FILL

1. Preheat the oven to 350 F. Line 12 muffin cups with paper liners.

2. In a bowl, combine the flour, baking powder and salt. Set aside.

3. In another bowl, cream the butter and icing sugar together with an electric hand mixer until light and fluffy (about two to three minutes). Add the vanilla. Incorporate the eggs, one at a time, beating well after each addition.

4. Gradually add the dry ingredients and milk to the wet mixture, alternating between the two.

5. Pour the mixture into the 12 prepared muffin cups.

6. Bake for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean. Let cool completely before decorating.

7. Meanwhile, pour the white sugar into the cream and beat with an electric hand mixer until stiff peaks form. Top the cupcakes with whipped cream, cranberries and rosemary, arranging the rosemary to resemble holly.

Fruited Brazil Nut Loaves

INGREDIENTS

Makes two loaves

• 1 1/2 cups (375 ml) dried figs

• 1 1/2 cups (375 ml) dried apricots

• 1 cup (250 ml) candied pineapple

• 1/2 cup (125 ml) candied cherries

• 1/2 cup (125 ml) chopped preserved ginger

• 1 cup (250 ml) all-purpose flour

• 1 cup (250 ml) packed brown sugar

• 1 tsp (5 ml) baking powder

• 3 cups (750 ml) whole shelled Brazil nuts

• 4 eggs

• 1 tsp (5 ml) vanilla

DIRECTIONS

1. Line two 8- x 4-inch (1.5 l) loaf pans with foil; grease well and set aside.

2. Pour boiling water over figs and apricots; let stand for 5 minutes. Drain and chop into large pieces. Cut pineapple into chunks. Halve cherries.

3. In large bowl, mix together figs, apricots, pineapple, cherries, ginger, and Brazil nuts. Stir together flour, sugar, and baking powder; add to fruit mixture and toss to mix.

4. In separate bowl, beat eggs well; stir in vanilla. Add to fruit mixture and mix well; spoon into prepared pans. Bake in 350°F (180°C) oven for 1 hour or until cake tester inserted into centre comes out clean.

5. Let cool in pans on racks for 10 minutes; remove from pans and let cool completely on racks.

Loaves can be wrapped well and refrigerated for up to two weeks.

Soft chocolate chip cookies

INGREDIENTS

Makes 12 cookies

• 2 ¼ cups flour

• 1 teaspoon baking soda

• 1 teaspoon salt

• ¾ cup unsalted butter, softened

• ½ cup white sugar

• ¾ cup brown sugar

• 1 teaspoon vanilla extract

• 2 eggs

• 2 cups semi-sweet chocolate chips

1. Place the blueberries, half the mint leaves and half the lime slices in a pretty glass. Using a muddler, crush the ingredients to form a puree.

2. Pour in the simple syrup and top up with sparkling water.

Sauteed Brussels sprouts with pancetta

INGREDIENTS

Servings: 6

• 4 cups Brussels sprouts, halved

• 1 cup pancetta, finely diced

• 2 cloves garlic, finely chopped

• Salt and pepper, to taste

DIRECTIONS

1. Fill a large pot with salted water and bring to a boil. Place a steamer basket or metal colander over the pot, making sure the bottom doesn’t touch the water.

2. For each Brussels sprout half, remove any wilted outer leaves, and make a small incision in the base. Steam the sprouts for four minutes. Immediately plunge them into a bowl of ice water to stop the cooking process, then drain.

3. Meanwhile, fry the pancetta cubes over medium-high heat in a cast-iron skillet. When the cubes start to brown, add the garlic and Brussels sprouts. Continue cooking until everything is nicely browned. Season with salt and pepper to taste.

Cherry tomato and burrata salad

INGREDIENTS

Servings: 4

• 4 cups arugula

• 2 cups assorted cherry tomatoes

• 2 balls burrata cheese

• 2 tablespoons extra virgin olive oil

• 1 tablespoon balsamic glaze

• A few fresh basil leaves, chopped

• Salt and freshly ground pepper

DIRECTIONS

1. Wash and dry the arugula. Place it on a large serving plate.

2. Wash the cherry tomatoes, cut them in half and scatter them over the arugula.

3. Drain the balls of burrata, then tear them roughly with your hands. Scatter the pieces over the salad.

4. Drizzle evenly with olive oil. Then, drizzle the balsamic glaze over the top. Sprinkle with chopped fresh basil. Season with salt and pepper to taste. Serve immediately.

Dauphinois-style potato gratin with cream

Treat (and impress!) all your guests this year with these sophisticated potatoes.

