With the arrival of spring came the news about the tourism sector. Visitor number and the number of overnight stays in the hotels are increasing and the forecast for the summer is just as bright. Obviously, in a land that depends a lot on tourism, it is not only the hotels that have reason to be satisfied, but also associated services that can expect a 2011 that is much better than 2010.

In this edition we look towards the summer, showing outdoor activities such as mountain biking, or the hidden corners in the Calheta landscape, which the town hall now wants to show off through a series of informative leaflets for tourists. But we also look at big events live Funchal Jazz or the Funchal Music Festival.

On the other side of the island, Machico is the regional capital of culture throughout this year. It was the place where those who discovered Madeira first stepped on land and is today the islands second largest city, which we explore a little better in this edition.

tained glass, paintings or art installations can now be seen on the doors of the buildings along Rua de Santa Maria, the oldest in Funchal. For now they are few in number, but the idea from the Commission for the Refurbishment of the Historical area, which is responsible for the initiative, is for there to be many more.

The project is called “An Open Door on Art” and entails inviting artists to decorate one of the doors along the street. The result is an open air gallery and a street with a unique identity.

João Carlos Abreu, former general secretary of Madeira’s tourism board and the renowned interior designer Nini Andrade Silva are responsible for the refurbishment of the oldest part of Funchal, in an initiative that also involves the city’s town hall. The aim is to bring a new vitality to a distinctive area, which has seen new restaurants, entertainment and leisure establishments open, some of which along Rua de Santa Maria.

Apart from the cosmopolitanism that has returned to the historic area, the embryo which would one day become the city of Funchal has transformed itself into a great exhibition of art with people inside it. Literally.

The project will see around two hundred doors decorated, although this number will vary according to the enrolment of new artists and the owners of the buildings. www.essential-portugal.com 12

itrais, pinturas, ou instalações de arte podem agora ser vistos nas portas dos prédios da Rua de Santa Maria, a mais antiga do Funchal. Para já ainda são em número reduzido, mas a ideia da Comissão de Revitalização da Zona Velha, responsável pela iniciativa, é que venham a ser muitas mais.

O projecto chama-se "Arte de Portas Abertas" e consiste no convite a artistas plásticos para decorarem uma das portas da rua. O resultado é uma galeria a céu aberto e uma rua com identidade única.

João Carlos Abreu, que foi secretário regional do Turismo da Madeira e a consagrada designer de interiores Nini Andrade Silva dão a cara pela revitalização da parte mais antiga do Funchal, numa iniciativa que também envolve a Câmara Municipal da cidade. O objectivo é dar uma nova vitalidade a uma zona característica, que tem vindo a assistir à abertura de restaurantes e novos espaços de diversão e lazer, alguns dos quais na Rua de Santa Maria.

Para além do cosmopolitismo que regressou à Zona Velha, o embrião do que viria a ser a cidade do Funchal transformou-se numa grande exposição de Arte com gente dentro. Literalmente. O projecto prevê a decoração de duas centenas de portas, embora o número possa oscilar em função da adesão de novos artistas e dos proprietários dos imóveis.

orto Santo Line, the company responsible for daily maritime links between Madeira and Porto Santo, on the ‘Lobo Marinho’ (Monk Seal) ferry, has introduced a series of new services on its single day cruise. The product allows people to go on a return trip to Porto Santo, with guaranteed transfers, allowing them to enjoy the beach and beauty of the island. The new services now introduced aim to diversify what can be done during the approximate 7 hours that one spends on the golden island.

One of the options is to cover the island by bicycle, but one can also opt to play the 18 holes at the Porto Santo golf course, or one of various Thalassotherapy circuits. In the area of well being, a spa treatment with hot sands is also available, which allows one to benefit from the medicinal properties of the Porto Santo sands.

Apart from these activities, for which specific packages are available, the visit to Porto Santo can allow one to go diving, walking, swimming, or simply lie in the sun on the beach.

The one day cruise is one of the most successful products of the Porto Santo Line.

Departure from Funchal is at 8:00 in the morning and returns at 18:00 in the winter and at 19:00 in the summer. The new products also include one day cruises to Madeira, with departure from Porto Santo on Fridays at 11:00 o'clock, during the summer months.

ritish rock band James is the headline act at the Funchal Music Festival, a summer festival staged at the Santa Catarina Park on the 19th, 20th and 21st of August. The Tim Booth band will close the festival, which will include various bands from all sorts of musical genres.

A few of the most renowned current Portuguese musicians will also be on stage such as Xutos e Pontapés, David Fonseca, Rita Red Shoes, The Gift, Expensive Soul, Fonzie and Legendary Tigerman.

A summer music festival with pop/rock bands was one of the events that was missing in Madeira’s cultural offer. T

he numbers seeking Madeira as a tourist destination are leaving operators in the sector satisfied beyond their expectations. Since spring the results demonstrate a year far better than 2010, the worst ever. This tendency is continuing in the summer, with reservations taking place at a good rate and various events being contracted with regional hotels.

These numbers are below those of 2008, considered the best ever year for tourism, but they are on a par with 2009, which was considered a good year, taking into account the international crisis that had just come about.

When this year began, the expectations for the sector were low. The international crisis was affecting two main markets,

s números da procura da Madeira como destino turístico estão a deixar os operadores do sector satisfeitos acima das expectativas. Desde a Primavera que os resultados demonstram um ano muito melhor do que 2010, o pior de sempre. Esta tendência mantém-se no Verão, com as reservas a decorrer a bom ritmo e diversas operações a serem contratualizadas com a hotelaria regional.

Estes números estão abaixo de 2008, considerado o melhor ano turístico de sempre, mas surgem ao nível de 2009, que foi considerado um bom ano, tendo em conta que a crise internacional tinha acabado de surgir.

Quando este ano começou, a expectativa do sector era baixa. A crise internacional afectava dois dos principais mercados emissores, o Reino Unido e a Alemanha e a crise

United Kingdom and Germany and the Portuguese crisis compromised the coming of national tourists, the main ones in absolute terms. And in fact, the first two months of the year seemed to be pointing in that direction. But March and April guaranteed a change in this tendency and the climate that can be felt today, despite the crisis, is that this will be a good tourism year.

In the specific case of Madeira, it aims to recover from a very bad first semester of 2010, caused by the storm that caused enormous destruction, on the 20th of February and led to the cancelation of many operations. More than a year later, Madeira airport has registered an increase of 6% in the total number of passengers transported in the first four months of the year, compared to the same four months of 2010.

Political problems in a few regions of North Africa contributed to this interest in Madeira. Tunisia, Egypt and even Morocco are recording strong falls in interest from tourists. The contagious effect is added to this, which leads Europeans to consider

that a problem in a country in a certain part of the world can affect the whole area, not only that country.

In the case of North Africa, the destination that benefitted the most from the instability was the Canaries. No caso específico da Madeira trata-se de recuperar de um primeiro semestre de 2010 muito mau, fruto das consequências da tempestade que causou enorme destruição, a 20 de Fevereiro e que levou ao cancelamento de muitas operações. Mais de um ano depois, o Aeroporto da Madeira registou uma subida de 6% no total de passageiros transportados nos primeiros quatro meses do ano, face aos mesmos quatro meses de 2010.

