BBC Radio Lancashire Maria Felix Vas’ Lunchtime Favourites Saturday 24th September This week, Maria was at the home of Blackpool’s “windmill lady” Shirley Matthews. Over the years, Shirley has campaigned and managed to get the Little Marton Windmill, recognised as a place of heritage importance, and now opens it up to the public for viewings. She’s done this in the memory of her Grandfather Alan Clarke…the author of many books including “Windmill Land”. Shirley has just completed a book dedicated to him, called “A Bolton Boyhood”, which is due to come out in October.
The Lunchtime favourite recipe this week is Windmill Chilli Chicken Noodles Windmill spicy, sweet chilli chicken noodles (a tasty sharing dish, easy to cook) For 3 – 6 people….(add more or less of the below ingredients, depending on how many) * 3 chicken breasts (diced) *¾ pound of button mushrooms *Sweet chilli sauce (table spoon, or more as desired to taste) *soy sauce (table spoon) *olive oil to cook *packet of medium egg noodles Method 1 - Gently fry chicken in olive oil with sweet chilli sauce and soy sauce. for 6 minutes - or until cooked. 2 - Cook mushrooms separately in a bit of butter. 3 - Cook noodles (as directed on packet!) 4 - Combine all ingredients, including noodles to large wok, and fry for 3-4 mins, adding more soy sauce and sweet chilli to taste…or for a hotter version, spice it up with a splash of hot chilli sauce! 5 - Serve immediately, with fresh crusty bread and salad!
