In these times of great uncertainty and enormous difficulty, it is interesting to see that economic agents are not giving up on promoting their products and services and that, in Madeira’s case, the focus on tourism remains strong and is starting to produce results, after a very difficult 2010.

This edition of Essential reflects that reality, as we feature new establishments and raise awareness of some events, such as the Funchal Jazz Festival or the Madeira Islands Open golf tournament, both of which are now key events on the island and show that things continue to happen here.

But the greatest event this spring is the Flower Festival. Flowers have always been of special importance in Madeira. The festival in their honour is one of the most important events for the arrival of tourists to the island.

In this edition, we also feature Funchal’s Old Town, which seems to have gained a new lease of life, with new restaurants and leisure areas and we present the “Route of the Stars”, which, now in its second edition brings to Madeira the acclaimed French Chef Michel Roth.

T

his year’s Funchal Jazz Festival, which will be held on the 7th, 8th and 9th of July at Santa Catarina Park, brings with it two great names from the current music scene and maintains a Portuguese presence, which has become the norm throughout the past 12 editions. Pianist Danilo Pérez and his trio have the honour of opening the event. US singer Cassandra Wilson will close the festival.

Aside from the trio formed by Danilo Pérez, Ben Street and Adam Cuz, the line up for the first day will include a performance by The New John Scofield Group. The second day will bring together Portuguese rock singer Rui Veloso and British blues interpreter Todd Sharpville. Before this however, the festival stage will feature the duo comprising saxophonist Branford Marsalis and pianist Joey Calderazzo, accompanied by the Branford Marsalis Quartet. The itinerary for the third and final day will be taken up entirely

by Cassandra Wilson.

Throughout its 12 year history, the Funchal Jazz Festival has grown in importance and quality, featuring artists that are renowned in the music scene. One good example is Esperanza Spalding who took part in last year’s festival and who this year won the Grammy award for Best New Artist. The art of tiles AN EXHIBITION IN MACHICO SHOWS THE BEST OF PORTUGUESE CERAMIC TILES UMA EXPOSIÇÃO EM MACHICO MOSTRA O MELHOR DA AZULEJARIA PORTUGUESA TEXT PAULO SANTOS

U

ntil 31 August, the city of Machico will host a national exhibition dedicated to the tiles of Figura Avusa. Organised by Machico Town Hall and the Museu Nacional do Azulejo, the National Ceramic Tile Museum, it is being held at the museum of Solar do Ribeirinho.

The exhibition has been chosen as one of the events to celebrate Machico being the municipality of culture for 2011, a distinction given each year to one of Madeira’s municipalities. Each Municipality of Culture organises a wide range of activities throughout the entire year.

This exhibition features an art form that is highly appreciated in Portugal. Since the end of the 16th century, the Moorish interiors of Southern Spain, a territory that had just been conquered from the Moors, fascinated Portuguese kings, opening the way for the development of this art form.

Despite the techniques having been imported, as well as the tradition to use it as a decorative art, Portuguese tiles adapted to national tastes, using motifs and figures that related to the Portuguese reality, not only in Portugal but in the territories of the Portuguese Empire, where the techniques were taken and applied successfully. Local decorative elements were also adopted in those territories.

The global presence of the Portuguese throughout the centuries has meant that Portuguese ceramic tiles are now recognised as artistic heritage throughout the World. www.essential-portugal.com 14

cidade de Machico acolhe até ao dia 31 de Agosto uma exposição de âmbito nacional dedicada aos Azulejos de Figura Avulsa. Trata-se de uma organização do Município de Machico e do Museu Nacional do Azulejo, e decorre no espaço museológico do Solar do Ribeirinho.

A exposição é um dos acontecimentos escolhidos para celebrar Machico como Município da Cultura em 2011, uma distinção dada anualmente a cada um dos municípios da Madeira. Cada Município da Cultura organiza um conjunto muito abrangente de actividades ao longo de todo o ano.

Esta exposição aborda uma forma de arte muito apreciada em Portugal. Desde os finais do século XVI que os interiores mouriscos dos edifícios do sul de Espanha, território então acabado de conquistar aos Mouros, fascinaram os reis portugueses, abrindo caminho ao desenvolvimento desta arte decorativa.

Apesar de as técnicas terem sido importadas, assim como sua tradição de uso como arte decorativa, o azulejo português adaptou-se ao gosto nacional, utilizando motivos e figuras que traduziam a realidade portuguesa, não só em Portugal, como nos territórios do Império Português, para onde as técnicas foram levadas e aplicadas com sucesso. Nesse territórios também foram adoptados elementos decorativos da cultura local.

Devido à presença global que os portugueses tiveram ao longo de séculos, o azulejo português é hoje um património artístico reconhecido em todo o Mundo.

he sixth edition of the Sixteenth Century Market is held on the first few days of June in the city of Machico. As the Municipality of Culture 2011, Machico honours the legacy of the Age of Discoveries. According to History, the footsteps of the Portuguese first landed upon the Madeira’s eastern city when they discovered the island in the 15th century.

The Sixteenth Century Market event is unrivalled in Madeira, having already gained a place in the council’s annual events programme. As an initiative born out of the cooperation between the Town Hall and the Primary and Secondary school in the council, Machico recovers a medieval atmosphere, as the Renaissance, which started earlier in the rest of Europe, only arrived in Portugal during the 15th century. De acordo com a História, a cidade situada a leste da Madeira foi a primeira terra pisada pelos portugueses quando descobriram a ilha, no século XV. Evento sem qualquer paralelo na Madeira, o Mercado Quinhentista já conquistou o seu espaço no programa anual de festas do Concelho.

Iniciativa tributária da colaboração entre a Câmara Municipal e a Escola Básica e Secundária do Município, Machico recupera a atmosfera medieval, visto o Renascimento, cuja alvorada no resto da Europa ocorreu mais cedo, só ter chegado a Portugal em pleno século XV. Daí que uma feira quinhentista, ao estilo Português, ainda seja medieval. Centenas de figurantes, envergando trajes típicos da época, dinamizam actividades distintivas do período medieval, transformando o Largo da Praça, em pleno centro histórico da urbe, num imenso cartaz vivo.