Para esta procura pela Madeira contribuíram os problemas políticos em algumas regiões do norte de África. Tunísia, Egipto ou mesmo Marrocos estão a registar fortíssimas quebras na procura. A isto associa-se o efeito de contágio, que leva os europeus a considerarem que um problema num país de uma determinada zona do Mundo, abrange toda essa zona e não apenas esse país.

Madeira also benefitted in part with the situation. Having always being associated with safety and stability, these islands saw interest increasing from those who were looking for good weather, quiet and above all peace, not only the older generation, but also families with children. To these reasons are added those that traditionally bring tourists to Madeira, which according to a study by the Regional Tourism Board are: Nature (34%), Sun and Sea (21%), Culture (13%), Gastronomy (10%).

The Flower Festival, responsible for the annual peak in visitors, this year took place at the beginning of May. During these days, hotel occupancy reached 93%. Also the fact that Easter took place in April, a month that invites the holidays, guaranteed occupancy rates of 77%. In March, the number of overnight stays in Madeira’s hotels already recorded an increase of 10.7%.

The great expectation of the hotels and services associated to tourism is now in the summer. Spring brought reasons for happiness and the summer seems to be pointing to the same direction. During the last few years the months of June to September have registered record numbers of visitors. The numbers start to increase in June, with the Atlantic Festival, which provides fireworks displays every Saturday of the month in Funchal bay. The maximum peak is reached in August.

A view of the reservations for the best hotels shows that interest is flowing at a good rate and above expectations. Aside from that, rooms are being sold at a good price. It won’t be the best summer ever but it promises to be a good summer, with visitors from all areas, but with a special increase from the areas of those with a greater spending power that once again see Madeira as a good option.

No caso do Norte de África, o destino que mais beneficiou com a instabilidade foi Canárias. O perfil da oferta hoteleira era o mais parecido com os destinos afectados, e as autoridades turísticas das Canárias demoraram pouco tempo a reagir, oferecendo alternativas aos operadores.

A Madeira beneficiou também em parte desta situação. Desde sempre associadas a segurança e estabilidade, estas ilhas viram a procura aumentar por quem busca bom tempo, sossego e sobretudo Paz, não só mais velhos, mas também famílias com crianças. A estas razões juntam-se as que tradicionalmente trazem visitantes à Madeira, de acordo com um estudo Direcção Regional do Turismo: Natureza (34%), Sol e Mar (21%), Cultura (13%), Gastronomia (10%).

A Festa da Flor, responsável por um pico anual de procura, teve lugar, este ano, no início de Maio. Nesses dias a ocupação hoteleira atingiu os 93%. Também o facto de a Páscoa ter sido em Abril, um mês já convidativo a férias, garantiu uma ocupação de 77%. Em Março o número de

dormidas na hotelaria da Madeira já registava uma subida de 10,7%.

A grande expectativa dos hoteleiros e dos serviços associados ao turismo, está agora no Verão. A Primavera deu razões para alegria e o Verão parece apontar no mesmo caminho. Nos últimos anos os meses de Junho a Setembro têm registado recordes de visitantes. Os número começam a aumentar em Junho, com o Festival do Atlântico, que proporciona espectáculos de fogo-de-artifício todos os Sábados do mês, na baía do Funchal. O pico máximo é atingido em Agosto.

Uma consulta às reservas dos melhores hotéis mostra que a procura está a acontecer a bom ritmo e está acima das expectativas. Além disso os quartos estão a ser vendidos a bons preços. Não será o melhor Verão de sempre mas promete ser um bom Verão, com visitantes de todos os segmentos, mas com uma especial procura por parte dos segmentos com maior poder de compra que voltaram a olhar para a Madeira como uma boa opção.

f Norberto Gonçalves Cruz said that his pulse was composed of musical harmonies, any doubt would melt in the fervour of every word he speaks. Born in Venezuela, son of the Madeiran Diaspora, his family returned to Madeira when Norberto was of a young age. In 1999, he was welcomed in Italy, in the overture to an adventure that was more uncertain than the sonority of the mandolin. In the transalpine country, Norberto gained a degree in the mandolin, becoming the first Portuguese to boast this achievement. The perseverance of Anedda, who died in 1997, led to the first mandolin cátedra, created in the 1970s, in Italy. The Quintet, which keeps his legacy protected and pure, has however a number of successes, exalted on a DVD that contains two original compositions created for the group. He remaining interpretations reflect meticulous work, inspired by the transcription of timeless works. Vivaldi and Bach, great figures of classical music, are reinvented in the compositions of the mandolin. However, as the musicians enthuse, the majority of the great composers included the mandolin in their works. This is another one of Giuseppe Anedda’s glories, after having discovered throughout Europe, original works that foresaw the inclusion o the little instrument.

The Quintet came together in Madeira after a year apart. On the stage, it is a brotherly communion, to make use of a phrase that Norberto uses to define the group. Knowing looks and complete harmony weave between moments of individual isolation, when a mystical dialogue is created between the musician and the cadence dictated by the stave. In the theatre, the prolonged ovations show the delights and, perhaps, the surprise caused by the melodic exuberance of the mandolin.

The presence of the mandolin in the great orchestras around the world is still intermittent, but, Anedda’s heirs believe that the future is promising. The Quintet’s tours through Europe, as well as their performances in the most prestigious Italian venues represents the recognition of the work they have developed. Now, the mandolin’s road to recovery covers the whole world. Madeira is of particular importance for this pioneering group. With many mandolin players on the island, Norberto Gonçalves da Cruz hopes to realise some ambitious projects. An International mandolin Festival for example is on his list of aspirations.

As a sign of its growing visibility, Madeira was the location chosen for an international brand to launch a new bicycle, an initiative that attracted many enthusiasts to the region. Predicting an promising future, Madeiran businesses have started to adjust to the growing demand, with some businesses already satisfying the desires of those wanting to mountain bike.

The concept of the tribe adjusts itself.

Out of sorts when they step on tarmac, mountain biking enthusiasts gather to face the island’s trails, in search of forgotten tracks. Their respect for nature is sacred, their work consists in rediscovering paths, some of them centuries old, which the development of roads has relegated into the mists of time. Like true believers looking to bring themselves closer to something sacred, the tribe goes to every length to drag themselves back from oblivion. For this, the cooperation of the ancients is vital, which also gives mountain biking a communal aspect. It is not an exaggeration to say that the tribe coexists with the World of Man to return to primordial times, where nothing else matters except the purity provided by virgin nature.

