Freshen Up Your Meal Prep

(NAPSA)—With more than 3.9 million “mealprep” hashtags on Instagram, many people have found success in living a healthier lifestyle through meal prepping. Not only does it save you time during the busy workweek, it allows for a better variety of healthy, ready-to-eat foods at your disposal.
Prepping 101
Of course, this doesn’t mean you should spend your entire day in the kitchen prepping every last detail of your meals for the week—simply cook up or prepare several staple items to have on hand for those quick and wholesome, no-brainer meals or snacks when you need them. Here are some tips on how to make the most of your prepping sessions:
Chop, slice, dice, repeat. Start with something as simple as prepping fruits and veggies in advance to have ready in the fridge for meals or snacks; store them in glass containers for easy organization and motivation to stick to your meal plan.
Double the batch. Along with prepared produce, cook large batches of staple ingredients such as quinoa, brown rice and proteins to make meal assembly quick and easy.
Add a dash of this, a dash of that. Use seasonings and sauces to mix up the avor pro le of similar ingredients. One night, dinner could be an Asian stir-fry, while the next it could be a Mexicaninspired bowl.
Try something new. Meal “preppers” may eventually become tired of throwing together the same old meals and find the food they prepare mundane. When fatigue hits, seek out a new recipe or work with a new ingredient. I like to incorporate tasty and brightly colored fruit such as mango to refresh everyday meals and snacks.
To save time, prep veggies and other ingredients in advance of making your meals. To make them more nutritious and fun, include mangos.
Roll Up Your Sleeves
For a healthy, tasty and quick meal this week, try my Mango Spring Rolls. is recipe is a delicious step out of the ordinary and it’s chock-full of nutrients. One cup of mango provides 100 percent of your daily vitamin C, 35 percent of your daily vitamin A and 12 percent of your daily ber.
Mango Spring Rolls
Servings: 5 spring rolls
Ingredients:
½ fresh mango
¼ small head purple cabbage
5 green onion spears
½ medium cucumber
½ medium red bell pepper
5 pieces rice paper
Handful cilantro
1 cup shredded carrot
Almond Butter Dipping Sauce:
3 Tbsp creamy almond butter

Save yourself the frustration and instead of these snacks try a tray of fresh fruit and vegetables, popcorn with low-sodium content or a homemade trail mix to satisfy your 3 p.m. cravings. Additionally, try replacing soda in your daily regimen with water or all-natural fruit juices without added sugar.
Touch Your Toes: Remind yourself to take a brief break at the top of every hour to stretch your body. As you sit hunched over a computer, your neck and shoulder muscles tense up, resulting in future discomfort. Engaging in stretches will help keep you nimble and comfortable throughout the day.
1 tsp tamari ½ lime, squeezed
1 Tbsp honey
2–3 Tbsp hot ltered water
Directions: Slice two mango cheeks into long, narrow strips and set aside. Slice cabbage, onion, cucumber and red bell pepper into very thin 4-inch pieces and set aside. Prepare rice paper as instructed on package. Once pliable, place a few of each ingredient (including cilantro and carrots) in the center of the paper, folding in the sides and rolling until all veggies are inside and paper is closed. To store, leave some space between rolls to prevent rolls from sticking together.
Dipping Sauce: Whisk or blend together all ingredients until consistency is creamy.
Mango How-To
If you’re new to working with mangos, follow these quick tips for proper prep. Selection. Don’t judge a mango by its color—red does not mean ripe. A ripe mango will be slightly so like a peach or avocado.
Storage. Keep unripe mangos at room temperature. Never refrigerate mangos before they’re ripe. Once ripe, mangos can be moved to the refrigerator to slow down ripening for several days.
Cutting. To cut a mango, simply slice o the sides of the fruit, avoiding the large seed in the center. Once you have these two sides (cheeks), you can get to the esh and slice or dice as needed. en, simply scoop the fruit out of the skin.

The door of Jill Brody’s house swings open as Stephen Gustafson steps inside, full of his signature boundless energy and enthusiasm. The country’s flag is red, which is associated not only with power, but with luck, happiness and celebrations. Traditional Chinese brides wear red for luck, and the Lunar New Year is celebrated with red lanterns and many other red decorations. The blue seal mark on the bottom of the base is like those on Qing dynasty porcelain.
Q:I’dlike to know the value of a set of two deck chairs (possibly teak) from the SS Oceanic. They have their original blue cushions with “Home Lines” and a logo in gold. What do you think they are worth?
A:HomeLines was an Italian company that operated cruise ships and ocean liners. The company was in business from 1946 to 1988, when it merged with Holland America Line. SS Oceanic was one of Home Lines’ cruise ships from 1965 to 1985, when it was sold to Premier Cruise Line. Most deck chairs don’t sell for high prices. Chairs by important makers or those with a connection to an important or historic event do sell for high prices. A deck chair from the Titanic, one of seven known and with a letter of authenticity, sold for almost $150,000 in 2015. The value of your deck chairs depends on condition and the history of the boat. They sell for $100 to $1,000.