Aside from keeping the traditions that characterise a Sixteenth Century Market, each edition has a distinct theme. This year, between 3 and 5 June, the event will be organised around the theme “Sugar and Brazil”, remembering the relationship between Madeira’s sugar trade, introduced under the authority of Infante D. Henrique, mentor of Portugal’s discoveries, and its exportation to the Lands of Vera Cruz.

Sounds, smells and tastes retrieved from a time long ago bring an atmosphere to Machico that is inimitable. To recreate the centuries that offer «new worlds to the World», it is vital to have the collaboration of the Santa Maria ship, a faithful replica of the vessel that immortalised the historical feats of Christopher Columbus. Thousands of people, including performers and spectators descend on the bay of the city to watch the arrival of the ship.

In the square, street performers, fire breathers and other characters that fill the medieval imagination coexist with artisans from whose hands products typical of that period are born. Omnipresent in the daily life of the sixteenth century, religious devotion gives rise to one of the most ornate moments in the event. In the main church, a service in Latin gives a mystical aura to the celebration of god. An opportunity to travel back in time not to be missed.

Milhares de pessoas, entre figurantes e espectadores, convergem para a baía da cidade com o intuito de assistirem à chegada da Nau. Na praça, saltimbancos, cuspidores de fogo e outras figuras que povoam o imaginário medieval convivem com artesãos de cujas mãos renascem produtos típicos da época. Omnipresente no quotidiano quinhentista, a devoção religiosa origina um dos momentos mais emblemáticos do certame. Na Igreja Matriz, a liturgia em latim imprime uma aura mística à celebração de Deus.

I

t may seem strange for those that don’t know, but it is normal in winter for Madeira’s mountains to be covered in snow on more than one occasion. The white blanket normally lasts a few days before melting.

What is not so common is for snow to cover those same mountains during the month of March and especially with such intensity. It was a big farewell to winter, with the largest amount of snowfall in the last 40 years covering the island’s countryside at altitudes above 700 metres, which is very rare.

The result of this snowfall, the likes of which have not been seen since 1972, was a different landscape, one of great beauty that seemed more suited to the Alpes. With the white blanket came abnormally low temperatures which, in some of the highest places reached -4ºC and 7ºC in Funchal.

Because of the unique and curious moment, created by the snow, many people tried to climb the mountain on foot as the roads were blocked. From Funchal, the contrast between the flowers of spring that had started to bloom, and the snow on the mountain, was amazing.

These rare moments were caught by Essential’s photographer, Miguel Nóbrega.

Their beauty and rarity have motivated us to publish some of the photographs.

ode parecer estranho, para os menos conhecedores, mas é normal, no Inverno, as montanhas da Madeira ficarem, por mais do que uma vez, cobertas de neve. O manto branco dura alguns dias e derrete, normalmente.

O que já não é tão comum é a neve cobrir as mesmas montanhas no mês de Março e sobretudo com grande intensidade. A despedida do Inverno fez-se em grande, com o maior nevão dos últimos 40 anos, que cobriu todas as serras da ilha, em altitudes acima dos 700 metros, o que é bastante invulgar.

O resultado deste nevão, que desde 1972 não era tão grande, foi uma paisagem diferente, de grande beleza, que mais parece tirada de uma estância dos Alpes. Com este manto branco veio a temperatura anormalmente baixa que, em alguns pontos mais altos, chegou a -4°C e a aos 7°C no Funchal.

Por ser um momento único e curioso, dada a quantidade de neve, muitas foram as pessoas que tentaram subir a montanha, seguindo a pé, já que as estradas de acesso estava, cortadas. A

partir do Funchal era impressionante o contraste entre as flores da Primavera, que já começavam a surgir e a neve na montanha.

The arrival of the season whose awakening is announced by birdsong is, also, a moment dedicated to a special tribute to flowers, a time when the exuberant Flower Festival is held.

Within the competitive global tourism market, Madeira’s flowers shine magnificently as a treasure to be explored. Today, and after more than three decades, the Flower Festival

rivals the splendour of New Year’s Eve as the region’s most important tourism event, attracting thousands of visitors.

This year, on 7 and 8 May, Funchal will once again transform itself into the epicentre of the beauty and purity in the world, sending out waves of delight. Children are especially important to the splendour of the event. On Saturday afternoon, children from across the island gather at the main square, where the Wall of Hope is erected and flowers are deposited. The peak of an inimitable weekend occurs when thousands of people, dispersed into various troupes, parade along the streets of Funchal during the Flower Procession. In this year’s procession, the organisers decided upon “The flower that I chose” to be the theme, with each troupe highlighting a particular plant.

Caneca Furada (holey tankard), one of the oldest troupes, has chosen various types of daisies. Provided by a cooperative located in Câmara de Lobos, they adorn the float, a moving stage for 35 children that will dress as smiling flowers. Accompanying the float will be around 150 people forming a frame of anthropomorphic flowers. The painstaking round the clock work starts immediately after Carnival, with a breathtaking final result.

Ferdinanda Sousa, who is responsible for Caneca Furada, received Essential while she organised registrations and discussed the details relating to the creation of the costumes. With the costume designs within eyeshot, each detail is reflected upon. It is a heavy responsibility, but a sigh of relief, mixed with delight, emerges when a myriad of colours brings the roads to life in spring.

O apogeu de um fim-de-semana inimitável ocorre quando milhares de pessoas, dispersas por várias trupes, calcorreiam as ruas do Funchal durante o Cortejo da Flor. No desfile deste ano, a organização elegeu como tema “A flor que eu escolhi”, pelo que cada trupe atribuirá primazia a uma planta.A Caneca Furada, uma das organizações mais antigas, optou pelas múltiplas variantes de Margaridas. Cedidas por uma cooperativa situada em Câmara de Lobos, adornam o carro alegórico, púlpito ambulante para cerca de 35 crianças, convertidas em flores que sorriem. A acompanhar o carro alegórico, perto de 150 pessoas enformam uma moldura com flores antropomórficas. O trabalho, minucioso, inicia-se logo após o Carnaval, num contra-relógio cujo resultado final deslumbra.