Once the tracks have been rediscovered, there is work to be done before enjoying the feelings they generate. Renewing the tracks and frequent maintenance require time and stoicism. The course between Pico do Areeiro, near Poço da Nece, and Santo António, in the high parts of Funchal, shows

Prenúncio de tempos auspiciosos, a realidade empresarial madeirense tem vindo a ajustar-se à crescente procura, uma vez que já existem algumas empresas que satisfazem os desejos de quem pretende realizar BTT. O conceito de tribo ajusta-se. Desenraizados quando pisam alcatrão, os praticantes de BTT reúnem-se para desbravar as entranhas da ilha, em busca de trilhos esquecidos. O respeito pela Natureza é um pressuposto imaculado, pelo que o trabalho consiste em redescobrir caminhos, alguns deles centenários, que o desenvolvimento rodoviário relegou para a penumbra. Como

the work and volunteering of passionate mountain bikers. Impassable for a long time, Robert, Carlos, Joselino and others dedicated 3 days to removing obstacles, always in complete harmony with the laws of Nature.

Along almost 11km, Essential accompanies the athlete’s expertise, between vertiginous, narrow and winding descents, with Funchal as a never ending background. The clear waters that parade along the valleys help to recharge the batteries. Mountain biking in Madeira is more than a sport. It is also a vehicle to travel through the island’s immense natural and constructed heritage. Conscious of this fact, government entities have contributed to the renewal and maintenance of the tracks, giving in the appeals of a growing community.

Any spare time is used to raise awareness of the sport and no detail is spared. Aside from the equipment that security demands, new technologies contribute to the development of mountain biking. Armed with a GPS, the itinerary was recorded to be available on the internet, making the task easier for the next adventurers. Cameras register unique moments that members of the tribe share among each other, whetting the appetite of someone who, for now, can only dream of a similar experience.

The level of difficulty of the tracks varies in this multifaceted sport. From peaceful and accessible rides along the plains or hills, such as Serra da Faial, to the descents that create a dialogue between the hills and the sea, like the link between Fanal and Seixal, the selection of the route depends on the ability of the rider.

Filled with the spirit of a mission, Roberto, Carlos and Joselino formed a group that creates all of the conditions for mountain biking to grow, by renting the equipment at Bike Zone, the only commercial establishment in Madeira exclusively dedicated to the world of bicycles, and making transport available. “In any adventure, the most important thing is setting off, not arriving,” said the Portuguese poet Miguel Torga. Uma vez redescobertos os trilhos, há trabalho a realizar antes de desfrutar das sensações que eles geram. A reabilitação dos trajectos e a manutenção frequente requerem tempo e estoicismo. O percurso entre o Pico do Areeiro, junto ao Poço da Neve, e Santo António, nas zonas altas do Funchal, é elucidativo quanto ao labor e voluntarismo dos amantes do BTT. Intransitável durante muito tempo, Roberto, Carlos, Joselino e outros companheiros dedicaram 3 dias à remoção de obstáculos, sempre em plena simbiose com os ditames da Natureza.

Ao longo de quase 11 km, a Essential acompanhou a perícia dos atletas, entre descidas vertiginosas, exíguas e serpenteantes, com o Funchal como pano de fundo abismal. As águas límpidas que desfilam pelas levadas ajudam a retemperar energias. O BTT, na Madeira, é mais do que um desporto. Também é um veículo para perscrutar o imenso património natural e edificado da ilha. Consciente deste facto, as entidades governamentais têm contribuído para a reabilitação e manutenção dos percursos, cedendo aos apelos de uma comunidade que se dilata.

Todos os momentos são aproveitados para difundir a modalidade e nenhum pormenor é descurado. Para além do equipamento que a segurança exige, as novas tecnologias contribuem para o desenvolvimento do BTT. Munidos de GPS, o itinerário foi gravado para ser disponibilizado na internet, visando facilitar a tarefa dos próximos aventureiros. As máquinas fotográficas registam momentos únicos que os elementos da tribo partilham entre si, agudizando o apetite de quem, por enquanto, só pode sonhar com uma experiência similar.

Desporto com múltiplas facetas, o grau de dificuldade dos percursos varia. Desde passeios bucólicos e acessíveis ao longo de planícies ou de levadas, como a da Serra da Faial, até às descidas que estabelecem o diálogo entre as serras e o mar, como a ligação entre o Fanal e o Seixal, a selecção do trajacto depende das qualificações do praticante.

alheta Council has started to mark its presence in Madeira’s cultural panorama, thanks to initiatives that explore daily life as a tool to promote heritage. The ‘More Calheta’ project covers the entire festival period, months when the council becomes one of the most sought after summer spots, lasting until the end of October. Along the promenade that links the two yellow sandy beaches, the council’s attractions are exposed on canvas billboards, together offering a cultural route of the municipality.

The magnetic effect caused by Calheta’s coast during summer is the recipe for success for a project with characteristics that are pioneering in the region. Because Calheta is more than sun and beach, its cultural and ethnographic heritage gets closer to people. Aware of the fact that the delight caused by the beach takes space and visibility away from other places of interest, the Town Hall has created a strategy to maximize all of the council’s tourism potential.

Suspended on masts, the canvases show photographs, the visual impact of which stimulates curiosity. Aside from the canvases, the masts also act supports for leaflets filled with precise information about the places and activities shown. Available in three languages – Portuguese, English and German -, the leaflets include a small descriptive text and maps that guide the citizen from the promenade to the location of the promoted destination. Together, they form a true free guide on the culture and entertainment available in Calheta.

The profusion of canvases exposes the variety of options at the visitor’s disposal. All of them represent particularities that distinguish the Council, from natural heritage to manmade structures, not forgetting ancestral traditional, such as the popular marches or the chaffing of the wheat.

The relevance of Calheta in the region’s cultural route has become more accentuated with the Casa das Mudas, stood on the cliffs facing the sea. A sanctuary to artistic manifestations that are created in Madeira, Casa das Mudas has housed unique exhibitions, most notably, among others, one of the world’s greatest collections of Art Deco, belonging to the Berardo Collection. Substituir um modelo emblemático traz muitas exigências e, se ao nível mecânico as soluções introduzidas no novo Classe E, a base do CLS, deixavam adivinhar um salto qualitativo importante, o elemento design seria sempre fundamental - o estudo interno que comprovava que 80% dos 170.000 clientes que compraram um CLS da primeira geração o fizeram tendo como principal factor na escolha do modelo o seu design não podia ser ignorado.

A beleza é sempre subjectiva, mas o novo CLS não deixa ninguém indiferente. Da enorme grelha frontal, em conjunto com os elegantes faróis dianteiros, nasce uma carroçaria esculpida em torno de linhas fortes e vincadas, que

On the engine front, the new CLS is equipped with six and eight-cylinder petrol units and four and six cylinders in the diesel versions, with a power output ranging from 204hp in the CLS 250 CDi to the 557hp of the mighty CLS 63 AMG Performance Pack. Essential Lisboa tested the CLS 350 CGi Blue Efficiency, a six-cylinder with direct petrol injection packing 306 hp.

Accomplished at every level, the Mercedes is one of those cars that simply can’t be faulted. The AirMatic suspension provides the Comfort and Sport modes, and the 7G-Tronic Plus transmission also has three different modes: Eco, Sport and Manual.

The engine stands out in its ease of use, but gains new life above 3500rpm, when you can drive the CLS as if it were a sports car, safely letting it loose on bends and putting your foot down on the open road.

