through the chaos of the day It’s those moments of pause that allow us to stay connected to the present rather than getting swept up in the rush.

Setting Boundaries with Grace

The holiday season is notorious for overcommitment But I’ve found that when we protect our time and energy, we ’ re able to give more fully to the things that matter. One of the greatest acts of self-care is learning to say “ no ” with grace. It’s not about declining every invitation but rather choosing the events and commitments that align with your values and bring you joy

Last year, I remember being invited to five different holiday parties within two days My initial instinct was to attend them all after all, I didn’t want to disappoint anyone But after reflecting, I realized that showing up at every event would drain my energy and leave me feeling depleted So, I chose to attend the gatherings that felt most aligned with my heart and allowed me to be fully present. The rest? A gracious, “Thank you, but I’ll have to pass. ”

“This year, I invite you to embrace the holidays with a sense of calm and wellness It’s not about doing less it’s about doing what truly matters. By nurturing your body, mind, and spirit, you can create a season that feels aligned, joyful, and stress-free.”

Nourish Your Body And Your Spirit

The holiday season is filled with indulgence, and rightfully so But while we enjoy the festive treats, it’s important to remember that nourishing our bodies can amplify the joy we feel Rather than rigidly avoiding indulgences, I focus on balance enjoying my favorite holiday foods while also ensuring I’m feeding my body the nutrients it craves.

During a particularly busy December, I found myself running on nothing but sugar cookies and coffee (sound familiar?) My energy plummeted, and instead of feeling festive, I felt foggy and drained Since then, I’ve made a commitment to nourishing my body with foods that energize me think warm soups, seasonal vegetables, and hearty grains When I feel good physically, I’m able to fully savor the holiday magic

Move Your Body with Joy

Exercise doesn’t have to be a chore, especially during the holidays Whether it's a brisk winter walk, dancing around the kitchen while baking cookies, or attending a fun holiday yoga class, moving your body can be a beautiful way to release stress and stay energized.

Last year, after a long day of hosting, I took a quiet evening walk in the snow with my family We laughed, told stories, and admired the Christmas lights in the neighborhood It reminded me that movement doesn’t need to be about rigid routines it’s about finding joy in the simple act of staying active

Create Restful Rituals

The holidays often bring late nights and early mornings, but rest is the secret to staying grounded. I’ve learned the importance of creating restful moments amidst the festivities. Whether it’s a quick nap, a candlelit bath, or an hour with your favorite book, carving out time to rest allows you to recharge

One of my favorite holiday rituals is setting aside one evening each week for a “ cozy night in” No plans, no obligations just me, a blanket, and a good movie or book It’s these restful moments that allow me to be fully present during the busier days.

Be Fully Present

This is, perhaps, the most important part of a stress-free holiday. It’s easy to get swept up in the planning, the gifts, and the events, but the true magic of the season lies in presence. Put your phone down. Look into the eyes of your loved ones when they speak. Soak in the laughter, the warmth, and the beauty of the moment

I can still remember a holiday dinner a few years ago My to-do list was endless, but I decided to let go of perfection and simply be present I laughed with my family, shared stories, and felt a deep sense of gratitude for the moment That’s what the holidays are truly about

DIRECTIONS:

Fill a glass with ice, add cranberry juice, ginger beer, and lime juice

Stir gently and garnish with cranberries and a rosemary sprig

INGREDIENTS:

1 CUP APPLE CIDER 1/2 CUP SPARKLING WATER

1 TBSP CINNAMON SYRUP

APPLE SLICES AND CINNAMON STICK FOR GARNISH

1 CUP HOT CHOCOLATE

WHIPPED CREAM

1/2 TSP PEPPERMINT EXTRACT

CRUSHED PEPPERMINT CANDIES

DIRECTIONS:

Prepare hot chocolate, stir in peppermint extract, and top with whipped cream Sprinkle crushed peppermint candies on top

DIRECTIONS:

Mix apple cider, sparkling water, and cinnamon syrup in a glass Add ice, and garnish with apple slices and a cinnamon stick

DIRECTIONS:

Pour eggnog into a glass, add spiced rum, and stir. Sprinkle with nutmeg and cinnamon on top

INGREDIENTS:

1 OZ VODKA

1/2 CUP CRANBERRY JUICE

1/2 CUP GINGER BEER

SUGARED CRANBERRIES AND MINT FOR GARNISH

1/2 OZ ORANGE LIQUEUR POMEGRANATE SEEDS AND ROSEMARY SPRIG FOR GARNISH

DIRECTIONS:

Shake vodka, pomegranate juice, and orange liqueur with ice Strain into a martini glass and garnish with pomegranate seeds and a rosemary sprig

DIRECTIONS:

Fill a mule mug with ice. Add vodka, cranberry juice, and lime juice Top with ginger beer and garnish with sugared cranberries and mint

Italian Inspired

Stuffed Eggplants

ACALABRESETRADITION

INGREDIENTS

8 medium eggplants

350 g day old bread or breadcrumbs

4-5 eggs

1 egg white for wash

75 g grated pecorino or parmigiano

basilico - hand ripped or sliced

garlic - finely chopped

fine sea salt to taste

black pepper to taste

olive oil for frying

enjoy, they'refantastic!