Currently, Madeira exports more than 5 million flowers, produced on the 80 hectares of land dedicated to the sector. With climatic conditions that favour the flowering of plant species from distant shores, the splendour of the Flower Festival originates from a happy marriage between plants that are endemic and those that have been introduced.

As testimony to Madeira’s ability to welcome foreign plant species, the Monte Palace Garden cannot be missed off the botanical must see list. Flora from across the world coexists inside it, including species that have rooted themselves in the imaginary Madeiran landscape, such as Bird’s of Paradise, originally from South Africa, or the sumptuous Proteas. Aside from Monte Palace, other Madeiran gardens exhibit the splendor of their flowers all year long, especially the Botanical Garden, which has a vast collection of flowers lining the footpaths of a serene paradise.

There are countless greenhouses in Madeira, under the ownership of almost 200 producers. In Ponta do Sol, Bento Baeta produces chrysanthemums, roses and gerberas.

Lovers of roses are attracted by the magnetic effect of Quinta do Arco in São Jorge, where more than 1,700 species of roses grow together. One of Portugal’s largest collections of roses, Quinta do Arco preserves the heritage of a flower that has accompanied the development of civilization through a constant presence in the most diverse of art forms, since classical antiquity.

The endemic and transplanted flowers produced in Madeira meet at the Largo da Restauração, bringing to life the Flower Exhibition, during the year’s most colourful weekend. riday, September 30, 1955. James Dean had just finished his movie Giant and headed to Competition Motors in North Hollywood to get acquainted with his new car, a Porsche 550 Spyder, designed for the track but road-approved.

At the back, Dean had the car’s nickname painted - little bastard. The destiny of the greatest ever Hollywood promise was to be eternally linked with the words Porsche and Spyder, and therefore to a passion for cars, speed and racing, which dictated how he lived and how he died.

More than half a century later, Porsche presents the Boxster Spyder, a model that evokes the legendary 550 Spyder and thus holds in its core the basic values of automotive passion: power, lightness, agility, design and of course, speed. Essential Lisboa was given exclusive access in Portugal to the car that shows that producing the Cayenne and the Panamera hasn’t made Porsche forget its purest sports car roots.

The limited-slip differential and a 25mm lower chassis than in the Boxster S offer exceptional dynamic ability, whilst a precise steering feeds the driver with enough confidence to keep pushing harder, no matter how challenging the road ahead.

The balance of the car is excellent, the chassis neutrality fantastic and the traction fabulous. Lots of adjectives for a very worthy car.

This is one of the most involving offerings ever to be created by Porsche and an instant classic due to its specific spec sheet and the shape of its design, a real modern day little bastard. This is the automotive cure for stressful days, ideally suited to Mediterranean climates such as Portugal’s, where warm and sunny days are in abundance and it’s possible to enjoy a beachside road or a stretching mountain pass, where the Boxster Spyder can really show why it is one of the most desirable models today. This is definitely a special car.

aserati’s current catalogue is perhaps the most stunning in the entire industry. The Quattroporte saloon, the sporty GranTurismo and the GranCabrio convertible represent the spirit of passion and emotion that is something of a prerogative for transalpine car makes.

Maserati has managed to keep the flame of desire burning, and the GranTurismo MC Stradale is the latest example, a road version of the GranTurismo MC Trofeo, the car that competes in the respective Maserati Trophy.

Mandrágora SANTO ANTÓNIO CINE THEATRE

Until 20 April at 9pm Funchal’s Experimental Theatre group (TEF) celebrates its 35th anniversary with a gem of European drama. “Mandrágora” by Maquiavel, was published in the mid 16th century and made a name for itself in the History of Literature as a trial about the art of manipulation, contributing to the consolidation of its author as a master of his art. Calímaco, the main character, tries to conquer a married woman who is unhappy because she cannot give birth to an heir. The young man, who is obstinate to the point of obsession, resorts to mangrágora, a plant with aphrodisiac and hallucinogenic properties. “Mandrágora” is TEF’s 118th production.

Because nature inspires creativity, the Gallery has invited 27 artists, both from Madeira and from the mainland. Each was presented with the challenge of creating mock tea cups, in Portuguese style, from a medicinal plant of their choice. Of those exhibited, one will be recreated as a limited edition item of 100 examples, to be sold in the Gallery.

he residential tourism development of Palheiro Estate has associated itself with a further seven Portuguese developments to bet on a combined promotional strategy in Sweden and Norway. The first presentation took place at the Portuguese embassy in Oslo and in Gamle Logen, an emblematic building in the Norwegian capital.

Jonathan Fletcher, manager of Palheiro Estate, explained to Essential that the potential for Portugal to attract Nordic buyers has not been explored very much, due to the «Portuguese developments’ diminutive promotional effort». Each year, the two countries represent 25,000 units sold in the residential tourism sector, for the second home market. Spain has the largest share of the market with 25%. This is followed by Thailand, France, Brazil, Turkey and Italy. Portugal represents just 0.5% of the market quota.

This union between Portuguese developments allows them to combine resources and coordinate their strategy. The venture includes having local agents who represent and promote the developments. For this, a sales executive exclusive to Portugal will be allocated as well as sales staff in eight cities.

The promotion means participation in bi-annual fairs in Oslo and Stockholm,

workshops and annual presentation of the “Brand Portugal” and development of websites in Swedish and Norwegian as well as advertising in the main media. The proximity of Portugal and the country’s climate could work in favour of Portuguese projects.

This Portuguese venture in Scandinavia complements the fall in the British and Irish markets, the main buyers in the Algarve and Madeira. In terms of the British market, Jonathan Fletcher believes that a slow recovery is taking place. But British buyers are opting to buy properties in developments that have already been built, and as such better known, a situation that Jonathan Fletcher thinks is normal, considering that the sales effort is focused on other markets and the sales that do happen are occasional.