The looks from other drivers and passers-by confirmed what we already suspected: the new CLS is an object of desire and a legitimate heir of the original icon.

his year’s edition of the Madeira Islands Open was marked by the memory of Severiano Ballesteros, the Spanish champion who, by designing the Porto Santo Golf course, left a mark for history, recognized by all as one of the best courses in Europe. The tournament took place just a few days after Seve’s death and so there was a one minute silence and the unveiling of a plaque at the 14th hole.

Ballesteros, also a champion of the Madeira Islands Open, when the Porto Santo course did not yet exist, designed on the 13, 14 and 15th holes, one of the corners that is most applauded by players and fans in all the world. There are those who call it Seve Corner, a non-official name that can be compared to the renowned Amen corner of the Augusta circuit in the US, and one of the most famous golf spots in the world.

These three holes are more than a competitive challenge. It is not just about playing golf over a ravine, or overcoming unique natural obstacles, it is also about the beauty that frames these three holes, with a view of the sea and the landscape of the Porto Santo island. Seve Corner also contributes to influencing tournament results. Those who dominate the elements best, can gain an advantage over their adversaries here.

The memory of Seve marked the Open The English player Simon Wakefield certainly dominated the secretes of Porto Santo Golf, by fixing a new record on the course (63 shots, 9 below Par). However, the victory went to Michael Hoey. The 32 year-old from Northern Ireland ended the tournament with a final round of 71 shots, 1 below Par, making 278 (-10), exactly 10 shots less than last year’s winner, the Englishman James Morrison.

ew doubt that the Funchal Jazz Festival is today an event that has reached a level of quality that makes it difficult to highlight any one part of it. Adjectives end up being repeated, each year it seems that the quality of the line-up and the inauguration are better than the previous year. One fact is evident: the festival, which started 12 years ago, has gone from a timid initiative to an event that is now included in the context of jazz festivals held in Portugal and even abroad.

Aside from international names, the Portuguese presence at this year’s festival has a special meaning. Rui Veloso, known as the father of Portuguese rock, celebrating 30 years of his career, is coming to Funchal to perform a duet with bluesman Todd Sharpeville. Rui Veloso is also one of the most loved Portuguese musicians, meaning that his presence on the second day of the festival (taking place on the 7th, 8th and 9th of July) is also a moment of some emotion.

But being a jazz event, known for the diversity of styles that are brought together in each edition, a number of great names from

the international panorama will be present in Funchal. John Scofield will be opening the festival, on a day that will be concluded with the Danilo Perez Trio.

As well as Rui Veloso, the second day will also include the performance of Duo Brandford Marsalis & Joey Calderazzo, accompanied by the Brandford Marsalis quartet. The third and final day is reserved for the renowned Cassandra Wilson.

During the past few years the Funchal Jazz Festival has conquered more a more local audience, especially among the youngsters.

Also visitors to the island, many of whom opt to go to concerts that fill more and more the Santa Catarina Parque.

The festival is distinguished by a moment of relaxation that happens every day after the concerts. The musicians go the 360º panoramic bar of The Vine hotel and play an impromptu concert to the public, especially true jazz lovers. oucos duvidam que o Funchal Jazz Festival é hoje um evento que atingiu um nível de qualidade que torna difícil salientar o que quer que seja. Os adjectivos acabam por se repetir, e em cada ano parece que a qualidade do cartaz e da inauguração são melhores do que no ano anterior. Um facto é evidente: O festival que há 12 anos teve a sua primeira edição, passou de uma tímida iniciativa para um evento que conta no contexto dos festivais de jazz realizados em Portugal e mesmo no estrangeiro.

Além dos nomes internacionais, a presença portuguesa na edição deste ano tem um significado especial. Trata-se de Rui Veloso, conhecido como o pai do rock português, que ao comemorar os 30 anos de carreira, vem ao Funchal fazer dueto com o bluesman Todd Sharpville. Rui Veloso é também um dos mais acarinhados músicos portugueses, pelo que esta presença no segundo dia do festival (que decorre a 7,8 e 9 de Julho) é também um momento com algum sentimento.

Mas sendo este um evento de jazz, conhecido pela diversidades de estilos que reúne em cada edição, vão estar presentes no Funchal grandes nomes do panorama internacional. John Scofield faz a abertura, num dia que se completa com o Trio Danilo Perez.

Fisherman’s Festival CANIÇAL

24 to 26 of June The Fisherman’s Festival once again honours the unbreakable link between the parish of Caniçal in the extreme southeast of Madeira, and the sea. The initiative aims to protect the collective memory of a people, who in the past made their livelihoods from the ocean. “Times change, wills change,” sang the Portuguese poet Camões. In the cane thicket, despite the transformation caused by the passing of time, fishing continues to be a main activity in the parish. During the weekend, entertainment reigns along the sea front, where restaurants that take part in the event are located.

For those who prefer delicacies from the sea, this is a unique opportunity, as the menus contain only fish.

15 to 17 July The Porto Bay Group promotes the third edition of On Fusion Art on 15, 16 and 17 July. It’s an event that unites various invited artists that create pieces outdoors and promote art installations along Rua de Santa Maria and Largo do Corpo Santo. The pieces that come of this creation are then sold at auction, the funds of which are donated to charities.

Some stay glued to the bus window, with looks of admiration. They are tourists who arrive at Machico and contemplate the yellow sandy beach, near the port. Several languages can be heard, confirming the cosmopolitanism of a city that has come to cement its importance on the urban tourist route.

Restaurants, which form a line around the port, create the vision of a hybrid landscape, with the sea and imposing hills as visual limits. Iconic symbols of the city, built and preserved by man, also frame the painting, of which the quay seems to flow on the basalt pebbles that create the natural beach and the emblematic road that cuts along the escarpment, communicating with the modern web of roads.

The resting boats in the port infect the rhythm of the city, along the bay. Along the wall that shields the port, a few stoic men, holding fishing rods, wait for the sea’s generosity, while they watch the return of the ships that season the air with the ocean’s freshness at twilight. On the rocks, other men face the mud to discover the hiding places of limpets, one of the most prized snacks on Madeira. The only loses centre stage in Machico for a few seconds, when the noise of airplanes breaks the serenity.

Because the public footpath that accompanies the bay’s perfect semi-circle offers unique conditions for exercising, the pleasant idleness of some crosses with the activity of others. The centre of the city, where Fórum Machico has been built, is the place where many youngsters flock to.

Reunidos num dos inúmeros bancos dispersos por toda a baía, os acordes de uma guitarra convertem o vagar da tarde em música. Ao lado, vigilante, o Forte de Nossa Senhora do Amparo, construído no século XVIII para suster ataques de piratas e de corsários, protege a identidade da cidade, com os canhões assestados contra a erosão da memória.

Enquanto nos afastamos do mar, a pulsação da cidade aumenta. Proliferam restaurantes, bares e espaços comerciais e a circulação automóvel regressa à realidade de quem deambula por Machico.

on one of the many benches dispersed along the bay, the sounds of a guitar convert the slowness of the afternoon into music. To the side, a sentinel, the fort of Our Lady of Amparo, built in the XVIII century to protect against pirate and corsairs, protects the identity of the city, with canons aimed against the erosion of memory.