INGREDIENTS

Servings: 6

• 2 tablespoons butter

• 2 cloves garlic

• 5 or 6 Yukon Gold potatoes, peeled

• 1 ½ cups 35% heavy whipping cream

• 1/2 teaspoon ground nutmeg

• Salt and pepper, to taste

• 1 ½ cups sharp cheddar cheese, grated

• Fresh parsley, chopped (optional)

DIRECTIONS

1. Preheat the oven to 375 F. Generously butter a cast-iron skillet or ovenproof dish. Rub the bottom of the dish with the halved garlic cloves for added flavour. Discard the garlic.

2. Using a mandolin or a sharp knife, cut the potatoes into thin slices that are about two to three millimetres thick.

3. In a saucepan, gently heat the heavy whipping cream with a minced clove of garlic, nutmeg, salt and pepper. Add the potato slices to the hot cream. Simmer gently for five minutes to soften (do not boil).

4. Transfer everything to the buttered dish, spreading the potatoes in even layers. Pour the rest of the cream over the potatoes. Sprinkle evenly with grated cheese.

5. Cover with aluminum foil and bake in the oven for 30 minutes. Remove the foil and continue baking for 20 to 25 minutes, until the top is golden brown and bubbling.

6. Let the pan rest for 10 minutes before serving. Garnish with fresh parsley, if desired.

Prosciutto and burrata crostini

INGREDIENTS

Servings: 4

• 4 slices of artisan bread, toasted

• 2 tablespoons butter

• 8 slices prosciutto

• One ball burrata cheese, cut into 4 portions

• 2 tablespoons honey

• 1 tablespoon hot sauce

• A few sprigs fresh thyme, leaves removed

• A few leaves fresh basil, chopped

DIRECTIONS

1. Butter the slices of bread.

2. Place two slices of prosciutto and a portion of burrata cheese on each slice of bread.

3. In a small bowl, combine the honey and hot sauce. Drizzle each crostino with this mixture. Sprinkle with thyme and fresh basil.

4. Serve on a pretty serving board decorated with fresh herbs.

• 1 ¼ cups all-purpose flour

• 1 tablespoon white sugar

• ½ teaspoon ground cinnamon

Lemon cannoli

• Oil for frying (canola or peanut)

• 1 ½ cups ricotta cheese

• ½ cup icing sugar

• ½ teaspoon vanilla extract

• Zest of one lemon

Serve this elegant Sicilian dessert at Christmas or on New Year’s Eve and get ready to be showered with compliments.

1. In a bowl, combine the flour, white sugar, cinnamon and salt. Add the butter and rub together with your fingertips until the mixture resembles coarse sand. Stir in the egg and white wine. Then, form into a smooth dough.

2. Knead the dough lightly and wrap it in plastic wrap. Refrigerate for 30 minutes.

3. Roll out the dough to about two millimetres thick and cut into circles about 10 centimetres in diameter. Wrap each piece around a cannoli mould (or a metal tube), then seal with a little water.

4. Heat the oil in a large Dutch oven to 350 F and fry the shells for one to two minutes or until golden brown. Drain on paper towels and let cool before removing from the moulds.

5. Whisk the ricotta with the icing sugar, vanilla and lemon zest until smooth. Add mini chocolate chips, if desired. Refrigerate for 15 to 30 minutes to firm up the filling.

6. Fill the shells just before serving using a piping bag. Sprinkle with icing sugar.

Spinach and bacon turkey roll

Here’s a recipe for a decadent meal to serve hot or cold, with or without gravy, as

11. Finish cooking in the oven for 15 to 20 minutes, or until a meat thermometer inserted into the thickest part indicates 170 °C (338 °F).

12. Slice and serve.

• 3 garlic cloves, crushed

• 1 cup milk

• 2 tbsps. vegetable oil

• 1 onion, chopped

• 1-1/2 cups grated cheese (mozzarella, cheddar or Swiss)

1. One hour before you start cooking, mix the garlic and milk together, then refrigerate.

2. Preheat the oven to 190 °C (375 °F).

3. In a large skillet, heat half of the vegetable oil and sauté the onions for five to seven minutes on low heat, but don’t let them brown.

4. At the same time, melt the butter over low heat in a small pot and add the flour. Cook for one to two minutes while stirring with a whisk. After removing and discarding the garlic from the refrigerated mixture, slowly add the milk and continue to whisk until you obtain a smooth béchamel-like sauce.

5. Remove the onions from the skillet and slightly increase the heat. Add the rest of the

vegetable oil and the mushrooms. Sauté for five to seven minutes, until the mushrooms look golden brown.

6. Throw the onions back in the skillet. Add the noodles, turkey and béchamel sauce, and mix well. Remove from heat and season with salt and pepper, to taste.