These developments, most of which are situated in the Algarve, do not compete against each other as they offer distinct products, from golf to marinas or beaches, as well as none of them sharing the same location. torm clouds are gathering, but nothing dissuades the group of young athletes from the Palheiro Golf Academy. Meeting at the Club House, the young golfers prepare their paraphernalia and head towards the green, led

by Luís Franco and Edgar Rodrigues, both professional players with technical qualifications recognised by the Federation. Fifty young athletes train under their supervision, divided into groups according to the ability of each player.

obtained so far, Luís Franco is looking forward to an auspicious future for golf in Madeira, despite being aware of the fact that the road will be long and filled with obstacles. One of them, he stresses, is the lack of competition, a basic element required for athletes to progress. In an effort to fill this void, the Academy has its own internal competition circuit, which promotes monthly competitions, although he also foresees the possibility of forming a team to take part in the national under-14s championship.

Humbly, Luís Franco recognises that for now, the Academy does not yet have the framework required for a national championship, but the future is promising.

«We have very good athletes», he smiles, pointing out little João Pedro Gonçalves as an example. At 10 years old, the boy’s correct technique can be seen. Concentrating and fixing his eyes on the green, João Pedro hits the ball with elegance, becoming exasperated when the swing doesn’t have the desired outcome. A precocious talent in search of constant perfection, in harmony with the spirit the Academy tries to instil in its athletes.

Golf has strengthened its visibility in the Region, but there is still a stereotype that the Academy is looking to breakdown.

«Many people still think that golf is an elitist sport, but that is not true. Each athlete pays 36 euros per month», said Luís Franco, emphasising the virtues of a sport that don’t end on the green. «Aside from teaching golf, the Academy also tries to be a school for life, transferring essential values for the creation of citizens», he concluded.

Sob a supervisão dos dois técnicos treinam meia centena de atletas, dividos por grupos formados em função do nível de jogo de cada atleta.

Remontam a Outubro de 2009 os primeiros passos da Academia. Satisfeito com os resultados obtidos, Luís Franco vaticina um futuro asupicioso para o golfe madeirense, embora esteja consciente de que o caminho a percorrer é longo e pejado de obstáculos. Um deles, enfatiza, reside na escassa competição, elemento primordial para a evolução dos atletas. Com o propósito de suprir esta lacuna, a Academia dispõe de um circuito competitivo interno, o qual promove competições mensais, embora o técnico preveja, também, a possibilidade de formar uma equipa para participar no campeonato nacional de sub-14.

Humilde, Luís Franco reconhece que, por agora, a Academia ainda não tem o arcaboiço que um campeonato nacional exige, mas o futuro é promissor. «Temos atletas muito bons», sorri, elegendo o pequeno João Pedro Gonçalves como exemplo. Com 10 anos, é visível a técnica aprumada do jovem. Concentrado e fitando o green, João Pedro bate a bola com elegância, exasperando-se quando a tacada não obtém o efeito pretendido. Um talento precoce em busca do aperfeiçoamento constante, em consonância com o espírito que a Academia procura inculcar nos seus atletas.

O golfe tem vindo a reforçar a sua visibilidade, na Região, mas persiste ainda um estereótipo que a Academia procura combater. «Muitos continuam a pensar que o golfe é um desporto de elites, mas essa ideia está errada. Cada atleta paga, por mês 36 euros», clarifica Luís Franco, enfatizando as virtudes de uma modalidade que não se esgota na tapete verde.

«Mais do que ensinar golfe, a Academia procura, também, ser uma escola de vida, transmitindo valores essenciais para a formação do cidadão», conclui.

The list of professional players is not yet complete and will only be revealed around two weeks before the event, but 156 participants are expected in what could be one of the best competitions of all time.

Having changed the tournament’s date to May, organisers have guaranteed that the event takes place at a time when the European Tour is being disputed in Europe, which could facilitate the travel of players to Porto Santo. Also, from the island’s point of view, May is the month when the climate is at its most stable, normally with less wind and rain than in March or April, the months when the Madeira Islands Open is normally held.

and according to the European Tour, the course, designed by Severiano Ballesteros, is ready to host the tournament. The challenge of improving on the last two years, when the competition was also held at Porto Santo, is great, as the last editions were highly praised by the European Tour and its participants.

This is already the 19th edition of the Madeira Islands Open. For 16 years the competition was held at the Campo do Santo da Serra, but for the past three years it has taken place in Porto Santo, as a way of profiting from the investment made on the course and also to increase the reputation of the island, whose main economic activity is tourism during the spring and summer months. Golf is seen as a product that contributes to break that seasonality.

Ao realizar-se em Maio, o Open acontece numa altura em que já decorre a temporada turística da ilha, com várias operações charter programadas e com o calor a já convidar à praia, o que pode funcionar como mais um atractivo para os acompanhantes ou para quem simplesmente queira juntar umas férias à oportunidade de assistir a uma prova de alto nível.

A edição deste ano desenrola-se entre 16 e 22 de Maio e é a segunda mais importante, disputada em Portugal, apenas suplantada pelo "Portugal Masters". O Open de Portugal, que também figurava no calendário do European Tour, deixou de se realizar.

This year’s event unfolds between 16 and 22 May and is the second most important competition in Portugal, surpassed only by the “Portugal Masters”. The Portugal Open that also used to feature on the European Tour calendar is no longer being held.

Training sessions will take place on the 16th and 17th, allowing players to familiarise themselves with the course, that will once again be played to a PAR 72. The PRO-AM will be held on Wednesday, 18 May, with 52 professionals and 156 amateurs, invited by the organisers. This is the largest PRO-AM to be held in the European circuit competitions.

The Open will be held from the 19th for four days, with the 156 players, eight of whom will be Portuguese and two amateurs invited by the organisers. At the end of the second day, only the top 65 golfers will pass the cut and play the last two rounds of the competition.

Organising a tournament at this level in Porto Santo was a risky venture three years ago, but today, no-one doubts that both the course and the organisers have won the challenge. Considered to be one of the top 100 courses in Europe, Porto Santo Golf is recognised for its beauty and for the competitive quality that it presents, with narrow fairways and a few natural obstacles that challenge players’ abilities.

One of the most famous holes is number 13, likened by some players to the renowned Amen corner on the Augusta circuit, not only for its views of a cliff over the sea, but also for the competitive challenge that it represents, that provide beautiful moments within the tournament.

s if having two Michelin stars was not prestigious enough, Michel Roth is also a Cavalier of the Order of the Legion of Honour, the highest distinction of honour in France, which just goes to show the importance that culinary achievements have in a country that literally invented most of modern cooking techniques.