As we move away from the sea, the city’s pulse increases. There are restaurants, bars and commercial establishments aplenty, and the traffic brings back reality for those who stroll through Machico. Tiny, parallel and perpendicular roads swarm the heart of a city that retains many picturesque aspects.

The small grocery stores, or shops, coexist with banks and large shopping centres, demonstrating Machico’s ability to ensure fusion between the ages.

A little further north, the forecourt of the church, built in the XIV century, is a typical example of Machico. Between the brilliance of a city that has opened up to the world, collective memory is assured by the elderly who accompany the slow passing of hours under the cool shade of the leafy trees that inhabit the area. The piercing sound of the bells seems to remind the ancients that, despite Machico preserving its genetic peculiarities, time doesn’t stop.

Rich in heritage, Machico this year was honoured with the title of Municipality of Culture. A vast programme allows Madeirans and foreigners to discover the history of a council that is distinguished by its religious dimension, among other aspects. Battered by the storm of 1803, according to believers, Machico was dragged out of ruin with the help of God. During nature’s fury, an icon of Jesus on the cross was dragged into the Atlantic, but recovered intact. In honour of what was considered a miracle, the population accompanies on 9 October, the journey of the image through the city, in a night time procession led by fishermen who flank a small fishing boat. These are painful pasts that the city transforms into fuel to face the new challenges ahead.

Um pouco mais a norte, o adro da Igreja Matriz, construída no século XIV, corporiza uma amostra elucidativa de Machico. Entre o fulgor de uma urbe que se abriu ao Mundo, a memória colectiva é assegurada pelos idosos que assistem à lenta passagem das horas, sob a sombra fresca das árvores frondosas que povoam o espaço. O som tonitruante dos sinos parece recordar aos anciãos que, apesar de Machico preservar as suas particularidades genéticas, o tempo não cessa.

Rica em património, Machico foi guindado, este ano, a Município da Cultura. Um vasto programa permite aos madeirenses e forasteiros desbravar a História de um concelho que se distingue, entre outros aspectos, pela sua dimensão religiosa. t first glance, Quinta do Furão does not seem to be a part of the surrounding countryside. The building that gives body to this 45 bedroom boutique hotel reminds one of an English style country house.

But a closer look reveals an inclined roof which could have been designed with the thatched houses in mind, traditional in Santana and one of Madeira’s most popular images.

Surrounding the hotel is a 5 hectare estate. Contrary to Madeira’s typical estates, which are palace-like buildings surrounded by beautiful gardens, Quinta fo Furão is in fact an agricultural farm, which aside from vegetable products, used in the recipes of Chef Yves Gautier, in the restaurant, also

produces grapes, which give rise to the renowned Madeira Wine.

And this agricultural characteristic gives it beauty. Quinta do Furão is located in a ravine, with views to a large part of the island’s northern coast. It is located in Santana, which in itself guarantees a proximity to nature and offers the comfort of a countryside house, decorated with refinement and taste as is always associated with boutique hotels.

ime-sharing” is a term of British origin used across the world to mean “the right to periodic habitation”, or the purchase of a unit of accommodation in a tourism development, to use only during a certain period of time each year.

On the 10th of March the law-decree n.º 37/2011 was published, which alters, among other things, the legal regime applicable to the real rights of periodic habitation.

The new document, aims to provide an answer to the evolution that has occurred in the time share market and make the offer of this kind of holiday product more dynamic.

The main alterations are the minimum duration of rights on the accommodation, which has changed from 15 years to 1 year, and the annual duration for the right of use of one or more units of accommodation, which can now be determined by the parties.

On the other hand, before the signing of the contract, the seller is obliged to give the buyer «a standard information form» that described the tourism development, as well as the rights and obligations included in the contract.

The process of creating a time share has also been simplified, with all that is necessary being a declaration of communication to the Portugal Tourism Board, I.O. or to the

entities that have the authority for that effect in the autonomous regions.

Finally, the seller is obliged to inform the buyer that he or she has fourteen days to relinquish the contract, without having to give any justification or make any form of payment.

“Time-sharing” é um vocábulo de origem britânica utilizado em todo o mundo para representar o “direito de habitação periódica”, ou seja a aquisição de determinada unidade de alojamento em empreendimento turístico, para utilização apenas durante certo período de tempo em cada ano.

No passado dia 10 de Março foi publicado o Decreto-Lei n.º 37/2011, que vem alterar, entre outros, o regime jurídico aplicável aos direitos reais de habitação periódica.

O novo diploma, pretende dar resposta às evoluções ocorridas no mercado do time-sharing e dinamizar a oferta deste tipo de produto de férias.

As principais alterações prendem-se, com a duração mínima do direito, que passa de 15 anos para 1 ano, e com a duração anual do direito de utilizar um ou mais alojamentos, que passa a ser determinada pelas partes.

Por outro lado, antes da assinatura do contrato, o vendedor é obrigado a entregar ao comprador, um «formulário normalizado de informação» que descreva o empreendimento turístico, bem como os direitos e obrigações decorrentes do contrato.

Foi simplificado o processo de controlo prévio da constituição do direito, sendo suficiente uma mera declaração de comunicação prévia ao Turismo de Portugal, I.P. ou às entidades com competência para o efeito nas regiões autónomas.

Por fim, o vendedor é obrigado, a informar o comprador de que este dispõe de catorze dias para desistir do contrato, sem ter de possuir qualquer justificação ou de efectuar algum pagamento.

astronomy is one of the most recognised factors by visitors to Portugal. A country known for the variety of gastronomic choices it provides, this is the ideal destination to combine a good climate with a good table.

In Madeira, food is one of the top five reasons for a visit. Of the group of activities carried out during a stay on these islands, 57% of visitors tried gastronomy, not only in the act of eating, but above all as a form of exploration, in the sense of going out to discover restaurants and products.

Historically, Madeira’s gastronomy has been marked by some of the better known traditional dishes, such as Espetada (kebab), fillet of black cutlassfish, tuna steak, fried corn, or Bolo do Caco (a typical bread), to name a few examples. But there is a curious phenomenon taking place, which is the reinvention of Madeiran cuisine.

In recent years culinary creation in Madeira has gone through enormous transformations. New dishes have been added to the traditional gastronomy, that are not only based on local ingredients, but also in the fusion of products that come from other destinations that today are more accessible, thanks to the facility of transport. This fusion food is a combination of creative talent, good products, local and foreign, and various techniques, fruit of the international learning of the best part of the chefs who work in Madeira.

This new era of gastronomic creation also has an official hand. Madeira’s Regional Government has supported the drive in the production of everything the restaurants need, so as to guarantee that the products use arrive as fresh as possible to the restaurants’ kitchens. The authorities have also served as intermediaries: They go to the restaurants and check if the products would be used; then they go to the producers and help them in the production.