7. Pour the contents into an oven-safe casserole dish and sprinkle cheese on top.

8. Place the dish in the oven for 15 to 20 minutes, or until the cheese has melted and browned, then serve!

Candy cane fudge squares

INGREDIENTS

(Makes about 32 pieces)

• 600 g (about 5 cups) chopped semi-sweet chocolate

• 1 can (300 ml/14 oz.) sweetened condensed milk

DIRECTIONS

• 1 tsp. vanilla extract

• A generous pinch of salt

• 1 cup chopped candy canes (or other hard candy)

1. Line two 20-cm (8-inch) square moulds with parchment paper. Make sure to leave an extra inch or two of paper on all sides for easy removal.

2. In a medium-sized casserole dish, warm the chocolate and condensed milk over low heat. Remove from heat once the mixture is nice and smooth.

3. Add the vanilla extract and salt. Mix well.

4. Pour the mixture into the square moulds and sprinkle pieces of candy cane on top.

5. Leave to harden in the fridge overnight.

6. Cut the fudge in each mould into roughly 16 squares, and enjoy!

Inviting someone to join you for Christmas dinner is a wonderful gesture!

How are children’s letters sorted?

I’ve been Santa Claus’s happy secretary for a long time. I’m proud of the work I do. You know, it’s an important job and I take it very seriously. Plus, the days fly by because there’s always something to do.

I’m the one who goes to the post office to pick up all the letters that children from around the world send to my boss. There are MILLIONS of them every year! They mostly contain present wish lists, but some also include kind messages and even little (or big!) secrets.

I’m not allowed to open or read them. That’s strictly reserved for Mr. Claus. My job is to sort them by country and put them in boxes. All I have to do is look at the return address on the envelope. I really enjoy this task, and I always listen to my favourite music while I’m doing it.

One day, I had a mishap that made me break out in a sweat. Imagine my surprise when I spilled my glass of water on an envelope. I used a tissue to soak it up right away but soon realized that the writing had become unreadable. Of course, I wasn’t allowed to open the letter and look for clues about where it came from. What was I to do?

I took a few deep breaths to calm myself down, holding the envelope in front of my nose. It had a wonderful scent: maple syrup! I figured the letter must be from Canada. I stuck a note on the envelope explaining the situation to Santa Claus. Then, I put it in the “Canada” box.

The next day, my boss came into my office. I thought he was going to scold me for my mistake, but I was wrong.

He said, “Ho, ho, ho, Merlin! You have a good nose. The wet letter did indeed come from Canada. Here’s a reusable water bottle as a gift. It has an anti-leak device, ho, ho, ho!”

I thanked him, blushing. Since that day, I always carry this bottle with me. And I’ve never made a mess again.

I know all about making toys!

Working in Santa’s workshop requires many tal ents. After all, we make all kinds of toys, and there are always new ones being added! We must do every thing perfectly because we don’t want to disappoint the children.

I love being a workshop worker. Even though we work on an assembly line, it’s far from boring. Thanks to the schedules set by our wonderful manager, Prudence the Bear, we get a different task every day. Dolls, toy trucks, balloons, puzzles, plushies—it’s impossible to get bored!

My elf colleagues and I can create and assemble every part of every toy or game. For example, we can:

• Paint building blocks

• Sew princess dresses

• Draw pictures for colouring books

• Bind the pages of books

We also inspect all the materials because sometimes items arrive damaged. We hate to waste anything, so we give the damaged materials to an elf artist, who transforms them into beautiful works of art. Her creations decorate the North Pole. It’s spectacular!

Once the toys are ready, we wrap and label them carefully, then store them away until December 24. It’s a lot of work, but we always have fun. Oh, that reminds me of a funny story!

One year, there was an incident on Marble Day. A new worker pressed the wrong button, and the marble tank spilled all over the workshop. There were marbles everywhere!

While trying to collect them, several elves stepped on marbles and started “dancing” involuntarily to keep their balance. This resulted in some very wild and wobbly movements. Everyone was laughing hysterically. Even Prudence, who told us to be careful, couldn’t help but giggle. Luckily, no one got hurt.

Since that day, we always perform the “marble salsa” to liven up the dance floor on Christmas Eve.

The Nice List—and my brilliant idea!

I handle many tasks as Santa’s Secretary, including preparing the Nice List. One day, I came up with a brilliant idea that changed the tradition. Let me tell you about it.

Not so long ago, only children who behaved well all year round, without exception, could receive presents at Christmas. Spy elves visited parks, daycares, stores, libraries, restaurants, schools and homes to check whether girls and boys were behaving well. Were the children putting away their toys? Were they brushing their teeth properly? Were they going to bed without fussing? Did they always say “please” and “thank you”? These are some of the nice things the spy elves were checking for.

As the years went by, it broke my heart to see children being denied presents because they hadn’t been perfect. I went to see my boss to

make a suggestion.

“Mr. Claus, I’ve noticed that children who misbehave aren’t actually naughty. Often, they act out because they’re tired, hungry or just in need of a big hug. I think we should give them a chance to make amends. Could the spy elves go back and see the children who aren’t on the Nice List a few days be -

fore Christmas? If they’re good, we could put them on the Second Chance List. The workshop would certainly have time to prepare a few more presents before your big delivery tour. What do you think?”