Roth has also reached another feat: he is the Head Chef of the famous Paris Ritz, a hotel that in 113 years of existence has only had 9 head chefs, one of whom was the renowned Auguste Escoffier, who revolutionized the way that restaurant kitchens work, at the turn of the 20th century.

This prestigious French chef is the icing on the cake for the start of the second edition of “The Stars Route”, a gastronomic itinerary that joins chefs from Portuguese restaurants with Michelin stars. Following last year’s success, the organisers have decided to repeat the initiative, but greatly increasing their ambitions. Each host chef invites another from a Portuguese restaurant and a third, also with Michelin stars, who works outside of Portugal.

For the opening event, which will once again take place at the Il Gallo D’Oro in Madeira on the 29 and 30 April, the invited chefs of Benôit Sinthon are Dieter Koshina, from Vila Joya in the Algarve and Diego Guerrero from El Club Allard in Madrid.

The first heads the kitchen of Portugal’s only two Michelin star restaurant and is the host of a Tribute to Claudia, one of Europe’s most important gastronomic festivals, that has also become world renowned. The second is known for his bespoke cuisine, described by many as simple, but full of personality, that can be tasted at one of Madrid’s most elegant restaurants.

Michel Roth is one of the surprises of the first of the six events in this year’s “Route”. The calendar includes all six participating restaurants. The combined talent of these chefs will result in a menu that will include some of the dishes that earned them their Michelin stars. This year’s event also has the extra merit of joining the most stars at any one time in Madeira, a total of six. As such, it was up to Pastry Chef Yves Michoux to invite Gilles Marchal, a true alchemist in the creation of chocolates, at the renowned Maison du Chocolat in Paris.

Last year’s edition is also being remembered through a book. The work has been published by the Fernando Machado publishing company, in hardback with photography by Henrique Seruca and a total of 196 pages that record the many intense moments lived in the dining rooms and hectic kitchens, including some of the recipes of the most distinguished dishes.

The book includes editorial by António Trindade, CEO of Porto Bay Hotels & Resorts and was presented by José Bento dos Santos, one of the greatest gastronomy specialists in Portugal. n a not so distant past, small fishing boats adorned the pebble beach that faces the sea, in the oldest part of the city of Funchal. Perhaps because of this link to the sea, the traditional and most common dish is fish in the “Zona Velha” (Old Town) of Funchal.

Today Funchal is no longer a fishing city, but the link to the sea remains. In this area, near to the ramparts of the São Tiago Fortress, an icon in this landscape, some of these small boats, which are a heritage, can still be found We are in the place where the city was born. It was from here that Funchal became, on a par with Santa Cruz in Tenerife, one of the first Atlantic cities, meaning, they were built by the Europeans in the lands discovered in the Atlantic. This area, appropriately called the Old Town, seems to have found in recent times, a new fountain of youth, and has once again become a centre for entertainment and leisure for tourists and Madeirans.

The transformation of historical or port areas of cities into leisure areas has been a tradition around the world. Funchal is no exception. The first push for the development of the Old Town into an area of leisure firs began at the start of the 1980s. The first restaurants were opened, the first tourists arrived and so the tradition began. um passado não muito distante, pequenos barcos de pesca adornavam a praia de calhau rolado que enfrenta o mar, na parte mais antiga da cidade do Funchal. Talvez por causa desta ligação ao mar, a oferta tradicional e mais comum nos restaurantes da Zona Velha do Funchal seja o peixe.

Hoje o Funchal já não é uma cidade piscatória, mas a ligação ao mar permanece.

Nesta zona, junto à muralha da Fortaleza de São Tiago, um ícone nesta paisagem, ainda se encontram alguns destes pequenos barcos, que são, sobretudo, uma herança.

Estamos no lugar onde a cidade nasceu. Foi a partir daqui que o Funchal se tornou, a par de Santa Cruz de Tenerife, uma das primeiras cidades Atlânticas, ou seja, construídas pelos europeus nas terras descobertas no Atlântico.

Esta área, apropriadamente chamada de Zona Velha, parece ter encontrado, nos últimos tempos, uma nova fonte da juventude e voltou a ser um centro de animação e lazer para turistas e madeirenses.

Até aí a Zona Velha era um bairro popular, herdeiro da tradição piscatória do velho povoado de Santa Maria do Calhau, onde se ficaram os primeiros colonos da ilha, no século XV. A designação Santa Maria ainda hoje é emblemática no Funchal. Não só dá nome à freguesia de Santa Maria Maior, na qual a Zona Velha se integra, como também dá nome à Rua de Santa Maria, a mais antiga do Funchal e a primeira rua aberta pelos europeus, neste caso portugueses, nas terras descobertas no Atlântico.

Da rua original nada resta, a não ser a fama.

Hoje esta rua e as que a rodeiam, vivem uma atmosfera única e um novo impulso, que leva pessoas de todas as idades a visitarem os restaurantes e bares, numa atmosfera cosmopolita e variada. Pouco lugares nas cidades oferecem um ambiente tão convidativo como os bairros históricos. No Funchal este é um lugar único.

A redescoberta da Zona Velha deve-se em parte, à abertura de novos restaurantes e bares que aumentaram a oferta gastronómica e de animação. Alguns desses espaços situam-se na Rua de Santa Maria. À hora de almoço são sobretudo os locais que povoam os

Some of those establishments are located on Rua de Santa Maria. Tourists arrive at the end of the afternoon, and the younger ones especially at night. Calmly ambling along these streets is an experience. It allows one to see this new trendy atmosphere.

Aside from being a central part of the city’s history, Rua de Santa Maria has a variety of establishments, such as D. Joana Rabo de Peixe, with a classic and sophisticated décor, offering tapas and good wines, inviting companionship.

Practically next door is D. Maria, which recreates the atmosphere of an old grocery store, with utensils from a bygone era and rustic décor. There are other establishments that have given this street atmosphere, such as Jaquet with its famous fried fish, Gavião novo, with its fish and fresh seafood specialities, or the renowned Jango, to name just a few.

Weekend evenings are busier. But each day, the restaurant tables are laid at dinner time, with choice for almost every taste, and on other streets, not just on Santa Maria.