Today, part of the vegetables, fresh cheeses, herbs, meats and even Parma hams and sausages consumed in Madeira are of local origin, with brands that produce significant amounts. The advantage of these productions is that they are not

Historicamente a gastronomia da Madeira tem sido marcada por alguns pratos tradicionais mais conhecidos, como a Espetada, o Filete de Peixe Espada-preto, o Bife de Atum, o Milho Frito ou o Bolo do Caco, para citar apenas alguns exemplos. Mas há aqui um fenómeno curioso, que é a reinvenção da cozinha madeirense.

Nos últimos tempos a criação culinária na Madeira tem passado por enormes transformações.

Aos pratos da gastronomia tradicional juntaram-se outros, que não só se baseiam em ingredientes locais, como também na fusão com produtos

For all these reasons, the restaurants nowadays no longer bother to highlight that they have regional dishes. They prefer to highlight that they have regional products, which the chefs prepare, following the most modern international techniques.

This makes gastronomy an experience and in Madeira that is taken seriously, not only in terms of the quality of dishes, but also in

the increase in the offer of restaurants. Just in the last few months around ten new restaurants of various types have opened up, and all of good quality.

Even restaurants of ethnic cuisine such as Japanese or Italian, haven’t left out dishes or ingredients form their menus that are highly appreciated in Madeira.

Tuna is a good example in the sushi, as are the locally produced herbs and fresh cheeses that are present in the best Italian restaurants.

It is more and more common to see restaurant menus making reference to regional products. Among the most recent are Parma ham and lamb. And it is already quote common for chickens or pork derivatives to have a regional origin.

Esta comida de fusão é uma conjugação de talento criativo, bons produtos, locais e vindos de fora, e várias técnicas, fruto da aprendizagem internacional de grande parte dos chefes que trabalham na Madeira.

Esta nova era da criação gastronómica tem também uma mão oficial. O Governo Regional da Madeira tem apostado na dinamização da produção de tudo o que os restaurantes necessitam, de modo a garantir que os produtos utilizados chegam o mais frescos possível às cozinhas dos restaurantes. As autoridades também têm servido de intermediários: Vão junto dos restaurantes e verificam que produtos teriam saída; vão depois junto dos produtores ajudá--los na produção.

Hoje parte dos legumes, queijos frescos, ervas aromáticas, carnes e mesmo presuntos e enchidos consumidos na Madeira são de origem local, havendo marcas que se afirmam e garantem produções significativas. A vantagem destas produções é não serem industriais, e seguirem regras de produção biológica.

Aos alimentos produzidos localmente podemos juntar os transformados, como a carne de vaca, que é abatida e transformada na Madeira, ou o peixe, ambos oriundos dos Açores, mas que aqui servem de base a pratos tão típicos como a Espetada ou o Bodião Grelhado.

Por todas estas razões, os restaurantes hoje em dia já não apostam tanto em referir que têm os pratos típicos regionais. Preferem salientar que têm produtos regionais, que os seus chefes de cozinha se encarregam de preparar, seguindo as mais

The most important thing to know is that they have different tastes, even in relation to the rest of Portugal’s wines.

With so many innovations, it’s worth asking if there is still room for traditional dishes in this new life of Madeiran cuisine?

The answer is yes. Those dishes are still the most sought after. What has happened now is that high level cooking, which before was reserved only to hotels, is now dispersed among the restaurants. Chefs also show pride in creating their own signature dishes, using the techniques they have learnt and local products. In the past traditional dishes and ingredients of French cuisine were merely repeated.

The vision of gastronomy as an experimental moment, the search for new flavours and the fusion of techniques of various origins is a worldwide tendency.

The art of cooking today is much more about the ability to interpret the potential of each ingredient and make harmony from the mixture, as though it were a form of alchemy. Here, from decades of contact with great chefs, that tendency is well developed, not only among renowned names who work on the island, but also among local chefs who have shown talent, some of whom with experience acquired abroad.

Os vinhos procuram acompanhar esta tendência, mas aqui o caminho a percorrer é ainda mais vasto.

A Madeira produz bons vinhos brancos, mas os tintos ainda precisam de tempo. Beber um tinto madeirense não é uma má experiencia.Oimportante é perceber que são paladares diferentes, mesmo em relação aos restantes vinhos portugueses.

Com tantas inovações, vale a pena perguntar se há ainda lugar para os pratos tradicionais nesta nova vida da cozinha madeirense? A resposta é sim. Esses pratos continuam a ser dos mais procurados. O que aconteceu é que hoje a cozinha de alto nível, que antes estava reservada apenas aos hotéis, está mais disseminada pelos restaurantes.

eid’s Palace Hotel celebrated spring with a ball, associated to its 120th anniversary celebrations. The aim was to try and recreate the atmosphere of the balls that marked the life of the hotel during the golden decades of the belle époque and the crazy 20s.

The celebration calendar continues, on Saturdays from June until September with a buffet in the restaurant near the swimming pool. In June it is one of the best places to see the fireworks from the Atlantic Festival, to the sound of live music.

On 23 July the high point of summer will be celebrated in terms of Reid’s 120th anniversary celebrations, with a White Part.

Participants are invited to wear white and enjoy themselves at the Pool Restaurant, by the pool side, appreciating a cocktail at the start of the evening and a buffet, prior to the ball, with live music from “White Band” that will play tunes from the 70s to the 90s.

he start of the second edition of "The Stars Route" was once again staged at the Il Gallo D’Oro, in the Cliff Bay Hotel. The travelling gastronomic festival, which is held at some Michelin star restaurants in Portugal, presented itself with a huge jump, in ambition and quality, putting it on a par with the best that is currently done in the country.

It was up to resident Chef Benôit Sinthon to invite two other Michelin star

chefs, one from Portugal and the other from abroad. The surprise is that the first event of the route did not only have one, but several international guests, including Dieter Koschina (Vila Joya, Algarve), the only chef in Portugal with two Michelin stars.

And as the sign for this year’s ‘Route’ is ambition, participants were able to sample a menu with the talent of Diego Guerrero (El Club Allard, Madrid, with one star) and Michel Roth (Hotel Ritz Paris, with 2 stars).

A dream menu was created by Koschina and the host Benôit Sinthon, sweetened by the deserts of the pastry chef Yves Michoux, who in turn invited Chef Gilles Marchal from the renowned Maison du Chocolat in Paris.

This gamble brought clients, The Il Gallo D’Oro event saw so much interest that it was necessary to add an extra night to the two that had been planned. António Trindade, CEO of Porto Bay and one of the

O festival gastronómico itinerante, que percorre alguns dos restaurantes com estrelas Michelin em Portugal, apresentou-se este ano com um salto enorme, na ambição e na qualidade, que o colocam ao nível do que de melhor se faz, actualmente, no país.

Coube ao Chefe residente Benôit Sinthon convidar outros dois Chefes de restaurantes com estrelas Michelin, sendo um, oriundo de Portugal e outro de fora do país. It is making the most of what we have, bringing from outside what is missing, obtaining a final result in which all parties are winners. A «stock market» environment as he likes to call it.