INSTRUCTIONS

Clean eggplants, remove stem and cut in half lengthwise in large pot of water on medium/high heat, cook the eggplants until semi soft (approx 5 min)

Drain and set aside until cool enough to handle

In a bowl, lightly soak hand ripped bread in water and let sit (if using breadcrumbs, skip this step)

Gently remove flesh leaving approximately 1/2 cm skin on the eggplant

Set skins on a plate and flesh on cutting board

Medium chop the flesh and add to bowl with bread

In same bowl, add whole eggs, pecorino or parmigiano, garlic, basilico, salt and pepper

Mix well and fill each eggplant skin evenly

Heat olive oil in frying pan on med/med-high heat

In a small bowl, whisk egg white

Coat filling side of eggplants in egg wash and fry filling side down until golden

Flip and repeat on reverse side until golden and crispy

Remove and set on paper towel lined plate to soak any excess oil

While still hot, plate, sprinkle pecorino or parmigiano as desired, and serve

Sage & Butternut Squash Gnocchi

INGREDIENTS

1/2 butternut squash

Olive oil for drizzling

Salt

350 g 00 flour

50g grated parmigiano

Sage

Butter

Nutmeg

INSTRUCTIONS

Heat oven to 400 f

On parchment lined baking sheet, drizzle olive oil on cubed squash and bake for 35 min

Remove from oven and drain to cool

Mash squash onto working surface (wooden board or counter) and form a well

Sift flour onto squash

Add a pinch of salt to taste

Mix until dough is smooth

Cut into half and roll 2 long ropes of approx 1cm thick

Cut each rope into 1cm pieces and set aside

Bring a large pot of salted water to boil

Cook gnocchi for 1 minute after they float to the top

In a pan on medium heat, melt butter

Add sage leaves and freshly grated nutmeg

Drain gnocchi (saving a cup or so of water)

Add drained gnocchi to pan and mix into butter

Sprinkle grated parmigiano, amalgamate all flavours

Pour some of the gnocchi water and mix until creamy

Remove from heat, plate and serve

The Perfect Pesto

The traditional pestle and mortar method of making pesto is my favorite way as it’s more authentic and the flavours marry beautifully. You're welcome to use a blender if preferred, it will still taste fabulous.

The pasta to pair? Trofie is the classic shape for this luscious green goodness, and you can find trofie at specialty Italian supermarkets. Spaghetti is also a wonderful pairing for pesto and makes an equally delicious dish.

INSTRUCTIONS INGREDIENTS

50g fresh Italian basil

2-3 cloves of garlic – peeled

20g pine nuts

80g Parmigiano - grated

20g Pecorino - grated

120ml Extra Virgin Olive Oil

Pinch of sea salt

Rinse the basil and gently pat completely dry. Set aside with other prepared ingredients

Fill a pot ¾ way with cold water, add a pinch of salt and place on the stove to boil

In your mortar, add the garlic and pestle until you achieve a smooth paste

Add and pestle the pine nuts

Now the basil – you’ll know you’ve crushed enough when it’s reached a thick and solid consistency

Add a pinch of sea salt

Stir in the parmigiano and pecorino

Pour the olive oil and continue mixing until pesto is smooth and ingredients are evenly combined

Nutellotti Cookies

INGREDIENTS

180 g nutella (try using the glass jar nutella - it's made in Italy and far superior in flavour to the plastic jar)

135 g 00 flour

1 medium egg

Nutella for topping

Halved hazelnuts for garnish

Icing sugar for dusting

INSTRUCTIONS

In a bowl, whisk nutella with the egg

Add flour a little at a time, and mix until well amalgamated Roll mixture into ball, wrap in plastic and let sit for 15-20 minutes in the refrigerator

Prepare a parchment lined cookie tray and set oven to 340 f Roll balls and place onto sheet

With your finger, gently dent the top of the cookie

Fill indentation with nutella (via piping bag or spoon)

Add hazelnut

Bake for 10 minutes

Remove from oven and set aside to cool

Dust and serve