From more traditional food to more sophisticated options and fusion such as "O Forte" in the São Tiago Fortress, "Riso", or "Cidade Velha" with its famous cod speciality, which have been open for some time, there is no lack of choice.

But the new tendency in the Old Town goes beyond the restaurants, each one recognized for its effort to offer quality and above all genuine dishes. Here, the idea is to approach each establishment as an experience, which includes its atmosphere or its décor. Be it a literary bar, for the recreation of a rustic place, or the possibility offered by a Art & Wine, to drink a glass of wine which

Be it for the experience of flavours and for the companionship that the Madeiran Punch provides, the establishments around here are offering diversity and renewing what is on offer.

The public has corresponded and the space in Venda Velha, a main gathering place at the start of the night around here, is too small for the number of clientele. It is a good example of these new leisure establishments, with a rustic urban style, or a contemporary one, with stylish décor or dimed lighting, that inspire tranquillity. Step by step, the Old Town is becoming cosmopolitan, joining the tradition of restaurants that have been open for a long time, to the Fado music houses, traditional bars and these new ventures that brought with them a younger public.

The houses and facades of these streets have an age that has been lost in time. Some have been refurbished, newly painted. Others show the weight of their years. But if all of the facades and buildings were refurbished, part of the spirit would be lost in the renovation. Of course there are exceptions: the University of Madeira chose the Old Town to build the student residences. Some of the residents, students from the Erasmus student exchange programme, reinforce the international feeling of gatherings.

Aside from food, drink and company, the fact that it is a historic area makes it worth a visit, to appreciate architectural details, or contemporary work such as a garden that dominates the area by the sea. The place where football was once played is now a lawn garden, where the Funchal of another era meets a modern city.

O público tem correspondido e o espaço da Venda Velha, principal pólo de convívio para o início da noite por aqui, é pequeno para tanta afluência. É um bom exemplo destes novos espaços de diversão, com um estilo rústico urbano, ou então contemporâneo, com peças de decoração estilizadas ou uma iluminação suave, que inspiram tranquilidade. Passo a passo a Zona Velha está a tornar-se cosmopolita, aliando a tradição de restaurantes que há muito têm portas abertas, às casas de fados, às tascas tradicionais e a estas novas apostas, que trouxeram consigo, também, público mais jovem.

As casas e fachadas destas ruas têm uma idade que se perdeu no tempo. Algumas estão recuperadas, pintadas de fresco. Outras mostram o peso dos anos. Mas se todas as fachadas e edifícios estivessem renovados, algo do espírito perder-se-ia com a renovação. Claro que existem excepções: a Universidade da Madeira escolheu a Zona Velha para construir a residência para os estudantes. Parte dos residentes, estudantes do programa de intercâmbio universitário Erasmos, reforçam o tom internacional dos convívios.

Além da comida, da bebida e do convívio, o facto de esta ser uma zona histórica, vale uma visita, para apreciar detalhes da arquitectura, ou intervenções contemporâneas, como o jardim que domina a área junto ao mar. O lugar onde em tempos se jogou futebol é hoje um jardim relvado, onde o Funchal de outros tempos se encontra com a cidade contemporânea.

The first sign of quality which we notice is their utilisation of home-made stock and of course the large variety of different types of rice. Risotto’s are prapared with Vianole, Arborio or Venera. The list is almost endless, red Thai rice, a variety of dishes using Basmati, Jasmin rice and even rice paper is used in some of the delicious starters.

The desserts are no exception to this rice tradition, one “must” on the sweets cart is a delicious Thai black rice, boiled in coconut milk and served up with the freshest mango slices or alternatively a sweet rice ice-cream.

The restaurant is an architectural masterpiece, tastefully decorated which blends in harmoniously to the quaint neighbouring buildings, right in the heart of the historical centre of Funchal. Besides the top floor there is a covered varanda which is used all year around taking full advantage of the regions temperate climate.

All the restaurant’s tables look out over the sea, actually the location is so special that many patrons say that it’s like dining on a yacht.

It is with visible glee that João Melim, owner of the Factory and heir to a long tradition, contemplates the book that renewed the image of sugarcane syrup.

Praising the book’s great reception, João Melim sees it as a turning point in the relationship between the product and cuisine. «It was thought that sugarcane syrup could only be used in confectionary, but this book shows its potential as a versatile product», he highlights.

João Melim received us between the busy time of Carnival, when many people go to the Factory to buy syrup, and the labouring period. For around 17 days, a

great bustle surrounds the installations. For 24 hours nonstop each day, the Factory receives tonnes of sugarcane, from various producers across the island. After a complex and meticulous process, «where quality is always a requirement», the result can be seen in the many types of sugarcane syrup.

João Melim faces the current economic difficulties with the boldness of those who succeed. Aware of the fact that the people of Madeira associate good quality sugarcane syrup with the name Ribeiro Sêco, Melim aspires to conquer new markets outside of the national territory. Tests within the market have already begun and João Melim says that the feedback obtained from foreign markets allows him to foresee a bright future. Durante cerca de 17 dias, um imenso rebuliço enreda as instalações. Sem interrupção ao longo das 24 horas de cada dia, a Fábrica acolhe toneladas de cana-de-açúcar, provenientes de vários agricultores dispersos pela ilha. Após um processo complexo e minucioso, «sempre com a qualidade como requisito», o resultado exibe-se nas diversas faces do mel-de-cana.

João Melim enfrenta as dificuldades conjunturais com o arrojo dos vencedores.

Consciente de que os madeirenses reconhecem a qualidade do mel com o cunho do Ribeiro Sêco, Melim aspira a conquistar novos mercados, para além do território nacional. As auscultações já começaram e João Melim adianta que o retorno obtido em mercados estrangeiros permitem antever um futuro auspicioso. WHAT DO THE WORLD'S MOST EXPENSIVE WHISKY AND THE WORLD'S OLDEST WHISKY HAVE IN COMMON? THE PORTUGUESE CORK TEXT ANA TAVARES

t's the most expensive whisky in the world – a bottle costs around £100,000, more than €120,000. But just as the limited edition of three bottles of Dalmore Trinitas 64, from the prestigious Scottish distillery The Dalmore, is no ordinary whisky, the same can be said for its cork stopper. Made by Portuguese cork producer Corticeira Amorim, world leader in the cork industry, and part of the company's luxury capsulated cork collection – Top Series –, the cork stopper of the Dalmore Trinitas 64 is made from exceptional materials, including a natural cork body and a dark timber capsule with a silver finishing.