The internationalization seen this year was only the invitation to the chefs. But António Trindade has ideas for 2012, «not yet internationalising, but creating an Iberian gastronomic route, inserted in "The Stars Route"». In the events calendar there would be Spanish restaurants. This would increase the event’s visibility and make it better known and sought after.

But for that, the CEO of Porto Bay confesses that he would «first like to maintain the Michelin star, which s an annual award». After maintaining the star at Il Gallo D’Oro, the next destination is Spain.

Trata-se de potenciar o que temos, trazendo de fora o que fizer falta, obtendo um resultado final em que ambas as partes ganham. Um ambiente de «bolsa» como gosta de chamar.

A internacionalização verificada este ano, foi apenas no convite aos Chefes. Mas António Trindade tem ideias para 2012, «não ainda internacionalizar, mas criar uma rota Ibérica de gastronomia, inserida na Rota das Estrelas».

No calendário de eventos passaria a haver restaurantes de Espanha. Isto permite reforçar a dimensão e visibilidade, tornando o evento ainda mais conhecido e procurado.

Mas para isso o CEO do Porto Bay confessa que gostaria «em primeiro lugar, de manter a estrela Michelin, que é uma atribuição anual».

Mantendo a estrela no Il Gallo D'Oro, o rumo seguinte é Espanha.

CHALET VICENTE AND HOLE IN ONE Funchal now has two new establishments that, since their opening, at the beginning of April, have become an enormous success: The restaurant Chalet Vicente and the Hole in One pub.

The inauguration only took place in May and was supported by the President of Madeira’s regional government and Funchal Mayor, along with the Vice-President of the regional government and the regional secretary for tourism.

The restaurant has a rustic urban concept, with Portuguese food, supported by an extensive and comprehensive wine list. The pub is Irish in style and has also been a success among people in Madeira. It is a space filled with details, which truly seems to transport one to Dublin. The two establishments share the same premises and are linked by a common patio.

O Funchal passou a ter dois novos espaços que, desde a sua abertura, no início de Abril, têm sido um enorme sucesso: O restaurante Chalet Vicente e o pub Hole in One. A inauguração ocorreu apenas em Maio e foi apadrinhada pelo presidente do Governo Regional da Madeira e pelo presidente da Câmara do Funchal, além do vice-presidente do Governo Regional e da secretária regional do Turismo.

O restaurante aposta num conceito rústico urbano, com comida portuguesa, suportada por uma extensa e completa carta de vinhos. O pub ao estilo irlandês tem sido um sucesso também entre os madeirenses. É um espaço cheio de detalhes, que nos parece transportar verdadeiramente para Dublin. Os dois espaços partilham a mesma propriedade e estão ligados por um pátio comum.

Madeira Wine Competition

T

he Terras do Avô Grande Escolha 2008 wine won the 2nd Madeira Wine Competition in the reds category. A total of 10 Madeiran reds participated in this category, but the juri of 11 people decided on this creation by Paulo Laureano and João Pedro Machado, made with the Shyrah and Tinta Roriz grape varieties.

The competition, promoted by Porto Moniz Town Hall and organized by Américo Pereira, one of the most famous people in the world of Madeira Wines, also included prizes for other categories.

For the whites, where competition is always greatest, the chosen wine was Palmeira e Voltas 2009, made with the Verdelho, Boal and Arnsburger grape varieties. Among the rosés, Barbusano 2010 won.

In the chapter of Madeira wines, this year’s grape variety was Verdelho. And the juri’s choice went to a wine from the Barbeiro house.

vinho Terras do Avô Grande Escolha 2008 venceu o II Concurso de Vinhos Madeirenses na categoria de tintos. Nesta categoria participaram 10 tintos madeirenses, mas o júri composto por 11 elementos decidiu-se por esta criação de Paulo Laureano e João Pedro Machado, feita a partir das castas Shyrah e Tinta Roriz.

O concurso, promovido pela Câmara Municipal do Porto Moniz e organizado por Américo Pereira, uma das personalidades mais reconhecidas do mundo dos vinhos na Madeira, incluiu ainda prémios para outras categorias.

Nos brancos, onde a competição é sempre maior, o vinho escolhido foi Palmeira e Voltas 2009, feito com as castas Verdelho, Boal e Arnsburger. Entre os rosés venceu o Barbusano 2010 .

No capítulo dos vinhos Madeira a casta deste ano era o Verdelho. E a escolha do júri recaiu sobre um vinho da casa Barbeiro.

have written a lot recently about the wealth of diversity and potential quality of Portugal's native grape varieties and the recent fashion of producing monovarietal wines such as Touriga Nacional, Aragonez, Alfrocheiro, Verdelho and Encruzado, to name a few. Understanding these unique varieties and producing individual wines from them has been important in the context of modern winemaking and marketing, but historically, Portugal has been a country whose winemaking heritage is based on blending. Blending can take on many forms, from the very traditional practice of field blends, which are mixed plantings of numerous grape varieties in the vineyard, through to what I would call 'technical blending' to produce a wine that is consistent and recognisable as a house style, and finally creative blending to produce a classic individual high-quality wine.

The official definition of blending and the reason why we do it is because “any

blend should be better balanced and more complex than the sum of its parts”. The blending components used in this process can be extremely varied, derived from different grape types, different clones, different soils, different climates and even different years.

Blending normally takes place after each individual wine component has been made as a separate wine – in other words, blending is not usually achieved by putting different grapes in the same fermentation vat.

The only exception to this rule that I know occurs in the Douro Valley, where mixed plantings of up to 40-50 grape varieties were traditionally planted in the vineyards, and these now very old vineyards are highly prized for the complex wine style that can be produced from them. But it was always a very empirical process. The idea was that mixed plantings would serve as a buffer against different climatic conditions that occur from vintage to vintage and against different diseases that can affect some varieties more than others. These days, new vineyards in the Douro are batch planted with five or six well-studied varieties that are ideally suited to the particular microclimate of the vineyard site.

Technical blending is what I refer to as maintaining a house style and consistent quality, for example a blend such as Monte Velho red which is now around the 5 million litre mark. International Australian blends such as Yellow Tail and Jacob's Creek are also good examples. Here, the winemaker is trying to counter vintage variation by drawing on many different grape varieties from a wide range of climates to maintain a consistent quality. With these kinds of large-scale blends, it is also important to maintain consistent alcohol, acid, tannin and colour levels in the final product, and so adhering to certain analytical parameters is also an essential back-up to the blending process.

I would also include some classic wine stylessuchasaged tawny port and non-vintage champagne in this category of blending – aged tawny port because to maintain an www.essential-portugal.com 88

average age of 10, 20 or 30 years, stocks of different aged ports (some older and some younger than the final blend) are used to create a house style. English shippers tend to use more young wines in their blended aged tawnies to maintain freshness than their Portuguese counterparts would. It has always been important for Champagne houses to use base wines from different years to create a recognisable house style for their nonvintage blends.