Ingredients
• 2 Large Eggland’s Best eggs
• 1 mashed ripe banana (about 1/2 cup)
• 1/4 cup maple syrup
• 1 teaspoon vanilla extract
• 2 cups rolled oats
• 1/2 cup almond flour (or whole wheat flour)
• 1/4 cup mini dark chocolate chips
• 1 teaspoon baking powder

• 1/2 teaspoon cinnamon
Preparation
1. Preheat oven to 350 degrees F.

IBd is comprised of two diseases: Ulcerative Colitis (UC) and Crohn’s disease (CD). Both conditions cause inflammation and damage to the intestinal tract (small and large intestine). Cd can affect all parts of the intestinal tract while UC is limited to the colon. IBd can affect other parts of the body including joints (arthritis), eyes (uveitis), skin (pyoderma), liver, and more. IBd increases the risk of colorectal cancer and requires frequent surveillance with colonoscopy.
Are IBS and IBD the same thing?
Many people confuse IBS and IBd because they sound similar. Irritable bowel syndrome (IBS) is a clinical condition based on a set of symptoms: abdominal pain with diarrhea, constipation, or both. IBd is a lifelong autoimmune disease caused by chronic inflammation of the intestinal tract. They are not the same disease but share many similar symptoms including diarrhea and abdominal discomfort which is why speaking to your doctor about your symptoms is important.
What are the most common symptoms of IBD?
The most common symptoms of IBd include diarrhea, abdominal pain, fatigue, weight loss, and rectal bleeding. The diarrhea may be frequent and result in the need to “rush” to the bathroom with urgency. Many of these symptoms can be debilitating and affect quality of life. People are often embarrassed to talk about their symptoms or seek help.
When are most people diagnosed with IBD?
While IBd can occur at any age, most patients are diagnosed before age 30. Many people with IBd may have rectal bleeding and think it is from hemorrhoids not realizing it could be a sign of IBd. After age 30 there is a second “peak” of diagnoses in the 50-60s age range so it is important for everyone to pay attention to the symptoms and speak with their doctor.
Why do people get IBD?
The exact cause of IBd is not known. Researchers believe it is a combination of genetics, environmental factors, and the body’s immune response. There are genetic risk factors including having a first-degree relative with Cd or UC. Historically, white populations had a higher incidence of IBd, but recent studies have shown an increase in IBd across other races and ethnicities.
How is IBD diagnosed?
The key part of diagnosing IBd starts with recognizing the symptoms. Let your doctor know if you are developing rectal bleeding, having pain after eating, or losing weight without intent. Your doctor may examine you and send you for blood and stool tests to check for anemia, signs of inflammation, or infection. To physically “look” at the intestinal tract your doctor may refer you to a gastroenterologist for an endoscopy and colonoscopy. This is done

by putting a small, thin, flexible tube with a camera in the body. Pictures and biopsies can be taken to help diagnose IBd. Imaging tests including CT scans and MRI may help with the diagnosis as well.
Is there a cure for IBD?
While there is no “cure” for IBd, we do have some excellent treatments to keep the disease under control. IBd often has periods of remission and active flare-ups and should be monitored carefully. There are different medications used to treat IBd including anti-inflammatory agents, immunomodulators, and biologic therapy. However, it is critically important to start treatment early before irreversible structural damage occurs. Time is of the essence in diagnosing and treating IBd.
Will you need surgery if you have IBD? Will you need a bag (colostomy/ileostomy)?
Most IBd can be managed medically, but sometimes the disease has progressed to structural damage requiring surgery. The patient will be referred to a colorectal surgeon to discuss surgical options. often, colorectal surgeons are able to offer minimally invasive surgical techniques (smaller incisions, less pain, earlier return to work/school) with laparoscopic or robotic surgery. Most IBd patients undergoing surgery worry if they will need a “bag” or “stoma” which refers to a colostomy or ileostomy. This is when a portion of the intestinal tract is brought up to the skin and waste is collected in a bag either temporarily or permanently. This is needed in a small number of IBd patients and why it is important to diagnose and treat early prior to structural damage.
Does IBD
affect your fertility?
With the peak of IBd in the 20s-30s this coincides with many starting families. It is important to make sure IBd is well controlled, ideally prior to becoming pregnant. Patients with female anatomy who conceive while in remission from IBd tend to remain in remission for the duration of their pregnancy. Conversely, poorly controlled IBd can lead to decreased fertility, and higher-risk pregnancies.