To make the cork closures, which is what the company has been doing at its factory in Mozelos in the north of Portugal for the past year, Amorim worked closely with The Dalmore distillery, renowned for producing some of the best and oldest whiskies in the world. “Being associated to something so unique is a great reward for our work,” said

Carlos de Jesus, marketing and communications director at Corticeira Amorim. “There isn't a single project that doesn't involve careful thought. There has to be a technical compatibility between the bottle and the cork stopper, which influences the sealing.”

The Dalmore Trinitas 64 was launched in October of last year, and two of the bottles were immediately bought by private collectors in the US and the UK. The third bottle was reserved for The Whisky Show in London at the end of October.

The result of a unique combination of spirits from the 1868, 1878, 1929, 1939 and 1940 vintages, Trinitas matured in a handcrafted American white oak cask and was seasoned with the distillery's rare whiskies and two ancient sherries. “We have been working with big companies in the world of spirits for many years,” stressed Carlos de Jesus. “It's natural that when a company has a drink with this price, they come to Corticeira Amorim.” www.essential-portugal.com 82

In fact, right at the beginning of last year, the Top Series cork closures were also chosen to seal the oldest bottled single malt whisky in the world, the Gordon & MacPhail Mortlach 70 Year Old, which costs an impressive €12,500 for the 70cl bottle.

Launched in early 2010 and with four different ranges (Prestige, Elegance, Premium and Classic), the luxury cork closure collection Top Series comprises hundreds of different products, made from exclusive materials such as exotic wood, precious stones and the highest quality cork. “Good sealing still relies on a unique structure: cork. In each cork stopper there are 800 million cells,” said the marketing director. “Unlike wine, a spirit's stopper has to be visually appealing because it's also outside the bottle,” added Carlos de Jesus. Mas se a edição limitada de três garrafas do Dalmore Trinitas 64, uma produção da prestigiada cave escocesa Dalmore, não é um whisky qualquer, o mesmo também se aplica à sua rolha. Produzida pela Corticeira Amorim, líder mundial na indústria da cortiça, e parte da colecção de rolhas capsuladas de luxo da empresa – a Top Series -, a rolha do Dalmore Trinitas 64 é composta por materiais nobres, incluindo um corpo de cortiça natural e uma cápsula de madeira escura com acabamento de prata.

Para produzir as rolhas, o que aconteceu na sua fábrica em Mozelos ao longo do ano passado, a Amorim trabalhou em estreita colaboração com a cave Dalmore, conhecida por produzir alguns dos melhores e mais antigos whiskies do mundo.

“Estar associado a algo tão único é uma grande recompensa pelo nosso trabalho,” disse Carlos de Jesus, director de marketing e comunicação da Corticeira Amorim. “Não há projecto que não implique uma adequação muito cuidada.Tem de

haver adequação técnica entre a garrafa e a rolha, o que influencia a capacidade de vedação.”

O Dalmore Trinitas 64 foi lançado em Outubro do ano passado, sendo que duas das garrafas foram imediatamente adquiridas por coleccionadores privados nos Estados Unidos da América e Reino Unido. A terceira garrafa ficou reservada para o The Whisky Show, que decorreu em Londres, no final de Outubro.

Resultado de uma combinação única de vintages espirituosos das colheitas de 1868, 1878, 1926, 1939 e 1940, o Trinitas estagiou num barril artesanal de carvalho americano branco e foi temperado durante dois anos com whiskies raros da marca e dois sherries antigos. “Há vários anos que trabalhamos com grandes empresas do mundo das bebidas espirituosas,” sublinhou Carlos de Jesus. “É natural que quando uma empresa tem uma bebida com este custo procure a Corticeira Amorim.”

Touriga Nacional PORTUGAL'S FLAGSHIP RED VARIETY A MAIS FAMOSA CASTA TINTA PORTUGUESA TEXT DAVID BAVERSTOCK, HERDADE DO ESPOR O

I

n my last article, I focused on Alicante Bouschet as the Alentejo's premium red grape variety, but Touriga Nacional is increasingly being recognised as Portugal's generically best red grape, spanning all of the country's major wine regions and producing outstanding wines, of different styles, in all of them. Recently, ViniPortugal organised a Touriga Nacional congress and tasting event around this variety in order to discuss its quality characteristics and to determine the 10 top Touriga wines in the country. The idea was also to involve international experts such as Jancis Robinson, Charles Metcalfe and Simon Tam to raise the awareness of this variety, with the end result a concerted push to promote Touriga on the international stage as a world class, uniquely Portuguese grape variety. Before returning to this subject, I would like to highlight some of the more important viticultural and oenological aspects of this variety.

In the vineyard, Touriga shows vigorous vegetative growth and canopy management is essential to avoid shading. Leaves are small and distinctive, with large internodes. Ripening is mid- to late-season, with low yielding small bunches and berries, and poor fruit set can be a problem. Although considered to be a little heat sensitive (it loses basal leaves in hot years),

it has been shown to produce top quality wines in the Alentejo region, and I consider it a good variety in the heat and it is certainly a variety we are planting more of at Esporão without undue worries concerning climate change.

In the winery, Touriga produces deeply coloured, very aromatic wines with a floral, violet edge, some blueberry/blackcurrant flavours, and the palate is quite elegant and well-structured with firm but very fine tannins. It lends itself well to ageing in French oak barrels and produces wines that are characterised by elegance, finesse and balance. It is this large complexity of flavour and typical varietal aroma that makes it so popular and recognisable, and therefore a major candidate to be Portugal's flagship red variety, although it is not without its detractors, who criticise it for being too recognisable with a tendency to dominate blends. It should be remembered that historically, Portugal's wines, both white and reds, have been almost exclusively blends, and this tendency to promote an individual grape variety is a recent concept, showing the modern face of the Portuguese wine industry which has been revolutionised in the last 10 to 15 years.