Creative blending is what all winemakers enjoy doing most, typically taking three to four varietal wines with different fruit, tannin, acid and oak profiles and putting them together to create a wine with perfect balance and complexity. Here, the overall quality is everything, consistency and house style are less of an issue, and vintage variations are acceptable as the wine quality is always sufficiently high. The classic examples are the top Bordeaux châteaux who use differing proportions of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot, depending on the climate and hence ripeness of a given vintage, to create the optimum wine. As an extreme case of blending taken to the absolute limit, I was once treated to a memorable masterclass

by Château de Beaucastel, a premium Chateauneuf-du-Pape producer who used something like 12 grape varieties, including a couple of whites, in their premium red wine blend.

At Esporão, for our premium Private Selection red, we blend Syrah, Alicante Bouschet and Aragonez, with varied oak maturation treatments – in differing percentages depending on the vintage conditions – to produce our classic red wine style: Syrah for palate richness, Alicante Bouschet for structure and intensity, and Aragonez for aromatics and palate complexity. However, in certain years, if we do not feel that we have sufficiently high quality fruit, we will not release this wine – blending only does the job if you have the raw materials to work with!

U

ltimamente, tenho escrito muito sobre a grande diversidade e potencial qualidade das castas indígenas de Portugal, bem como sobre a recente tendência de produzir vinhos monocasta, como o Touriga Nacional, Aragonez, Alfrocheiro, Verdelho e Encruzado, entre outros. Compreender estas castas únicas e produzir vinhos singulares a partir das mesmas tem sido algo importante no contexto do marketing e da produção moderna de vinho.

Mas, historicamente, Portugal é um país cuja herança a nível de produção de vinho se baseia na mistura. O processo de mistura pode assumir muitas formas, desde a tradicional prática de mistura no campo, que consiste na plantação de inúmeras variedades de uva na vinha – aquilo a que eu chamo de “mistura técnica”-, para produzir um vinho que é consistente e reconhecível enquanto portador do estilo da casa produtora; e, finalmente, a mistura criativa, para produzir um vinho clássico e singular de alta qualidade.

A definição oficial de mistura e o motivo pelo qual a fazemos resume-se a isto:“Qualquer mistura deverá ter mais equilíbrio e ser mais complexa do que a soma das suas partes.” Os componentes da mistura utilizados neste processo podem ser extremamente variados, derivando de tipos de uva diferentes, de clones diferentes, de solos diferentes, de climas diferentes e até de anos diferentes. A mistura

decorre, normalmente, após cada componente individual do vinho ter sido produzido como um vinho separado, ou seja, a mistura não é feita simplesmente ao colocar uvas diferentes na mesma barrica de fermentação. A única excepção que conheço a esta regra ocorre no Vale do Douro, em que, tradicionalmente, eram feitas plantações mistas de cerca de 40 a 50 variedades. Estas vinhas muito antigas são agora extremamente apreciadas pelo estilo complexo de vinho que produzem. Mas este foi sempre um processo muito empírico – a ideia era que as plantações mistas serviam de amortecedor contra as diferentes condições climatéricas que ocorrem a cada colheita e contra as diferentes doenças que podem afectar certas castas.

Actualmente, as novas vinhas do Douro são plantadas em lotes de cinco a seis variedades previamente estudadas, que se adequam ao microclima particular do local das vinhas.

A mistura técnica, na minha opinião, mantém o estilo da casa e uma qualidade consistente, como por exemplo, o tinto multicasta Monte Velho, que já ultrapassou a marca dos cinco milhões de litros produzidos. Os multicasta australianos, como o Yellow Tail e o Jacob's Creek também são bons exemplos. Aqui, o produtor está a tentar contrariar a variação entre colheitas ao escolher várias castas de uva, de uma vasta gama de climas, para manter uma qualidade

consistente. Neste tipo de misturas de grande escala, é também importante manter a consistência de álcool, ácido, taninos e níveis de cor no produto final. Por isso, aderir a certos parâmetros analíticos é também um procedimento essencial de apoio ao processo de mistura.

Também incluiria alguns estilos clássicos de vinho, como os Tawnies envelhecidos e os champanhes não vintage, nesta categoria de mistura – o Porto Tawny envelhecido, porque para manter uma idade média de dez, 20 ou 30 anos, são usados stocks diferentes de Porto envelhecido para criar um estilo da casa, alguns mais velhos, outros mais novos que a mistura final. Os produtores ingleses, mais do que os portugueses, tendem a usar vinhos mais jovens nas suas misturas para manter a frescura. Já para as casas de Champanhe, a utilização de vinhos-base de anos diferentes foi sempre importante para a criação de um estilo da casa reconhecível nas suas misturas não vintage.

A mistura criativa é o que todos os produtores gostam mais de fazer, geralmente utilizando três ou quatro vinhos com fruta, taninos, ácidos e perfis de carvalho diferentes e juntando-os para criar um vinho de equilíbrio e complexidade perfeitos. Neste caso, a qualidade geral é tudo, e a consistência e o estilo da casa são menos relevantes. As variações nas colheitas são aceitáveis, já que a qualidade do vinho é sempre suficientemente alta. Os exemplos clássicos deste tipo são os Bordeaux châteaux, que usam quantidades diferentes de Cabernet Sauvignon, Cabernet Franc, Merlot e Petit Verdot, dependendo do clima e, portanto, da maturidade de uma dada colheita, para criar um excelente vinho. Um caso de mistura levado ao limite é o Château de Beaucastel, sobre o qual tive uma vez uma masterclass memorável.

Este é um vinho premium do produtor do Chateauneuf-du-Pape, que usou cerca de 12 castas diferentes, incluindo duas brancas, para o seu vinho multicasta tinto premium.

iso specialises in rice, but that doesn’t mean that all dishes are made up with grains of rice. Here they serve up everything from rice vinegar to rice paper or eventually rice figures just as a decorative element. At Riso they have a very broad fare, a full range from well known traditional Portuguese dishes, very fashionable risotto’s and also exotic Asian delights, here you may find the four corners of the world.

The suggestions of Chef Fausto Airoldi, one of Portugal’s best known chefs of the moment, run from the freshness of the fruits, such as avocado or pineapple, not to forget the meat and the fish, especially the scabbard fish and the tuna, two major ingredients on a madeirian table.

The first sign of quality which we notice is their utilisation of home-made stock and of course the large variety of different types of rice. Risotto’s are prapared with Vianole, Arborio or Venera. The list is almost endless, red Thai rice, a variety of dishes using Basmati, Jasmin rice and even rice paper is used in some of the delicious starters.

The desserts are no exception to this rice tradition, one “must” on the sweets cart is a delicious Thai black rice, boiled in coconut milk and served up with the freshest mango slices or alternatively a sweet rice ice-cream.

The restaurant is an architectural masterpiece, tastefully decorated which blends in harmoniously to the quaint neighbouring buildings, right in the heart of the historical centre of Funchal. Desde logo salta à vista a utilização de bons caldos caseiros em todos os pratos e diferentes e genuínas variedades de arroz. Os risottos são confeccionados com Vianole, Arborio ou Venera. Informal but chic, the Villa Cipriani enjoys a magnificent cliff-top location alongside Reid’s Palace Hotel. Owned and managed by Orient Express Hotels it takes its name from the famous Cipriani Hotel in Venice, which is also owned by the group.
