ARROSTICINI An introduction to Lamb Skewers typical of traditional cuisine of Abruzzo, Italy Arrosticini (Abruzzese Lamb Skewers) is well known in central Italy near the Adriatic Sea, gaining popularity in the last 20 years. It originated from street vendors, but today you will find Arrosticini in many restaurants and taverns in the area. However outside of the Abruzzo region, this style of eating skewers is still relatively unknown. There are slight variations in thickness and meat used, but typically they are served using a 25cm bamboo skewer. Roasting these skewers can be best described using a channel or rectangular gutter shaped charcoal grill, where a large quantity of skewers are cooked and turned by hand. Eating Arrosticini is best enjoyed as a bunch, piping hot straight off the grill. Generous sprinkling of salt is added at the end of the cooking process and served together with some toasted home style bread scraped in garlic and drizzled in olive oil.

What makes it Arrosticini? 1. Arrosticini is made from cubed lamb with fat mixed in, occupying 10 to 11cm on the length of a 25cm bamboo skewer. 2. Food weight of one skewer is approximately between 25g to 30g each (depending on the cube thickness). 3. Meat thickness can be between 14mm and 16mm (as shown in diagram as “x�) on the bamboo skewer. 4. Best results come from using an Arrosticini Charcoal BBQ which allows the skewer to suspend the lamb directly over hot coals.

MINI SKEWER PROFESIONAL CUBES Cubes from Italy used in Arrosticini Production Arrosticini is still very much a cottage industry in Australia and preparation equipment is still difficult to find. BBQAroma has been behind the promotion of this central Italian BBQ cuisine and has imported a range of professional skewer making boxes to encourage sales of it's Arrosticini BBQs in the long term. The method of skewer production is quite simple and can be described quickly in 4 stages. 1. 2. 3. 4.

Made from Polyethylene material, these cubes comprise of a lid, cage and base and have some clever features to speed up skewer making by hand. âž” Lid Over Lock Design The lid sits over the cage and provides a sturdy platform for skewers to be entered into. The top of the lid has countersunk skewer holes and the lip of the lid has knife guides and grooves underneath to make it easy for placing the slicing knife through to the other end before cutting downwards. âž” Open Top Knife Guides The cage has 15mm thick walls with 2mm wide knife slots. The slots are open at the top to allow the slicing knife to start to cut above the box contents. In the case of slightly overloading the box, the user can easily align the knife by lifting the lid up slightly and does not need to push the blade in and through to begin slicing downwards.

âž” Base Knife Groves The base of the box has knife grooves that align with the guides on the cage. This allows the slicing blade to cut right through making the skewers easily separable and faster to unpack from the box once finished.

Mini Skewers Finished Product Although we at BBQAroma call them Arrosticini, in actual fact they can be made from any food item that can be layered in this cube. The whole point to this specific size of skewer is so that they fit the Italian style of Charcoal Grills and can be enjoyed in bunches of skewers per person. Another benefit of this format of cooking is the minimisation of burnt bamboo skewers. The grills we import have 11cm grilling width, which is enough to suspend the skewer and shield the rest of the exposed bamboo from direct heat. Being mini skewers as well, they are light enough to suspend without need of a grill or mess and the user can cook at ease without fear of burnt fingers. In fact you can grill many skewers at one time under 10 minutes making it an idea fast food.

Specific requirements before using Cubes There are a few things to look out for when using these boxes. Skewer diameter can not be greater than 3mm. Best method to use thinner skewers is to pre-skewer with a metal skewer first to make it easier to follow and insert the bamboo by hand. Knife guides on cage need a thin slicing knife that has a consistent thickness from tip to handle. Slicing blades with 1mm thickness is strongly recommended and best to have long knives, so that the knife tip stays outside the box when using a sawing action to cut through.