With sparkling eyes, Mr. Claus replied, “What a wonderful idea, Merlin! How lucky I am to have such a wise secretary, ho, ho, ho! I’ll trust you to organize every thing!”

The great mystery of small chimneys

Many children wonder how I manage to fit down chimneys. After all, they’re not very big, and I have to squeeze through with my round belly and huge sack of presents. Well, you see, it’s all thanks to magic.

Before I slip down a chimney, I use a special magic powder. It was created by the Star Fairy, who named it “all-purpose powder.” Believe it or not, all I have to do is sprinkle a little of this sparkling dust to make amazing things happen:

• The chimney widens to my size, so I can eat all the snacks left by the children without worrying, ho, ho, ho!

• The pipe becomes clean—I certainly don’t want to get my beautiful red clothes dirty.

• The fire goes out, so I won’t risk burning myself if people forgot to put it out before I arrive.

I can then fly down the chimney safely, land

gently, place the presents under the tree and fly back up without anyone noticing… Well, in theory, ho, ho, ho!

A long time ago, I almost got caught. Some mis chievous children had set a trap in hopes of seeing me. Can you guess what they did? They put a net in front of the fireplace. The

result? I got all tangled up, like a giant butterfly, ho, ho, ho! Fortunately, the children were fast asleep on the sofa. I managed to free myself and complete my mission without waking them up. Phew!

But since it took me several long minutes to escape the trap, I was delayed on my rounds. The reindeer had to gallop even faster than usual. This absolutely could not happen again.

When I got back, I asked the Star Fairy to concoct a powder that would undo all traps. Now, before jumping down a chimney, I always sprinkle a pinch of all-purpose powder and a pinch of anti-trap powder. Ho, ho, ho, you can never be too careful!

The greenhouse with magic carrots

Did you know that the reindeer train all year for Santa’s big gift delivery tour on December 24? As their leader—with my bright red nose—I’m lucky to work with such a highly motivated team. But to get in peak sleigh-pulling condition, we need more than practice. We also need the right food.

That’s why we reindeer take our diet very seriously. We stick to fresh water, crunchy plants, berries, mushrooms and, of course, delicious carrots.

We need a huge greenhouse to grow carrots at the North Pole. You should also know that these are no ordinary carrots. Oh, no! This variety takes a whole year to ripen, and we harvest them on the morning of December 24. In other words, we only get to nibble them a few hours before takeoff. Why? Because when they’re perfectly ripe, they give us the power to fly.

Unfortunately, the magic of these orange vegetables only works on reindeer. It doesn’t work on humans, other animals or elves. Believe me, many have tried and had no success. However, these carrots are so sweet and delicious that Mrs. Claus regularly adds them to her soups and cakes.

When we make our rounds, children often leave apples and carrots for us under the tree. We LOVE that! But since there are always too many, we share the extras with all the North Pole inhabi tants when we return. It makes a lot of people happy.

Before I go, let me tell you one good story. A long time ago, we grew too many magic carrots. So, just for fun, my reindeer friends and I made snowmen and used the carrots as their noses.

Believe it or not, the magic worked on them! As soon as they got their carrot noses, the snowmen started walk ing and talking. They qui ckly became real citizens of the North Pole and some of our dearest friends. Amazing, isn’t it?

A one-of-a-kind sleigh

My sleigh is famous all over the world, but only a few people know just how amazing it really is. Sure, it’s a simple red sleigh that flies through the sky with the help of reindeer, but it can do so much more!

You know, of course, that I fly around the world on the night of December 24. I love to deliver presents to all the good children. But have you ever thought that, at this time of year, it’s winter in some countries and summer in others? During my rounds, I might go from an ice storm to a blazing heatwave in just a few hours. How do I survive all that? It’s all thanks to my wonderful sleigh, ho, ho, ho!

Yes, indeed! My sleigh is quite special. It was made of enchanted wood by the best elf woodworker in the North Pole. And after many tests, the Star Fairy created lots of magic spells to meet all my needs. For example, the sleigh can cool itself down if it gets too hot or wrap itself in a transparent dome to repel rain. So handy!

One year, though, I couldn’t remember the spell to warm up my sleigh. It was freezing, and I was starting to shi ver. Desperate, I tried random spells: “Hocus Pocus, make me warm and help me fo cus!” or “Presto, ho, ho, ho, let the warm winds blow!”

The sleigh went haywire! I was shaken in every direction, and the paint kept changing colours from blue to green to red, over and over. The reindeer struggled to stay on course. I even thought we were going to crash. Then, suddenly, the right magic spell came back to me. “Abracadabra, sleigh, spread your heat and lead the way!”