Personally, I am a great believer in the variety and the concept of promoting it as a single varietal – it is a starting point that can lead us into the wealth of Portuguese grape varieties (some 250 in all) and will bring focus to the country and eventually many of the other grapes, some of which are also outstanding.

Returning to the tasting: I was part of an initial panel of winemakers, sommeliers and journalists who tasted (blind) 80 Touriga wines in order to find the top 30, after which the panel of international tasters then went through these 30 wines to elect the top 10. However, due to the great quality of the wines presented, the judges were forced to select 12 wines for the final list. I began this article several weeks ago under the assumption that Esporão would figure in the top 10, unfortunately that was not the case (although it did make the top 30)! For the Algarve readers, please note that Marquês dos Vales, from Quinta dos Vales in Estombar, did make it into the top 10, which is a great achievement for an Algarvean producer. www.essential-portugal.com 84

o meu último artigo, falei da Alicante Bouschet como a melhor casta tinta do Alentejo, mas a Touriga Nacional está a tornar-se cada vez mais conhecida como a melhor uva tinta de Portugal em geral, estando presente em todas as principais regiões vinícolas e produzindo vinhos espantosos de estilos diferentes em cada uma delas.

Recentemente, a ViniPortugal organizou um congresso sobre a Touriga Nacional e um evento de provas à volta da casta, de modo a discutir as suas características de qualidade e a determinar o top 10 de vinhos Touriga do país. A ideia era também envolver peritos internacionais como Jancis Robinson, Charles Metcalfe e Simon Tam para promover esta casta, com o objectivo de colocar a Touriga no palco internacional enquanto variedade de uva de classe mundial, exclusivamente portuguesa. Antes de voltarmos a este assunto, gostava de sublinhar alguns dos

aspectos mais importantes da viticultura e enologia desta casta.

Na vinha, a Touriga mostra um crescimento vigoroso e é necessária uma cuidadosa gestão da copada para evitar a sombra em excesso. As folhas são pequenas e distintivas, com grandes entrenós. O amadurecimento ocorre a meio ou no final da estação, com pequenos cachos e bagas, que resultam numa baixa produção, e o mau assentar da fruta pode ser um problema.

Apesar de ser considerada algo sensível ao calor (perde as folhas basais nos anos quentes), já provou ser capaz de produzir vinhos de alta qualidade na região do Alentejo e considero-a uma boa casta para o tempo quente. Iremos certamente plantar mais vinhas desta variedade no Esporão sem preocupações excessivas quanto às alterações climáticas.

Na adega, a Touriga produz vinhos muitos aromáticos de cor intensa, com um toque floral,

de violeta, alguns sabores a mirtilos/groselha, e um palato elegante e bem estruturado com taninos firmes mas muito finos. Deixa-se envelhecer bem em barricas de carvalho francês e produz vinhos que se caracterizam pela elegância, requinte e equilíbrio. É esta grande complexidade de sabor e típico aroma varietal que faz com que esta casta seja tão popular e reconhecível, apesar de ter alguns detractores, que a criticam por ser demasiado distinta, sendo capaz de dominar os multicastas. Há que lembrar que, historicamente, os vinhos portugueses, brancos ou tintos, têm sido quase exclusivamente multicastas, e esta tendência para promover uma variedade individual de uva é um conceito recente, que expõe uma face moderna da indústria vinícola portuguesa, que foi revolucionada nos últimos 10-15 anos.

Pessoalmente, acredito na variedade e no conceito de promoção de uma única varietal – é um ponto de partida que nos pode conduzir à riqueza das castas portuguesas (cerca de 250 ao todo) e que irá atrair atenção para o país e, eventualmente, para as outras uvas, algumas destas extraordinárias.

De volta ao evento de provas: integrei um painel inicial de produtores, sommeliers e jornalistas que provaram (às cegas) 80 vinhos Touriga para encontrar o top 30. Depois disso, o painel de provadores internacionais iria provar esses 30 vinhos para eleger o top 10. Face à grande qualidade dos vinhos apresentados, os juízes optaram por escolher 12 e não 10 vinhos para integrar a lista final.

Comecei a escrever este artigo há várias semanas atrás com a convicção de que o Esporão iria ocupar um lugar no top 10, mas, infelizmente, esse não foi o caso (apesar de ter alcançado o top 30)! Contudo, acho que os leitores algarvios vão gostar de saber que o vinho Marquês dos Vales, da Quinta dos Vales, em Estombar, chegou ao top 10 – uma grande conquista para um produtor do Algarve.

55 litre barrel of Madeira Wine has sailed across the Oceans, in memory of a time when wine was transported on ships and caravels, acquiring in the heat of the tropics, some of the characteristics that make it world famous. The wine was transported aboard the Portuguese Navy’s educational ship “Sagres” that made a round the world trip, stopping in more than 30 ports.

The aim of the Wine Institute and Bordado da Madeira, which set up the initiative, was for the barrel of wine made from the Malvasia grape variety harvested in 2000, to suffer alterations to its properties as a result of the constant motion of the ship and the influence of different climatic conditions, during the journey. Now, it is up to the Institute of Tasters to check if the journey did in fact give the wine special properties, associated to the way in which it matured. The results will contribute to a deeper knowledge about the properties of one of the world’s best known fortified wines.

The sending of barrels on journeys across the oceans has important historical roots. In

the 17th century, India became one of the main markets for Madeira Wine. Transport was carried out in the ships’ cargo holds that reached very high temperatures when travelling through the tropics. Sometimes, the wine returned to Europe, where it was found that the journey had caused it to greatly improve in quality.

It is from then onwards that tonnes of Madeira Wine were sent to the Indies with the sole aim being to enrich it and improve its quality before returning to Europe, where it gained unprecedented fame.

The heat and exposure to oxidation, two of wine’s main enemies, act as allies to Madeira, causing unique wines with unrivalled longevity. These transformations caused the wine to become known as “Vinho da Roda” or “Wine of the Wheel”.

Motivated by evidence that heat improved Madeira Wine and probably tempted by the value of the “Vinho da Roda”, during the 18th century, producers invested in green housing, a technique that is used to age Madeira Wine to this day. www.essential-portugal.com 88