It is important to pay attention and listen to your body’s symptoms. do not be embarrassed to call your doctor if you develop persistent diarrhea, rectal bleeding, or abdominal pain. Early diagnosis and intervention are key to achieving remission and preventing long-term structural damage in IBd. the Race: The Art of Crockpot Glazed Pork
Some things are perfect just as they are and don’t require improvement. This is one of those things.
In these days of instant gratification, it isn’t popular to take the slow road. I love my instant pot, don’t get me wrong. But cooking a pork roast in the slow cooker or oven is better than using an instant pot because the slow and steady heat allows for even cooking and richer flavor.
If feeding a crowd or having leftovers are important to you, larger cuts of meat can also be cooked more evenly in an oven or slow cooker, which may not be possible in an instant pot. While an instant pot is convenient for quick cooking, an oven or slow cooker can result in a culinary masterpiece worthy of the wait.
The recipe I’m sharing today has been around forever. It’s melt-inyour-mouth juicy pork, enrobed in a sweet and tangy glaze. It’s all about the glaze. You could put this glaze on a flip-flop and I would eat it.
CROCK-POT BROWN SUGAR & BALSAMIC GLAZED PORK
Yield: 8 generous servings
Total time: 4 to 6 hours, plus glazing
- 5 pounds boneless pork sirloin
roast
2 teaspoons ground sage
1 1/2 teaspoons kosher salt
Freshly ground black pepper
4 cloves garlic, minced
1/2 cup water
For the glaze:
1 cup dark brown sugar
1/2 cup balsamic vinegar
1/4 cup soy sauce
2 tablespoons cornstarch
1/4 cup water
Season the pork roast on all sides with sage, salt and pepper. Place pork, fat cap side up, in the slow cooker and sprinkle the garlic evenly over the top. Carefully add water into the slow cooker so you don’t wash off the seasoning. Cook on high for 4 to 6 hours, or until the pork shreds easily with a fork. Carefully pull the roast from the slow cooker and place on an aluminumlined sheet pan, and let it rest.

Repeat 2 to 3 more times until desired coating is achieved. Shred or slice pork against the grain into individual portions. Serve with reserved glaze on the side.
Oven directions: Preheat your oven to 350 F. Following the recipe and directions above, place the ingredients into a covered roasting pan or Dutch oven. Bake, covered, in the preheated oven for approximately 90 minutes to 2 hours, or until the pork shreds easily with a fork. Follow the directions for glazing the pork shown above.
It’s important to note that oven cooking times can vary, so be sure to keep an eye on the pork as it cooks to ensure that it doesn’t overcook or dry out.

the Rules
I talk about powder horns a lot here as I’m fascinated by them. Plain or carved, as long as they have a provenance, I get pretty excited when I handle one. A few weeks I ago I had two calls about horns at work. They were both unnamed, undated and had no real value. Then I got a third call, which at first I thought was going to be like the two before it - but I was wrong!
The owner of the horn sent me some images that evening after our conversation. I was out to dinner with my wife when they arrived, and I had to ignore both my wife and dinner to spend a few minutes taking a look. As the images downloaded, I realized I had seen the name on the horn, Richard Andrus, in a drawing by artist Rufus Grider. I quickly located the drawing in the collection of the New York Historical Society collection and sure enough, it was the same horn (although for some reason Grider flipped the scenes on the horn around Andrus’s name). It’s marked “RICHARD ANDRUS his/horn Made at Roxbury October 5th: 1775” and engraved with foliate designs, deep incised areas within the designs, crude trees, and a soldier. It has a slightly convex pine plug with an iron staple, and a tapered spout. The style of carving was also instantly recognized as that of “The Simsbury Carver,” as noted historian Bill Guthman referred to the unknown artist. When Bill wrote his book on powder horns, he had seen three by the same carver. I had found and

sold a fourth five or six years ago, with this one being the fifth known! The research then began.
Richard Andrus was from Simsbury, Connecticut. Using his date of death is his Revolutionary pension records, he was born about 1750. He was married in the spring of 1775, not long before he enlisted on May 4 and marched as a member of Captain Abel Pettibone’s 7th Company, 2nd Regiment, to the Siege of Boston and the fortifications at Roxbury, Massachusetts. He was at Roxbury until December 10 when their enlistments were over. He reenlisted on January 1, 1776, and served again in Captain Abel Pettibone’s Company until January 1, 1777. In March 1777, he enlisted as a teamster for three years in Captain Ozias Bingham’s Company, and in 1780 he enlisted yet again in Lieutenant Colonel Joseph Hait’s 2nd Connecticut Regiment. That’s quite a service record!
However, when Andrus tried to get a pension for his service, it was a struggle. His name on the early muster rolls had been spelled “Adams” and he couldn’t receive the monies he should have. After his death on October 24, 1826, his wife fought for his pension. Luckily these records survive in the National Archives for us to study. With the numerous petitions, it was proven that the “Adams” in the rolls should have been Andrus, and his wife Catharine received his full pension.
Kind of a sad story for a man who honorably served his country, and I’m glad his horn survived so that I (and you) could learn more about him!

Exeter Grange is working on a new challenge. The Grange is participating in the ìGo Bananas Challengeî for Project Saving Species in conjunction with the Cincinnati Zoo.
